시금치의 cook-chill 가공 중 오염지표균 및 병원성세균의 변화 (Changes of Indicator Microorganisms and Pathogenic Bacteria in Spinach during Cook-Chill Process)

  • 시금치를 한국 식단의 식자재로 사용하기 위해 cook-chill 가공과 sous vide 기술을 사용하였다. 시금치는 500 g 단위로 차단성 필름을 사용하여 진공포장하고 Listeria monocytogenes의 6D 사멸조건에서 저온살균하고 $3^{\circ}C$에서 급속히 냉각한 다음 $3^{\circ}C$$10^{\circ}C$에서 저장하면서 품질을 측정하였다. 오염지표균은 중온성세균, 저온성세균, 혐기성세균, 내열성세균, 대장균군, 효모 및 곰팡이, Enterobacteriacea 및 분원성연쇄상구균을 측정하였다. 원료 시금치에서는 $2.2{\times}10^8\;cfu/g$로 높은 분포를 보였고, cook-chill 가공 후에는 $6.0{\times}10^3\;cfu/g$로 감소하였으며 저장기간 동안 서서히 증가하였다. 저온성세균과 혐기성세균은 거의 같은 양상을 보였으며, 효모 및 곰팡이, 대장균군, 분원성연쇄상구균 및 Enterobacteriacea는 cook-chill 가공 후에는 검출되지 않았다. 그람음성의 병원성세균은 Aeromonas hydrophila, Escherichia coli O157:H7, Plesiomonas shigelloides, Pseudomonas aeruginosa, Salmonella spp., Shigella spp., Yersinia enterocolitica, 그람양성균은 Bacillus cereus, Campylococcus spp., Clostridium perfringens, Listeria monocytogenes, Staphylococcus aureus을 분리시험하였다. A. hydrophila는 수세한 시금치에서 분리되었으나, 원료 시금치와 cook-chill한 시금치에서는 분리되지 않았다. B. cereus와 C. perfringens는 원료 시금치, 수세한 시금치와 cook-chill 가공한 시금치에서 분리된 반면 S. aureus는 원료 시금치와 수세한 시금치에서만 분리되었다. 그 외의 다른 병원성세균은 cook-chill 과정에서 분리되지 않았다.

Optimized Conditions of Model Processing for Ready-to-eat Style Galbi-jjim Prepared by Sous-vide and Cook-chill System

  • To develop ready-to-eat (RTE) style Korean traditional Galbi-jjim, the optimal conditions for sous-vide cooking and cookchill preparation and the sensory properties of the cooked products were investigated. During heating, the meat core temperatures reached $85^{\circ}C$ within 30 min and 45 min when a water bath and combination oven were used, respectively. Chilling to $3^{\circ}C$ within 45 min was conducted to meet the standards for microbiological safety set by the UK Department of Health and Social Security (DHSS) Guideline. Galbi-jjim that was vacuum-cooked in a water bath was much more tender than that of Galbi-jjim prepared using the cook-chill method, but had no difference in any reheating methods. The average sensory scores of juiciness and the overall acceptance of Galbi-jjim were significantly higher when water bath cooking was used, and there were no differences in reheating methods. In conclusion, the serial methods of sous-vide processing and rapid chilling can be applied to produce RTE traditional Galbi-jjim, and this can be conducted while meeting the standards specified in safety guidelines.

Improvement of Microbiological Safety of Sous Vide Processed Soybean Sprouts: Nisin and Bacillus cereus Challenge

  • Abstracts Soybean sprouts which are a popular vegetable in Korea, are produced using the techniques of sous vide. The purpose of this study was to determine the effect of nisin and storage temperature on the microbiological and physicochemical qualities of sous vide processed soybean sprouts during storage in order to improve shelf-life and industrial applications. During storage of the cook-chilled soybean sprouts at $3^{\circ}C$, no development of mesophilic microorganisms was observed. However, at $10^{\circ}C$ storage without nisin, the number of mesophilic microorganisms increased markedly, whereas sprouts stored at the same temperature with nisin showed no observed increase. Psychrotrophic microorganisms, anaerobic microorganisms, and Bacillus cereus all showed similar trends. The ascorbic acid content, following the sequential heat processing of soybean sprouts through blanching and pasteurization decreased markedly during early storage, and stabilized thereafter. During storage, no major changes in the color or ascorbic acid content of samples at either temperature were observed. With regard to microbial and physicochemical qualities, the presences of nisin and storage temperature are important factors for extending shelf-life of soybean sprout.

Quality Changes During Storage of Cook-chilled Soybean Sprouts

  • Sous vide and packaged cook-chilled soybean sprouts were evaluated for physicochemical quality changes and microbial safety during storage for the purposes of shelf-life extension and industrial application. The physicochemical changes assessed were color, texture, and ascorbic acid concentration. The quality of soybean sprouts became worse with increased periods of storage and better in storage temperature of $3^{\circ}C$ more than in $10^{\circ}C$. The concentration of aerobic bacteria decreased from $2.1{\times}10^8$ to $6.0{\times}10^2\;CFU/g$ after pasteurization, but increased during storage. These bacteria are the same shape as anaerobic and hsychrophilic bacteria, but none of these other organisms were detected after heat treatment. The physicochemical qualities of soybean sprouts and microbial safety were better for products stored at $3^{\circ}C$ than at $10^{\circ}C$. In the case of short storage periods, heat treatment at $70^{\circ}C$ for 2 min was most effective for quality and microbial safety.

Sous vide 포장된 소고기 장조림의 배합비 최적화 (Optimization in Recipe of Sous Vide Packaged Seasoned Beef)

  • Vinegar and/or sake are often added for preservation hurdle in Korean seasoned beef product, affecting sensory quality. Sous vide packaging formerly developed requires optimization of formulation recipe in these ingredients. Therefore this study looked into the effect of vinegar and sake on the sensory quality attributes by response surface methodology. The addition of vinegar lowered the product pH significantly but sake addition did increase it slightly. Water activity did not change with the addition of these. Ten day storage at $8^{\circ}C$ did not make any significant changes in salt content and water activity. The added vinegar and/or sake in the formulation degraded the hedonic sensory scores of the product. The storage of the product made the degradation effect less pronounced. For the stored product the effect of sake on taste, texture and flavor was greater than that of vinegar. The respective addition of vinegar and sake less 4.0 and 4.5% could maintain the required sensory quality and thus was suggested in this study as their affordable use level for preservation hurdle.

Evaluation of Microbiological, Physicochemical, and Sensory Properties of Galbi-jjim Prepared by Sous-vide and Cookchill Method at Different Temperatures

  • The aim of this study was to evaluate the physico-chemical, sensory, and microbiological properties of ready-to-eat Korean traditional seasoned beef ribs ("galbi-jjim") prepared by sous-vide/cookchill technology during storage at three different temperatures (4, 10, and $20^{\circ}C$). Beef short ribs marinated in soy sauce for 24 h at $3^{\circ}C$ were packed with vegetables under vacuum. Vacuum-packed beef ribs mixed with vegetables were heated at $90^{\circ}C$ for 90 min in a water bath, and then immediately chilled below $3^{\circ}C$ within 120 min in an ice slurry. Physicochemical (pH, water activity, TBARS, $L^*a^*b^*$ color, and texture profile), sensory (appearance, odor, flavor, texture, and acceptance) and microbiological (Coliform, Escherichia coli, food-borne pathogenic bacteria) properties of the samples were determined during storage at different temperatures. Results showed that pH, $a_w$, and sensory evaluation of products were not affected in any consistent way as a function of either storage duration or temperature. Coliform, E. coli and food-borne pathogens were not detected during storage at any temperature. However, TBARS significantly increased during storage period (p<0.05). Based on TBARS values, SV/CC "galbi-jjim" can be stored for 15 d, 12 d and 1 d at 4, 10 and $20^{\circ}C$, respectively.
