  • 1) It was found that the polished rice is short of Iysine, methionine, cystine, and tryptophan among the essential amino acids, and that it shows no significant variations with regard to its pattern of geographical region. 2) Comparing in the contents of essential amino acids in the cereals, such as polished barley, wheat, great millet, and soy bean, the soy bean is found to be better than the polished rice, while the others to be either poorer or similar than the polished rice. 3) The aminal experiments observed with the mixed diet revealed that the most ideal composition of the mixed diet is the one composed of 70% polished rice, 20% polished barley, and 10% soy bean.

  • 식품 중의 몇몇 유리 D-아미노산이 column switching method에 의해 검출되었다. D-아미노산과 L-아미노산의 총량의 정량은 $C_{18}$ 컬럼을 사용한 비키랄 분리에 근거한다. L-아미노산에 대한 D-아미노산의 수준은 o-phthalaldehyde로 유도체화된 아미노산의 postcolumn reaction detection을 포함하는 column switching system에 의해 정량되었다. Postcolumn detection system의 키랄 분리는 chiral crown ether 컬럼에 의해 실행되었다. 이 system은 간장과 발효된 콩, 그리고 콩 같은 식품 중에 있는 D-아미노산의 정량에 적용된다. 이 achiral/chiral coupled-column system하에서는 시료 전처리과정이 중요함을 알게 되었다. Phenylalanine은 시판용 간장 속에 242ppm, 재래식 간장 속에는 102ppm, 발효된 콩에는 1g당 8.34mg, 콩에는 1g당 2.87mg이 함유된 것으로 밝혀졌다. D-phenylalanine은 시판용 간장 속에는 0.67%, 재래식 간장에는 0.34%, 발효된 콩에는 1.81% 미만, 콩에는 2.82% 미만이 검출되었다.

국 종류에 따른 장류의 분양 결정과 조미료의 첨가효과 (A Study on Determining the Optimal Amounts of Fermented Soybean Foods in Various Korean Soups and the Effect of Condiments in Two Basic Stocks)

  • This sudy was conductted for the purpose of determining the optimal amounts of soy tauce, soy bean paste and hot pepper paste, in 3 different Korean soups and comparing the effect of condiments such as salt, soy sauce, black pepper, and Mono Sodium Glutamate, on the taste of two basic Korean Stocks, The results estimated by Palatability Test were as follows: 1. The average NaCl contents of two kinds of commercial soysauce were 15.9%, 25.6%, respectively. 2. The NaCl contents of 2% sardine stock, and 19% beef stock were 0.16~1.17%, 0.17~0.18% respectively. 3. @ According to Saltiness in sardine stock, there was no difference between the soy sauce-added group and the salt-added group. However, for the removing effect of Off-flavor, and Overall Taste, the soy sauce-group had higher score than salt-added group respectively. (p>.0.1) ⓑ In beef stock, there was no difference between the soysauce-added group and the salt-added group in Saltiness test. The soy sauce-added group had higher score in removing effect of Off-flavor (p>.0.1). On other hand, in Overall Taste, the salt- added group was more effective than the soy sauce-added (p>.0.1). 4 @ According to Saltiness test in beef stock, there was no difference between the black pepper-added and non-added group. However, for the removing effect of Off-flavor and, Overall Taste, the added group had higher score than the non-added group, respectively. (p>.10, p>.0.5) ⓑ Also, according to Saltiness test in beef stock, there was no diffetrence between the MSG-added group and non-added group. However for the removing effect of Off-flavor, and Overall taste, the MSG-added group was more effective than the non-added group. (p>.01) 5. The best recipes of soybean sprouts soup for S persons, in this experiment, were soybean sprouts 180 g, sardine 28 g, soysauce 1/2 T.S., salt 7 g, green onion 15 g, choppedgarlic It. s., against 7 C of water, and total cooking time was 20 minutes. 6. The best recipes of clear-beef soup were beef 200 g, radish 200 g, tangle weed 10 g, sesame oil 1/2 t.s., green onion 15 g, chopped garlic 1 t.s., black Pepper 1/8 1.s., and soy sauce 1 T.S., salt 7 g or soy sauce 2 T S., salt 3.5 g. The total cooking time was minutes. 7, The best recipes of soybean pasted Chinese cabbage soup were Chinese cabbage 300 g, sardine 28 g, green onion 15 g, chopped garlic 1 t.s., and bean paste 50 g, hot pepper paste 13 g, salt 3g or bean paste 65 g, hot pepper paste 16 g, salt 1.5 g. And the total cooking time was 25 minutes. 8. Soy sauce, black pepper, M.S.G., bean paste and hot pepper paste were effective on removing Off-flavor of experimental soups.

MS-전자코를 이용한 유채유의 진위 여부 판별 (Authentication of Rapeseed Oil Using an Electronic Nose Based on Mass Spectrometry)

  • 본 연구는 유채유에 타기름이 혼합되었을 때 그 혼합 비율에 따른 차이를 전자코로 분석하였다. 대두유와 옥수수유를 0, 3, 6, 9, 12, 15, 20%를 유채유에 각각 혼입하여 전자코로 분석한 결과 DF1의 영향을 주로 받아 혼합 비율이 증가함에 따라 DF1이 음의방향으로 일정한 경향을 보이며 이동하여 나타났다. 이를 혼합비율에 따른 DF1값을 막대그래프로 나타낸 결과 혼합비율이 증가함에 따라 DF1값이 감소하여 뚜렷한 차이를 보였다. 유채유에 대두유를 혼합할 경우 DF1= $-0.170{\times}conc.$(대두유 혼합비율)+0.431 ($r^2=0.989$)과 같은 상관관계식을 얻어 유채유에 타 기름이 혼합될 경우 그 함량의 예측이 가능하였다. 이러한 결과를 통해 전자코를 이용하여 유채유의 위조판별이 가능함을 확인하였으며 다른유지를 비롯한 다양한 식품에 적용 가능할 것이다.

Studies on the Fibrinolytic Effect of Germinated Grain Seeds

  • In this study, seven grain seeds(sorghum maize, buckwheat, soy bean, mung bean, red bean, and barngrass) and germinated seven grain seeds were examined the fibrinolytic activity through fibrin plate assay and SDS-PAGE. The results obtained were as follows : 1. In the fibrin plate assay, the extracts of maize, barngrass, sorghum and buckwheat showed fibrinolytic activity. Especially, Maize of them showed fibrinolytic activity that was almost similar to plasmin, fibrinolytic enzyme used as a positive control. 2. In the SDS-PAGE of seven grain seeds, fibrinolytic activity was remarkably shown in mung bean and red bean. 3. In the fibrin plate assay of germinated grain seeds, buckwheat(5 mm), buckwheat(10 mm) and soy bean(10 mm) showed a level of fibrinolytic activity that was about 0.3 fold than 1.0 unit of plasmin, Also maize(10 mm) of them showed a level of fibrinolytic activity that was about 0.5 fold than 1.0 unit of plasmin. As a result, maize of grain seeds was found that it has a strong fibrinolytic activity.

대두침출액으로부터의 대두올리고당 생산을 위한 효모발효 효과 (Effects of Yeast Fermentation on the Production of Soy-oilgosaccharides from Bean Cooking Water)

  • 대두침출액중의 비소화성 올리고당인 라피노스나 스타키오스함량에는 영향을 주지 않으면서 수크로스함량을 낮추기 위한 효모는 균주의 선택적 당이용 능력을 기준으로 선발하였다. 14종의 대상균주 중 스타키오스 이용율이 낮았던 Saccharomyces cerevisiae(ATCC 9763, KCTC 7039)와 Hansenula anomala KFRI 626이 적합하였다. 일정량의 대두침출액에 선정된 3종의 효모배양액을 각각 첨가하여 발효시간에 따른 올리고당 함량의 변화를 조사한 결과, 균주간에 차이는 있었으나, 전반적으로 균주 첨가량과 발효시간이 증가함에 따라 각 올리고당 함량이 감소경향을 보였다. 또 이들 3균주의 첨가량을 2%로 고정하고 발효 시간을 연장하여 당함량을 조사한 결과 수크로스 제거에 적당한 균주는 S. cerevisiae KCTC 7039와 H. anomala KFRI 626이었다.

전남, 경북지역의 농한기 농촌 노인정 노인급식 적용과 기호도 조사 (Field Application and Acceptance Test on the Meal Service of the Elderly Community Halls in Jeonnam and Gyeongbuk at Agricultural Off-season)

  • This study investigated the field application and the acceptance test of the meal service for the elderly (${\ge}$ 65 years) community halls in Jeonnam and Gyeongbuk. The acceptance scores of bean rice and glutinous rice were the highest among the tested cooked rice varieties in Jeonnam and in Gyeongbuk, respectively (P<0.05). The acceptance scores of tofu soybean paste soup and spinach bean paste soup were the highest among different soups, in Jeonnam and Gyeongbuk, respectively. The scores of menu 5 (bean rice, tofu and bean paste soup, pan-fried pork, green laver salad, kimchi, soy milk) and menu 1 (cereal rice, fermented soy bean soup, hard-boiled quail's egg, crown daisy salad, kimchi, mandarin) were the highest in Jeonnam and Gyeongbuk, respectively, in terms of overall acceptance (P<0.05). The average cost of each meal in two provinces was $2012{\pm}323$ won. The amount of leftovers from menu 5 (Bean rice, Tofu and soybean paste soup, Pan-fried pork, Seasoned green laver, Kimchi, Soy milk) was the lowest in Jeonnamin, while the one from menu 2 (rice, leaf beet and soybean paste soup, sated vegetables with potato noodle, hard-boiled potato, kimchi, cherry tomato) was the lowest in Gyeongbuk.

효모발효한 대두침출액으로부터의 대두올리고당 생산: 한외여과 및 역삼투 처리효과 (Soy-oligosaccharide Production from Yeast Fermented Bean Cooking Water: Effects of Ultrafiltration and Reverse Osmosis)

  • 대두침출액(bean cooking water, BCW)을 효모처리 하지 않은 대조구와 선발된 효모(S. cerevisiae KCTC 7039, H. anomala KFRI 626)로 발효시킨 효모처리구로 나누어 비교한 결과 한외여과 후 보유액(retentate)은 원료로 사용한 각각의 BCW보다 높은 함량을 보였으며, 여과 후 회수된 투과액(permeate)은 고형분은 약간 감소되었으나, 총당 함량의 $80{\sim}100%$가 회수되었다. 회분함량은 한외여과 처리와 관계없이 원료인 BCW와 거의 같은 수준이었으나, 단백질의 경우는 한외여과(cutoff MW 20,000)처리에 의해 대조구는 원료의 약 38%, S. cerevisiae KCTC 7039처리구는 31%, H. anomala KFRI 626처리구는 약 21%의 제거효과를 보였다. 따라서 2단계의 한외여과 처리를 적용할 경우, 대두 침출액에 존재하는 단백질의 $20{\sim}40%$를 제거할 수 있었으며 총당 및 스타키오스를 포함한 올리고당의 회수율을 높일 수 있었다. 대두침출액에 역삼투공정을 적용하여 용질농축비율(VCR, volume concentration ratio)별로 농축한 결과 고형분 및 회분 단백질은 용적농축비율 3.5까지 급격히 증가하다가 완만하게 증가하였고, 최적 용적 농축비는 농축시 요구되는 에너지 양과 투과액으로 손실되는 양을 고려하여 3.5라 여겨진다.

저콜레스테롤 계란제품의 생산기술과 부산물의 재활용 (Production Technology of Low-cholesterol Egg Prodecuts and Recycling of By-Products)

  • Hurdle technique was used to remove cholesterol efficiently from liquid egg yolk. The quality of the low cholesterol egg products from the process were evaluated. From the 75 % cholesterol reduced egg yolk through $\beta$-cyclodextrin treatment. 2 times weight of soy bean oil was added to the egg yolk and homogenized followed by centrifuged to be maximized to remove cholesterol. When the pH of the yolk was adjusted to 9, 92 % of cholesterol was removed while 95.4 % of cholesterol was removed when 3 times weight of soy bean oil was added to the egg yolk. As the results of application of supercritical carbon dioxide extraction to the 75 % cholesterol reduced egg yolk through ${\beta}$-cyclodextrin treatment, 92.5 % of the cholesterol was removed from the egg yolk at $35^{\circ}C$, 4,500 psi, for 4 hours under co-solvent. The quality characteristics of the produced low cholesterol egg products were analysed. The cholesterol reduced egg yolk produced from ${\beta}$-cyclodextrin and soy bean oil treatment showed the lower emulsion capacity compared with control. The fatty acid composition of the cholesterol reduced egg yolk produced from ${\bet}a$-cyclodextrin and soy bean oil treatment showed increased C18:2 and C18:3 compared with control while decreased C16:1 and C18: 1 compared with control. The saponification method with extracting solvent of hexane showed that cholesterol concentration was 28.1 %. The quantity of hydrolysis solution(95 % ethanol : 33 % KOH = 94 : 6) was varied from 40 to 80 times of sample weights and the cholesterol concentration of 35.7 % was the highest result in the 60 times(v/w) hydrolysis solution. Cholesterol concentration of 35.7 % was recovered at the first trial with saponification method. but it could be improved up to 95.7 % after 4 times repetitive purification.
