The Effects of Starch Addition on Acid Production By Lactic Acid Bacteria and Quality of Curd Yogurt (전분의 첨가가 호상요구르트에서 젖산균의 산생성과 요구르트의 품질에 미치는 영향)

  • A curd yogurt was prepared from milk added with skim milk powder or four kinds of starch such as rice starch, wheat starch, corn starch and potato starch. The effects of starch addition at 2%(w/v) level on acid production by lactic acid bacteria in milk was investigated. The effects of starch addition on quality of curd yogurt in terms of apparent viscosity, sensory property and volatile aroma compounds were also examined. Addition of starch markedly stimulated the acid production by lactic acid bacteria. Among four organisms tested, Lactobacillus jugurti produced the highest amount of acid. Apparent viscosity of curd yogurt added with starch was significantly higher than that of control. Curd yogurt fermented with L. jugurti showed pseudoplastic and thixotropic characteristics. Sensory property of curd yogurt added with corn starch or rice starch was evaluated as slightly better than reference sample, but that with potato starch was evaluated as the worst among all samples. Acetaldehyde, acetone, ethanol and butanol were detected by gas chromatographic analysis.

A study on estimation of metabolizable energy content in starch-foods and seaweeds (주요 당류 및 해조류의 대사 에너지 함량 평가에 관한 연구)

  • The validity of the energy data of the starch-foods and seaweeds in Korean food composition tables has been suspected due to possible differences in their chemical compositions from those of western food ingredients. Energy conversion parameters being used currently in nutrition has been derived in countries where food items re quite different from ours. This study was undertaken to determine the metabolizable energy of starch-foods and seaweeds by the method selected in preexperiment20). Cooked starch foods and seaweeds were freeze-dried and fed to Sprague Dawley rat with 200∼300g body weight to measure apparent metabolizable energy (AME) values and nitrogen-corrected AME (AMEn) values for four days after three days of preliminary period for adaptation to the diets. The AME and AMEn values of the wheat noodle were 4554.6, 4584.7, the Starch Vermicelli, 3763.4, 3855.7, the Ra myon, 4916.9, 4876.0, the Buckwheat noodle, 4469.7, 4442.0kcal/kg dry matter, the Potato, 4514.6, 4520.0 and those of the Bread, 3256.9, 3582.6, 3260.5, kcal/kg dry matter, respectively. Those of Sea tangle were 1437.3, 1631.3 and of Laver, 3126.6, 3171.3kcal/kg dry matter, resectively. When the AME values of the starch-foods and seaweeds measureed in present study were compared with energy values calculated by various conversion parameters such as Atwater's Rubner's, Sochun's and FAO's, there appeared dramatic differences indicating that for many of the food items, the latter energy values by conversion factors are hardly acceptable. These data also suggest that the existing energy conversion factors are not applicable to seaweeds and a further study is needed to obtain specific factors for the conversion to biological energy from the chemical composition of seaweeds.

Quality Characteristics of Naengmyeon Noodle Containing Citric Acid and Guar Gum (구연산과 구아검 첨가 냉면의 품질특성)

  • Purpose: The consumption of noodles has increased domestically. However, noodles with high carbohydrate content can cause an increase in blood glucose compared with other foods. Therefore, in this study, Naengmyeon with high resistant starch was prepared for decreasing blood glucose by the addition of 0.5% citric acid (CN), 1% guar gum (GN) or 0.5% citric acid and 1% guar gum (CGN), and then it was incubated in a refrigerator for 3 days, and stored in a freezer for 1 month. Methods: The quality characteristics of these Naengmyeon noodles was evaluated based on total starch, resistant starch, water absorption, cooking loss, turbidity, in vitro starch hydrolysis, and in vivo glucose response. Results: There was no significant difference in the total starch, cooking loss, and turbidity. The resistant starch of GN (1.70%) and CGN (1.84%) was significantly increased when compared with that in Naengmyeon with no additives (N) and CN. In terms of water absorption, CN (86.01%) was the lowest in samples, followed by GN (92.17%), N (94.20%), and CGN (99.16%). CGN with high resistant starch was the lowest in in vitro starch hydrolysis in samples. However, it had no effect on the in vivo glucose response. In vitro starch hydrolysis exhibited a significant positive correlation (r=0.533; p<0.01) with in vivo glucose response. Conclusion: Therefore, future studies are needed to establish the standard for resistant starch contents in processed carbohydrate foods for delaying the increase in blood glucose. If this standard is established, it might help to develop processed foods for diabetic patients.

Studies on the Thermal Conductivity of Model Foods (모형식품의 열전도도에 관한 연구)

  • The model foods similar to Korean typical foods were propared by combining moisture, protein and starch, and their thermal conductivities were investigated. Thermal conductivity of the model foods had a close relationship with food components such as moisture, protein and starch content. The interaction between the thermal conductivity and food components was not found. Thermal conductivity was proportionally increased as the moisture content increased, and thermal conductivity of starch food was lower than that of protein foods under the same level of moisture content of the model foods. The regression equation between thermal condutivity of the model foods. The regression equation between thermal conductivity of the model foods and moisture, protein and starch content at $20^{\circ}C$ was as follows; k = 0.00421M + 0.03152P + 0.05181. Correlation coefficient between calculated by above equation and measured values showed highly significant ($r=0.8418^{\ast}{\ast}$).

Preparation of Semi-solid Infant Foods Using Sweet-pumpkin (단호박을 이용한 반고형 이유식의 제조)

  • This study was conducted to develop semi-solid infant foods using pumpkins. Purees were made from pumpkin and sweet-pumpkin, and were manufactured with blending, steaming or blanching. The moisture content of sweet-pumpkin puree was lower than pumpkin puree, but viscosity, Hunter\`s L, a, b values, $\beta$-carotene and riboflavin contents were higher. Steaming puree from sweet-pumpkin had the highest score in overall-preference and was selected as the ingredient far infant foods. In amylogram, gelatinization temperature was decreased and amylograph viscosity was increased, as the content of modified starch became high. Semi-solid infant floods were prepared with steaming puree from sweet-pumpkin, modified corn starch, rice powder and dairy products such as milk, whole milk powder and skim milk powder. After sterilization of infant foods, Hunter\`s color values were little changed. And the viscosity of infant foods were increased generally, but kept in 3% modified starch group. Sensory evaluation results showed that sweet-pumpkin puree 40%, rice flour 7%, skim milk powder 3% and water 50% was optimum ratio of infant foods.

The Effect of Dietary Ultra Finely Pulverized Rice Starch on Growth Performance and Development of Small Intestine (초미세 분쇄 쌀전분의 섭취가 성장기 Sprague-Dawley 흰쥐의 성장 및 장세포 발달에 미치는 영향)

  • Male weanling Sprague Dawley rats were used to evaluate the effect of dietary rice starch with different particle size on growth performance, intestinal function and proliferation. There were two dietary treatment: rice starch (RS), ultra finely pulverized rice starch with less than $15{\mu}m$ size (PRS). They were eight rats per treatment. In vitro digestibility, body weight change and organs weight were evaluated. Serum GPT, GOT and blood urea nitrogen were analyzed. Transit time, short chain fatty acid contents of cecum, and cell proliferation of duodenum and jejunum were measured. In vitro digestibility of PRS was higher than that of RS. Rats fed ultra finely pulverized rice starch for 3 weeks grew faster than rats fed rice starch. PRS group has higher weights of liver, kidney, spleen and epididymal fat pad, perhaps as a result of increased digestibility. GPT and GOT were not different between two groups. Blood urea nitrogen was higher in RS-fed rats than that of PRS-fed rats. Feeding ultra finely pulverized rice starch resulted in a proliferation of duodenum significantly. These results suggest that ultra finely pulverized rice starch increases the growth performance in weanling animals with reduced number of cells in the cell cycle of small intestine.

Detection of Emetic Bacillus cereus from Ready-to-eat Foods in Markets and its Production of Cereulide under Simulated Conditions

  • B. cereus-produced cereulide as an emetic toxin is commonly isolated in starch-based cooked foods. This study examined the prevalence of B. cereus from ready-to-eat foods in markets by polymerase chain reaction analysis and determined the relationship between the level of B. cereus and the quantity of cereulide in the sample after different storage times and temperatures. The prevalence of general B. cereus in 43 starch foods was 32.6%, and the level of B. cereus ranged from 0.5 to 1.95 log cfu/g, meeting the Korea Food Code Specifications of 3 log CFU/g of B. cereus. No samples revealed emetic B. cereus. Fried rice samples were inoculated with a cereulide-producing reference strain, B. cereus NCCP 14796, to determine the level of B. cereus and the quantity of cereulide in the samples after storage for 0, 4, 6, 8, 20, 24, 30, 48, 72, and 96 h at 7, 25, 35, and 57℃. The average levels of B. cereus at 7, 25, 35, and 57℃ were 4.38, 7.31, 7.88, and 3.82 log cfu/g, and the levels of cereulide were 150.41, 1680.70, 2652.65, and 77.83 ㎍/mL, respectively, showing a significant difference according to the incubation time (P<0.05) and temperature (P<0.001).

Studies On Thermal Diffusivity of Model Foods (모형식품의 열확산도에 관한 연구)

  • The model foods similar to general Korean foods were prepared by combining starch, protein and moisture, and relationship between their thermal diffusivities and components were investigated. Thermal diffusivity of the model foods tended to be proportional with the moisture content. Under the same level of moisture content of the model foods, thermal diffusivity of the starch foods was higher than that of the protein foods, but no interaction among components was found. The measured values was quite agreed upon with the calculated values with 3.60 residual percent. The regression equations between thermal diffusivity and moisture, protein and starch contents at $20^{\circ}C$ and $60^{\circ}C$ were ${\alpha}20^{\circ}C$ = 0.04911M+0.37355P+3.73072, ${\alpha}60^{\circ}C$ = 0.05353M-0.4766P+4.15136, respectively. The correlation coefficients obtained according to the above equation were $0.9650^{**}$ and $20^{\circ}C$ and $0.9002^{**}$ at $60^{\circ}C$.

Prediction of Water Activity for Gelatinized Model Foods (모형식품의 수분활성도 예측)

  • This study was to predict water activity of gelatinized model foods containing moisture, protein and starch with different concentration of humectants such as sodium chlorife and sucrose. The water activity of each samples were determinded by electrical hygrometry. The degree of lowering water activity in model foods with humectant solutions was following order as NaCl>sucrose. Model food $P_2S_1$ was predominant in depression of water activity by humectants than other model foods. The multiple regression equations between water activity and different humectants concentration, compositions and solution ratio of model foods were obtained and $R^2$ values were higher than 0.91.

  • The sensory properties of commercial Tangmyons(starch noodle) prepared with dropping, extrusion-dropping and extrusion-cooking methods were evaluated. In addition, the effects of corn starch on Tangmyon were also examined. Tangmyon prepared with extrusion-cooking had greater intensities in color, gloss, clarity, adhesitiveness, extensibility, slickness and gumminess, except stiffness and hardness, compared to others. Increment of corn starch addition decreased the sensory attributes of Tangmyon, except stiffness and hardness.
