도정 및 가열조리중 보리의 식이섬유 함량변화 (Changes In Dietary Fiber Content of Barley during Pearling and Cooking)

  • 한국산 쌀보리 3품종을 도정수율 70%, 겉보리 3품종을 도정수율 60%, 로 도정한 후 수용성, 불용성, 총식이섬유 및 ${\beta}-glucan$의 함량을 측정하여 도정전과 비교하였다. 도정전 쌀보리는 평균 17.1%, 겉보리는 23.9%의 총식이섬유를 함유하였다. 도정후 쌀보리는 9.2% 총식이섬유와 4.8% 수용성 식이섬유를 함유하였고, 겉보리는 각각 11.9%와 6.0%를 함유하였다. ${\beta}-glucan$ 함량은 품종에 따라 도정 전에는 $3.2{\sim}3.9%$, 도정 후에는 $3.5{\sim}5.4%$를 함유하였다. 도정된 쌀보리와 쌀보리가루의 수용성 식이섬유와 $3.2{\sim}3.9%$ 함량은 가열조리에 의하여 변화되지 않았으나, 불용성 식이섬유는 1% 증가하였다.

결명자 에탄올 추출물 및 식이섬유의 이화학적 특성 (Physicochemical Properties of Ethanol Extracts and Dietary Fiber from Cassia tora L. Seed)

  • This study was conducted to investigate the physicochemical properties of the ethanol extracts and soluble dietary fiber from Cassia tora L. seed. The proximate composition of Cassia tora, soluble solid contents, color intensity and contents of emodin and rhein of Cassia tora extract, molecular mass distribution, sugar contents and viscosity of soluble fiber from Cassia tora were analyzed. Cassia tora contains 12.6% of moisture, 5.2% of ash, 13.4% of crude protein, 7.2% of crude fat, 8.8% of insoluble fiber and 48.3% of soluble fiber. The effects of extract condition on soluble solid contents, color intensity and contents of emodin and rhein of Cassia tora extract were investigated. The soluble solid contents were higher in 70% or 50% ethanol extracts than those in 100% ethanol extracts and showed highest value in grind sample extracts. In Hunter's color value, 100% ethanol extracts and whole Cassia tora sample extracts were higher in L and b value, but on the contrary, were lower in a value, than those of the other. The highest emodin and rhein contents were observed in 70% and 50% ethanol extracts, respectively, and showed higher value in room temperature extracts than in heating extracts. The molecular mass of soluble fiber from Cassia tora seed was estimated by gel filtration chromatography. Most soluble fiber(80%) exhibited a molecular mass range of between 50~2000 kDa. The major sugars of soluble fiber from Cassia tora seed were identified as xylose, mannose and galactose. The apparent viscosity of 0.5% soluble fiber from Cassia tora seed was 33 mPas showing a higher value than pectin or xanthan gum.

국내산 주요 해조류의 식이섬유소의 함량 및 추출조건 (Dietary Fiber Contents of Marine Algae and Extraction Condition of the Fiber)

  • 국내 연안에서 생산되는 해조류 즉, 갈조류에 속하는 미역, 다시마 그리고 톳, 녹조류에 속하는 파래, 그리고 홍조류에 속하는 우뭇가사리, 꼬시래기에 함유된 식이섬유소의 함량과 이들 해조류로부터 가용성 식이섬유소를 효과적으로 추출하고자 산과 알칼리 그리고 효소를 사용하였다. 그 결과, 미역의 식이섬유 추출에는 $1.5\%$의 탄산나트륨 용액, 또는 $2.0\%$$Na_2EDTA$가 효과적인 것으로 나타났다. 다시마는 $1.0\%$$Na_2EDTA$, 톳은 $2.0\%$의 탄산나트륨, 우뭇가사리와 꼬시래기는 $2.0\%$$Na_2EDTA$를 사용하였을 때 가용성 식이섬유의 수율이 높았다. 파래는 탄산나트륨, 수산화나트륨 그리고 $Na_2EDTA$ 중에서 특별히 효과적인 것은 없었으며 $2\%$농도에서 $17.49\~18.46\%$로 나타났다. 또한 추출시간과 온도를 검토한 결과, $100^{\circ}C$ 에서 해조중의 식이섬유 추출은 추출시간이 길수록 추출율이 높게 나타났으며, 추출온도에도 큰 영향을 받는 것으로 나타나 우뭇가사리와 꼬시래기는 $110\~$에서 1시간 추출시 각각 $38.48\%$$42.11\%$의 높은 수율을 나타내었다.

효소적 분해에 의한 배추부산물 hemicellulose 분획으로부터 수용성 식이섬유소 함유 가수분해물의 생산 (Production of Enzymatic Hydrolysate Including Water-soluble Fiber from Hemicellulose Fraction of Chinese Cabbage Waste)

  • 본 연구에서는 농산부산물인 배추 겉잎의 이용성을 증진시키기 위하여 배추의 불용성 식이섬유인 hemicellulose를 분획한 후 효소 처리하여 수용성 식이섬유를 함유한 가수분해물을 생산하고자 하였다. 이를 위해 다양한 pH, 온도, 기질농도 및 효소농도에서 hemicellulose 분획을 효소 처리한 후 환원당 함량을 측정한 결과, pH 5.0, $40^{\circ}C$, 효소농도 45 unit (Shearzyme plus), 21 unit Viscozyme L)의 조건으로 가수분해 했을 때 가장 높은 분해율을 나타내었다. 선정된 조건으로 72시간 가수분해하여 수율을 측정한 결과, Shearzyme plus 및 Viscozyme L 처리 시 각각 22.64%와 24.73%의 수율을 보였다. 또한 알코올 불용성 식이섬유의 겔크로마토그래피에 의한 분자량 분포를 확인한 결과, Shearzyme plus 및 Viscozyme L에 의해 생성된 식이섬유는 반응 시간이 증가함에 따라 저분자화 되는 것을 확인 할 수 있었다. 이상의 결과에서 배추 부산물 hemicellulose 분획을 효소로 가수분해함으로써 불용성 식이섬유가 저분자화 되어 수용성 식이섬유로 전환됨을 확인하였으며, 생산된 식이섬유소 함유 가수분해물은 기능성 식품 및 식품가공 분야에 다양하게 이용될 수 있을 것으로 판단된다.

  • mechanisms for the hypocholesterolemic effects of $\beta$-glucan remain unclear. Rats were divided into 3 groups ; normal control group, atherogenic group(oral administration of cholesterol 40 mg/kg/day plus vit. $D_2$ 320,000 IU/kg/day), $\beta$-glucan treatment group(atherogenic treatment plus $\beta$-glucan 0.135 g/kg/day). The $\beta$-glucan treatment group showed moderate increases of serum lipids concentration compared with atherogenic group. In histopathological examination, aortas showed no critical lesions. The total fecal neutral sterols and bile acids excreted for 6 days was increased compared with both normal and atherogenic group. To compare effects of soluble fiber and insoluble fiber extracted from barley on postprandial lipemia, 5 healthy male adults ingested on separate days a low-fiber(total dietary fiber 2.61g) control meal or dietary fiber-enriched(12.61g) meals. Fasting and postprandial blood samples were obtained for 6.5h and serum lipids were analyzed. The serum total lipids, total cholesterols, LDL & VLDL-cholesterol were markedly reduced with soluble fiber-enriched meals, but no decrease with insoluble fiber-enriched meals. These results suggest that mechanisms for the hypocholesterolemic effect of $\beta$-glucan on rats were due to the inhibition of cholesterol absorption in the intestinal lumen and acceleration of cholesterol catabolism in the liver. And the soluble dietary fiber($\beta$-glucan) has the hypocholesterolemic effect by dropping serum LDL & VLDL-cholesterol in the clinical study.

고지방식유래의 뇌졸중 유발 고혈압 흰쥐(SHRSP)에 있어서 수용성 식이 섬유의 급여가 근섬유 형태에 따른 GLUT4 발현에 미치는 영향 (Effects of Soluble Dietary Fiber on Skeletal Muscle GLUT4 Protein Contents in SHRSP Fed a High-Fat Diet)

  • The Purpose of this study is to investigate the effect of soluble dietary fiber psyllium on insulin sensitivity and skeletal muscle glucose transporter 4(GLUT4) protein expression in stroke-prone hypertensive rats(SHRSP) fed a high-fat diet containing 5% of psyllium or cellulose from five to nine weeks of age. Obtained results were as follows : (1) In the psyllium diet group fasting plasma glucose level was significantly reduced and glucose levels upon oral glucose tolerance test were significantly lower than cellulose diet group at 30 min(p<0.05) and 60 min(p<0.01) (2) Skeletal muscle GLUT4 contents were significantly increased in the soleus(slow twitch) and extensor digitorum longus(fast twitch) muscle of psyllium diet group. (3) However there was no difference in insulin levels in the fasting and oral glucose tolerance test. These results indicated that psyllium diet improves peripheral insulin sensitivity but not insulin secretion. In conclusion our present finding suggest that soluble fiber diet is effective to increase insulin sensitivity in SHRSP. From these results it was suggested that soluble dietary fiber supplementation effectively prevents insulin resistance.

한국인 남자대학생의 주요 상용식품의 불용성 및 수용성 식이섬유 함량 분석 (Analysis of Insoluble(IDF) and Soluble Dietary Fiber(SDF) Content of Koran Male College Students)

  • Contents of insoluble(IDF), soluble dietary fiber (SDF), and total dietary fiber(TDF) of 30 foods which are consumed commonly by 80 Koeran male college students were determined by Prosky and colleagues' enzymatic-gravimentric method. Foods with highest intake frequency were rice, Kimch'i, and red pepper powder. TDF, IDF, and SDF contents of rice were 0.96, 0.59 and 0.37g/100g wet wt., respectively and tose of Kimch'i were 3.07, 2.19 and 0.88g/100g wet wt., respectively. Red pepper powder contained high amount of TDF(39.37) and IDF (33.13g/100g wet wt.). The TDF content of the 30 foods ranged from 0.70 to 39.37g/100g wet wt. Red pepper (39.37), dried laver(31.36), and dried sea mustard (37.77g/100g wet wt.) contained high amounts of TDF. The IDF content of the 30 foods ranged from 0.13 to 33.13g/100g wet wt. Red pepper powder (33.13), dried laver(15.55) and sesame(15.43g/100g wet wt.) contained high amounts of IDF. SDF of the 30 foods ranged from 0.01 to 25.66g/100g wet wt. Dried sea mustard(25.66), dried laver(15.81), coffee powder (13.17), and garlic(8.72g/100g wet wt.) were good sources of SDF. % ratio of SDF to TDF of the 30 foods was lower than 50% except soybean curd(94.27%), coffee powder (88.93%), garlic(86.17%), dried sea mustard(67.94%), and dried laver(50.41%). It is recommended to increase intake of seaweeds in order to supply TDF adn SDF properly.

식용버섯 중 식이 섬유소의 함량 측정 (Determination of Dietary Fiber Contents in Mushrooms)

  • 6종류의 식용 버섯에 함유되어 있는 dietary fiber를 Southgate방법, NDF방법, FRI방법으로 측정한 결과는 다음과 같았다. 식용 버섯 중에 함유되어 있는 dietary fiber를 Southgate방법, NDF방법, FRI방법으로 측정한 결과는 각각 $20.08\pm1.45g$/100g dry weight, $20.24\pm1.85g$/100g dry weight, $27.5\pm2.7g$/100g dry weight이었고, 세가지 실험 방법간의 측정치 차이를 보면, 대체로 Southgate방법과 NDF방법과는 유의적인 차이가 없었던 반면, FRI방법과는 유의적인 차이가 크게 나타났다. 버섯중의 dietary fiber성분 비율은 Southgate방법에 의 한 water-soluble fiber성분이 1.7~3.1%, hemicellulose가 47.0~66.6%, cellulose가 28.4~57 7%, lignin 0.9~3.3%였고, NDF방법에 의해 측정한 hemicellulose는 61.8-79.1%, cellulose는 5.4~32.7%, lignin은 4.5~15.5% 였다. 일반적으로 버섯류의 dietary fiber성분은 hemicellulose가 가장 많았고 그 다음으로 cellulose가 많이 함유되어 있었다. Dietary fiber와 crude fiber의 함량비 (DF/CF)는 2~4배 정도로 dietary fiber가 높았다.

콩나물 성장중에 식이섬유 함량과 조성의 변화 (Changes in the Contents and Composition of Dietary Fiber during the Growth of Soybean Sprout)

  • This study was conducted to determine changes in th contents and composition of dietary fiber during the growth of soybean sprout. Soybean was soaked in water at $25^{\circ}C$ for 2hrs and cultivated at 2$0^{\circ}C$ for 7 days under dark condition. The soybean sprouts were divided into cotyledon and axis and sampled every 24hrs. The analysis methodlogies used were Van Soest's NDF, AOAC's ADF and lignin and Prosky's IDF, SDF, TDF. The weight of 100 sprouts increased gradually from 20.26g to 90.12g during the growth periods. The weight increased to 344.9% of the original weight. The germination rate was 100% after soaking at $25^{\circ}C$ for 2hrs. Root length increased gradualy from 0.6cm at 1st day to 17.2cm at 7th day. The crude ash and crude fat contents showed no significant change in the cotyledon and axis. The crude protein contents increased in the cotyledon and axis, whereas the total carbohydrate content didn't have general tendency. The insoluble dietary fiber(IDF), soluble dietary fiber(SDF) and total dietary fiber(TDF) contents of cotyledon were no significantly different from 20.01%, 1.45%, 21.46% at 1st day to 22.75%, 2.07%, 24.82% at 7th day on dry basis. In axis those contents increased from 23.19%, 1.97%, 25.16% at 1st day to 32.78%, 3.02%, 35.80% at 7th day, respectively. The neutral detergent fiber(NDF) contents of cotyledon and axis increased from 4.35% to 6.39% and from 6.44% to 26.60% respectively on dry basis. The acid detergent fiber (ADF) contents of cotyledon and axis increased from 2.84% to 4.91% and from 2.5% to 4.7%, but there were no significantly different in the hemicellulose and lignin contents on dry basis. The hemicellulose and lignin contents of axis increased with culture periods from 1.70% to 4.41% and from 0.20% to 2.11%, respectively. The cellulose contents increased from 4.54% to 20.35% on dry basis.

밀감과피로부터 식이섬유와 Bioflavonoid 정제 중 Fenitrothion 잔류분의 제거 (Elimination of Fenitrothion Residues during Dietary Fiber and Bioflavonoid Preparations from Mandarin Orange Peels)

  • 밀감에 유기인계 농약인 fenitrothion 성분을 인위적으로 부착시킨 후, 밀감과피에서 식이섬유 및 bioflavonoid의 정제과정중 농약성분의 제거율을 실험하였다. 신선한 밀감과피로부터 정제된 총 식이섬유와 불용성 식이섬유 및 수용성 식이섬유의 수득율은 풍건물 기준으로 각각 17.4%, 13.1%, 1.7%로 나타났다. 밀감과피에 0.5 및 13 ppm의 fenitrothion 성분을 부착시킨 후, 과피의 마쇄, 효소처리, 에탄올 침전 및 여과, 아세톤 세척, 풍건 등을 거쳐 식이섬유를 정제하였을때, fenitrothion 성분의 제거율을 보면 각각 총식이섬유에서 98.4%, 91.9%, 불용성 식이섬유에서 99.7%, 97.1%, 그리고 수용성 식이섬유에서 100%, 99.6%로 나타났다. 밀감과피로 부터 마쇄, 열수추출, 에탄올 침전, hexane 및 butanol 추출 과정에 의한 bioflavonoid 정제 중 fenitrothion 잔류분의 제거율은 중간추출물에서 92.7%, 최종추출물에서는 100%로 나타났다. 결론적으로 밀감과피에 잔류하는 fenitrothion 성분은 식이섬유와 bioflavonoid의 정제 중에 그의 대부분이 제거되는 것으로 판단된다.
