Conditions for Processing of Meaty Textured Fish Protein Concentration from Filefish and Sardine (축육(畜肉) 조직(組織)과 유사(類似)한 말쥐치 및 정어리의 조직(組織) 단백질(蛋白質) 농축물(濃縮物)의 가공(加工) 조건(條件)에 관한 연구(硏究))

  • For the effective utilization of the fish resource in coastal regions, an investigation on optimum processing conditions and meat quality textured fish protein concentrate (FPC) was carried out with the fish meat of filefish and sardine. Optimum pH and sodium chloride content of fish meat were 7.5 and 1.0 %, respectively. The most effective soaking conditions were as follows ; soaking time, 30 min ; temperature of ethanol, 5 to $20^{\circ}C$ ; amount of added ethanol, 3 times the weight of the fishmeat paste ; repeated number of soaking in ethanol for filefish and sardine, 2 and 4, respectively. The ethanol remaining is meaty textured FPC could be removed effectively by forced-air drying. Yields of the product to the minced meat weight and the contents of protein lipid in meaty textured from filefish were 21.1, 77.6 and 0.2 % and those from sardine were 24.3, 75.8 and 3.6 %, respectively. Contents of essential amino acids in meaty textured FPC of filefish and sardine were not inferior to those of beef, textured soybean protein and FAO pattern. Beef meat could be substituted with the meaty textured FPC up to 50 % in the processing of typical meat balls and hamburger without any significant loss in its taste, odor and texture.

Germination Induction of Some Weed Seeds Stored Under the Dry and Low Temperature Condition (건조저온저장(乾燥低溫貯藏)한 몇가지 잡초종자(雜草種子)의 발아유기(發芽誘起))

  • These experiments were conducted to recognize the germination change in relation to storage period, using 25 kinds of field-collected weed seeds stored under the dry and low temperature ($4{\pm}1^{\circ}C$), and to establish a simple germination induction methods in some kinds of them. No or weak dormancy was observed in Lepidium virginicum, Rumex japonicus, Cirsium japonicum var. ussuriense, Aeschnomene indica and Ludwigia prostrate. The germination of Digltaria sanguinalis, Portulaca oleracea, Amaranthus spp., Echinochloa crux-galli, Polygonum persicaria, Cyperus iria, and Aeschynnmene indica was enhanced by $H_2SO_4$ treatment for 20, 2, 2, 50, 40, 3 or 5 minutes, respectively. Favorable germination in Polygonum persicaria and Echinochloa crus-galli was obtained by soaking in water for 25 days and 50 days, respectively. Moisture treatment for 21 days and 14 days caused the enhancement of germination in Cyperus difformis and Aneilema keisak, respectively. Combination of various treatments in Cyperus iria was most effective when the seeds treated with $H_2SO_4$ for 3 minutes incubated in alternating temp. after soaking in 0.2% $KNO_3$, but their effect on Digitaria sanguinnlis was little.

Comparison on Optimum Soaking Condition and Cooking Properteis of Korean Kidney Beans (강낭콩의 적정 침지조건과 조리특성의 비교)

  • Cutting force, degree of cooking, cooking loss and absorbances of cooking solution of three cultivars of Korean kidney beans, Pink(PKB), Red(RKD) and White(WKB) were compared. The cutting force of raw kidney bean was 23,500~27,000g. The optimum soaking conditions to give the same cutting force of beans were 10hr at $10^{\circ}C,\;8hr\;at\;20^{\circ}C,\;6hr\;at\;30^{\circ}C\;and\;3hr\;at\;40^{\circ}C$. At optimum soaking conditions, the degree of cooking was determined by measuring the maximum cutting force of cotyledon. The terminal points of cooking at $98^{\circ}C$ were 23min for PKB, 25min for RKB and 27min for WKB. Cooking loss of kidney beans during cooking were 3.4~5.4%. Absorbances of cooking solution showed a similar pattern in all samples, except PKB soaked at $10^{\circ}C$ for 10hr.

  • This study has been carried out to make a comparative study for the adhesive control methods specifically developed for application to formaldehyde. The method for formaldehyde determination used in this report is the improved chromo tropic acid determination. The results are summarized as follows: 1. The soaking treatment in aqueous solution of urea wok the most scavenging effect on the formaldehyde release from a plywood sample glued with a urea formaldehyde adhesive, and other removal treatment such as resorcinol, albumine-, and hardener-treatment gave significant reduction too. 2. In glue shear strength of dry test, 2% of resorcinol treatment and soaking treatment showed the highest strength and all the other treatment met the standard, but in hot water soaking test, 2% of resorcinol treatment gave the best results, on the other hand, adding the hardener showed the lowest strength and failed in meeting the standard. 3. Air dried moisture content of all treated plywood met the standard which calls for 13% or bellow. 4. In this comparative study, we can make a strong combination each other or go into the details of one treatment for the best result through the more study.

Quality improvement of high temperature-heated shrimp via pretreatment (전처리 방법에 따른 고온 가열 새우의 품질 향상)

  • In order to prevent the blackening and texture softening of heated shrimp, the pH was adjusted by soaking shrimps in acidic and alkali solutions, and their qualities were evaluated. The lightness of shrimps pretreated with 0.2% (w/w) citric acid and 0.05% (w/w) ascorbic acid solution increased by 20% compared to that of the control. The strength of mechanical hardness of shrimps soaked in acetic acid and phosphate solution (pH 6.0) was significantly higher ($1209g_f$) compared to that of untreated shrimp ($801g_f$; p<0.05), and the overall preference of texture was 0.4 points higher than that of the control in the descriptive sensory evaluation (p<0.05). In contrast, soaking in solution of pH 8 exhibited a weak texture hardening effect ($855g_f$). Additionally, the hardness of the heated shrimp after soaking at an adjusted pH of 4.0 increased to $4046g_f$, but the yield based on weight decreased to 38% compared to that of untreated shrimp (70%; p<0.05).

Effect of arranging Angles and Sucrose Concentration on Vase life and Quality of Cut Rose 'Marina' (삽지각도와 Sucrose 농도가 절화 장미의 수명과 품질에 미치는 영향)

  • This research was aimed to extend the vase life and improve the quality of cut roses 'Marina'. This study investigated the effect of three different angles and sucrose concentration on the vase life and the quality of cut rose flowers. In first experiment, cut roses were placed in three different angles ($0^{\circ}$, $45^{\circ}$ and $90^{\circ}$) in holding solutions containing 0.5, 1 and 2% sucrose (soaking treatment), and examined the number of petals of cut roses. In second experiment, cut roses were placed in three different angles after pre-treated in 0, 1, 2 and 4% sucrose solution for 2 and 20 hours, and examined the flower diameter of cut roses. In third experiment, cut roses were examined the pigmentation, flowing response and chlorophyll contents in cut roses by three different angles after pulsing treatment (pre-treatment) in holding solution containing 2% sucrose for 2 and 20 hours. Results of this study showed that cut roses were influenced by arranging angles and sucrose concentrations. The vase life of cut roses were extended in $45^{\circ}$ and $90^{\circ}$ arranging angle, as compared with the control (distilled water), and the holding solution containing 2% sucrose significantly increased vase life of cut roses(P < 0.05). Flower diameter of cut roses pre-treated in 4% sucrose solution for 2 and 20 hours significantly decreased (P < 0.05). The pigmentation and flowing response in cut roses were beneficial in $45^{\circ}$ arranging angle treated with 2% sucrose solution for 2 and 20 hours. Chlorophyll content in leaves of cut roses was not influenced by arranging angles. The pigmentation and flowing response of $0^{\circ}$ and $45^{\circ}$ arranging angles were better than that of 90 arranging angle. The vase life of cut roses in $45^{\circ}$ arranging angle was more prolonged than that in $90^{\circ}$ arranging angle. In conclusion, the arranging angles seem to be effective in retarding senescence of cut rose flowers.

The effects of saline soaking on the removal torque of titanium implants in rabbit tibia after 10 days (0.9% 식염수 담금이 레이저 처리 임플란트의 초기 치유기간의 회전 제거력에 미치는 영향)

  • Purpose: The aim of this study was to confirm if Laser-treated implants were soaked in 0.9% NaCl solution for 2 weeks could increase the surface hydrophilicity, and the Remoal Torque of each implant that inserted in rabbit tibia for initial healing period of 10 days. Materials and methods: Twenty machined titanium surface screws were produced with a diameter 3 mm, length 8 mm. Ten screws had their surface treated with a laser only (laser treated group), and the other 10 were soaked in saline for 2 weeks after surface treatment with a laser (laser treated + saline soaked group). Implants were inserted in rabbit tibia (ten adult New Zealand white rabbits), and the RTQ of each implant was measured after 10 days. The wettability among implants was compared by measuring the contact angle. Surface composition and surface topography were analyzed. Results: After 10 days, the laser treat + soaking group implants had a significantly higher mean RTQ than the laser treated implants (P = .002, < .05). There were no significant morphological differences between groups, and no remarkable differences were found between the two groups in the SEM analysis. Conclusion: Saline soaking implants is expected to produce excellent RTQ and surface analysis results.

Anti-Obesity Effect of By-Product from Soybean on Mouse Fed a High Fat Diet (고지방 식이로 유도된 비만 마우스에서 대두 부산물인 순물과 침지수의 항비만 효과)

  • Here we study the anti-obesity effects of by-product from soybean on mouse fed high fat diet. The body weight gain, visceral and subcutaneous adipose tissue weight, liver and epididymal adipose tissue weight in freeze-dried soybean-soaking-water (SSW) powder fed group showed lower level than those in high fat diet (HFD) group by determining with weight measuring and histological methods. Also, histological analyses of the liver and fat tissues of SSW grouped mice revealed significantly less number of lipid droplets formation and smaller size of adipocytes compared to the HFD group. Moreover, the levels of total serum cholesterol, LDL-cholesterol and the atherogenic index were decreased in the SSW groups. Especially, in SSW group, the levels of phosphorylation of two lipid oxidation enzymes, adenosine monophosphate-activated protein kinase (AMPK) and acetyl-CoA carboxylasse (ACC) were elevated hence that may activate fatty acid oxidation. But AST and ALT levels were not changed in blood. By micro-CT analysis of abdomen, SSW groups significantly showed a tendency to decrease visceral and subcutaneous fats as well as fat-deposited areas compared to HFD group. Taken together, we suggest that soybean soaking water has a function in ameliorating obesity through inhibiting lipid synthesis as well as stimulating fatty acid oxidation.

Inhibition of the Texture Softening of Shrimp Litopenaeus vannamei Pressured at High-temperature in a Retort Using a Mixed Solution of Calcium Chloride and Potato Starch (염화칼슘 및 감자전분의 혼합용액을 활용한 고온가압 처리 새우(Litopenaeus vannamei)살의 물성 연화 억제)

  • This study was conducted to determinean optimal soaking solution for inhibiting the texture softening of shrimp Litopenaeus vannamei pressured at high temperature (S-P/HT) in a retort, and also to optimize concentrations of 0.5% calcium chloride (CC) and 5.0% potato starch (PS) for preparation of a mixed solution (MS) and soaking time (ST) in the MS. On the basis of the results of expressible drip (4.6%), water holding capacity (95.1%), hardness (18.4 N/cm2) and sensory texture (7.2 score), the MS was found to be the optimal soaking solution for inhibition of texture softening under S-P/HT conditions, The concentrations of CC (X1, %), PS (X2, %), and ST (X3, min) were selected as independent variables, and hardness (Y1), springiness (Y2) and sensory texture (Y3) were selected as dependent variables. The optimal conditions of X1, X2, and X3 were 0.51%, 6.34%, and 364 min, respectively. Under the optimal conditions, the experimental values of Y1, Y2 and Y3 were 18.3±0.8 N/cm2, 4.4±0.3 mm and 7.7±0.2, respectively, which did not diffr significantly from the predicted values (P>0.05). In conclusion, the optimized models of X1, X2, and X3 for the preparation of S-P/HT using CC-PS were suitably fitted.

The Study on Foam Formation in Waterslag-Bentonite System (수광재와 백토조합물에서의 기포형성에 관한 연구)

  • The effect of firing temperature, soaking time and batch composition upon the glass phase and pore formation as well as their distribution in slag foamed glass was investigated. Sulfur dioxide gas produced by the oxidation and reduction of metal sulfide in waterslag was attributed to foam forming agent. Slag foamed glass matrix was mainly composed of 35~60% glas phase and melilite crystalline phase. The increment of bentonite addition in batch lowered the foam forming temperature in studied system. The result showed also that the foam size distribution was broadened as th firing temperature wa inbereased.
