Combined Effects of Modified Atmosphere Packaging and Organic Acid Salts (Sodium Acetate and Calcium Lactate) on the Quality and Shelf-life of Hanwoo Ground Beef Patties

  • The present study investigated the combined effects of modified atmosphere packaging (MAP) and organic acid salts on the quality and shelf-life of Hanwoo ground beef patties. The ground beef containing 500 ppm of ascorbic acid was prepared with air-packaging (Air-P), high oxygen-MAP (70% $O_2$+30% $CO_2$/OxyMAP), and nitrogen-MAP (100% $N_2$/NitroMAP), in combination with organic acid salts (1500 ppm of sodium acetate and 500 ppm of calcium lactate). The samples were stored for 11 d at $5^{\circ}C$. The pH value of ground beef patties decreased during storage in all the treatments. The ground beef patties with organic acid salts showed relatively higher level of pH during storage compared with non-added patties (p<0.05). Lipid oxidation was accelerated in OxyMAP while it was delayed in NitroMAP treated with organic acid salts. Nitro-MAP treated with organic acid salts was effective in stabilizing the color characteristics of lightness (CIE $L^*$) and redness (CIE $a^*$) during storage. Oxygen content in MAP was shown to be a more important factor affecting color stability and lipid oxidation of ground beef than organic acid salts. The aerobic and anaerobic bacterial counts were reduced both in OxyMAP and NitroMAP (p<0.05), and the lactic acid bacteria was inhibited by Oxy-MAP (p<0.05). Coliform bacteria decreased during storage as pH value was decreased in all treatments. According to the sensory evaluation, the ground beef patties in NitroMAP showed the best quality among all treatments during storage. Therefore, Hanwoo ground beef patties added with sodium acetate and calcium lactate and packed with NitroMAP showed better quality characteristics than other treatments. This packaging method is recommended and could be utilized for packaging hanwoo ground beef patties for improving quality and extending shelf-life.

전라남도 지역에서 생산된 천일염의 염도 및 중금속 함량 (Salinity and Heavy Metal Contents of Solar Salts Produced in Jeollanamdo Province of Korea)

  • 전남지역에서 생산된 천일염의 안전성에 대한 기초자료를 제공하기 위해 전남의 주 생산지에서 생산된 천일염 433 종을 대상으로 NaCl 함량 및 중금속(Pb, Cd, As, Hg) 함량을 조사하였다. NaCl 함량은 대부분 80%대 수준이었으며 전체의 63%의 천일염이 $80{\sim}85%$ 함량을 보여 가장 높은 분포를 나타내었다. Pb은 77%의 시료에서 검출되지 않았고 Pb이 검출된 천일염은 모두 기준치인 2 ppm 이하로 나타났다. Cd은 78%의 시료에서 검출되지 않았으며 3곳을 제외하고는 대부분 기준치 이하로 검출되었다. As는 4종의 시료에서만 검출되었는데 모두 기준치에 못 미치는 0.1 ppm 이하로 나타났고, Hg은 모든 천일염에서 검출되지 않았다. NaCl 함량과 Pb 농도는 지역별로 차이를 보였고 Cd, As, Hg은 지역간에 차이가 나타나지 않았다. 따라서 전남에서 생산된 천일염은 생산 지역 간의 다소의 차이는 있으나 중금속오염에 대하여 안전한 수준인 것으로 평가되었다.

  • 이 연구에서는 에틸렌글리콜과 염이 포함된 메탄 하이드레이트의 상평형과 형성 거동을 측정하였다. 염의 종류로는 염화나트륨(NaCl), 브롬화나트륨(NaBr), 아이오딘화나트륨(NaI)을 이용하였으며, 272~283 K의 온도 범위와 3.5~11 MPa의 압력범위에서 상평형 조건을 확인하였다. 5 wt% NaCl + 10 wt% MEG, 5 wt% NaBr + 10 wt% MEG, 5 wt% NaI + 10 wt% MEG의 순서로 메탄 하이드레이트의 억제 효과가 나타났음을 확인하였다. 에틸렌글리콜과 염이 포함된 메탄 하이드레이트의 형성 거동은 생성유도시간, 가스소모량과 성장 속도를 분석하여 확인하였다. 에틸렌글리콜과 염이 포함된 메탄 하이드레이트의 생성유도시간은 실험 조건에서 큰 차이를 보이지 않았지만, 에틸렌글리콜과 염의 첨가는 가스소모량과 성장 속도에 영향을 주었음을 확인할 수 있었다.

Recovery of Sodium Sulfate from Farm Dyainage Salt and Using It in Directive Dyeing of Cotton

  • Agricultural drainage salt generated during irrigation of crops in San Joaquin Valley, California exceeds 600,000 tons annually and cumulates in the field in a rapid rate. As a result, the waste is taking out more farmlands for salt storage and disposal, imposing serious concerns to environment and local agricultural industry. in searching for a potential solution to reduce or eliminate the waste, this research explored feasibility of producing a value-added product, sodium sulfate, from the waste and utilizing the product in textile dyeing. The result indicated that sodium sulfate could be produced the salt and could be purified by a recrystalization method in a temperature range within the highest and lowest daily temperatures in summer in the valley. Re recovered sodium sulfate samples, with purifies ranging from 67% to 99.91, were compard with commercially available sodium sulfate in directive dyeing of cotton fabrics. Direct Yellow 27 and direct Blue 1 had similar exhaustions among Na₂So₄Ⅰ, Na₂So₄Ⅱ, Na₂So₄Ⅲ and V which had similar ratios of sodium sulfate and sodium chloride in recovered salts. Na₂So₄Ⅳ had high exhaustion despite low ratios of sodium sulfate and sodium chloride. In direct Red 80, exhaustion depends more on the ratios of sodium sulfate and sodium chloride than sodium chloride. Na₂SO₄Ⅳ and Na₂SO₄V with high ratios of sodium chloride had more exhaustion than Na₂So₄and Na₂So₄Ⅲ with low ratios of sodium chloride. Generally, directive dyeing using recovered salts from farm drainage has similar or more excellent exhaustion than directive dyeing using commercial sodium sulfate.

  • The effect of salts on the formation of ${\alpha}$-hemihydrated gypsum at boiling temperature under atmospheric pressure was studied by the solubility measurement method, and the formation of ${\alpha}$-hemihydrated gypsum from by-product gypsum of phosphoric acid process in the salts solution were investigated. The order of catalytic effect of salt on the formation of ${\alpha}$-hemihydrated gypsum are as follows: NH4Cl>NaCl>NaNO3. In the salts solution of sodium nitrate, sodium chloride, and ammonium chloride, prismatic ${\alpha}$-hemihydrated gypsum was obtained and the crystal form was converted to needle form in complex solution with sulfuric acid. The P2O5 content in gypsum was largely decreased in this atmosphoric solution process.

국내 시판 천일염의 성분 조사 (Evaluation of the Chemical Compositions of Solar Salts Produced in Korea)

  • 국내에서 주로 시판되고 있는 1년산 및 3년산 천일염의 일반 성분 및 As, Pb, Cd, Hg 등 유해 중금속 함량 등의 차이를 비교 분석하였다. 총 24종 천일염의 식염함량은 1년산 천일염의 경우 81.4%, 3년산은 90.9%로 나타났으며, 총 염소 함량은 1년산이 57.7%, 3년산은 65.0%이었고, 수분함량은 1년산이 12.0%, 3년산이 4.7%이었다. 또한 불용분 함량은 1년산이 0.03%, 3년산이 0.04%이었고, 황산이온함량은 1년산이 0.85%, 3년산은 0.57%이었다. 모든 천일염에서 As는 기준치 0.5 mg/kg이하로 나타났으며, Pb은 1년산이 0.12 mg/kg, 3년산은 0.09 mg/kg이었고, Cd는 모든 천일염에서 0.00 mg/kg으로 나타났으며, Hg는 1년산이 0.02 mg/kg 으로 3년산은 0.03 mg/kg으로 검출되었다. 따라서 국내 생산되는 천일염의 일반성분의 함량은 시료별 다소의 차이는 있었으나, As, Pb, Cd, Hg 등의 중금속함량은 식품규격 기준치 이하로 매우 적은 함량을 나타내어 중금속오염이 식품규격에 안전한 수준인 것으로 평가되었다.

Acid Blue 158 had similar exhaustions among Na₂SO₄ I, Na₂SO₄ II, Na2₂SO₄ III, Na₂SO₄ IV and Na₂SO₄ Ⅴ despite of Na₂SO₄ Ⅳ had low ratios of sodium sulfate and sodium chloride Generally, the dyeing of levelling dyes using recovered salts from farm drainage has similar or low exhaustion than the dyeing of levelling dyes using commercial sodium sulfate.

  • The effects of salts such as aluminum sulfate as inorganic salt(2-4%), and sodium salts of citrate, tartrate, succinate, potassium tartrate and gelatin as organic salts(0.1%) on the formation of ${\alpha}$-calcium sulfate hemihydrate from by-product gypsum of phosphoric acid process under hydrothermal condition at 123$^{\circ}C$ and 133$^{\circ}C$ were investigated. Aluminum sulfate solution exhibited the catalystic effected on the crystallization of ${\alpha}$-calcium sulfate hemihydrate of which was assumed in the prismatic form, and organic salts solution exhibited little effect on the catalystic action to the crystallization, than inorganic salts. In the acidic solution with sulfuric acid(pH=2), needle like crystal of calcium sulfate hemihydrate was obtained. Hydrothermal process with aluminum sulfate solution also showed certain amounts of impurity removal such as phosphorus penataoxide from calcium sulfate hemihydrate.

중성염이 견의 반응염색에 미치는 영향 (Ⅱ) - 음이온의 영향 - (Effect of Neutral Salts on the Reactive Dyeing of Silk (Ⅱ) - Effect of Anions -)

  • Four kinds of neutral sodium salts with different anions, NaF, NaCl, NaBr, and NaI, were added to the dye bath to accurately understand the effect of anions on the reactive dyeing of silk with C. I. Reactive Black 5. The sodium cation lowered the negative surface potential of the silk and increased the dye-uptake on fille fabric as reported previously. However, because of the discrepancy in the anions′inhibition power from cation′s lowering the surface negative potential the amount of the dye on the silk fiber was different from each other in the order of $F^-\;>\;Cl^-\;>\; Br^-\;>\;I^-$. The activation energy($E_a$) for the dyeing was in the order of $F^-\;>\;Cl^-\;>\; Br^-\;>\;I^-$ but the dye-uptake on the fabric and the activation free energy(Δ$G^*$), the real energy barrier for the reaction, were in the order of $F^-\;>\;Cl^-\;>\; Br^-\;>\;I^-$ because the strength of the interaction of the anions with sodium cations was the same as the order of the latter. In other words $F^-$ exerted the weakest electrostatic force on $Na^+$and competed with the dyestuff anions least of all. The decrease in Δ$S^*$may be due to the looesly bonded activated complex of dyestuff anions, sodium cations and fiber molecules at transition state. It was clarified from the Bronsted equation that sodium salts with different anions also had fille ionic strength effect and the specific salt effect on the reactive dyeing.

중성염의 종류 및 농도가 sodium caseinate의 거품성에 미치는 영향 (Effects of concentrations and types of neutral salts on the foaming properties of sodium caseinate)

  • 중성염이 단백질의 거품성에 미치는 영향을 밝히기 위하여 NaF, $Na_2SO_4$, NaCl, $NaNO_3$ 및 NaSCN 등 5종 중성염을 가지고 0.1, 0.5, 1.0, 1.5 및 2.0 M 농도별로 sodium caseinate(5%, w/v)에 작용시켜 이들 염류가 거품성에 미치는 영향을 조사하였다. NaSCN을 제외한 모든 염류들은 거품형성능 증진효과가 있었고, 거품형성능을 위한 염류의 최적농도는 $Na_2SO_4$, NaCl 및 NaSCN에서 각각 0.5, 1.5 및 1.0 M이었으며, NaF 및 $NaNO_3$에서는 각각 0.5 및 2.0 M 농도에서 거품형성능이 양호하였다. 거품안정성은 0.5 M $Na_2SO_4$의 경우 37.0분(대조구 4.0) 으로서 가장 양호하였으며 0.5M NaF에서도 28.6분으로써 크게 증가하였으나, NaSCN의 경우는 역으로 모두 감소하였다. 거품안정성이 가장 양호한 것으로 나타난 0.5 M 농도의 경우, 거품안정성의 크기는 $Na_2SO_4$>NaF>$NaNO_3$>NaCl>NaSCN의 순으로 나타났으며 이는 음이온이 단백질의 염석효과를 나타내는 Hofmeister 계열순서와 거의 일치하였다. 본 실험의 중성염을 첨가하여 조제한 단백질 시료용액의 경우, 혼탁도, 표면장력 및 절대점도의 증감에 따른 거품성의 뚜렷한 변화는 나타나지 않았다.
