Changes of sodium chloride content in Chinese cabbage were investigated at different conditions. The diffusion rate of sodium chloride into the cabbage increased with increasing the temperature of brine solution. Sodium chloride content of Chinese cabbage at the lower portion of tank was higher than that at the upper position. The more washing and dewatering, the lower sodium chloride content of the cabbage was found. Microstructure pattern of salted cabbage tissue depended upon height of tank. The changed epidermis cell was recovered after several times of washing.
The present work was to study the changes of nonvolatile amines and microorganism in fermentation of anchovy during 12 weeks with addition of various concentration of sodium chloride. Changes of histamine occured significantly during fermentation of anchovy with 10, IS, 20% salt and 10% mixed salts (5.0% NaCl+5.0% KCl). A maximum histamine content was observed in anchovy fermented for 6 weeks while the change of histamine content was not with addition of 20% sodium chloride. Tyramine was found at highest contents in the fermented anchovy of 10% mixed salts and increased markedly in all anchovy fermented for 8 weeks. Cadaverine content was higher in fermented for all fermentation periods than in raw. During fermentation cadaverine contents increased significantly in fermented with 10% mixed salts. In contrast with that, fermented anchovy with 20% sodium chloride had very low those content and high sodium chloride concentration had influenced on amine formation. Although the highest content of putrescine was observed in fermented for 8 weeks, those content was not changed significantly during fermantation. The growth of Microflora, Achromobacter, Aeromonas and Pseudomonas were found in the in itial fermantation and Micrococus, Pediococcus, Lactobacillus and Saccharomyces were found during all fermentation periods.
Using Na2CO3 versus NaCl as chemical activator, we compared the quality of activated carbon produced from oil palm fronds as raw material. These activators were selected for comparison because both are readily available and are environmentally friendly. In the manufacturing, we used Indonesian National Standard (SNI 06-3730-1995) parameters. For the quality comparison, we determined activated-carbon yield, moisture, ash, volatiles, and fixed-carbon contents; and adsorption capacity of iodine. The best characteristics, assessed by morphological surface analysis and Fourier transform infrared (FTIR) spectral analysis, were observed in the carbon activated by Na2CO3 at an activator concentration of 10% and carbonization temperature of 400 ℃. The results were as follows: activated-carbon yield, 84%; water content, 8.80%; ash content, 2.20%; volatiles content, 14.80%; fixed-carbon content, 68.60%; and adsorption capacity of iodine, 888.51 mg/g. Identification using the FTIR spectrophotometer showed the presence of the functional groups O-H, C=O, C=C, C-C, and C-H in the Na2CO3-activated carbon.
Sodium restricted diets are known to lower blood pressure in salt sensitive, hypertensive patients. Thare is increasing evidence that potassium plays an important role as a protective factor in the regulation of blood pressure. The objective of the current study was to measure parameters of sodium, potassium, and chloride utilization as affected by feeding of substantial quantities of bread made from whole ground white torn meal, whole ground yellow corn meal, and whole ground wheat flour. The breads provided 40 percent of a caloric content of the constant, measured laboratory diet. The 28-day study was divided into an introductory period of 7-days and three experimental periods of 7-days each. Order of assignment to specific treatments for 12 healthy subjects were according to a complete randomized block design. Yellow corn bread diets resulted in the highest potassium retention (243 mg/day) and the lowest urinary sodium and potassium ratio (1.53 $\pm$ 0.26) numerically in comparison to the other test breads. The excretions of sodium and chloride were higher during controlled feeding periods than during the self-selected diet period(p < 0.05). This indicates a response to the higher intake of these electrolytes from the experimental diets than from self-selected diets. There was no significant difference in the effect of white corn bread, yellow corn bread, or whole wheat bread diet on electrolyte status in humans. However, the yellow corn bread diet resulted in a somewhat more favorable urina교 sodium to potassium ratio than that from white corn bread or whole wheat bread diet.
In this study, the effect of precipitation temperature, ammonium chloride amount and addition method, vanadium and sodium hydroxide content of the solution on the precipitation of ammonium metavanadate were examined by using the sodium vanadate(NaVO3) solution in alkali region as a starting material. As the pH of solution decreased, the addition amount of ammonium chloride and the vanadium content of the solution increased, the precipitation rate of ammonium metavanadate increased. In this research condition, the basic conditions for obtaining more than 90% of precipitation yield were 10,000mg/L of vanadium content, 2equivalents of ammonium chloride addition, room temperature, and 2 hours of precipitation time. The size of precipitated particles decreased with increasing precipitation rate. Especially when liquid ammonium chloride was injected into the solution, the precipitation rate was the slowest and the particle size of the precipitate was the largest. After the primary precipitation by adding ammonium chloride as a solid, the secondary precipitation was carried out by adding new reactants. At this time, the precipitation with added ammonium chloride solid was not affected by the precipitates present in the solution. However, when liquid ammonium chloride was added, new precipitate was deposited on the surface of the precipitate present in the solution, increasing its size. Due to the difference in ammonium metavanadate solubility to temperature, the precipitation temperature at the vanadium content of 10,000mg/L in the solution affected the precipitation rate of ammonium metavanadate and the precipitation temperature did not affect the precipitation rate at a high concentration of more than 30,000mg/L vanadium content in the solution.
In order to observe the contents of some minerals in Korean daily food, the lithium, sodium and potassium were determined by E.E.L flame photometry. The results obtained are summarized as follows: 1) The lithium content was most higher (13. 8 to 16.8mg/100g) in sodium chloride, the contents of the lithium End sodium in each food were increased according to supplement of sodium chloride. 2) The potassium contents in garlic and bean paste were 137.6 mg and 186.3 mg per 100g sample, respectively, therefore these values were higher than the values in other samples. 3) The contents of lithium, sodium and potassium in rice, barley pressed and boiled rice lower than other samples.
This study was conducted to investigate the effect of high concentration of sodium salts and chlorides in soil on the growth of tomato and the uptake of minerals. The growth inhibition rates of plant height and dry weight were different depending on salts, but they were not related to the electric conductivities (EC) and acidities (pH) in the soil solution. The orders of growth inhibition were Cl, SO$_4$, CO$_3$, PO$_4$>NO$_3$ in the sodium salts series, and Na, K, Mg, NH$_4$>Ca in the chlorides. The growth inhibition rates of the sodium salts series tended to be larger than those of the chloride series. Yield was lower 30%~10% in the sodium salt and chloride series than in the control. Chlorophyll content, photosynthetic rate and stomatal conductance were lower in the sodium salts and chloride series than in the control. Mineral concentration was lower in sodium salts and chlorides than in control. The nitrate absorption was inhibited in all salts except for NaNO$_3$ and NH$_4$Cl, and specially in NaCl and Na$_2$SO$_4$ treatments of the sodium salts and in KCl treatment of chloride series. K concentration was reduced NaCl and Na$_2$SO$_4$ treatments compared with the other salts. In the sodium salt series, calcium and magnesium concentration were decreased antagonistically when sodium concentration was increased.
In this study, the chemical fluid considered is sodium chloride sloutions. The concentrations for the sodium chloride solutions are varied from 0 to 20%. A series of lab oratory triaxial tests are performed on the cylindrical specimens of sand bentonite mixture with different (5, 10, 15%) sodium chloride content solutions. Deformation(elastic modulus, E) and strength (cohesion, c', and angle of friction, f') parameters are obtained from the triaxial tests and they are expressed as functions of conf'ming pressure and sodium chloride solution concentrations. The stress-strain-strength behavior based on the above strength parameters is introduced to the finite element method with a residual flow procedure (RFP). By integrating a slope stability (limit equilibrium) procedure in the finite element method, factors of safety with time are computed.

In this study, the effect of sodium chloride (salt) concentration and phosphate on the quality properties of samgyetang was investigated. Increasing the salt concentration by 0.5% increased the moisture and ash content, salinity, water holding capacity (WHC), and thiobarbituric acid reactive substances (TBARS), whereas the protein content, pH, cooking losses, and shear forces were decreased. Addition of phosphate to the brine increased the pH and WHC, but decreased the TBARS, cooking losses, and shear forces. In a sensory evaluation, the scores for flavor and overall acceptability were the highest when the salt concentration of the brine was 2.0%. Overall, this study shows that the salt concentration and addition of phosphate to the brine of samgyetang substantially influences the overall quality of the chicken breast. Based on quality measurements and sensory scores, a 2.0% salt concentration with the addition of phosphate appear to be the most suitable conditions for the manufacturing of marinated samgyetang.
This study was performed to evaluate the effect of sodium cholride supplementation on bone metabolism in female rats consuming a low calcium diet. Twenty five female rats were divided into three dietary groups (control Na : 0.1038%, 1% Na : 1.036%, 2% Na : 2.072%). All experimental diets contained 0.27% Ca and were fed to rats with deionized water for 7 weeks. Bone mineral density(BMD) and bone mineral content(BMC) of total body, spine and femur were measured using energy x-ray absorptiometry(DEXA) by small animal software. Then Ca efficiency was calculated from BMD and BMC. Serum Ca, P, Na and urine Ca, P, Na were determined. Urinary pyridinoline, serum ALP were measured to monitor bone resorption. Following 7 weeks, sodium cholride supplemented groups had higher urinary Ca excreteion, urinary pyridinoline, crosslinks value and serum ALP. There was no significant difference in case of serum Ca among all groups. Sodium chloride supplemnted groups had lower Ca effciency of total, spine and femur BMD and BMC than that of control group. In conclusion high salt intake not only increases urinary Ca excretion as urinary Na excretion does but also increase bone resorption and decrease Ca efficiency of each bone. It is been suggested that high salt intake may be harmful for bone maintenance. Therfore, the decrease of salt intake to the level of recommendation would be desirable.
