This study compared the physicochemical properties of soybean curd residue and black soybean curd residue produced by hot air-drying and freeze-drying. Regardless of drying method, the crude protein, crude ash, crude fiber contents, pH, L, a, b color values and water soluble index were higher in soybean curd residue, whereas total polyphenol contents and antioxidant activity were higher in black soybean curd residue. Significant differences in water absorption index, oil absorption capacity and emulsion activity were observed between soybean curd residue and black soybean curd residue in freeze-drying. On the other hand, the emulsion stability was not significant difference in both hot-air drying and freeze-drying. The crude protein and crude fiber contents of soybean curd residue were not significant difference between hot-air drying and freeze-drying. Freeze-drying resulted in higher crude ash contents, pH, water absorption index, water soluble index, oil absorption capacity, emulsion activity and emulsion stability than hot-air drying. Hot-air drying have caused significantly higher water contents, water activity, total polyphenol contents and antioxidant activity in soybean curd residue than freeze-drying. In conclusion, soybean type and drying methods affect the physicochemical and quality characteristics of soybean curd residue, which could be important factors in the manufacture of processed foods.
비지는 59.0%의 식이섬유를 함유하였고 막걸리박은 26.0%의 식이섬유를 gakdb하였다. 밀가루에 비지나 막걸리박을 10% 혼합하여 빵을 만들어 제빵 특성을 100% 밀가루빵과 비교하였다. 비지나 막걸리박을 10% 혼합하였을 때 반죽의 수분 흡수율과 빵의 무게는 증가하였으나 빵의 부피는 40% 정도 r마소하였다. 관능검사 결과 비지빵과 막걸리빵의 색깔, 모양, 속결의 질감 등은 100% 밀가루빵에 비하여 품질이 떨어졌다. 비지빵의 단백질 함량은 밀가루빵의 13.5%에서 15.4%로 증가하였고, 막걸리빵의 경우 16.4%로 증가하였다. 빵의 식이섬유 함량은 비지빵의 겨우 밀가루빵의 3배, 막걸리빵의 경우 2배로 증가하였다.
대두 제품 중 대두, 두유, 두부, 생대두분말, 분리대두단백(isolated soy protein, ISP), 된장, natto, tempeh의 이소플라본, 수용성 식이섬유, 대두 올리고당, 레시틴, 사포닌의 함량을 분석하였다. 건물 기준으로 생대두분말과 natto, 두유에는 각각 489.1 mg%, 308.3 mg%, 138.1 mg%의 이소플라본이 함유되어 있었다. 이소플라본의 aglycone/glucoside 비율을 natto에 비하여 된장과 tempeh가 더 높았다. 생대두분말은 24.3%의 식이 섬유와 2.87%의 대두 올리고당을 함유하고 있었다. 두유의 경우 식이 섬유의 절대량은 많지 않으나 soluble fiber/total dietary fiber 비가 59%로 가장 높았다. 건물기준으로 두부에는 20.1%의 식이 섬유와 1.13%의 레시틴이 함유되어 상대적으로 많았다. 분리대두단백에는 레시틴과 사포닌이 함유량은 각각 0.63%와 0.65%였다. 비록 대두의 생물학적 활성물질함량은 레시틴을 제외하고 대두 가공품 중 가장 높았으나 이를 일회 분량으로 환산한 경우 두유 내 생물학적 활성물질의 양이 대두와 매우 유사하였다. 즉 두유 일회 분량(200 mL)에는 이소플라본 31.5 mg(raw soybean 15.9 mg), 식이섬유 2.59 g(raw soybean 4.59 g), 올리고당 0.57 g(raw soybean 0.50 g), 레시틴 0.10 g(raw soybean 0.10 g), 사포닌 0.11 g(raw soybean 0.10 g)이 함유되어 있어, 두유는 일상적으로 섭취하기 편하고 대두 생리활성 물질의 좋은 공급원이 될 수 있을 것으로 판단된다.

Soybean (Glycine max (L.) Merill) is a very outstanding material crop with high protein and oil contents. We conducted this study to evaluate forage value and usability of soybean varieties as livestock forage. Three soybeans cultivars, OT93-26, Geomjeongsaeol, and Pungwon, were evaluated for forage use in this study, and Kwangpyeongok and Yeongwoo were used as check forage corn and rice, respectively. The whole soybean plants were harvested at the R5 (beginning seed development)- and R6 (full seed)-reproductive stages for analyzing forage usability and quality. Days to harvesting of the R5 stage-OT93-26 was the shortest among the tested crops while that of Yeongwoo was 122 days. The fresh and dry matter yields of all 3 soybeans were greater at R6 stage than at R5. Crude protein of the soybean cultivars harvested had a higher compared to the rice and corn regardless of the harvesting stage. Contents of crude fiber, neutral detergent fiber and acid detergent fiber of Yeongwoo had the lowest whereas Pungwon harvested at R5 were the highest. Among the soybeans, digestible dry matter, dry matter intake, and relative feed value of R6-harvested Geomjeongsaeol and Pungwon were high more compared to those at the R5-harvested, but in case of OT93-26 those at R6 stage were inversely measured rather than those at R5 stage. In conclusion, soybean can be used as s forage with high nutritive value for livestock. Moreover, Geomjeongsaeol can be applied to develop new forage soybean varieties with high nutritive value, and R6 stage is the optimum harvesting stage in yield and quality of the tested soybeans more than R5.
The effects of raw and processed small black soybean powders on dietary fiber content and gastrointestinal function in rats were investigated. The crude oil, protein, and ash contents of raw small black soybean powder were not significantly different from those of processed small black soybean powders. The germination process increased soluble and insoluble dietary fiber contents significantly, as compared to raw small black soybean powder. The germinated small black soybean powder diet led to a significantly different food intake than the basal diet in both normal and loperamide-induced constipated rats. The body weight gains of the experimental groups, however, were not significantly different from that of the basal diet groups for both the normal and loperamide-induced rats. The gastrointestinal transit times and fecal weights for normal and loperamide-induced rats consuming the processed small black soybean powder diet were significantly different from those on a basal diet. These results suggest that the processes of cooking and germinating the small black soybean might contribute to acceleration of fecal excretion in both experimental normal and constipation model rats.
Fifteen Inner Mongolian wethers with permanent ruminal and duodenal cannulas were used to study the effects of dietary rumen-undegradable protein (RUP) to rumen-degradable protein (RDP) ratios or protein sources on fiber digestion in the gastrointestinal tract and ruminal fluid characteristics. Fiber digestion and ruminal fermentation were not affected (p>0.05) by dietary RUP to RDP ratios (from 1.54 to 0.72). Soybean meal supplementation improved ruminal digestion. Fish meal supplementation increased (p<0.05) the ruminal degradability of fiber. The different RUP to RDP ratios (from 1.54 to 0.72) did not influence (p>0.05) ruminal fluid pH, but there were differences (p<0.05) in ruminal fluid $NH_3-N$ concentration because of urea replacement. Soybean meal as a dietary protein source decreased (p<0.05) ruminal fluid pH and increased (p<0.05 or p<0.01) $NH_3-N$, acetate, propionate and butyrate concentrations in the rumen. Fish meal as a dietary protein source decreased (p<0.05 or p<0.01) ruminal $NH_3-N$ and acetate concentrations and increased (p<0.05) ruminal propionate concentration. It can be concluded that dietary protein sources have more significant effect on fiber digestion and ruminal fermentation than different dietary RUP to RDP ratios, when the dietary crude protein requirements of growing sheep are satisfied.
In recent yearn, eating habit that is not right causes disease the dietary fiber (DF) intakes of Korean decreases. Occurrence of chronic disease such as constipation increased gradually. This study was performed to investigate of high fiber standard recipes for one day including major source of DF such as vegetables, cereals and grain products, seaweeds, fruits, fungi and mushrooms, and legumes and products for improving constipation through dietary treatment. Nutrient analysis per person marked energy, protein, fat and DF content. The food of high I : S ratio (Insoluble fibers: Soluble fibers) are soybean sprout salad, rice gruel with vegetables, pan fried mushroom with vegetables. The food of low I:S ratio are fermented soybean paste stew, fried rice with kimchi, fruits salad with yogurt dressing and seasoned noodle with vegetables. The representative high fiber diet menu is rice gruel with vegetable, rice with radish and oyster, fermented soybean paste stew, kimchi stew, assorted soybean sprout salad, three kinds of pancake roll, pan fried mushroom with vegetables, fruits salad with yogurt dressing and seasoned noodle with vegetables. The menu developed in this study, contains fiber of at least 8.97 times of RDA and in point view of 1 day intake, that is similar to the scope of RDA, 20-25 g per day. This findings should be appliable to nutritional education and medical food for constipation. And also, the aim of study is constipation patients easily applicate that developed the food of high fiber using Korean common food. And the result of the study will be the basic data about clinical test of food developed in this study and the danger of high fiber diet. The representative high fiber diet menu is rice gruel with vegetable, rice with radish and oyster, fermented soybean paste stew, kimchi stew, assorted soybean sprout salad, three kinds of pancake roll, pan fried mushroom with vegetables, fruits salad with yoghurt dressing and seasoned noodle with vegetables. This findings should be applicable to nutritional education and medical food for constipation.
Dasik is a type of Korean traditional confectionery that is kneaded with various grains, nuts or herb flour and honey and then pressed with a decorative press. Soybeans are a rich in protein, lipids, dietary fiber, minerals and fat soluble vitamins. Spirulina is a functional food that contains protein, lipids, carbohydrates, minerals, vitamins, dietary fiber and pigments. In this study, soybean Dasik containing spirulina was developed in an attempt to provide an easy method of incorporating spirulina into daily dietary life. In addition, we evaluated the quality characteristics of the soybean Dasik with spirulina that was developed here. Specifically, 0, 10, 20 and 30% spirulina was added to the soybean powder that was used to prepare soybean Dasik. Soybean Dasik that contained 30% spirulina had a higher moisture content and lower hardness when compared to other groups. In addition, the L, a and b value decreased as the level of spirulina increased. Furthermore, the antioxidant activity of soybean Dasik increased according to the increase in the addition of spirulina. Specifically, the $IC_{50}$ values of the DPPH and hydroxyl radical scavenging activity of the control group were 76.6 mg/mL and 100.7 mg/mL, respectively, whereas these values were 26.3 mg/mL and 32.9 mg/mL, respectively, in Soybean Dasik that contained 30% spirulina. When a sensory evaluation was conducted, the overall preference decreased as the level of added spirulina increased. When the buying intension was evaluated, the control group had the highest score (7.8), followed by that of the Dasik that contained 20% spirulina (7.2) The buying intention was lowest for the Dasik that contained 30% spirulina. In conclusion, Soybean Dasik that contained up to 20% spirulina would be maketable.

This experiment was conducted to evaluate feed value and usability of soybean varieties as livestock forage. In this study, three soybean cultivars, OT93-26, Geomjeongsaeol, and Pungwon, were harvested at R5 (beginning seed development)- and R6 (full seed)-reproductive stages for analyzing feed value of soybean. Days to R5 stage harvest of OT93-26 among the three soybean cultivars was 55 days and the shortest while Pungwon took 103 days to reach at R6 stage. The R6-harvested soybeans had higher dry matter (DM) yields and crude protein (CP) content than the R5-harvested. However, both DM and CP were the highest in the R6-harvested Geomjeongsaeol. Contents of neutral detergent fiber (NDF) and acid detergent fiber (ADF) of Pungwon harvested at R5 were the highest whereas the R6-harvested Geomjeongsaeol had the lowest. Digestible dry matter (DDM), dry matter intake (DMI), and relative feed value (RFV) of the R6-harvested Geomjeongsaeol and Pungwon were higher than those of the R5-harvested, but in case of OT93-26, those at R6 stage were low rather than those at R5 stage. However, soybean could be used as alternative forage with high feed value for livestock. Taken together, Geomjeongsaeol could be used for developing new forage soybean varieties with high feed value, and R6 would be the optimum harvesting stage for yield and quality of forage soybean.
This study was conducted to determine changes in th contents and composition of dietary fiber during the growth of soybean sprout. Soybean was soaked in water at $25^{\circ}C$ for 2hrs and cultivated at 2$0^{\circ}C$ for 7 days under dark condition. The soybean sprouts were divided into cotyledon and axis and sampled every 24hrs. The analysis methodlogies used were Van Soest's NDF, AOAC's ADF and lignin and Prosky's IDF, SDF, TDF. The weight of 100 sprouts increased gradually from 20.26g to 90.12g during the growth periods. The weight increased to 344.9% of the original weight. The germination rate was 100% after soaking at $25^{\circ}C$ for 2hrs. Root length increased gradualy from 0.6cm at 1st day to 17.2cm at 7th day. The crude ash and crude fat contents showed no significant change in the cotyledon and axis. The crude protein contents increased in the cotyledon and axis, whereas the total carbohydrate content didn't have general tendency. The insoluble dietary fiber(IDF), soluble dietary fiber(SDF) and total dietary fiber(TDF) contents of cotyledon were no significantly different from 20.01%, 1.45%, 21.46% at 1st day to 22.75%, 2.07%, 24.82% at 7th day on dry basis. In axis those contents increased from 23.19%, 1.97%, 25.16% at 1st day to 32.78%, 3.02%, 35.80% at 7th day, respectively. The neutral detergent fiber(NDF) contents of cotyledon and axis increased from 4.35% to 6.39% and from 6.44% to 26.60% respectively on dry basis. The acid detergent fiber (ADF) contents of cotyledon and axis increased from 2.84% to 4.91% and from 2.5% to 4.7%, but there were no significantly different in the hemicellulose and lignin contents on dry basis. The hemicellulose and lignin contents of axis increased with culture periods from 1.70% to 4.41% and from 0.20% to 2.11%, respectively. The cellulose contents increased from 4.54% to 20.35% on dry basis.
