  • Ganjang-gejang (soy sauce-marinated crab) is a ready-to-eat (RTE) seafood and is also one of the most popular traditional dishes in Korea. It is generally prepared by washing raw blue crabs and then preserving them in soy sauce. Since this process does not involve cooking or any treatment with heat, it is difficult to control the microbiological quality of the final product. Thus, the objectives of this study were to compare the efficacies of various sanitizers in eliminating microorganisms on raw blue crab during the washing step and to evaluate the effectiveness of chitosan on the inhibition of microbial growth in the ganjang-gejang during storage. The raw blue crabs were submerged in chlorinated water (50 mg/L), peracetic acid (40 mg/L), acetic acid (5%) and lactic acid (5%) for 10 min at $25^{\circ}C$, respectively. The blue crabs treated with 5% acetic acid were marinated with soy sauce containing 0.5 and 1% of soluble chitosan, followed by storing them at 4 and $12^{\circ}C$ for up to 30 days. Results show that 5% acetic acid reduced the microbial populations on the blue crabs by 1.5 log CFU/g, which was significantly higher than those of other treatments. Based on these results, 5% acetic acid was selected for the washing step. The microbial populations of all ganjang-gejang samples significantly increased to about 8.0 CFU/g at $12^{\circ}C$ for 7 days. At $4^{\circ}C$, the microbial populations of the products containing 1% chitosan increased by about 2.9 CFU/g for 20 days, which were significantly lower than those (4.2-4.5 log CFU/g) of the products without and with 0.5% chitosan. Thus, these results suggest that 5% acetic acid washing of raw blue crabs and the addition of 1% chitosan in ganjang-gejang could improve the microbiological quality of the final products under refrigerated condition.

  • In recent years, the deterioration of fruit quality caused by poor coloration and sunburn disorder has become serious problems in apple market, which is a result of the increase of surface temperature due to the abnormal temperature increase during summer season. This study was conducted to investigate the effect of wind net shading and fine water spray using sprinkler on fruit coloration, sunburn damage and overall fruit quality of 'Fuji' and 'Hongro' apples. Fifteen sprinklers (7L/hr) were installed at the orchard of the Chungcheongnam-do Agricultural Research and Extension Services, located in Sinam-myeon Chungcheongnam-do Korea, at a height of 3m above the apple tree of $1.5m{\times}3.5m$ north-south direction. Fine water spraying treatment was divided into day time spray (10:00 am to 6:00 pm) and all day spray (10:00 am to 10:00 pm) from early July to 10 days before harvest in 2017 and 2018 season, respectively. Temperature of the surface of apple fruit, characteristic of fruit, and degree of sunburn damage were investigated. In 'Fuji', the fruit surface temperature checked at 2 pm on August 10 was decreased considerably in the day time spray ($35.6^{\circ}C$) and wind net ($39.0^{\circ}C$) when compared with the untreated control ($44.4^{\circ}C$). Similarly, the fruit surface temperature also decreased considerably in the all day spray ($35.1^{\circ}C$) and wind net ($36.9^{\circ}C$) treatments when compared with the untreated control ($46.5^{\circ}C$) in 'Hongro' apples. The incidence of sunburn disorder was significantly decreased with day time spray (5.0%), all day spray (5.8%) and wind net (7.0%) when compared with untreated control (23.4%) in 'Fuji' apples. As a results, the treatment of fine water spray and wind net consequently showed 26% and 34% increase of redness ($a^*$) value in the skin color difference, respectively, in 'Fuji' apples.

  • This study was carried out to investigate the growth characteristics and propagation methods of the Korean native Amelanchier asiatica, A. arborea, and A. alnifolia as fruit trees for gardens. Due to the lack of recent research on Amelanchier spp., their superficial classification is still unclear and the names are being used interchangeably. The results are obtained as follows : A. arborea and A. alnifolia were globular type multi-stemmed shrubs. A 20-year-old tree of A. asiatica was 7.8m in height, with a 5.2m crown width, with one trunk. As for the morphological characteristics, leaves of A. asiatica were oblong, with an acuminate of, 6.1cm and 3.6cm width, but A. arborea and A. alnifolia had acute obovate leaves. The leaf size of A. alnifolia was the largest among the three species. The flower size of A. asiatica was bigger than that of A. arborea and A. alnifolia. In addition, its petals and flower clusters were also the largest among the three species. The flowering of A. asiatica initiated on April 21 and then bloomed for a duration of 24 days in Osan, while that of A. arborea and A. alnifolia initiated flowering on April 12 and then bloomed for a duration of 22 days in the same location. The fruit of A. arborea and A. alnifolia were green on May 10~12, it changed into purplish red on May 24~26, and its matured on June 1~3. The duration of fruit persistence of A. arborea and A. alnifolia were 48~50 days. On the other hand, A. asiatica showed greenish fruit on May 20, it became red on September 4, and had fallen by October 3. The fruit size was the largest at 1.03cm of height and 1.12cm of diameter in the A. arborea, followed by the big berry of A. alnifolia and the smallest fruit in the native, A. asiatica. It was difficult to root due to the hardwood cutting of A. arborea at a 40% rate of rooting. In the softwood cutting, the rooting rate of A. arborea was increased by the treatment with concentrated IBA, especially at 5,000 and 7,000ppm. The optimum date for cutting was on June 27, when the rooting rate was more than 80%. The most effective method for rooting of A. arborea was rootone or 7,000 ppm IBA treatment on June 27 softwood cuttings, which showed a rooting rate of over 80%.

  • Most of the red ginseng (RG) products contain active substances derived from hot water or alcohol extraction. Since active substances of RG are divided into two types - water-soluble and liposoluble - water or alcohol is needed as an extraction solvent and this leads the different extraction yields and components of the active substances. To overcome the limit, whole red ginseng powder can be used and consumed by consumers. In this study, the physicochemical properties and extractable active substance contents of variable-sized RG powder ($158.00{\mu}m$, $8.45{\mu}m$, and $6.33{\mu}m$) were analyzed, and dispersion stability was measured to investigate the suitable size of RG powder for industrial processing. In the results, no significant difference was found from the changes in color intensity and thiobarbutric acid tests at $4^{\circ}C$, $25^{\circ}C$, and $40^{\circ}C$ for 4 weeks. There was no significant difference on the production of antioxidants and ginsenoside among the samples (p>0.05). In dispersion stability, $RG-158.00{\mu}m$ was precipitated immediately, and the dispersion stabilities between $RG-8.45{\mu}m$ and $RG-6.33{\mu}m$ showed no significant difference. It implies that fine RG is suitable for the production process. With further study, it seemed that the physicochemical effects of RG particle sizes can be clearly revealed.

  • The current study was performed to investigate the effect of recycling coir substrates on the growth, fruit yield, and quality of strawberry plants. Analysis of physical properties revealed that the pH of a fresh coir substrate was 5.04 while those of substrates reused for one and two years were 5.20 and 5.33, respectively. The electrical conductivity (EC) of a new substrate was as high as $4.58dS{\cdot}m^{-1}$. This can cause salt stress after transplanting. The EC tended to decrease as the substrate was recycled, and the EC of a two-year recycled substrate was $1.48dS{\cdot}m^{-1}$. The fresh substrate had lower nitrogen and calcium concentrations, but higher phosphate, potassium, and sodium concentrations than the recycled coir substrate. The coir substrates recycled for one or two years maintained better chemical properties for plant growth than the fresh substrate. Strawberry growth varied depending on the number of years that the coir substrate was recycled. In general, strawberries grown in substrates that had been reused for two years did better than those grown in substrates that had been reused once or were fresh. Ninety days after transplanting, a plant grown in a substrate that had been reused for two years contained 25 leaves, which was 3.6 more than with a fresh substrate. In addition, the plants grown in a substrate that had been reused for two years exhibited larger leaf areas than those grown in other substrates. Coir substrates that had been reused for one year increased the number and area of leaves, but not as much as the substrate that had been reused for two years. One- and two-year reused coir substrates increased the weight of strawberries produced relative to the unused substrate, but the difference was not statistically significant. The plants grown in two-year reused substrates were longer and wider, as well. Also, the number of fruits per plant was higher when substrates were reused. Specifically, the number of fruits per plant was 28.7 with a two-year reused substrate, but only 22.2 with a fresh substrate. The fruit color indices (as represented by their Hunter L, a, b values) were not considerably affected by recycling of the coir substrate. The Hunter L value, which indicates the brightness of the fruit, did not change significantly when the substrate was recycled. Neither Hunter a (red) nor b (yellow) values were changed by recycling. In addition, there were no significant changes in the hardnesses, acidities, or soluble solid-acid ratios of fruits grown in recycled substrates. Thus, it is thought that recycling the coir substrate does not affect measures of fruit quality such as color, hardness, and sugar content. Overall, reuse of coir substrates from hydroponic culture as high-bed strawberry growth substrates would solve the problems of new substrate costs and the disposal of substrates that had been used once.

  • The purpose of this study was to examine potential effects of shading and fertilizing treatment - two basic applicable factors in production of 1-year-old container seedling - on growth and seedling quality of Quercus myrsinaefolia, one of evergreen tree species in warm temperate zone of Korean. Every experimental process was conducted in a facility that consisted of compartments under the lighting control with full sunlight and shading (35%, 55% and 75% of full sunlight). Based on fertilizing treatment, this study made an experiment in 4 groups of container seedling: control (non-treated seedlings) and 1000, 2000, 3000 ppm group (3 groups with different concentrations of water-soluble fertilizer (N:P:K=19:19:19, v/v). Seedlings under 55% shading with 2000 ppm concentration showed the highest height (totaling 21.1 cm), and under 35% shading with 2000 ppm concentration showed the highest root collar diameter growth (totaling 3.96 mm) among others. All three fertilizing groups except control showed H/D ratio ranging from 4.27 to 5.26 regardless of fertilizer concentration under 35% and 55% shading where container seedlings showed a tendency toward excellent growth of height and root collar diameter. Overall, 2000 ppm group under 55% shading showed highest dry mass production of leaves (1,292 g) among others, while 2000 ppm group under 35% shading showed highest dry mass production of shoots and roots (0.592 g and 0.998 g, respectively) among others. Also, it was found that 2000 ppm group under 35% shading showed the highest dry mass production of whole seedling, which was followed by 2000 ppm group under 55% shading and 3000 ppm group under 35% shading, respectively. According to analysis on LWR of Quercus myrsinaefolia depending on shading and fertilizing treatment, it was found that 3000 ppm group under 75% shading showed highest LWR level among others, whereas every fertilized group showed lower RWR level than control without fertilizing regardless of shading levels. In general, all fertilized groups under 55% shading had relatively high quality index (QI), and 2000 ppm group under 35% shading had highest QI among others. Based on the findings of this study, it is concluded that shading level ranging from 35 to 55% and fertilizing concentration of 2,000 ppm are suitable for producing 1-year-old container seedlings of Quercus myrsinaefolia with excellent growth and high quality index.

  • This study was conducted to develop food and medicinal products containing useful components of Lentinula edodes in Codonopsis lanceolata and Platycodon grandiflorus for use as herbal medicine. We manufactured C. lanceolata (FCLM) and P. grandiflorus (FPLM) extract fermented with L. edodes mycelium. The effect of the two fermented products on proximate composition, free sugar, organic acid, 𝛽-glucan, ergothioneine, ergosterol, and vitamin D2 levels, and 3T3-L1 preadipocyte cell growth were studied. The proximate composition analysis results showed that the crude fiber and crude fat content in FCLM was higher than that in FPLM, and the crude protein and soluble nitrogen content in FPLM was higher than that in FCLM. Free sugar analysis detected arabinose, glucose, and sucrose in both FCLM and FPLM, and the total free sugar content was high in FPLM. The organic acid content was lower in FCLM and FPLM compared to C. lanceolata and P. grandiflorus before fermentation. The 𝛽-glucan content was higher than that of L. edodes used as a control in both fermented products, FCLM and FPLM. The content of ergothioneine, an antioxidant, was higher in FCLM than in FPLM. Ergosterol content was highest in L. edodes which was used as a control, and the two fermented products showed similar content. Vitamin D2 was detected only in FCLM and FPLM, and FPLM (0.58±0.01 mg%) showed a higher vitamin D2 content than FCLM (0.47±0.01). FCLM and FPLM showed a higher level of cell viability for 3T3-L1 pre-adipocytes compared to non-fermented C. lanceolata and P. grandiflorus. In addition, FCLM and FPLM inhibited 3T3-L1 preadipocyte differentiation more than C. lanceolata and P. grandiflorus before fermentation, which may exert an anti-obesity effect.

  • Agrivoltaic systems, also called solar sharing, stated from an idea that utilizes sunlight above the light saturation point of crops for power generation using solar panels. The agrivoltaic systems are expected to reduce the incident solar radiation, the consequent surface cooling effect, and evapotranspiration, and bring additional income to farms through solar power generation by combining crops with solar photovoltaics. In this study, to evaluate if agrivoltaic systems are suitable for viticulture, we investigated the microclimatic change, the growth of vines and the characteristics of grape grown under solar panels set by planting lines compared with ones in open vineyards. There was high reduction of wind speed during over-wintering season, and low soil temperature under solar panel compared to those in the open field. There was not significant difference in total carbohydrates and bud burst in bearing mother branches between plots. Despite high content of chlorophyll in vines grown under panels, there is no significant difference in shoot growth of vines, berry weight, cluster weight, total soluble solid content and acidity of berries, and anthocyanin content of berry skins in harvested grapes in vineyards under panels and open vineyards. It was observed that harvesting season was delayed by 7-10 days due to late skin coloration in grapes grown in vineyards under panels compared to ones grown in open vineyards. The results from this study would be used as data required in development of viticulture system under panel in the future and further study for evaluating the influence of agrivoltaic system on production of crops including grapes.

  • In this study, basic data were obtained to determine the optimal cultivation method to achieve stable fruiting and yield increase in "Cheonhwang" jujube trees. Accordingly, thefructification, fruit characteristics, and yield according to tree age were analyzed. The mean (and range of) tree height, crown area, stem diameter near the root, clear stem length, number of main branches, and distance between main branches were 235.6 (217.4-253.8) cm, 3.5 (3.1-4.1) m2, 5.5 (4.0-7.1) cm, 70.6 (66.2-72.7) cm, 9.7 (8.6-10.5), and 10.4 (7.9-14.2) cm, respectively. Correlationanalysis results indicated that tree age was positively correlated with crown area, stem diameter near the root, and clear stem length but not with the number of main branches. The mean number (and range) of fruit per fruit-bearing mother shoot and tree were 18.3 (16.7-18.3) and 170.7 (157.9-178.3), respectively. Tree age was not significantlycorrelated with fruiting characteristics (i.e., the numbers of fruit-bearing mother shoots per main branch, fruit-bearing shoots per fruit-bearing mother shoot, fruit per fruit-bearing shoot, and fruit per tree). Given that the shape of jujube trees is constantly managed according to the growing area and greenhouse type, the tree growth characteristics were more affected by tree management techniques than by tree age. The mean (and range of) fruit weight, fruit hardness, and soluble solid content were 28.6 (27.7-30.3) g, 29.4 (28.5-30.4) N, and 20.4 (19.3-21.0) °brix, respectively, and these fruit characteristics were not significantly correlated with tree age.The average yield per tree of the 'Cheonhwang' jujube cultivar was 4.9 (4.8-5.0) kg, which was not significantly correlated with tree age.
