  • Bacillus polymyxa No. 26이 생산하는 생전분 당화형 ${\beta}-amylase$를 쌀가루 반죽시 첨가하여 $45^{\circ}C$에 5시간 둔후 증자하여 제조한 절편을 $4^{\circ}C$ 저온실에 40시간 동안 저장하면서 기계적 검사와 관능검사에 의하여 물성과 맛을 측정 하고 효소 무 첨가의 경우와 비교하여 노화억제 효과를 조사하였다. 기계적 검사시 효소 무 첨가구의 경우는 40시간까지도 굳지 않아 노화되지 않았으며, 경도, 점착성, 씹힘성에서도 큰 차이를 보였다. 관능검사시에도 경도, 촉촉함성, 단맛에 있어서 효소 첨가효과가 크게 나타났으며 떡의 제조시 효소의 이용으로 설탕첨가를 생략할 수 있고 소화성과 맛을 좋게하므로서 품질을 향상시킬 수 있었다.

Effects of Expander Operating Conditions on Nutrient Digestibility in Finishing Pigs

  • Five experiments were conducted using finishing pigs (PIC L326 sires $\times$ C15 dams) to examine the effects of expander operating conditions on nutrient digestibility in finishing pigs. The effects of different expanding conditions (0, 11.7, 24.4, $32.5kg/cm^2$) for corn-SBM based diets (Exp. 1), wheat meddlings diet (Exp. 2), sorghum-SBM based diets (Exp. 3) and wheat-SBM based diet (Exp. 4). Exp. 5 was conducted as a $2{\times}4$ factorial arrangement and factors examined were 2 soy products (raw soybean and SBM) and 4 expanding conditions (0, 14.1, 28.1, $42.2kg/cm^2$). In experiment 1, total production rates (p>0.10) were similar among treatments. The amount of fines decreased (cubic effect, p<0.001) as cone pressure was increased from 0 to $11.7kg/cm^2$, with smaller differences as cone pressure was further increased to $35.2kg/cm^2$. Nutrient digestibilities increased (p<0.02) as the feed was subjected to higher cone pressures. Digestibilities of DM, N, and GE were maximized at $24.4kg/cm^2$ cone pressure. The DE of the diet expanded at 24.4 and $35.2kg/cm^2$ increased by 172 and 109 kcal/kg, respectively, compared to the diet processed at $0kg/cm^2$ cone pressure. In experiment 2, total production and screened pellets production rates were similar among the processing treatments (p>0.21). The amount of fines decreased (quadratic effect, p<0.03) by 9 kg/h as cone pressure was increased from 0 to $11.7kg/cm^2$. Digestibilities of DM (p<0.02), N (p<0.001), and GE (p<0.002) were increased as cone pressure was increased from 0 to $35.2kg/cm^2$. DM, N, and GE digestibility in the pigs fed the midds-based diet increased by 8, 13, and 10%, respectively, at the highest processing cone pressure compared to the diets without any cone pressure. In experiment 3, the conditioned mash moistures for the treatments were numerically similar around 15% moisture. As the expander cone pressure was increased from 0 to $11.7kg/cm^2$, energy consumption for the pellet mill decreased (quadratic effect, p<0.004) from 14.1 to 12.0 kWh/t. Dry matter and gross energy digestibility increased (cubic effects, p<0.006) as cone pressure was increased from 0 to $35.2kg/cm^2$ with the largest improvement occurring as cone pressure was increased from 0 to $11.7kg/cm^2$. Nitrogen digestibility increased (cubic effect, p<0.001) from 78.3 to 81.0% as the feed was subjected to the higher cone pressures, with N digestibility being maximized at $24.4kg/cm^2$ cone pressure. The DE of the diet increased (cubic effect, p<0.001) by 225 kcal/kg as cone pressure was increased from 0 to $11.7kg/cm^2$. In experiment 4, pellet moisture decreased and moisture loss increased as cone pressure was increased from 0 to $35.2kg/cm^2$. Also, starch gelatinization of the wheat-based diets increased from 16.8 to 49.1% as the diets were processed at 0 and $35.2kg/cm^2$ cone pressure. Nutrient digestibilities were not affected (p>0.18) by any increase in cone pressure. In experiment 5, pellet moisture decreased as cone pressure was increased 0 to $35.2kg/cm^2$. The amount of moisture loss for the diets expanded at $42.2kg/cm^2$ was 3.0 and 3.8% for the SBM and raw soybean (RB) diets, respectively. Starch gelatinization for the SBM diets were 19% greater than the RB diets. The RB diets had lower DM, N and GE digestibilities as compared to the SBM diets. The DE of the RB diets were lower (p<0.02) than the SBM diets. DM (p<0.06), N (p<0.02), and GE (p<0.001) digestibilities of the dietary treatments increased as cone pressure was increased 0 to $42.2kg/cm^2$.

Corticosterone Administration Alters Small Intestinal Morphology and Function of Broiler Chickens

  • Two experiments were carried out to study the effects of corticosterone (CORT) administration on intestinal morphology and function of broilers. In both experiments, birds were randomly divided into two equal groups. One group was the control group (CTRL), and the birds were fed with a basal diet. The other was the experimental group (CORT), and the birds were fed with the basal diet plus 30 mg of CORT/kg diet. At 21 days of age, performance, morphological characteristics of intestine, D-xylose level in plasma, activities of digestive enzymes in digesta, digestibility of nutrients and 5-bromo-2-deoxyuridine (BrdUrd)-labeling index of intestinal epithelial cells were determined. CORT administration decreased feed intake, daily gain and feed conversion ratio (p<0.05). CORT also decreased duodenal and jejunal villus height (p<0.05) as well as crypt depth (p<0.05). The D-xylose level in plasma of CORT-treated broilers was lower than that of the control (p<0.05). CORT treatment caused a decrease in apparent digestibility of protein (p<0.05), whereas fat and starch apparent digestibilities were unaffected (p>0.05). CORT administration increased activities of trypsin and amylase (p<0.05), and decreased BrdUrd-labeling index of duodenal and jejunal epithelial cells (p<0.05). In conclusion, CORT administration impaired the normal morphology and absorptive capacity of the small intestine of broiler chickens.

Yeast Single-Cell Protein Production Using Potato Processing Waste Water

  • Four species of yeast, Saccharomyces cerevisiae, Candida utilis, Saccharomycopsis flbuligera, and Schwanniomyces castellii were evaluated for their ability to bioconvert potato processing waste water into microbial protein and the resulting single-cell proteins were evaluated as protein sources for rainbow trout, using in vitro analyses. The studies indicated that Schwanniomyces castellii, which utilizes starch dircetly and converts it into cell mass efficiently, was suitable for the bioconversion. In the single-stage continuous bioconversion, the yield S. castellii cell mass, which contained approximately 37% protein, was 77%, at dilution rate 0.25 $h^{-1}$. Reduction of total carbohydrate was 81%. During batch fermentations, cell mass yield was about 72% and total carbohydrate reduction was 81%. Among the yeasts tested, S. castellii possessed the most fragile cell wall and had a favorable amino acid profile for salmonid fish; protein score of 86% (Met). In an in vitro pepsin digestibility test 80% digestibility (23~38% above control) was observed when cells were pre-heated in a steam bath for 30 min. Results presented should be regarded as being preliminary in nature because they were derived from single experiments.

찹쌀떡의 저장중 텍스쳐 변화 (Textural Changes of Glutinous Rice Cakes during Storage)

  • 일반 및 통일 찹쌀 전분의 성질 및 찹쌀떡의 저장에 따른 텍스쳐의 변화를 조사하였다. 일반 찹쌀 전분 입자는 통일 찹쌀 전분보다 동그란 형태였으며 크기가 작았다. 일반 찹쌀 전분의 물 결합 능력 및 swelling power는 통일 찹쌀 전분보다 높았다. 통일 찹쌀떡의 호화도는 일반 찹쌀떡에 비하여 낮았으며, 일반 찹쌀떡의 호화도는 저장 2일까지 직선적으로 감소하였고, 통일 찹쌀떡은 저장 1일까지 직선적으로 감소하였다. 이 경향은 떡의 단단함의 증가와 밀접한 관계가 있었으며, 관능 검사 결과 단단함의 변화는 저장 시간의 변화와 품종의 차이에 따라 고도의 유의차를 보였다.

Pediococcus spp.-fermented chicken meat for dogs

  • An experiment was conducted to evaluate Pediococcus spp.-fermented chicken meat as a snack for dogs. The fermented or non-fermented snacks used in this study were prepared through the following process; meat mixtures containing 52.8% MDCM, 35.2% chicken breast meat (CBM) and 9.7% corn starch were inoculated with or without Pediococcus spp., incubated at 37℃ for 24 h and then sterilized at 121℃ for 20 min. During the 24-h fermentation, the pH of fermented chicken snack dropped rapidly with concomitant increase in number of lactic acid bacteria. The nutritional composition was not altered by fermentation. In vitro pepsin nitrogen digestibility was higher (p < 0.05) in the fermented snack compared with the non-fermented snack. Upon storage at room temperature for 14 days, bacteria grew slowly in fermented vs. non-fermented snack samples. In a palatability trial, dogs preferred non-fermented over fermented snack food. In 12-d-long feeding trial, fecal ammonia content was lowered, but fecal lactic acid content was increased in dogs fed the fermented vs. non-fermented snack food. Our study shows that the fermented MDCM-based snack exhibited good preservability upon storage, and improved in vitro nitrogen digestibility and fecal characteristics in dogs.

Effect of Xylanase on Performance and Apparent Metabolisable Energy in Starter Broilers Fed Diets Containing One Maize Variety Harvested in Different Regions of China

  • The objective of this study was to investigate the variability in broiler performance, apparent metabolisable energy (AME) and ileal digestible energy (IDE) between five different maize samples fed with and without xylanase at 16,000 U/kg. Various in vitro characterisations were conducted to determine if any could predict performance or AME. Samples of the maize were harvested in five diverse regions and fed individually in a mash diet as follows (g/kg): test maize 608.3; soya bean meal (SBM) 324.1; poultry fat 25.2; salt 4.6; met 2.6; lys 1.6; thr 0.5; limestone 9.7, dical 18.4; vit/min 5.0; CP 210 and ME (kcal/kg) 3,085. The diets were fed to 720 broilers with 6 replicates, each containing 12 birds per treatment, from 0 to 18 d of age. Maize samples were analysed for starch, protein, crude fibre, fat, protein solubility index (PSI) and vitreousness using near infra red reflectance spectroscopy (NIR). They were also assayed using an in vitro starch digestibility method. The results showed that there was no effect of harvest region on the feed intake (FI), body weight gain (BWG) or feed conversion ratio (FCR) of the broilers over the 18 d period (p = 0.959, 0.926, 0.819 respectively). There was an improvement in all parameters with the addition of xylanase (FI p = 0.011; BWG and FCR p<0.001). There was a significant positive effect of xylanase on IDE, AME, IDE Intake (IDEI) and AME intake (AMEI) (p<0.0001 in all cases). Although there was no significant effect of maize source, there was a strong trend towards variability in IDE (p = 0.066) and AME (p = 0.058). There were no significant correlations (p<0.05) between any proximate or physiochemical values and any performance or AME values. This may suggest that none of those selected were suitable predictors for performance or AME. The broilers performed well according to the breed guidelines, with slightly increased FI, increased BWG and similar FCR prior to the addition of xylanase. When FCR and BWG were analysed with FI as a covariate, xylanase addition remained significant suggesting that the improvement in BWG and FCR was driven by an increase in digestibility and nutrient availability.

타피오카 전분을 이용한 넙치(Paralichthys olivaceus)용 고효율 배합사료 개발 (Development of High Efficiency Extruded Pellets with Tapioca Starch in Olive Flounder Paralichthys olivaceus)

  • This study compared the effects of feeding diets consisting of an experimental extruded pellet with tapioca starch (EEP), commercial extruded pellet (CEP), and raw-fish-based pellet (MP) on the growth, flesh quality, and apparent digestibility coefficient of the olive flounder Paralichthys olivaceus. Two replicated groups of 4,000 fish each (initial mean weight: $81.8{\pm}3.5g$) were fed one of the experimental diets for 5 months. After the feeding trial, the final mean weight, weight gain, specific growth rate, and feed efficiency of fish fed the EEP was significantly higher than those of fish fed the CEP and MP. Moisture content in the whole-body of fish fed MP was significantly higher than those of fish fed other diets. However, the highest crude protein in the whole-body was found in fish groups fed the EEP. Significantly higher contents of 24:1n-9, 20:5n-3, 22:6n-3 and lower 18:1n-7 was observed in fish fed the EEP compared with fish fed the MP. The amino acid contents in the whole-body showed significant differences in the composition depending on the feed, but the distribution of free amino acids showed similar patterns. Among amino acids, glutamic acid showed the highest content in all the experimental groups, and the threonine, cysteine, and lysine contents were significantly higher in the groups fed with EEP and CEP than in the group fed with MP. Digestibility of nutrients of the EEP was significantly higher than that of fish fed the CEP. This suggests that extruded pellets can be used to feed olive flounder without compromising growth and flesh quality in comparison to raw-fish-based moist pellets. Formulation of the EEP could be used as a practical feed for olive flounder.

침지조건과 압력이 현미의 취반특성에 미치는 효과 (The Effects of Steeping and Cooking Pressure on Qualities of Cooked Brown Rice)

  • This study was conducted to determine the optimal cooking conditions for brown rice using an electric pressure rice cooker. The effects of steeping conditions and cooking pressure on the hydration, gelatinization, texture and palatable properties of cooked brown rice were evaluated. Based on water uptake and DSC data, the optimal steeping time and temperature for brown rice were determined to be 25 minutes and ${\sim}60^{\circ}C$, respectively. The cooking conditions for brown rice were then divided into the following 6 categories: steeping at $25^{\circ}C$ for 25 minutes and cooking at an atmospheric pressure of 1.7 (25P) or 1.9 (25HP), steeping at $57^{\circ}C$ for 25 minutes and cooking at an atmospheric pressure of 1.7 (57P) or 1.9 (57HP), steeping at $85^{\circ}C$ for 15 minutes and cooking at an atmospheric pressure of 1.7 (85P) or 1.9 (85HP). The susceptibility of cooked brown rice starch to degradation into maltose by ${\alpha}$-amylase, which is related to the degree of gelatinization and in vitro digestibility, were then determined. The amount of maltose produced by cooked brown rice samples was highest in the 57HP group, followed by the 57P and 85HP groups. Storing cooked brown rice at $73^{\circ}C$ for 24 hours resulted in significantly higher amounts of starch being degraded into maltose in the 57P, 57HP and 85HP groups than in the other groups. Textural analysis demonstrated that the 57P, 57HP and 85HP groups had significantly lower gumminess and chewiness values when compared to the other groups, and that 57HP received had the lowest hardness of all treatments. These results were confirmed by the results of the sensory evaluations. Furthermore, the 57P and 57HP groups were found to have a higher glossiness, stickiness aroma and taste score than the other groups. These findings were taken to indicate that steeping conditions and pressure exerted a positive synergistic effect on the cooking quality of brown rice. The texture analyzer also revealed that storing the cooked rice at $73^{\circ}C$ for 24 hours only led to significantly lower scores in gumminess, hardness and chewiness in the 57P and 57HP groups, which indicates that these groups underwent a lesser degree of retrogradation than other groups. Taken together, the results of the present study demonstrate that steeping brown rice at $57^{\circ}C$ for 25 minutes and a higher cooking pressure improved the palatability and in vitro digestibility of brown rice significantly.

STUDIES ON THE NUTRIENT AVAILABILITIES OF FEED INGREDIENTS IN ISRAELI CARP (Cyprinus carpio)

  • Digestibilities of nutrients and energy are among the most important parameters to be determined in feed evaluation research. The apparent digestibility coefficients (ADC) of protein, total carbohydrate (TCHO), fat, energy and amino acids were determined for 14 common feed ingredients using chromic oxide as external indicator with Israeli carp (Cyprinus carpio). The ingredients tested were; corn, corn starch, gelatinized starch, wheat middling, wheat grade inferior, corn gluten meal, rapeseed meal (solvent extracted), soybean meal (solvent extracted), blood meal (drum dried), feather meal(hydrolyzed), file fish meal (flame dried), sardine fish meal (steam dried), sardine fish meal (flame dried) and brewers yeast (dehydrated). The overall ADC values were high in Israeli carp showing high capacity to digest their feed ingredients irrespective of plant or animal sources. In addition the ADC of plant protein was high enough to support the successful supplementation of fish meal with other plant proteins.
