Shelf-life of 'Fuji' apples after CA storage at different temperature (CA 저장 사과 'Fuji'의 Shelf-fife)

  • This study was conducted to estimate the shelf-life of 'Fuji' apples (Malus domestica Borkh) after CA storage. Apples stored In 1%O2+3%CO2, 2%O2+3%CO2 and 3%O2+3%CO2 at 2$^{\circ}C$ and 4$^{\circ}C$ for 8 months were stored in air at 10$^{\circ}C$, 80-85% RH for 16days. As a result of objective analysis, apples stored at 2$^{\circ}C$ wert mort effective in retarding the loss of weight flesh firmness, titratable acidity and peel color than those stored at 4$^{\circ}C$, but not the loss of soluble solid. Among storage atmospheres, 1%O2+3%CO2 at 2$^{\circ}C$ was more effective in retarding the loss of flesh firmness and green color than other atmospheres. Shelf-life of apples kept at 2$^{\circ}C$ estimated above 16 days. The contents of acetaldehyde and ethanol were not observed tn make large difference between storage conditions, but ethanol content of apples stored in 3%O2+3%CO2 at 4$^{\circ}C$ was Increased slightly for 16 days. According to sensory evaluations, apples stored at 2$^{\circ}C$ were significantly harder, juicier and more acid than chose stored at 4$^{\circ}C$. Particularly, high scores of apples stored in 1% and 2%O2+3%CO2 at 2$^{\circ}C$ Persisted for 16 days. Juiciness, hardness acidity and sweetness were related to the flesh firmness and titratable acidity. Overall acceptability was closely related to juiciness and hardness.

Investigation of difference of Gwakhyangjeonggi-san decoctions produced by different pressure levels and various extraction times (전탕 압력과 전탕 시간의 차이에 따른 곽향정기산 전탕액 비교)

  • Objectives : Gwakhyangjeonggi-san (GJS) which consists of 13 herbal medicines has been used to treat gastrointestinal disorders caused by common cold. This study was performed to compare GJS decoctions produced using different pressure levels for various extraction times. Methods : Decoctions were prepared by the pressure levels of $0kgf/cm^2$ (non-pressurized) or $1kgf/cm^2$ (pressurized) for 30-180 min. The extraction yield, total soluble solid content (TSSC), and hydrogen ion concentration (pH) were measured, and the contents of the nine marker compounds were determined using high performance liquid chromatography. Results : The higher pressure and longer extraction time significantly increased TSSC value, while decreased the pH value. However, only extraction time affected the extraction yield of pressurized decoction. Variation of the amounts of chemical compounds was shown in pressurized and non-pressurized decoctions during extraction time. The result of regression analysis showed that pressure and extraction time can influence to extraction yield, TSSC, pH, and the content of chemical compounds. Conclusions : This study suggests that the pressure and extraction time can significantly affect the extraction efficiency of components from GJS decoctions.

Some Components Analysis for Chinese Water Chestnut Processing (올방개(Eleocharis tuberosa Roem. et Shult) 가공을 위한 몇가지 성분 분석)

  • Some physico-chemical components of Chinese water chestnut were analysed to provide fundamental data for water chestnut processing and products development. The contents of moisture, crude protein, crude lipid, crude ash, crude fiber and carbohydrate of Chinese water chestnut were 79.40%, 1.74%, 0.06%, 1.10%, 0.60% and 17.71% respectively. Free sugars identified in Chinese water chestnut juice were sucrose 8.58%, glucose 1.64% and fructose 1.58% as major component and maltose as trace component. The proportion of major free sugars to total soluble solid content of juice was about 66.0%. Potassium content in Chinese water chestnut was 408.57 mg% as major mineral, iron and manganese content were 0.21 mg% and 0.08 mg% as minor mineral. $Vitamin\;B_1$ and C content were $31.2\;{\mu}g/100\;g$ and trace respectively. Organoleptic properties of Chinese water chestnut were fresh fruit odor and sweet taste as main flavor. Though water chestnut was boiled for 20 min, crunchy texture of flesh was almost maintained.

Changes on Browning Characteristics of Chicory Roots by Roasting Processes (치커리의 볶음처리에 따른 갈색화 특성 변화)

  • Browning chracteristics were investigated for Chicory roots(Cichorium intybus L.) when roasted at different conditions of 120 to $180^{\circ}C$ in temperature and 10 to 40min in time. The soluble solid of water extracts obtained from roasted Chicory roots increased slowly with increasing roasting temperature and time, but it decreased above $160^{\circ}C$. The contents of reducing sugar and amino-type nitrogen in aqueous extracts obtained from roasted Chicory roots decreased rapidly with increasing the roasting time and temperature. Browning color intensity in aqueous extracts of roasted Chicory roots increased with increasing the roasting temperature and time, Hunter's color L and b values of Chicory powder decreased with increasing the roasting temperature and time, while Hunter's color a and ${\Delta}E$ values continuously increased with increasing the roasting temperature and time.

Biological Activity of Korean Dandelion (Taraxacum coreanum) Extracts and Preparation of Korean Dandelion Tea by Roasting Time (흰민들레 추출물의 생리활성 및 볶음시간에 따른 흰민들레 침출차 제조에 관한 연구)

  • This study was conducted to investigate the antioxidative and antimicrobial activities of Korean dandelion (Taraxacum coreanum). Water extracts, ethanol extracts and methanol extracts were used to examine the free radical scavenging activity, total flavonoid content, total polyphenol content and antimicrobial activity. The free radical scavenging activity, total flavonoid, total polyphenol and total antioxidant activity of the water extracts were higher than those of the other extraction solvents. The antimicrobial activties of Korean dandelion extracts were examined on several food borne illness microorganisms using the paper disc diffusion method. Inhibition zones were observed on Staphylococcus aureus subsp. aureus, Listeria monocytogenes, Bacillus subtilis, Bacillus cereus and Escherichia coli in ethanol extracts. Inhibition zones were also observed on Listeria monocytogenes in water extracts. The physico-chemical properties of Korean dandelion tea according to the roasting time and soaking amount of tea were studied. The pH of the dandelion tea significantly decreased while the soluble solid contents significantly increased with increased roasting time (p<0.01). The lightness of the dandelion tea decreased and the turbidity increased with increased roasting time. In sensory evaluation, the sensory scores for the color, flavor and total acceptability were highest in the 40 min roasted tea. These results suggest that the water extract of Korean dandelion could be used as an antioxidative and antimicrobial functional food source. The optimum roasting time for Korean dandelion tea was 40 min at $200^{\circ}C$.

Chinese Radish Juice as a Growth Substrate for the Production of Candida utilis ATCC 42416 Biomass (무즙을 이용한 Candida utilis ATCC 42416균체 생산)

  • Chinese radish juice(CRJ) was used as a culture medium for the production of Candida utilis ATCC 42416 biomass. Soluble solid and total sugar contents of Chinese radishes were in the range between 5.5 and $8.8^{\circ}$Brix and 3.5 and 6.5%, respectively. Since sugar in radishes are in readily usable forms, pretreatm ent procedures were not necessary after the extraction of juice from fresh radishes. In shake flask experimetns, C. utilis ATCC 42416 grew well in CRJ and completed growth in 24 hrs at $30^{\circ}C$ and 200 rpm. Maximum cell dry weight obtainable from a liter of CRJ(1.0% sugar $DCRJ{\times}5$) was 21.5g, when the yeast was grown on CRJ diluted 5 times or more with tap water to make sugar content to be eual to or less than 1.0%. Supplementation of 5-fold diluted CRJ with some nutrients did not greatly influence the growth rate, yeast biomass production, or cell protein content significantly, indicating that CRJ itself was a good substrate for the production of biomass by C. utilis ATCC 42416.

Characteristics of Hericium erinaceus and its Extracts (노루궁뎅이 버섯 및 추출물의 특성)

  • The functional properties of Hericium erinaceus were analyzed. The crude protein content was 8.01%. free sugars were mainly composed of glucose(47.09 mg%) and fructose(34.65 mg%), but sucrose and maltose were not detected. The free amino acids were mainly glutamic acid(1,468.12 mg%), alanine(716.07 mg%) and threonine(643.95 mg%) in Hericium erinaceus. It doesn't difference between water and ethanol extract on soluble solid content. Comparing minerals of extracts from Hericium erinaceus, water extract showed higher contents than ethanol extract except for I This tendency is similar to superoxide scavening activity and electron donating activity. But phenolic compounds, ethanol extract was higher than water extract. In comparison of water and ethanol extract of Hericium erinaceus, as a whole water extract was excellent.

  • Ripened Rubus coreanus Miquel harvested at Gochang was stored for 8 months at $-20{\pm}2^{\circ}C$, and quality changes were investigated at intervals of 2-3 months. Soluble solid concentration increased slightly, but acidity fell during frozen storage. The lightness (L value) and red color index (a value) of ripened R. coreanus Miquel decreased during storage. The vitamin C and ellagic acid contents were 30.79 mg/100 g and $155.12\;{\mu}g/100\;mg$ mg before storage, respectively, but fell to 17.03 mg/100g and $140.11\;{\mu}g/100\;mg$ after 8 months of storage. However, the total anthocyanin content was 39.45 mg/100 g before storage, and this remained unchanged from 2 to 8 months of storage.

Quality Changes in Unripe Peaches Jangachi according to Cultivar during Storage (품종별 복숭아 유과 장아찌의 저장 중 품질특성 변화)

  • This study was carried out to examine changes in the quality characteristics of unripe peach Jangachi made from different cultivars during storage at room temperature for 60 days. Based on the results, unripe peach Jangachi-showed decreases in pH of pulps and soaking solutions of all varieties during storage. Salinity of Jangachi tended to increase during storage, whereas it decreased in soaking solutions. Soluble solid contents decreased during storage in all varieties, both in pulps and soaking solutions. Among Hunter's color values, L values decreased, a values increased, and b values decreased during storage in all varieties. Hardness decreased for 30 days of storage and increased slightly thereafter. During storage, yeast and mold counts increased and decreased within the range from 2.30~5.55 log CFU/g, respectively. In the sensory evaluation, Madoka and Nagasawa Hakuho were evaluated as good in overall acceptability.

Physicochemical Quality Changes in Chinese Cabbage with Storage Period and Temperature: A Review

  • Background: Recent inquiries into high-quality foods have discussed the importance of the functional aspects of foods, in addition to traditional quality indicators such as color, firmness, weight, trimming loss, respiration rate, texture, and soluble solid content. Recently, functional Chinese cabbage, which makes up a large portion of the vegetables consumed in Korea, has been identified as an anticancer treatment. However, the investigation of practical issues, such as the effects of storage conditions on quality indicators (including functional compounds), is still limited. Purpose: We reviewed various studies on variations in the quality indicators and functional compounds of Chinese cabbage in response to different storage environments, focusing on storage temperature and storage period. In particular, we emphasized the effect of storage temperature and storage period on glucosinolate (GSL) levels, in order to provide guidelines for optimizing storage environments to maximize GSLs. Additionally, we used response surface methodology to propose experimental designs for future studies exploring the optimal storage conditions for enhancing GSL contents. Review: Large variations in quality indicators were observed depending on the cultivar, the type of storage, the storage conditions, and the harvest time. In particular, GSL content varied with storage conditions, indicating that either low temperatures or adequate air composition by controlled atmospheric storage may preserve GSL levels, as well as prolonging shelf life. Even though genetic and biochemical approaches are preferred for developing functional Chinese cabbage, it is important to establish a practical method for preserving quality for marketability; a prospective study into optimal storage conditions for preserving functional compounds (which can be applied in farms), is required. This may be achievable with the comprehensive meta-analysis of currently published data introduced in this review, or by conducting newly designed experiments investigating the relationship between storage conditions and the levels of functional compounds.
