노인식 제공을 위한 일부 노인의 음식 기호도 조사 (Food Preference Test of the Korean Elderly Menu Development)

  • This study was performed to test food preferences of the Korean elderly for Korean elderly menu development. The elderly subjects preferred steamed rice cooked with 1.2 times water than that with 1.5 times water (p < 0.001) , whole rice grain gruel than the gruel with ground grain (p < 0.05) . Green tea powder gruels developed as a snack, there were no significant differences in the preference of the elderly between gruel with different contents of green tea powder (2, 3, $4\%$). The preferences of the salt concentration of the soup were tested by using soybean sprout soup and soybean paste soup. The elderly preferred 0.7 - $0.8\%$ salted bean sprout soup and $7\%$ soybean paste soup. The elderly preferred Kimchi cut in widths of 1 - 2 cm than that in 0.5 cm. The elderly preferred sweeter grape jam ($67\%$ vs. $50\%$ or $37\%$ sugar content) and were not concerned about chewing seeds. This result could be useful to develop menus for the elderly. 중국 고령소비자의 HMR 제품의 구매행태 및 IPA 분석 (Purchase Behavior and IPA of HMR Products in China Elderly Consumers)

  • This study surveyed Chinese elderly consumers to determine their purchasing behavior, importance, and satisfaction with HMR products in China. Three hundred and seventy people were surveyed: 184 males and 186 females aged 55 to 70 years. Two hundred and sixty-seven (72.25%) of the surveyed consumers had an average monthly income of 6,000 yuan or less, and 313 (84.9%) responded that they spend 3000 yuan or less on groceries per month. Three hundred and forty-eight (94.1%) showed a high interest in health management. Regarding the frequency of purchasing HMR products, most responded that they purchased HMR products more than once or twice a week, with a single purchase of 100 yuan or less for each purchase. The respondents preferred 2 or 3 serving packagings in a refrigerated form. For all forms of products, those made as in-house meals, outdoor meals, as a snack or night snack, for serving guests, for trips, camping, and on-the-go products, the participants mostly responded that they frequently purchased the product. When purchasing HMR products, the importance of hygiene, convenience in purchase accessibility, the freshness of ingredients, and an indication of the nutritional content were considered as a high rank. After purchase, the satisfaction of SNS and mobile application advertisements and promotions, amount per serving, take out convenience, and new menu were considered low-rank. The IPA results showed that marking the origin of the ingredients and new menu are areas needing improvement. The study results may be used as base data for developing elderly friendly HMR products and establishing its marketing strategies.

경기도 지역 초등돌봄교실의 급·간식 운영 현황 (Current status of meal and snack service in elementary care classes in Gyeonggi area)

  • 본 연구는 경기도 소재 초등돌봄교실의 돌봄전담사를 대상으로 집단면담조사 및 설문조사를 실시하여 도시와 농촌의 급 간식관리 현황을 비교 분석하였으며, 그 결과를 요약하면 다음과 같다. 첫째, 돌봄전담사 7명을 대상으로 한 집단면담조사 결과, 관련 지침이나 전문가의 도움 없이 돌봄전담사가 급 간식 운영을 전담하고 있었으며, 예산 부족으로 인한 질적 저하가 문제점으로 나타났다. 또한 초등돌봄교실의 급 간식을 공동관리할 수 있는 전문기관의 필요성이 도출되었다. 둘째, 돌봄전담사 101명을 대상으로 한 설문조사 결과, 학기 중 간식비는 평균 1,463원, 방학 중 급식비는 평균 4,062원이었으며, 학기 중 간식비 (p = 0.015)와 방학 중 급식비 (p = 0.039)는 농촌이 도시보다 유의적으로 적었다. 학기 중, 방학 중 급 간식 모두 완제품을 구매해서 제공하는 학교가 가장 많았으며 도시와 농촌 간 차이는 없었다. 셋째, 급식 영양관리기준이 있는 학교는 10% 미만에 불과하였다. 급식식단을 별도로 작성하고 있는 학교는 101개교 중 47개교였으며, 이 중 30개교 (63.8%)는 도시락공급업체로부터 식단을 제공받고 있었고, 17개 (19.3%)에서는 돌봄전담사가 식단을 작성하고 있었다. 간식식단을 작성하는 학교는 80개교로, 이 중 45개교 (44.6%)에서는 돌봄전담사가 식단을 작성하고 있었다. 농촌은 도시에 비해 돌봄전담사가 급식식단을 작성하는 비율이 높은 경향이 있었다 (p = 0.054). 넷째, 위생관리 기준이 있는 학교는 101개교 중 34개교 (33.7%)에 불과하였으며, 31개교는 급 간식 제공 전 검식을 하지 않고 있었고 정기적인 건강검진을 하지 않는 돌봄전담사도 56.4%에 달했다. 급 간식 위생관리 현황은 지역에 따른 차이가 나타나지 않았다. 다섯째, 돌봄전담사가 응답한 적정 1회 간식비는 1,924원으로 실제 간식비보다 높아 적정 간식비에 대한 검토가 필요해 보였다. 바람직한 급 간식의 운영형태에 대한 의견에서는 초등돌봄교실 전문 급 간식지원센터 설치가 바람직하다는 응답이 48개교로 가장 많았다. 본 연구결과, 초등돌봄교실의 급 간식 운영에서는 지역구분과 관계없이 식단관리 및 위생관리 등에서 문제점이 나타났다. 초등돌봄교실에 참여하는 어린이들에게 위생적이며 영양이 풍부한 급 간식을 제공하기 위해서는 돌봄전담사가 식단작성 등 관련 업무를 담당하고 있는 현실을 고려하여 현장에서 효율적으로 활용할 수 있는 구체적인 급 간식 운영지침 마련이 시급하며, 돌봄전담사를 대상으로 한 영양 위생 교육 프로그램 개발이 필요하다. 또한 초등돌봄교실 급 간식 권장패턴 및 참고식단 개발이 필요하며, 정부 차원의 효율적인 제도 마련과 지원이 요구된다. 특히 농촌은 도시에 비해 급 간식의 단가가 낮고 돌봄전담사가 식단을 작성하는 경우가 많아 급 간식 단가의 상승을 우선적으로 고려할 필요가 있으며, 체계적인 급 간식 관리를 위한 제도 도입이 선행되어야 할 것이다.

A Study on the Characteristics in Dietary Behavior and Dish Preference of Elementary School Children in Seoul and Kangwha Area

  • This study was conducted to provide current information on dietary behaviors and dish preferences of elementary school children and to suggest guidelines for proper dietary behaviors. To accomplish study objectives survey was executed using the questionnaire for 420 fifth and sixth grade school children, chosen from schools in Kangwha-gun and East River District of Seoul. A questionnaire largely consists of categories including general characteristics, dietary behavior and preferences of the subjects for some dishes. Results showed 30% of the subjects had breakfast irregularly. A majority of the subjects took Korean style dishes of cooked rice and soup for breakfast. fifty-eight percent of subjects had a regular meal time. Imbalanced diet(avoiding specific flood group thereby causing unbalance in nutrient intake) habit group was estimated to be 47.3%. Twenty one percent had a habit of overeating. In choosing the snack, taste was considered to be a more important factor than nutrition. Advertisement of the snack was shown to be one of the Important factors in selecting the snack. The girls were more concerned about weight control than the boys. Also the girls were likely to rely on the diet to control weight since they exercised only in the physical c1ass while the boys exercised regularly. Generally, children liked animal protein containing foods and the preference for vegetables was low. In order to improve overall dietary behavior, systematic nutrition education programs reflecting sex difference should be developed. Dish preference data would be very useful in selecting substitutive dish for the s[hoof lunch menu to improve imbalanced diet. (J Community Nutrition3(2) : 69∼76, 2001)

Fast Foods의 이용실태조사 및 영양밀도 평가에 관한 연구 - 서울시내 남여 중고등학생을 중심으로 - (Evaluation of Nutrient Density for Fast Foods Selected by Middle and High School Students in Seoul)

  • The objective of the study was to evaluate nutritional balance for fast foods selected by middle and high school students using INQ (Index of Nutritional Quality). A thousan students that is 0.09% of the population (middle and high school students in Seoul) were surveyed from January 21 to February 10 in 1989. A total of 835 subjects excluding incomplete answer were analyzed. All statistical data analyses were conducted using the SPSS. Fifty kinds of fast foods were analyzed for nutrient values calculation. INQ and % of std. values of selected fast food combination were calculated, and % of std. were charted with each first letter of menu items by using GW-BASIC program. Satiety of fast foods was low in hamburger and pizza chain, high in noodle chain. 66.3% of the subjects ate fast foods snack, 29.2% for meals and 6% for beverages. Protein content of hamburger sold in Korea by American brand name was insufficient compared to the data published in the U.S. for the same brand's menu item. As a result of INQ evaluation, the desirable case of both 'nutritious' and 'fitness for a meal' was only appeared in selecting several menu items at once. A total of 59% of combined fast foods surveyed were revealed as 'nutritious'. Both 'nutritious' and 'fitness for a meal' was 10.4% and 'nutritious' was 48.6%, 'Unfitness for a meal' but 'nutritious' was 48.6% and 'undernutritious' was 37%. Thus a total of 85.6% was 'unfitness for a meal'. 'Undernutritious' but 'fitness for a meal' was 3.5%

충남 일부지역 고등학교 유형에 따른 식습관 및 학교급식 만족도 조사 (Dietary Habits and Satisfaction of School Foodservice by High School Type in Chungnam Area)

  • This study was performed to investigate the dietary habits and satisfaction of school foodservice by high school type (academic high school students (AHSS) : n=200, vocational high school students (VHSS) : n=200). Frequency of skipping breakfast was significantly higher for VHSS compared with AHSS (p<0.001), and reasons for skipping breakfast were significantly high for 'lack of time' and 'habitually' in VHSS (p<0.01). Duration of mealtime was significantly higher for AHSS compared with VHSS (p<0.001). Frequency of snacking was high in both AHSS and VHSS, and after dinner was the most common snack time for AHSS (p<0.001). Most commonly cited methods for improving dietary habits were 'frequently skipping meals' in AHSS and 'irregular meals' in VHSS. Reasons for leaving leftover foods were 'no taste' in AHSS and 'side dish I don't like' in VHSS (p<0.05). Satisfaction of school foodservice was significantly higher for AHSS compared with VHSS (p<0.05). Most commonly cited methods for improving school foodservice were 'varied menu' in AHSS and 'food taste' in VHSS (p<0.05). Commonly cited dietary motivations were 'preference' in AHSS and 'resolving starvation' in VHSS (p<0.001). As preference is an important factor, new menu development and continuous nutritional education should be necessary for menu diversity in order to raise satisfaction by using foods with high preference and superior nutrition.

연변지역 조선족 주부들의 식생활 관리 실태 (Food Management Pattern and Preception of Housewives in Yuanbean Area)

  • The purpose of this study was to identify the condition and perception of food management pattern in Yuanbean area. An investigation based on Previous research was administered to 200 housewives by questionnaire method in 1993 and 1995. Data were descriptively analyzed and chi-square value was calculated to compare group differences. Findings indicated that snack preference, food budget planning. menu planning. focusing factors for preparing and purchasing food materials, and family member considering for preparing meal were varied by socio-demographic factors. such as age, education. occupation. family income. religion. family type and size, years of marriage, hometown, kitchen structure, and types of fuels. Similarities and differences between groups were discussed and implications for nutrition were suggested.

대학생의 영양교육과 식행동에 관한 연구 (A Study on Nutrition Education and Behavior of college students)

  • This survey was carried out through questionnaries and the subjects were 498 male and 151 female students at Inha University. The results are summarized as follows ; 1) The female students had more opportunity to get nutrition education than the male students. Most students ranked education facilities as their primary sources of nutrition knowledge, but 30% of the male students ranked mass media. Nutrition knowledge score of female students was higher than that of male students. 2) 63.6% of male students drank alcohol and smoked cigarette. 33.2% of them drank only alcohol and 1.1% of them smoked only cigarette. Most of female students drank only alcohol. More than 30% of the subjects drank alcohol 1 day a week. 3) Most students ate out more than once a day and chose the menu considering taste of food. About 30% of the subjects were eating at school cafeteria, the next percentage korean restaurant, Noodle-snack cafeteria. 4) Most students have had dietary problems such as vigorous eating, skipping meal, indulging in hot and spicy food, prejudice for special food. More than 50% of the subjects are skipping breakfast. The main reason of skipping meal is lack of time.

스웨덴의 영유아 영양권장량 및 유아교육기관을 위한 급식지침 (Recommended Dietary Allowances for Young Children and Food Guideline for Preschool Children in Sweden)

  • The purpose of this study is to offer information related to recommended dietary allowances for young children and food guidelines for preschool children in Sweden. Sweden, located in Europe, is the most developed country for young child care system. Swedish nutrition policy background, Swedish recommended dietary allowances for young children, and food guidelines of early childhood education center in Sweden were used. The number of Swedish child care centers increased from 70,000 in 1970 to 700,000 in 2000. The Swedish Institute of Public Health promoted children's indoor and outdoor activity. The aim of the Swedish public health contains children's safety, good food habits, and eating food safely. Swedish Food Administration made recommended dietary allowance and food guidelines for children care centers. The aim of food guidelines was to increase energy, calcium, iron, and dietary fiber intake. Swedish RDA contains minimum and maximum intake as well as mean intake for macro and micro nutrients. The fat intake ratio of energy is increased for younger children. For preschool children, the food guideline is determined by dietary allowances for breakfast, lunch, and snack respectively. Food guideline contains meal time schedule, menu for each meal using food model, amount of food for age group, and recommended dietary allowance for each meal. It is recommended for Korean early childhood education center: 1) Korean RDA for young children should be made range of intake, minimum and maximum intake. 2) Food guideline should be make for Korean child care center. 3) Korean child care centers should offer an afternoon snack twice for children who return home late. 4) Nutrition education program for preschool teachers should be developed for children's good eating habits and health promotion.

경북 일부 어린이급식소에서 제공되는 간식의 섭취형태 및 당 함량 조사 (Investigation of Intake Patterns and Sugar Content of Snacks Provided at some Children's Cafeterias in Gyeongbuk)

  • The purpose of this study was to analyze the amount of sugar from the afternoon snack menu of childcare facilities in Gyeongsangbuk-do. The amount of sugar was analyzed for afternoon snacks provided by childcare facilities between March and April 2016. The snacks provided were the same for processed and non-processed foods at 50.0% respectively. White milk accounted for the largest portion with 26.4%, followed by fruits with 19.9% and grains (sweet potatoes, rice cakes, etc.). It has been confirmed that the larger the facility, the lower the frequency of provision of non-processed foods, and the higher the provision of processed foods (p<0.05). Snacks served as non-processed foods showed the highest frequency of fruits and sweet potatoes. On the other hand, processed foods provided many sugar-rich products, such as liquid yogurt, hot cakes, and cereal, excluding white milk. The average sugar content was highest in processed milk products (13.9 g), followed by white milk (8.6 g), bread and snacks (8.0 g), other (4.6 g), and mixed grains (1.6 g). Of the total 216 snacks, banana flavored milk had the highest sugar content of 27.0 g, followed by strawberry milk (15.0 g) and castella (21.6 g). The findings are expected to be used as basic data for choosing the right snacks provided by childcare facilities and practicing reducing sugar intake.
