여주 분말을 이용한 데리야끼 소스의 품질특성 (Quality Characteristics of Teriyaki Sauce added with Bitter Melon (Momoridaica charantia L.) Powder)

  • This study evaluated th physicochemical and sensory characteristics of teriyaki sauce added with bitter melon (Momoridaica charantia L.) roasting powder. Teriyaki sauce containing Momoridaica charantia L. roasting powder at concentration of 0% (control), 2% (RMT2), 4% (RMT4), 6% (RMT6), 8% (RMT8). Color of teriyaki sauce added with Momoridaica charantia L. roasting powder were lower than the control. The pH of the sauce ranged from $4.31{\pm}0.01{\sim}4.87{\pm}0.01$. As the amount of added Momoridaica charantia L. roasting powder was increased, total soluble solid content and viscosity of teriyaki sauce increased. DPPH and ABTS radical scavenging activities of Momoridaica charantia L. added teriyaki sauce increased. The sensory evaluation was performed with scoring test s for color, flavor, taste, bitter taste, and overall acceptability by 50 professional panelists. In sensory evaluation, teriyaki sauce added with 4% Momoridaica charantia L. roasting powder concentrate high score in sensory preference. Based on the results, 4% should be recommended as the optimum level of Momoridaica charantia L. roasting powder concentrate to be added for the preparation of teriyaki sauce.

THE USE OF MULTINUTRIENT BLOCK SUPPLEMENTED TO UREA TREATED RICE STRAW BASE DIET FOR DAIRY HEIFERS

  • Eighteen Holstein Friesian ${\times}$ Native heifers with an average live weight of $175.4{\pm}27.8kg$ were allotted to 3 dietary groups. All animals were kept individually in a stanchion barn with free access to water and urea-treated rice straw (UTS). The supplemented feeds were as follows: Group (Gr) 1 - concentrate mixture (15% CP) at 1% body weight (BW), Gr 2 - concentrate mixture at 0.7% BW + free licking of multinutrient block (MNB), Gr 3 - as Gr 2 + 0.3% BW ground com. Multinutrient block composed of 20% mineral mixture, 10% urea, 18% molasses, 20% soybean meal, 22% sesame meal, 10% cement, 0.15 million IU and 50 IU/kg MNB of vitamin A and E. The experimental period lasted 12 weeks. The result revealed that MNB enhanced intake of UTS and total dry matter intake. Animals in Gr 3 consumed a higher amount of feed than the other 2 groups, thus resulting in the highest live weight gain and tended to possess the best feed conversion ratio. Heifers in Gr 2 also performed better than Gr 1 although the difference was not significant. Average MNB intake found to be 0.65 kg/day. Feed cost per kg gain was not significantly different amon groups. However if the cost of MNB could be lower, it would benefit the production cost of animals. The advantage of MNB is the safety of using a high level of urea. Although it was supplemented to UTS which also contained non-protein nitrogen (NPN), no toxic sign was shown. The results indicated that MNB could be partially substituted to concentrate mixture and it was even better when used incombination with soluble carbohydrate feed.

크랜베리 농축액을 첨가한 젤리의 품질 및 항산화 활성 (Quality and Antioxidant Properties of Gelatin Jelly Incorporated with Cranberry Concentrate)

  • 크랜베리 농축액의 첨가량을 0~15%로 달리하여 젤리를 제조한 후 물리화학적 품질, 항산화 특성 및 소비자 기호도를 비교하였다. 크랜베리 농축액의 첨가 비율이 증가함에 따라 젤리의 pH와 경도는 감소하였고, 가용성 고형분 함량은 증가하는 경향을 보였다(P<0.05). 밝기를 나타내는 $L^*$값은 농축액의 첨가량이 증가할수록 유의적으로 감소하였고, 적색도를 나타내는 $a^*$값은 현저하게 증가하였다(P<0.05). 황색도를 나타내는 $b^*$값은 농축액 첨가에 따라 현저하게 감소하였으나, 첨가 농도와 직접적인 연관관계는 발견되지 않았다. 한편 농축액의 첨가량이 증가함에 따라 항산화 활성을 나타내는 DPPH와 ABTS 라디칼 소거능은 유의적 차이를 나타내며 증가하였다(P<0.05). 소비자 기호도 검사 결과 6% 첨가군이 대부분의 평가항목에서 유의적으로 높은 점수를 얻었고, 특히 전체적인 기호도 측면에서도 유의적으로 가장 높게 평가되어 젤리의 관능품질과 건강기능성 효과 등을 고려할 때 최적 첨가 농도로 6%가 가장 적합한 것으로 판단된다.

서로 다른 보조제에 의한 acetamiprid 액제의 살충활성 증진효과 (Enhancement of insecticidal efficacy of acetamiprid soluble concentrates using different adjuvants)

  • 본 연구는 서로 다른 보조제를 이용하여 살충제인 acetamipid 4% 액제(SL)의 제조처방을 확립하고 생물활성 검정을 통하여 보조제에 의한 살충활성의 증가효과를 검토하고자 수행되었다. 시험에 사용된 보조제는 SS(Sodium alkylcarboxylate)와 PE(Polyoxyethylene alkyl ether) 두가지 였으며, 기초적인 제제시험을 통하여 안정적인 액제 제조처방을 확립하고 선발된 보조제를 이용하여 각기 다른 4가지 제조처방을 가진 시제품을 제조하여 시험에 사용하였다. 각각의 시제품은 보조제 특성을 평가하기 위하여 기본적인 물리성을 측정하였고 오이를 대상으로 오이총채벌레(Thrips palmi) 및 목화진딧물(Aphis gossypii)에 대한 살충 활성을 비교하였다. 보조제가 첨가되지 않은 SL1의 경우, 보조제를 첨가하면서 표면장력이 44 dyne/cm에서 34 dyne/cm으로 감소하였고 접촉각은 SS와 PE의 혼합 보조제를 사용한 SL4에서 가장 낮은 값을 나타내었다. 오이 총채벌레 및 목화진딧물에 대한 살충활성은 보조제를 첨가함에 따라 증가하였고 단독 보조제를 사용한 SL2와 SL3보다는 SS와 PE의 혼합 보조제를 사용한 SL4에서 가장 우수한 활성을 나타내었다. 이상의 결과는 적절한 보조제의 선발에 의하여 살충제의 활성을 증가시킬 수 있고 이를 통하여 살충제의 처리량을 줄일 가능성이 있음을 보여주고 있다.

소나무수피 알칼리추출물의 한외여과 및 접착제 제조특성 (Ultrafiltration and Adhesive Characteristics of Alkali-soluble Extracts from Radiata Pine Barks)

  • Alkali-soluble extracts were prepared from medium-sized barks of Radiata pine(Pinus radiata). There are difficulties in the production of extracts with uniform quality and in the preparation of adhesives with suitable viscosity. Ultrafiltration using an Amicon cell was subjected to fractionate extracts according to molecular sizes in order to overcome the above problem. The filtration efficiency was studied by using thin channel filtration systems. Adhesive manufacturing was also examined. Removal of particles greater than 0.45m from the extracts increased both filtration speed (flux) and yields of solids in the filtrates. Ultrafiltration with PM 10 membrane was very effective to fractionate and concentrate the extracts. Stiasny precipitates from the filtrates obtained by PM 10 membrane were very lower than that(83%) of the retentates. This ultrafiltration method was efficient for obtaining high yield purified phenolic compounds(mainly polyflavanoids) and thus important for preparing wood adhesives from barks. The extracts were shown excessive high viscosities at the concentrations required for adhesive formulation, but this high viscosity and short gelation time was reduced by lowering pH of the extracts and addition of urea. The highest bonding strength of plywoods(340g/$m^2$ of adhesive spreads) was achieved with adhesive formulated by 100parts of mixed alkali extracts and urea(70/30,w/w), 10parts of p-formaldehyde and 3.5parts of wheat flour at pH 6, and by hot pressing at the conditions of 12kg/$cm^2$ at $120^{\circ}C$ for 10 minutes.

Zinc Bioavailability in a Semolina/Soy Protein Mixture Was Not Affected by Extrusion Processing

  • Effects of extrusion processing on zinc bioavailability in a product made from 85% semolina and 15% soy protein concentrate were determined using in vitro and in vivo techniques. Soluble and dialyzable zinc contents of the extruded product were 15.3 and 13.0 $\mu$g/g, respectively, compared to 15.6 to 15.0$\mu$g/g in the raw (unprocessed) ingredients. Zinc bioavailability in diets in which all of the zinc (14ppm) was provided either by the extruded product or by its raw ingredients was determined in two groups of male Sprague Dawley rats. No differences were found in concentrations of zinc in plasma, liver and femur between rats fed the two experimental diets. Apparent zinc digestibility was similar for both diets. These results are consistent with the in vitro results showing no effect of extrusion processing on zinc bioavailability.

홍국으로부터 불리한 Monascus 균주의 향균효과 (Antimicrobial Effect of Monascus Strains Isolated from Ang-Khak)

  • Total 29 Monascus strains were isolated from Ang-Khak and 4 of them were selecte based on the relative intensity of soluble red pigment and growth rate. The optimum growth temperature of the selected isolates was 32.5$^{\circ}C$ on malt extract agar(MEZ) plate. The optimum growth pH was 5.0 on czapek yeast extract agar plate, while it was pH 6.2 or 6.5 on MEA plate. Isolate No. 116, especially, showed the strongest animicrobial activity aganist Bacillus subtilis and Staphylococcus aureus but much less aganist Escherichia coli and Enterobacter aerogenes. The maximun antimicrobial activity of isolate No. 116 against St. aureus was achieved at initial pH 5.3 on rice extract broth. The acitivity was increased with increasing amount of culture broth concentrate of isolate No. 116.

Does vitamin blends supplementation affect the animal performance, carcass traits, and nutrient digestibility of young Nellore finishing bulls?

  • Objective: This study was realized to evaluate the effects of supplementation with blends of water and fat-soluble vitamins on animal performance and carcass traits of young Nellore bulls. Methods: Forty-three Nellore bulls, with an initial weight of 261±27.3 kg and a mean age of 8±1.0 months, were used. Five animals were slaughtered at the beginning of the experiment (reference group), to determine the initial empty body weight of the bulls that remained in the experiment. The remaining 38 bulls were fed ad libitum and distributed in a completely randomized design in a 2×2 factorial scheme, with or without supplementation of water-soluble (B-blend+ or B-blend-) and fat-soluble (ADE+ or ADE-) vitamin blends. Diets were isonitrogenous (120 g of crude protein/kg dry matter [DM] of total mixed ration) and consisted of a roughage:concentrate rate of 30:70 based on total DM of diet. The experiment lasted 170 days, with 30 days of adaptation and 140 days for data collection. At the beginning and end of the experimental period, the bulls were weighed to determine the average daily gain. To estimate the apparent digestibility of nutrients and microbial efficiency, spot collections of feces and urine were performed for five consecutive days. Results: DM, ashes, organic matter, crude protein, ethereal extract, neutral detergent fiber corrected for residual ash and residual nitrogenous, and N intake and apparent digestibility were not influenced by vitamin supplementation, but total digestible nutrients intake and non-fibrous carbohydrates digestibility were influenced by B complex vitamin supplementation. Nitrogen balance, microbial efficiency, and performance data were not influenced (p>0.05) by vitamin supplementation. Conclusion: Vitamin supplementation (a blend of water-soluble and fat-soluble vitamins or their combinations) does not influence the animal performance and carcass traits of young Nellore bulls.

진공농축에 따른 감식초의 이화학적 특성 변화 (Change of Physicochemical Characteristics of Persimmon Vinegar by Vacuum Concentration)

  • 본 연구에서는 감식초의 유효성분 손실은 최소화하면서 음용시 느껴지는 이취인 톡쏘는 향과 맛을 약화시켜 섭취하기 부드럽게 하고, 좋은 식품소재로서 감식초의 활용도를 높이기 위해서 감식초 농축액을 제조할 때 진공농축 정도에 따라 변하게 되는 이화학적 특성들을 조사하여 적정 농축방법을 확립하는데 기초자료로 활용하고자 하였다. 감식초를 진공농축시킴에 따라 색도, 점도, pH, 산도, 유기산함량, 유리당 함량과 같은 이화학적 특성들은 큰 차이를 나타내는 것으로 나타났다. 위의 결과들을 종합해 볼 때 음용시의 기호도와 다른 식품소재로서의 활용도를 높이기 위한 감식초의 농축정도는 $30^{\circ}Bx$ 이하로 진공농축하여 음용시 이취나 이미로 작용하는 너무 강한 톡쏘는 맛과 향을 어느 정도 제거시켜 적당한 맛과 향을 유지하게 하고 유효성분을 최대한 보존시키는 것이 좋을 것으로 판단된다.

감식초 농축액들의 향기성분 분석에 대한 전자코의 적용 (Application of Electronic Nose for Aroma Analysis of Persimmon Vinegar Concentrates)

  • 새로이 개발되어 식품과학 분야에 도입되기 시작한 conducting polymer로 구성된 32개의 센서를 장착한 전자코를 이용하여 감식초의 농축시 향기성분의 변화를 측정하고 그 데이터를 관능검사와 비교 분석하여, 감식초의 향기성분 분석에 전자코의 활용가능성 여부를 알아보았다. 관능검사와 유기산 분석결과는 감식초 농축액들간의 농축정도에 따른 향기성분 및 유기산 함량의 변화와 차이를 분명히 나타내고 있었으나, conducting polymer로 이루어진 32개의 센서 array가 장착된 전자코는 감식초의 농축 정도에 따른 향기 성분의 패턴 변화를 감지하지 못하고 모두 같은 패턴으로 나타내주고 있어서 conducting polymer 센서가 장착된 전자코는 감식초의 향기성분 분석에는 적합하지 않은 것으로 판단된다.
