Modified Atmosphere Packaging of Peaches (Prunus persica L. Batsch) for Distribution at Ambient Temperature (복숭아의 상온유통을 위한 기능성 포장기법)

  • Modified atmosphere packaging of peaches(Prunus persica L. Batsch) was investigated to extend their freshness during distribution. Peaches were packaged in the PE film(20LD, 40LD), the PE film modified by addition of 5%(w/w) zeolite(20CK, 40CK), and the PE film containing $Purafil^{\circledR}$ sachet(20LP, 40LP). Quality indexes of peaches during storage at $20^{\circ}C$ were measured in terms of weight loss, soluble solids content, pH, titratable activity, firmness, color and sensory properties. Gas composition and ethylene content In the film bags changed rapidly at the early stage of storage. Within 8 days, weight loss of the unpacked control increased upto ll.8% but those of the packaged remained below 2%. There was no significant difference in soluble solids content and pH in all the treatments. Ethanol content of peaches packed in 40LD was 12.88 mL/kg and acetaldehyde content in 40CK was $160\;{\mu}L/kg$ for 8 days. Peaches packed in 20CK showed a good visual and sensory Quality. The result suggested that active packaging treatment such as 20CK could be used for extending freshness of peaches during transport period at ambient temperature.

Chemical Composition, In situ Digestion Kinetics and Feeding Value of Oat Grass (Avena sativa) Ensiled with Molasses for Nili-Ravi Buffaloes

  • This study examined the effect of cane molasses and fermentation time on chemical composition and characteristics of oat grass silage (OGS) and its in situ digestion kinetics, intake, digestibility, milk yield and composition in buffaloes (Bubalus bubalis). Oat grass (OG) harvested at 50-days of age was ensiled in laboratory silos with cane molasses at the rate of 0, 2, 4 and 6% of OG dry matter (DM) for 30, 35 and 40 days. Silage pH was decreased while lactic acid content increased with increasing level of cane molasses and fermentation time. Dry matter (DM), crude protein (CP) and true protein (TP) content of OGS were (p<0.05) significantly higher with higher cane molasses levels. However, they were not affected by the fermentation time. Similar trends were observed for neutral detergent fiber (NDF), acid detergent fiber (ADF), cellulose, acid detergent lignin and ash content of OGS. The OG ensiled for 30-days with 2% molasses was screened from laboratory study and used to determine comparative in situ DM and NDF digestion kinetics of OG and its silage. In situ DM and NDF digestibilities of OG were significantly (p<0.05) higher than OGS. Ruminal DM and NDF lag time, rate and extent of digestion of OG and its silage were similar. Two experimental diets of OG and OGS were formulated using 75:25 forage to concentrate ratio on a DM basis. Dry matter and CP intakes were similar in lactating buffaloes fed either OG- or OGS-based diets. However, NDF intake was higher in buffaloes fed the OG-compared with OGS-based diet. Apparent DM, CP and NDF digestibilities were similar in lactating buffaloes fed either OG- or OGS-based diets. Milk yield (4% FCM) was similar in buffaloes fed either OG-(10.3 kg/d) or OGS-(9.95 kg/d) based diets. Milk fat, total solids and true protein content were higher with OG compared with the OGS diet. Solids not fat and CP content were similar in milk of buffalo fed either OG or OGS. The results of this study indicate that OG ensiled with 2% molasses could safely replace 75% DM of green oat fodder in the diets of lactating buffaloes without negatively affecting intake, digestibility, milk yield and composition.

Physico-chemical Characteristics of Black Raspberry Fruits (Bokbunja) and Wines in Korea (산지별 복분자와 시판 복분자주의 이화학적 특성 분석)

  • Korean black raspberry fruits (bokbunja) were collected from 11 different producing regions, and commercial black raspberry wines were obtained from 24 manufacturers. Samples were analyzed for soluble solids, titratable acidity, pH, reducing sugar content, hunter color values, intensity, hue, total phenolic content, and organic acids. The fruit samples showed similar pH levels (3.43-3.52), but significantly differed in total acidity levels (9.98-16.2 g/L). The predominant organic acids in the fruit samples were citric acids (1.39-5.63 mg/mL) and succinic acids (0.25-6.53 mg/mL). Among the samples, black raspberry fruits from Goksung and Nonsan showed the lowest levels of total phenolic content, and the lowest values in intensity. The fruits from Jeongeup and Sunchang showed higher levels of phenolic content, soluble solids, and intensity. Some wine samples, including BH, KO, SR, and SE, showed overall high levels of phenolic content, organic acids like citric and succinic acid, and color values such as $a^*$, $b^*$, and intensity. Other wine samples, including DW, SC, GJ, and NB, were high in acetic acid, color values like $L^*$, and hue.

Comparison on the Storage Life of Different Large Seed Grapes (tetraploid) (서로 다른 대립계 포도 품종(4배체)의 저장력 비교)

  • Grapes (large seed strains)were treated with fumigation using SO\ulcorner and seal-packaged by PE film, then storage at 0$^{\circ}C$ at 90$^{\circ}C$ RH for the test of storage life. The fruits weight loss and abnormal fruits increased with storage. The abnormal fruits were rapidly produced after 80 days, however, these rates of Rubel muscat and Shingyoku were only 8.0 and 8.3%, respectively. After 90 days, the rate of Rubel muscat was 19.1%, resulting in the least rate. Moisture content of Kaiji and Honey black slightly increased and that of other grapes decreased. Soluble solids content and acidity decreased except Shingyoku and Honey black, however, sugar/acid ratio increased with these strains. The external appearances were depressed with storage but sensory test value of Shingyoku, Honey black, Rubel muscat were ranged from 7 to 9, showing good evaluation. The hardness of Honey black after 90 days resulted in the highest value 0.51 and that of Izunishiki and Kaiji were 0.23-0.25, showing the least value.

  • The transfer of predictive models using various chemometric techniques has been reported for FTNIR and scanning-grating based NIR instruments with respect relatively dry samples (<10% water). Some of the currently used transfer techniques include slope and bias correction (SBC), direct standardization (DS), piecewise direct standardization (PDS), orthogonal signal correction (OSC), finite impulse transform (FIR) and wavelet transform (WT) and application of neural networks. In a previous study (Greensill et at., 2001) on calibration transfer for wet samples (intact melons) across silicon diode array instrumentation, we reported on the performance of various techniques (SBC, DS, PDS, double window PDS (DWPDS), OSC, FIR, WT, a simple photometric response correction and wavelength interpolative method and a model updating method) in terms of RMSEP and Fearns criterion for comparison of RMSEP. In the current study, we compare these melon transfer results to a similar study employing pairs of spectrometers for non-invasive prediction of soluble solid content of peaches.

  • Under the new environmental regulations announced by the government, utilities will have to cut their sulfur dioxide emissions by 60% from 1991 levels by the year of 1999. Sulfur dioxide emissions can be reduced prior to combustion by physical, chemical or biological coal cleaning. The new technology of high gradient magnetic separation (HGMS) offers the potential of economic separatoins of a variety of fine, weakly magnetic minerals including inorganic sulfur and many ash-forming minerals from coals. In the present paper, magnetic separation tests have been conducted on Korean anthracite and high-sulfur Chinese coal to investigate the feasibility of these techniques for reducing sulfur content from coals. In wet magnetic separation, the studied operating parameters include particle size, pH, matrix types, feed solids content, feed rate, number of cleaning stages and etc. The results shows that for wet separation, 60~70% of total sulfur was removed from coals with over 80% combustible recovery, on the other hand, for dry separation, 47.6% of total sulfur was removed from coals with 75% recovery.

  • Optical properties of fruits can provide information for nondestructive quality evaluation. An attempt is made here to develop an optical method for quality evaluation of apple using the spectral reflectance of its surface. Optical fiber was used to transmit light conveniently from light source to sample and sample to detector. Spectral reflectances of two types of Fuji variety-one of which was exposed to the sunlight directly (non-bagging) and the other was wrapped with bag (bagging) - were investigated from the wavelength ranging of 400nm to 700nm. The relationships between reflectance characteristics and quality indices such as chlorophyll content, anthocyanin content, and soluble solids were analyzed.

A Study of Frozen Desert Containing Canola and Soybean Oils as a Replacement for Milk Fat

  • This study was done to determine how added vegetable oils affect the physical, chemical and microbial properties of experimental frozen desserts. There were no differences in the percentages of total fat and total solids in the seven frozen desserts. Freezing points did not differ among treatments. There were significant differences in viscosity among the frozen desserts containing up to 80% of vegetable oils. Oil substitution at 30% or higher significantly decreased viscosity when compared to the milk fat control. The hardness of frozen desserts decreased significantly with increasing addition of oils. Oil substitution at 20% or higher significantly decreased hardness. Substitution of canola and soybean oils for milk fat increased melting rate. Initiation of fluid release in the control was slower than in frozen products with added oils. The SPC values and coliform counts of all frozen products were not significantly changed. Cholesterol content decreased significantly in the products as the vegetable oil content was raised. Frozen desserts containing 10% or 60% of vegetable oils in the total fat contained 91.8%, 73.5% or 32.5%, respectively, of the cholesterol in the control.

The Study of Water Characteristics of Drinking Underground Water in the West Gyeong-Nam (서부경남지역 음용 지하수의 수질특성에 관한 고찰)

  • Water analyses were conducted on 1,525 underground water laid in the western district of Korea's South Gyeongsang Province, from January 2007 until July 2010, according to sections, factors, fountainheads and inter-factor correlativities. The following are the results. 1. As a result of local incongruity rate, 18.2% in inland areas, coastal areas and 24.5% showed a high value comparatively. Costal areas showed high incongruity rate. 2. As a result of local incongruity rate, they were found that the total colony count and general bactria 39.9%, 42.6% showed a high in costal areas. 3. As a result of local factorial inspection, it was found that the turbidity content counted up to 0 to 0.2 NTU in 59.4% in inland areas, 60.2% in costal areas of sections, and in other 12.6%, 14.0%, it exceeded 0.5 NTU. As a result of local factorial inspection, it was found that the nitrate-nitrogen content counted up to 0 to 10 mg/L in 98.2% in inland areas, 97.6% in costal areas of sections, and in other 1.8%, 2.4%, it exceeded 10 mg/L. As regards chloride in coastal areas, water quality standards for chloride 250 mg/L exceeds the 1.4% higher then in inland areas. 4. Hardness in inland areas was closely correlated with total solids (r = 0.910), sulfate ion (r = 0.819). Also, total solids and boron (r = 0.600) showed high correlativities. On the other hand hardness in coastal areas was closely correlated with total solids (r = 0.919), chloride (r = 0.829). Also sulfate ion was closely correlated with hardness (r = 0.599), turbidity and aluminum (r = 0.635) showed high correlativities in this research.

  • Recently, the number of anaerobic digestion facility for livestock manure is on the rise in Korea. All of the livestock manure anaerobic digestion facilities in operation use pig manure slurry as a substrate for anaerobic digestion. Generally, pig manure slurry is composed of 97% water and 3% solids. The particulate matter, such as corn in the form of particles that is undigested by pig is contained in the pig manure slurry. Particulate matter is a factor reducing the effectiveness of biogas production in the anaerobic digestion process. In this study, mechanical grinding treatment was applied to analyze the effect of methane production from pig manure slurry by reducing the particle size of the slurry. On the other hand, the effect of the solid concentration levels on methane production and methane content of the biogas was analyzed. The fine particle concentration in the pig manure slurry was increased by the mechanical grinding treatment. And methane production and methane content of the biogas were higher in grinded pig manure slurry than untreated raw slurry.
