The Formation of Magnetite Nanoparticle in Ordered System of the Soybean Lecithin

  • A method of preparation of magnetite nanoparticles in ordered systems, as in vesicle and microemulsion, consisting of soybean lecithin and water has been introduced. The size of magnetite grain was controlled by the content of soybean lecithin and size of liposomes in the systems. It was found by experiment that magnetite nanoparticles were formed inside the double layer vesicles. The magnetite nanoparticles were separated by magnetic separation and centrifugation and the dispersion of the magnetite nanoparticles prepared at 10% (w/w) soybean lecithin was particularly stable. The formation of pure magnetite nanoparticles was confirmed by analyses of XRD and electron diffraction pattern.

Application of the Combination of Soybean Lecithin and Whey Protein Concentrate 80 to Improve the Bile Salt and Acid Tolerance of Probiotics

  • To improve the bile salt and acid tolerance of probiotics against gastrointestinal stresses, we investigated the effects of soybean lecithin and whey protein concentrate (WPC) 80 on the bile salt tolerance of Lacticaseibacillus paracasei L9 using a single-factor methodology, which was optimized using response surface methodology (RSM). The survival rate of L. paracasei L9 treated with 0.3% (w/v) bile salt for 2.5 h, and combined with soybean lecithin or WPC 80, was lower than 1%. After optimization, the survival rate of L. paracasei L9 incubated in 0.3% bile salt for 2.5 h reached 52.5% at a ratio of 0.74% soybean lecithin and 2.54% WPC 80. Moreover, this optimized method improved the survival rate of L. paracasei L9 in low pH condition and can be applied to other lactic acid bacteria (LAB) strains. Conclusively, the combination of soybean lecithin and WPC 80 significantly improved the bile salt and acid tolerance of LAB. Our study provides a novel approach for enhancing the gastrointestinal tolerance of LAB by combining food-derived components that have different properties.

혼합유중(混合油中) Tocopherol의 열산화(熱酸化)에 미치는 대두(大豆) Lecithin의 효과(效果) (Effect of Soybean Lecithin on the Thermal Oxidation of Tocopherol in Blended Oil)

  • The blended oil was prepared from cottonseed oil and palm olien. The oxidative stability of blended oil after the addition of natural tocopherol and soybean lecithin during heating was investigated and the effects of lecithin were evaluated. The result obtained were as follows: 1. When the concentration of palm olein in blended oil during heating was increased, the oxidative stability was improved. 2. By both addition of natural tocopherol and soybean lecithin during heating in blended oil, induction period was considerably increased and residual ratio of tocopherol was high. 3. The oxidative stability of potato chips prepared from blended oil was higher in the prsence of lecithin than in the absence of it.

유화조건이 홍화적색소의 물성에 미치는 영향 (Effect of Emulsion State on the Physical Properties of Carthamus Red Pigment)

  • 상기 실험으로부터 얻어진 결과를 요약하면 다음과 같다. 1. Hunter-value를 측정한 결과 hunter L-value 즉, 백색도에 있어서는 glycerin+carthamin+lecithin의 경우가 실온저장 및, 열악조건 그리고 광조사시에 있어서 모두 8 시간이 경과하면서부터는 급격하게 상승하는 모습을 보였다. 2. 실온하에서 hunter a-value 즉, 적색도에 있어서는 carthamin 첨가구가, b-value 즉, 황색도에 있어서는 paprika 첨가구가 더 강하게 나타났다. 열악조건에서는 실온저장의 경우와 다소 다른 양상을 보여주었는데, D.W+carthamin+lecithin의 경우에 있어서도 hunter L-value가 낮은 값을 나타냈으며, hunter avalue의 경우 soybean oil+paprika에서도 높은 값을 보여주었다. 3. 유변학적 특성에 대한 실험에서 비교적 고점도를 가지고 있는 glycerin을 base material로 하였을 때는 이에 비해 저점도라고 할 수 있는 soybean oil이나 증류수가 쓰여졌을 때보다 spindle의 rpm에 따른 viscosity나 shear rate, shear stress등의 값이 월등히 높은 값을 나타냈다. 그리고, 일반적으로 spindle의 rpm에 대한 shear rate 및 shear stress의 값은 비례적으로 증가하는 경향을 나타냈다. 유화제의 사용여부에 있어서는 lecithin을 사용했을 경우, 사용하지 않았을 때보다 높은 점도를 나타냈고, 통일한 조건에서 carthamin보다는 paprika가 두 배 정도 더 높은 점도를 나타냈다. 4. soybean oil을 사용한 실험구에 있어서는 lecithin의 첨가유무가 점도에 아무런 영향을 미치지 않는 것으로 나타났으나, glycerin을 사용한 실험구에 있어서는 유화제인 lecithin을 병행했을 경우, 특이하게도 오히려 paprika에서보다 carthamin에서 더 높은 점도를 나타냈다. 5. Shear stress 의 경우 soybean oil 첨가구와 glycerin 첨가구가 현저한 차이를 보이며 증가한 반면, shear rate에 있어서는 두 가지 경우 모두 거의 같은 경향을 나타낸 점이 특이했다.

Ram semen preserved at 0℃ with soybean lecithin Tris-based extender substituted for egg yolk

  • Objective: The present study evaluated the preservation of ram semen at 0℃ using soybean lecithin with a Tris-fructose extender. Methods: Semen was collected by artificial vagina ejaculation from six rams with proven fertility. High quality ejaculates were diluted by soybean lecithin (0.25%, 0.5%, 0.75%, 1.0%, 1.25%) using Tris-fructose extender and control (Tris-fructose egg yolk extender), respectively. The ejaculates were diluted to a concentration of 5×108 sperm/mL, followed by cooling to 0℃ in 90 min and maintaining the temperature for 12 days. The diluted semen samples were examined and recorded for sperm progressive motility, acrosome integrity at 0, 24, 72, 144, 216, 288 h, respectively. Two hundred and twenty-three ewes were inseminated for 216 h with optimal soybean lecithin concentrated semen or control via trans-cervical insemination. Results: The results showed that there were no differences in sperm progressive motility at 0, 24, 72, and 144 h (p>0.05). After 216 h, the sperm progressive motility in the control group and 0.5% concentration groups was significantly higher when compared to 0.25% concentration (p<0.05). The 0.5% concentration group demonstrated the highest survival rate and had no difference with the control group (p>0.05). At 216 h, the sperm progressive motility of all groups was still above 50%. The acrosome integrity of all groups was decreased with prolongation of storage time, but there was no difference at each time point (p>0.05). There was no significant difference in the lambing rate and pregnancy rate between the 0.5% concentration group and the control group (p>0.05). Conclusion: These results suggest that ram sperm is capable of fertilization after preservation at 0℃ with 0.5% of soybean lecithin in Tris-based extender substituted for egg yolk and produce normal offspring after insemination.

레시틴의 첨가 유, 무에 따른 대두유의 수소첨가 반응성과 리놀렌산의 변화 (Changes of Linolenic Acid Content and Reactivity during Partial Hydrogenation of Soybean Oil with and without Lecithin)

  • Changes of fatty acid composition and reaction rate were investigated according to reaction condition during partial hydrogenation reaction of soybean oil until its iodine value decreased from 134 to 110. The reaction conditions were varied in the range of from $170^{\circ}C$ to $210^{\circ}C$ of temperature, from 1.3 atm to 4.2 atm of pressure and from 0.005% to 0.1% of nickel concentration as catalyst. Lecithin was added in soybean oil to investigate the change of reaction rate. The result of addition of lecithin showed that reaction rate decreased to from 2 to 6 times in comparison with non-additive system.

Broiler에 있어서 대두 Lecithin의 사료적 가치에 관한 연구 (A Study on the Utilization of Soy-Lecithin in Broiler Ration)

  • Broiler에 있어서 대두유의 처리공정중에서 부산물로 생산되는 Lecithin의 사료적가치에 관한 연구결과를 요약하면 다음과 같다. 1. Lecithin의 일반성분 무기성분 비타민 그리고 총에너지를 측정하였다. 2. Lecithin을 Broiler 후기사료에 3%, 6%, 9%, 12%까지 첨가하여도 병아리의 증체량에는 대조구와 유의차가 없었다. 3. 사료섭취량에 있어서는 대조구 Lecithin 3%, 6%, 9%의 처리간에는 유의차가 없었으나 12%구는 6%, 9%구에 비해 유의적으로 많았다. (P<0.05) 4. 사료요구율에 있어서도 각 처리구간 유의차가 없었으나 Lecithin 9%구가 2.32로서 요구율이 가장 낮았고 그 다음이 Lecithin 6%구의 2.40,3%구의 2.41의 순이었다. 5. 도체성적에 있어서 도체의 수분함량은 71.2-72.5%로서 처리간 유의차가 없었고 조단백질 함량은 15.93-16.45, 조지방의 함량은 6.19-7.05%였다. 6. 복지방함량은 42.4-63.7g으로 Lecithin 첨가구가 약간 낮은 경향을 나타냈으며 간중량도 처리간 유의차가 없었다. 간지방중량은 2.2-2.4g정도로서 처리간 유의차는 없었으나 Lecithin 첨가구가 약간 낮은 경향을 나타내었다. 7. 이상의 시험결과 대두유 부산물인 Lecithin은 Energy 사료로서 우수하였다.

Hypocholesterolemic Effects of Soybean Lecithin in Cholesterol-Fed Rats

  • The present study was performed to elucidate the hypocholesterolemic action of lecithin on the diet-induced hypercholesterolemia in rats. Male Sprague-Dawley rats (n=24) were fed lecithin-free (control) diet or diets containing $2\%\;or\;5\%$ lecithin for 4 weeks. Hypercholesterolemia was induced by adding $1\%$ cholesterol and $0.5\%$ cholic acid to all diets. No difference was found in food intake and body weight gain among groups. The lecithin treated groups showed significant improvement in the plasma levels of total cholesterol and LDL-cholesterol (p<0.05) compared to the control group, while the plasma triacylglyceride was not significantly affected 1he atherogenic index and HDL-cholesterol level were decreased in the lecithin groups. The diets with $2\%\;or\;5\%$ lecithin significantly decreased the activity of cholestetyl ester transfer protein (CETP) by $14\%\;or\;17\%$, respectively. Also, lecithin diets increased the activity of lecithin: cholesterol acyltransferase (LCAT). These results suggest that lecithin accounts for the hypocholesterolemic effect due to the decreased CETP activity and increased LCAT activity.

인지방질 함유식품 첨가에 따른 백설기의 물성적 특성 (Mechanical Characteristic of Backsulgi Added with Rich Sources of Phospholipid)

  • The purpose of this study was to select an ingredient acting as a natural emulsifier to retard the retrogradation of rice cake by the measurement of mechanical characteristics of the cakes. For the purpose, Backsulgi, the most basic type of rice cake, was prepared by adding various ingredients having high contents of lecithin such as raw soybean powder, parched soybean powder, soybean oil, egg yolk powder, and the measurements and observations on the chromaticity, swelling power, pore ratio and cross-section were made. In addition, changes in the textural characteristics of Backsulgi samples were determined while storing them at the temperatures of 4$^{\circ}C$ and 20$^{\circ}C$ for 0, 1, 2 and 3 days. The results of the study were as follows: 1. In terms of chromaticity, the Backsulgi samples added with egg yolk powder, raw soybean flour and parched soybean flour were higher in yellowness(b) than the controls. 2. Both swelling power and pore ratio of Backsulgies added with raw soybean flour were higher than those of controls. 3. A cross-sectional observation using an electron microscope indicated that rice flour particles of controls had uneven pores and were conglomerated in a large lump while Backsulgi samples of raw soybean flour or roasted soybean flour had large and even pores and showed loosened bonding to be transformed into a sponge shape. 4. In hardness, Backsulgi samples added with raw soybean flour had less changes in hardness than that of controls, indicating that the effect of retarding retrogradation was higher when the storage time got longer.

인지방질 함유식품 첨가에 따른 백설기의 관능적 특성 (Sensory Characteristic of Backsulgi Added with Rich Sources of Phospholipid)

  • The purpose of this study was to select a cake ingredient acting as an emulsifier to retard the retrogradation of rice cake commercially available. For the purpose, Backsulgi, a traditional Korean rice cake, was prepared by adding various ingredients having high contents of lecithin such as raw soybean powder, parched soybean powder, soybean oil, egg yolk powder, and then the changes in the sensory and textural characteristics of the cakes were determined while storing them at the temperatures of 4$\^{C}$ and 20$\^{C}$ for 0, 1, 2 and 3 days. Based on the sensory evaluation, Backsulgi samples added with raw soybean flour were significantly different in roasted nutty smell, roasted nutty taste, softness, moistness, cohesiveness and overall quality compared with the control in the longer storage time at 20$\^{C}$.
