Quality characteristics of Korean steamed rice cake containing different amount of red onion powder (자색 양파분말 첨가 설기떡의 품질특성)

  • The study was done in order to investigate the effects the red onion powder on the quality characteristics of the Korean steamed rice cake, Seolgiddok, with 3%, 6%, 9% and 12% of the red onion powder weight in control. The moisture content of the control with 0% red onion was 43.74% and it steadily decreased with the increase in powder (12%) resulting to the lowest at 37.02% for the cake. The springiness, adhesiveness and chewiness of the cake decreased according to the increase in powder content, while the hardness and cohesiveness increased together with the increase in powder content. The Hunter color value L in the chromaticity of the cake significantly decreased with the increase in powder content. The a value of the control was 2.18 and was redder with the increase in powder content, while the b value significantly increased together with the increase in powder content. The sensory characteristics of the cake such as color, flavor, taste and softness and chewiness increased along with increase in powder content. The overall taste was judged to be the best for the sample with the 9% added powder.

The Quality Characteristics of Soybean Dasik Added with Ramie Leaf Extract Powder (Boehmerianivea)Powder (모시 잎 분말 콩다식의 품질 특성 연구)

  • This study investigates the quality characteristics of soybean dasik made by mixing roasted beans with ramie leaf(Boehmeria nivea) extract powder. The results are as follows. For soybean dasik not including(0%) ramie leaf(Boehmeria nivea) extract powder, its moisture contents has appeared the lowest to $8.39{\pm}0.98%$, while soybean dasik with 10% ramie leaf extract powder the highest moisture contents to $14.71{\pm}0.02%$. As the content of ramie leaf(Boehmeria nivea) extract powder increased, the L-value, the a-value and b-value of soybean dasik with ramie leaf(Boehmeria nivea) extract powder significantly decreased(p<0.05). Among the texture measurement items of soybean dasik with ramie leaf(Boehmeria nivea) extract powder, the hardness, the gumminess, and the chewiness significantly increased as more amount of ramie leaf(Boehmeria nivea) extract powder added, whereas the adhesiveness and the cohesiveness significantly decreased(p<0.05%). The sensory evaluation, color and taste, softness and overall acceptability of soybean dasik with ramie leaf(Boehmeria nivea) extract powder showed that the one with 8% ramie leaf(Boehmeria nivea) extract powder were the most highly preferred, and there was no significant difference in the flavor. In conclusion, the soybean dasik added with 8% ramie leaf(Boehmeria nivea) extract powder is considered the most desirable in all of color, taste, flavor, and overall acceptability.

Standardization of Hydration in the Stratum Corneum Using by Polyols (폴리올을 이용한 각질층 수분량 측정의 표준화 연구)

  • The measurement of hydration level in the surface layer of the skin, stratum corneum (SC), gives important information on the biophysical properties and function of the skin barrier such as softness, flexibility, and healthiness of the skin. But it is difficult to measure a consistent hydration level from a sample to another sample due to individual variations and environmental changes. The aim of this study was to evaluate objective hydration after using various products in the SC. The SC Hydration was measured by capacitance (Corneometer$^{(R)}$, C+K, Germany) on the ventral site of forearm from 40 healthy volunteers. The skin surface was chronologically measured immediately after application of the test products and 3 and 6 hours later. We analyzed the averages of five measurements of each site and used the hydration increase rate for correction on untreated site variation. We found that most polyols including glycerol and butylenes glycol influenced directly the hydration increase rate in the SC previously. In this study, glycerol was used to prepare the standard products from 0 to 20 percents and applied to the same volunteers. The individual standard curve showed linear relation to glycerol concentrations. Based on the the standard curve, hydration of SC was converted into hydration increase rate to glycerol concentrations. The converted glycerol concentrations of products were repetitive and reproducible. In addition, the individual standard curve was used to relate the skin type of each individual. These results suggest that the hydration of the SC standardized regardless of external variation and individual skin condition can explain detailed skin state variation. Further studies will be conducted with other ingredients such as surfactants, lipids and aqueous materials, and with other methods for noninvasive measurement.

The Influence of $O_2$ Partial Pressure on Soft Magnetic Properties of As-deposited Fe-Sm-O Thin Films (산소분압에 따른 Fe-Sm-O계 박막의 연자기적 성질)

  • The influence of $O_2$partial presure on saturation magnetization, coercivity and effective permeability(0.5~100MHz) of as-deposited Fe-Sm-O thin films, which were fabricated by RF magnetron reactive sputtering method, were investigated. The nanocrystalline Fe(sub)83.4Sm(sub)3.4O(sub)13.2 thin film fabricated at $O_2$partial pressure of 5% exhibits the best magnetic softness with saturation magnetization of 18kG, coercivity of 0.82 Oe and effective permeability about 2,600 at 0.5~100MHz. $\alpha$-Fe grain size is decreased with increasing $O_2$partial pressure. In case of $O_2$partial pressure of 10%, it is observed that FeO compound is formed and soft magnetic properties are decreased. The electrical resistivity of Fe-Sm-O thin films were increased with increasing $O_2$partial pressure, the electrical resistivity of Fe(sub)83.4Sm(sub)3.4O(sub)13.2 thin film with the best soft magnetic properties was 130 $\mu$$\Omega$cm. Therefore, It is assumed that the good soft magnetic properties of Fe(sub)83.4Sm(sub)3.4O(sub)13.2 thin film results from high electrical resistivity and decreasing $\alpha$-Fe grain size due to precipitation of Sm-Oxide phase.

Quality Characteristics of Sponge Cake added with Banana Powder (바나나 분말을 첨가한 스펀지케이크의 품질 특성)

  • In this study, sponge cakes were prepared with substitution of 5, 10, 15, and 20% banana powder. The specific gravity and viscosity tended to increase as the ratio of banana powder increased. The foaming stability was highest at the 10% substitution level. The control group had significantly higher moisture content and volume index than the banana powder samples. The crust color values (a, b) decreased significantly with increased content of banana powder, but the a value increased. Crumb colors values (L, b) decreased as banana powder content increased while the a value increased. In terms of textural characteristics, the samples containing 5, 15, and 20% banana powder had significantly higher hardness than the 0 and 10% samples. Fracturability and resilience were maximal with 15% and 5%, respectively. Adhesiveness and chewiness were not significantly different among the samples. In the sensory evaluation, scores for banana flavor, coarseness, color, flavor, softness, and overall acceptability increased as the level of banana powder content increased. Sweetness was not significantly different among the samples. The control group had significantly higher egg-flavor as compared to the samples containing banana powder. The results indicated that substituting 10% banana powder to sponge cake is optimal for quality and provides a product with reasonably high overall acceptability.

Effects of Roasted Soybean Flour on Textural Properties of Rice Cookies (볶은 콩가루의 첨가가 쌀 쿠키의 조직감에 미치는 영향)

  • Changes in the textural properties of rice cookies as a result of using roasted soybean flour (RSF) as an additive were investigated in this study. RSF was replaced as 3, 6, 9, 12, 15 and 20% of 100 g of rice flour. The addition of RSF increased the hardness of dough and cookies as measured by texture analyzer (TA), whereas moisture content of dough and cookies decreased upon addition of RSF. Further, the addition of RSF led to an increase in the L value of dough and cookies, but to a decrease in the a and b values. In addition, the bulk density of cookies decreased upon addition of RSF, whereas bulk density of dough also declined when compared to control. The spreadability of cookies was found to be lower in comparison to control. The values of ${\Delta}bulk$ densities (BD) and ${\Delta}hardness$ of cookies also increased upon addition of RSF. From the point of view of sensory evaluation, addition of 9% RSF to rice cookies showed the highest score in terms of overall acceptability and softness. A 12% RSF addition to rice cookies led to the highest score in sandiness. As a result, we conclude that the crispy texture of the rice cookie can be improved by adding RSF.

Quality Characteristics of White Bread Manufactured with Shinan Seomcho (Spinacia oleracea L.) Powder (신안 섬초(시금치) 분말을 대체한 식빵의 품질특성)

  • In this study, white bread was prepared with Shinan seomcho powder (SSP). Different amounts of SSP were tested (2, 4, 6 and 8%) to determine the optimal amount. The samples and a control were compared for quality characteristics, including pH, total titratable acidity, specific volume, baking loss, moisture content, water activity, color, textural characteristics, external and internal surface appearances, and sensory qualities. As the SSP increased, the total titratable acidity of the dough decreased (pH increased), and a decreased specific volume and baking loss was observed as well. However, the total titratable acidity and pH of the bread did not show significant differences among the samples. The moisture content was highest at a substitution level of 8%, and increased with increasing SSP contents. The crumb L value, a value, and resilience decreased with increasing SSP, whereas the crumb b value and hardness increased. Color, flavor, softness and overall acceptability were highest for the control group and were lowest for the 8% group. This likely reflects the high value of a grassy flavor, green tea taste, bitterness, astringency, and off-flavor at addition level of 8%. As a results, the optimum amount of SSP to add for baking bread would be 2~4%.

The Accumulation of Rare Earth Elements Fertilizer and its Subsequent Effects on Apple Fruit Quality at Harvest and During Storage (희토류비료 시비가 사과 과실내 축적과 수확 및 저장 중 사과품질에 미치는 영향)

  • Rare earth elements fertilizer and Ca were sprayed on eight-year-old 'Fuji'/M.9 apple trees during two consecutive seasons, and fruit quality was quantified at harvest and 5-month long storing in a commercial cooling house at $4^{\circ}C$ and 80~85% RH. In the first season, single-sprayed of rare earth elements fertilizer showed appreciable accumulations of its elements (La, Pr, Gd, and Nd) in the fruit. In the following season, application of higher doses accumulated higher amount, indicating that the accumulation of rare earth elements was dose-dependent. However, rare earth elements did not affect the accumulations of Ca, Mg, and K in 'Fuji' apple fruit showed that there was no interaction between rare earth elements and these macronutrients. Double-spray of 0.2% rare earth elements increased fruit redness at harvest and had exhibited better color. Although at harvest it did not show significant effects on fruit weight, pulp firmness and titratable acidity (TA), but had pronounced effects on inhibiting fruit softness and retarded decrease of TA during storing. Furthermore, it reduced respiration rate and inhibited ethylene production during storing indicated that rare earth elements may be an alternative for prolonging the shelf life of 'Fuji'/M.9 apple fruit.

Effects of Color Properties and Subjective Sensation on the Preference for Cotton Denim Fabrics (면 데님소재의 색채 특성과 주관적 감각이 선호도에 미치는 영향)

  • This study was performed to help the denim fabric planning which reflects the sensibility preference of university students. Objective characteristics, like color properties and mechanical properties, in 8 denim fabrics (5 cotton 100% fabrics and 3 cotton/polyurethane blended fabrics) were evaluated. And the color preference, subjective sensation and tactile preference of denim fabrics were investigated among the university students. The effect of color preference and tactile preference of denim fabrics on the purchase preference of denim slacks was also examined. Color preference of denim fabrics showed a significant difference according to the kind of denim fabrics. University students preferred purple blue denim fabrics that was measured low $-b^*$ value and low $C^*$ value among the color properties of denim fabrics. Among the mechanical properties of denim fabrics, surface property like MMD, MIU and SMD as well as shear property like 2HG5 were important elements affecting subjective sensation. While, tactile preferences showed a significant difference according to the fabrics. The tactile preferences of cotton/polyurethane blended denim fabrics was highly preferred, and that of heavy 100% cotton denim fabric was lowly preferred. And the subjective sensation affecting tactile preferences were in order of smoothness, softness, lightness. It is concluded that the color preference and tactile preference influenced upon the purchase preference of denim slacks, and color preference had a bigger effect upon the purchase preference.

Theater Reservation System Using SVG(Scalable Vector Graphics) (SVG(Scalable Vector Graphics)를 활용한 극장 예약 시스템)

  • Svg(Scalable Vector Graphics) is xml graphic standard recommended by E3C as a language based on xml to express two-dimension graphic. Svg can accommodate all Xml's patency and advantage of interoperability, and can used as various web applications being combined with other xml language. In addition, Svg can be applied to the fields of electronic commerce, geographical information, computer education and advertisement because it can produce high quality of dynamic from real-time data. SVG's application can be enhanced by linking with database. In this paper, we discuss how Svg can be utilized in theater reservation system, not just explaining svg's meaning or ability. Svg added graphic advantage in addition to xml's advantage. This means that svg retains not only graphic element but also xml's softness. It becomes easier to designate seats and add them. Current reservation system provided in general only information on time and price for a ticket, but the system using SVG in this paper provides additional information on position, price, cancellation and purchase availability of seat.
