Effect of CO2 and ClO2 gas Pre-treatment for Maintain Shelf-life of Summer Strawberries (사계성 딸기의 신선도 유지를 위한 CO2와 ClO2가스의 전처리 효과)

  • This study was conducted to maintain the postharvest shelf-life of summer strawberry cultivars 'Goha' and 'Flamengo' through $CO_2$ (90%) and $ClO_2$ gas ($5{\mu}L{\cdot}L^{-1}$) pre-treatment. The respiration rate of 'Goha' and 'Flamengo' treated with $CO_2$ and $CO_2$ + $ClO_2$ was the lowest during storage. The weight loss with $CO_2$ + $ClO_2$ treatment was about 1% lower than the control group and 'Goha' was the lowest during storage. The pre-treatments effect on soluble solids contents was minimized. The firmness with $CO_2$ and $CO_2$ + $ClO_2$ treatments was only about 30% higher than $ClO_2$ and control. The firmness of 'Goha' was about 2.15N and 'Flamengo' was 2.37N, 15 days after storage. Decayed fruit was shown from after 6 days after storage in control. Control group lost quality 10 days after storage due to decayed fruit rate 20% of 'Goha' and 'Flamengo'. $CO_2$ and $CO_2$ + $ClO_2$ treatments showed the lowest decay rate during storage. Especially, 'Goha' showed around 5% decay fruit rate 10 days after storage. As a result, $CO_2$ + $ClO_2$ pre-treatment is recommended to extend the shelf-life of the summer strawberries.

Comparison of Fruit Quality of Various Astringent Persimmon Cultivars during Storage in Atmosphere Controlled with High $CO_2$Concentration (떫은감의 품종별 고농도 이산화탄소의 저장효과)

  • Four cultivar of astringent persimmon(Diospyros kaki L. Cheongdobansi, Sagkoksi, Gojongsi, and Hachiya) were evaluated for quality during 160 days storage in condition of air, 12%CO$_2$+3%CO$_2$, and 16%CO$_2$+ 3%CO$_2$at 0∼2$^{\circ}C$. In the fruits of Cheongdobansi, Sagkoksi, and Gojongsi cultivar, the soluble solids content did not change significantly during storage among treatment, but in the fruits of Hachiya cultivar it decreased during storage in the codition of high CO$_2$concentration. Fruits of Cheongdobansi and Sagkoksi, which were stored in higher CO$_2$concentration, had firmer hardness, less weight loss and decay, showed greater rentention of initial peel color, maintained best qulity than air-stored fruit, but had high tannin contents. And it was necessory to remove astringency for edible fruits.

Influence of Time of Hand-thining on Bitter Pit Incidence and Fruit Quality in 'Gamhong'/M.9 Apple Trees (인력 적과 시기가 '감홍'/M.9 사과나무의 고두증상 발생과 과실품질에 미치는 영향)

  • This study was conducted to investigate the effect of time of hand-thinning on vegetative growth, bitter pit incidence, fruit quality, and return bloom in 'Gamhong'/M.9 apple trees. The time of hand-thinning were 3, 5, 7 and 9 weeks after full bloom, and the primary thinning (leaving only the king fruit on cluster) and secondary thinning (adjusting crop load) were conducted at the same time. The time of hand-thinning was correlated to the vegetative growth, average fruit wight, yield, soluble solids content, bitter pit incidence, and return bloom, negatively, and to the yield of middle grade fruits (fruit weight was 250-299g and none pit on fruit surface) per tree, calcium contents of leaves, and fruit red color, positively. There was no significant effect of time of hand-thinning on fruit firmness, titratable acidity, and total incomes per tree. In conclusion, if the time of hand-thinning of 'Gamhong'/M.9 apple tree was completed at 9 weeks after full bloom, it could produce about 300g of high-quality fruit without bitter pit.

Development of Prediction Model for Sugar Content of Strawberry Using NIR Spectroscopy (근적외선 분광을 이용한 딸기의 당도예측모델 개발)

  • This study was performed to develop a prediction model of sugar content for strawberry. Near-infrared (NIR) spectroscopy has been prevailed for on-line and portable applications for non-invasive quality assessment of intact fruit. This work presents effects of illumination method and coating of reflection surface of light source on prediction result of sugar content. Effect of preprocessing methods was also examined. A low-cost commercially available VIS/NIR spectrometer was used for estimation of total soluble solids content (Brix). To predict sugar contents of strawberry, the best results were obtained with the spectrum data measured under intensive illuminations at three locations induced from the light source with fiber optic bundles. Gold coating of reflection surface of light source lamp gave favorable effect to prediction result. The best results in validation of PLSR model were $r_{SEP}$ = 0.891 and SEP = 0.443 Brix under OSC preprocessing and those of PCR were $r_{SEP}$ = 0.845, SEP $r_{SEP}$= 0.520 Brix, under no preprocessing.

Physicochemical characteristics of hot-water leachate prepared from persimmon leaf dried after steaming or freezing treatment (스팀 및 동결 전처리가 건조 감잎 열수추출물의 이화학적 특성에 미치는 영향)

  • This study was conducted to develop a preservation technology that can induce changes in physicochemical properties to effectively utilize of persimmon leaves. The application effects of steaming or freezing technique were investigated. Astringent persimmon leaves were steam-blanched (100℃, 30 sec) or frozen (-20℃, 15 d), followed by hot-air drying (50℃). The physicochemical properties of the extract obtained by hot-water leaching from the dried leaves were compared. The extract of leaves dried without pretreatment was used as a control. L* value was higher in steamed than in control and frozen. a* value was highest in the control. The browning index was higher in the frozen and lower in the steamed than in the control. Soluble solids were the highest in the steamed and the lowest in the frozen. Sucrose content was relatively high in the steamed, and the glucose and fructose contents were relatively high in the frozen. Total polyphenol content and DPPH radical scavenging activity were higher in steamed and lower in frozen than in control. Thus, it was confirmed that steam or freeze pretreatment after harvesting persimmon leaves affects the extraction yield, color, antioxidant capacity and component changes of dried persimmon leaves. Unlike steaming, freezing pretreatment showed the effect of promoting decomposition and browning reactions, and it is considered useful when such an effect is needed.

Comparison of color and water extracts of Caragana sinica flowers dried at different air temperatures (열풍건조 온도를 달리한 골담초 꽃의 색과 추출물 특성)

  • This study aimed to investigate the drying characteristics of Caragana sinica Rehder flowers, which are basic data necessary for increasing utilization. The flowers were harvested in mid-April and dried at different hot-air temperatures (50-90℃), and the physicochemical properties of the dried flowers were analyzed. It was found that the drying rate was proportional to the air temperature. The visual color of dried flowers was relatively strong in green when dried at 50℃, while browning was relatively severe when dried at 90℃. The greenness (-a* value) of the mechanical color of the powder decreased with increasing temperature, and the yellowness (b* value) decreased with increasing temperature above 70℃. The soluble solids of the hot water extract were maintained at a certain level after increasing up to 70℃, and the pH decreased with increasing temperature. The total polyphenol contents tended to increase with increasing temperature, and DPPH radical scavenging activity did not show a significant change after increasing up to 70℃. These results suggest that the hot-air drying temperature had a significant effect on the physicochemical characteristics of the C. sinica flower. The appropriate hot-air drying temperature was judged to be less than 50℃ for maintaining the unique color, and approximately 70℃ considering the high hot-water extraction yield and antioxidant capacity.

Saponin Contents and Physicochemical Properties of Red Ginseng Extract Pouch Products Collected from Ginseng Markets in Korea (국내 인삼시장에서 유통되고 있는 홍삼 파우치 제품의 사포닌 함량 및 이화학적 특성)

  • To obtain data for the standardization of manufacturing method of red ginseng extract pouch products, saponin and physico-chemical properties of 44 Korean red ginseng extract pouch products were analyzed. The concentration of total ginsenoside contents were 5.5~185.7 mg/100 mL. Distribution of the contents of ginsenoside $Rg_3$, $Rg_2$, $Rh_1$, and $Rh_2$ known to have anticancer effect are as follows: $Rg_3$ is 1.6~46.3 mg/100 mL, $Rg_2$ is 0~22.0 mg/100 mL, $Rh_1$ is 0~4.3 mg/100 mL and that of $Rh_2$ is 0~20.4 mg/100 mL, respectively. The anti-diabetic effect of ginsenoside $Rb_2$ and Re distribution of contents were 0~10.8 mg/100 mL and 0~7.0 mg/100 mL, respectively. Among the other saponins, exhibited content to distribution of ginsenoside $Rb_1$ was 0~25.2 mg/100 mL, Rc was 0~12.5 mg/100 mL, Rd was 0~11.3 mg/100 mL, Rf was 0~5.9 mg/100 mL and $Rg_1$ was 0~4.4 mg/100 mL. Results of physicochemical characterization showed total sugar content of 226.6~3,102.9 mg/100 mL, total soluble solids content $1.4\sim9.5^{\circ}Bx$, turbidity 82.2~100.0%, pH in the range of 4.1 to 5.0, respectively. In approximately 50% of collected domestic ginseng extract pouch products (21~24 items), ginsenoside $Rb_1$, $Rb_2$, Rc, Rd, Re and $Rg_1$ were not detected, and saponin content of each product appears to differ greatly. Results indicated that standardization of production methods and standards set for red ginseng extract pouch products in Korea is needed.

Changes of Quality Characteristics on the Cherry Tomatoes during the CA(Controlled Atmosphere) Storage (CA저장 중 방울토마토의 품질특성 변화)

  • The CA(Controlled Atmosphere) storage of cherry tomatoes were carried out under seven gas compositions including air. The weight loss of cherry tomatoes progressively increased with storage time. In the case of cherry tomatoes stored under CA conditions, increment of weight loss was reduced. However, cherry tomatoes (in air) tut about 15% weight at the end of storage. In CA stored cherry tomatoes lost about 10% weight at the same time. General trend was a decrease in titratable acidity with storage time. In air md 6.4% O$_2$, 4.2% CO$_2$, titratable acidity was lower than that in other storage conditions. During storage of cherry tomatoes, soluble solids increased till 8 days of storage, and then decreased. Stored cherry tomatoes in air and 6.4% O$_2$+4.2% CO$_2$ have lower values. Lycopene contents of cherry tomatoes with 6% O$_2$ storage condition increased and cherry tomatoes with 1% O$_2$+6% CO$_2$ and 3% O$_2$+3.1% CO$_2$maintained s initial contents. In air, flesh firmness decrease till 8 days, and then increase. At 1% O$_2$+6% CO$_2$ ethanol contents were ten times to that of other experimental conditions. Air and 6% O$_2$+7.8% CO$_2$ condition had lowest value for the ethanol content. In changes of organic acid and citric acid decreased slowly during storage, malic acid in air and below 3% O$_2$was disappeared at 8 days. Above 4% O$_2$concentration malic acid contents were maintained till 16 days. In over all acceptability, air and 6.4% O$_2$+7.8% CO$_2$ condition took a good score from the panel. Quality of stored cherry tomatoes was not edible condition in 1% O$_2$+6% CO$_2$. CA storage cherry tomatoes took a good score in firmness and juiciness where as control received good score in color and sweetness. This result was explained that in air ad 6.4% O$_2$+7.8% CO$_2$stored cherry tomato was ripened and full color development, but in CA was break stage because of suppressed ripening.

Quality and Functional Properties of Red Ginseng Prepared with Different Steaming Time and Drying Methods (원료삼의 증삼 및 건조 조건별 홍삼의 품질 및 기능성)

  • The quality and functional properties of red ginseng in relation to steaming and drying conditions were evaluated. Fresh ginseng (5-year roots), cultivated in the Punggi region, were steamed for 2.5, 3.5, or 4.5 hr, and then dried by hot-air (60-$65^{\circ}C$/24 hr and $40^{\circ}C$,/3-4d) freezing ($-80^{\circ}C$/56 hr), and infrared (900 W/$62^{\circ}C$/68 hr). Hunter#s yellowness (b-value) and browning indexes (420 nm) of the samples were higher in the rootlets than in the main roots. Furthermore, these same index values were found to be high in the order of 3.5, 4.5, and 2.5 hr and infrared, hot-air, and freezing for steaming and subsequent drying, respectively. Analysis of soluble solids, total phenolics, total flavonoids, acidic polysaccharides, and electron donating abilities of the steamed and dried samples showed that 3.5hr of steaming with infrared drying was optimal. However, crude saponin contents were not influenced by steaming and drying conditions. The contents of $ginsenoside-Rg_l$, -Re, -Rf and $-Rb_2$, which were the major components in the samples, were reduced with steaming time, while the amounts of $-Rg_3$ and $-Rh_2$ increased, reaching the highest levels at 3.5 and 4.5 hr in the main roots and rootlets, respectively. The contents of $-Rg_3$ and $-Rh_2$ were similar in both the freeze-dried and hot-air dried samples.

Quality properties of fermented mugworts and the rapid pattern analysis of their volatile flavor components via surface acoustic wave (SAW) based electronic nose sensor in the GC system (발효 인진쑥과 약쑥의 이화학적 품질특성 및 GC와 SAW센서기반 electronic nose에 의한 향기패턴의 신속분석)

  • The changes in quality properties and nutritional components for two mugworts, namely, Artemisia capillaris Thumberg Artemisiae asiaticae Nakai fermented by Bacillus strains were characterized followed by rapid pattern analysis of volatile flavor compounds through the SAW-based electronic nose sensor in the GC system. After fermentation, the pH has remarkably decreased from 6.0~6.4 to 4.6~5.1 and there has been a slight change in the total soluble solids. The L (lightness) and b (yellowness) values in the Hunter's color system significantly decreased, whilst the a (redness) value increased via fermentation. The HPLC analysis demonstrated that the total amino acids increased in quantity and the essential amino acids were higher in the A. asiaticae Nakai than in the A. capillaris Thumberg, specially with high contents of glutamic and aspartic acid. After fermentation, the monounsaturated fatty acid increased in the A. asiaticae Nakai and the polyunsaturated fatty acids increased in the A. capillaris Thumberg. While the total polyphenol contents have not been affected by fermentation, the total sugar contents have dramatically decreased. Scopoletin, which is one of the most important index components in mugworts, was highly abundant in the A. capillaris Thumberg; however, it was not detected in the A. asiaticae Nakai. Small pieces of plant tissue in the surface microstructure were found in the fermented mugworts through the use of the scanning electron microscope (SEM). Volatile flavor compounds via electronic nose showed that the intensity of several peaks has increased and additional seven flavor peaks have been produced after fermentation. The VaporPrintTM images demonstrated a notable difference in flavors between the A. asiaticae Nakai and A. capillaris Thumberg, and the fermentation enabled the mugworts to produce subtle differences in flavor.
