소와 돼지 도축장 도체 및 환경에서 분리된 병원성대장균 분포 및 특성조사 (Prevalence and characterization of pathogenic Escherichia coli from carcasses and environmental samples of cattle and pig slaughterhouses)

  • We investigated the virulence genes, O-serotypes, antimicrobial resistance of pathogenic E. coli isolated from carcasses (n=455) and environmental (n=372) samples of 11 cattle and 12 pig slaughterhouses from December 2020 to December 2021. E. coli were isolated from nine carcasses (2.0%), three slaughter facilities (1.4%), two utensils (2.7%) and three abattoir workers (3.5%) from four cattle and four pig slaughterhouses. Among all isolates, 13 STEC (76.5%) were identified, followed by four EPEC (23.5%). As a result of the antibiotic susceptibility test, all isolates were resistant to at least one antimicrobial, of which 70.6% isolates showed multidrug resistance patterns. The serotypes were diverse in pigs compared to cattle, with serotypes O18, O66, O109 in cattle and O9, O76, O85, O100, O153, and O159 in pigs. In a single cattle slaughterhouse, eight STEC O66 were isolated from various types of sample (4 slaughter animal surfaces, 3 gloves, and 1 knife) with two antimicrobial resistance patterns (CHL-FIS-STR and CHL-FIS). Those two types of strain were suspected cross-contamination from utensils to slaughter animal surfaces. These results showed that pathogenic E. coli were detected in carcasses and various environmental samples in cattle and pig slaughterhouses. Nationwide monitoring and hygiene management are required to prevent cross-contamination of STEC isolate slaughterhouses.

도축우(屠畜牛)의 제질환(蹄疾患)에 관한 연구(硏究) (Observations on Foot Disease of Slaughter Cattle)

  • Incidence of foot disease of Korean native cattle (231 cases) and Holstein (310 cases) in slaughter house was observed from July August, 1984. 1. Incidence rate of foot disease was 9.09%, 12.90% and 11.27% for Korean native cattle, Holstein and total respectively. 2. Chronic necrotic pododermatitis showed the highest incidence among all foot disease and it's incidence rate was 6.47% in all cattle observes. 3. Topographical incidence rate of chronic necrotic pododermatitis was 25.7%, 60.0% and 14.3% for forefoot, hind foot and not specified respectively, so the disease showed high incidence rate in hind foot.

치명적(致命的) 충격(衝激)(도살(屠殺))이 우(牛)의 적혈구치(赤血球値)와 총백혈구치(總白血球値)에 미치는 영향(影響) (Studies of Fatal Stress on Erythrocytes and Total Leukocytes Counts in Korean Cattle)

  • Clinically healthy Korean adult cattle (20 females and 20 males) were selected and subjected to the experiments on the determination of erythrocytes and total leukocytes values at the stages of pre and post-slaughting. Throughout the studies the following results were obtained. 1. The erythrocytes values, at the stage of the pre-slaughter, of females and males were $6.070{\times}10^6/cmm$ and $6.175{\times}10^6/cmm$ respectively. In the case of post-slaughter stage, $7.780{\times}10^6/cmm$ and $7.705{\times}10^6/cmm$ were obtained for female and male respectively. In comparison on the values of erythrocytes between pre and post-slauglnter stages, the mean value of the latter has been increased significantly. 2. The total leukocytes value, at the stage of the pre-slaughter of females and males were 9,525/cmm and 9,630/cmm respectively. In the case of post-slaughter stage, 7,545/cmm and 7,510/cmm were obtained for females and males respectively. In comparison on the values of total leukocytes between pre and post-slaughter stages, the mean value of the latter has been decreased significantly.

Bruising in Slaughter Cattle and Its Relationship with Creatine Kinase Levels and Beef Quality as Affected by Animal Related Factors

  • The objective of the study was to determine the effects of animal related factors on bruising in slaughter cattle, creatine kinase (CK) and beef quality. Three hundred and twenty one cattle from three breeds (108 Bonsmara, 130 Beefmaster and 83 Brahman) were used in this study. The animals were grouped as follows: Group 1 (16 months old), Group 2 (18 months old) and Group 3 (24 months old). At exsanguinations, blood samples for CK determination were collected using disposable vacutainer tubes. Muscularis longissimus thoracis et lumborum (LTL) was collected 24 h after slaughter to determine the colour ($L^*$, $a^*$, and $b^*$) and ultimate pH ($pH_u$) of beef. Breed, sex and age had significant effects (p<0.05) on bruising score, CK levels and beef quality. Bonsmara breed had the highest (80%) bruising score percentage, CK ($705.3{\pm}80.57U/L$) and $pH_u$ ($6.3{\pm}0.05$) values while the Bonsmara had the highest $L^*$ ($24.8{\pm}0.78$) $a^*$ ($17.5{\pm}0.53$) and $b^*$ ($12.8{\pm}0.53$) values. Higher CK levels were also observed in winter compared to summer, spring and autumn respectively. Therefore, animal factors (sex, breed and animal age at slaughter) contribute to the development of bruises and have an effect on the levels of CK and meat quality. It was also concluded that there is no significant relationship between meat parameters (L,* $a^*$, and $b^*$) and CK levels.

  • A study was conducted which demonstrated that Dhofari cattle responded well to intensive management systems in terms of growth rates and carcass yields. Twenty-four Omani Dhofari bulls and steers (12 of each) were reared from birth until slaughter at 110, 160 and 210 kg body weight (for of each sex at each slaughter weight). Calves were fed ad libitum a diet of concentrate (16.5% CP) and Rhodesgrass hay (8.8% CP). Bulls and steers reached the predetermined slaughter weights of 110, 160 and 210 kg at 154 and 164; 219 and 233; 273 and 310 days of age, respectively. Respective mean pre and post-weaning daily body weight gains for bulls and steers were 581 and 530; 796 and 706 g averaging 645 and 596 g over 36 weeks. At 210 kg, the heaviest weight of the study, dressing-out percentage (DO) was 54.5 and 56.9 yielding carcasses of 115.9 and 118.5 kg which contained 60.4 and 61.5% muscle; 11.6 and 11.4% bone and 24.5 and 22.9% fat for bulls and steers, respectively. Proportion of bone in the carcass decreased, that of fat increased, whereas that of muscle remained unchanged between slaughter weights of 110 to 210 kg. That resulted in increased muscle : bone and decreased muscle : fat ratios. At 160 kg body weight, bulls had less fat and more muscle and bone than steers but there were no sex differences in carcass composition at 210 kg slaughter weight.

  • Comparative studies of histopathologic lesions from 23 purified protein derivative (PPD) positive cattle, 21 slaughter cattle found with tuberculosis, and 11 tuberculosis-positive elk (Cervus elaphus) were performed. PPD positive cattle did not show specific histopathologic lesions in all 23 heads that were no visible lesion reactor. Slaughter cattle found with tuberculosis revealed microscopically classical granulomatous lesion (tubercle) with central caseous necrosis surrounded by mantle of epithelioid cells and Langhan's giant cells capsuled by connective tissue in lung. Elk was noted with some different lesion patterns with classical granulomatous lesion and suppurative abscesses that was composed of fibrin, degenerated cells without having connective tissue. In addition, many Langhan's giant cells infiltration in alveoli at peripheral lesion were observed in some cases of classical granulomatous lesion and suppurative abscesses.

  • The effect of slaughter weight and gender on fatty acid composition of homogenised rib samples of Hungarian Simmental (HS) and Holstein-Friesian (HF) cattle breeds was investigated. In the first experiment 22 Hungarian Simmental and 18 Holstein-Friesian cattle's meat, in the second experiment 15 females and 12 males Holstein-Friesian cattle's meat was analysed on fatty acid content. Saturated and mono- or polyunsaturated fatty acid profile did not seem to vary either by breed or by slaughter weight categories. The effect of gender, however, proved to be significant in influencing the quantity of polyunsaturated fatty acids, including linoleic and linolenic acids, as well as polyunsaturated fatty/saturated fatty acids (PUFA/SAFA) ratio. The amount of polyunsaturated fatty acids (PUFA) was higher in males than in females. Negative correlation was established between the quantity of PUFA and the amount of adipose tissue in rib samples.

서울에서 도축된 소의 잔류항생물질 비교조사 (Comparison of residual antibiotics in slaughtered cattle in Seoul)

  • This survey was carried out to detect the residual antibiotics in muscles of slaughter cattle from slaughter houses in Seoul from 1991 to 1998 using by EEC-4-plate method. The results were summarized as follows ; 1. Residual materials were detected in 402 samples(3.12%) by EEC-4-plate method. The detection ratios were highest in 1995 (9.51%), autumn (39.8%), Kyeonggi province (54.2%), Holestain(60.4%) and male(50.7%). 2. Residual antibiotics for 18 samples were classified as TCs(72.2%), sulfonamides(38.8% ) and $\beta$-lactams(5.5%) by HPLC 3. The residual concentration of oxytetracycline, sulfonamide and $\beta$-lactams were 0.34~15.93ppm, 0.17~1.18ppm and 0.06ppm, respectively.

  • Bovine tuberculosis is an important zoonosis worldwide. Mycobacterium bovis, the causative agent of this disease in cattle, is also a pathogen for humans and several economically important animals. The cases of tuberculosis are reported in two cow found at slaughter house located in Gwangju city. Histopathologically, in the lymph nodes, granulomas consisted of large areas of necrosis surrounded by variable thick bands of cellular infiltrate containing macrophages, Langhans-type multinucleated giant cells and lymphocytes. Lesions in the lung followed the same developmental pattern as did lesions in the lymph nodes with some exceptions. With the acid-fast staining, numerous mycobacteria were revealed in the lung and lymph nodes. M bovis was confirmed as a causative agent in these cattle using bacterial isolation and PCR and restriction fragment length polymorphism method based on a unique 12.7 kb fragment insertion sequence from the Mycobacterium tuberculosis genome and the pncA polymorphism, The insertion element IS6110 and IS1081 were present M bovis isolated from lungs and lymph nodes of cattle using PCR assay. These cases are interesting and important in public health aspect that M bovis-infected cattle were found during a routine post-mortem inspection at slaughter house.

췌질(膵蛭)에 관(關)한 연구(硏究) [I] 감염율(感染率)과 병변(病變) (Studies on Eurytrema Pancreaticum [I] Infection rate and pathological changes)

  • Researches to determine the infectious status on the pancreatic fluke, Eurytrema pancreaticum(Janson 1889) Looss, 1907, were made into several slaughter hauses at four different districts through seven years from 1963 to 1969. The infection rate showed 2962 positive of 5974 heads (49.6%) of cattle at the Seoul first slaughter hause in Seoul, 881 positive of 1021 heads (86.3%) in Cheju, and six(6) positive of 56 heads (11.1%) at Suwon, 58 positive of 306 heads(19.0%)at Joenju. The infection rate 53.1%, (2907 positive heads of total 7357 heads exammed) is the representative infection rate at the cattle eurytremiasis in Korea. It showed little variation through a year and was increased as compared with those of the past period, from 1915 to 1945. Fecal examinations in order to find out the local distribution of the pancreatic fluke were conducted on cattle, sheep, and goats raised in four districts, showing two(2) of 269 heads (0.7%) in Kyonggi-do, 41 of 212 heads (19.3%) in Cheju-do, and negative in both Chungnam-do and Joenbuk-do. When an artificial infection wss performed on rabbits and goats with metacercaria of the pancreatic fluke, Parenchyma of their pancreas were degenerated and the ducts were dilated. When cattle and sheep were infected naturally, the pancreatic ducts were also dilated, the wall was thickened, and adenomatous and epithelial hyperplasia was appeared. The conclusion, putting the foregoing pathological changes, has been arrived at chronic hyperplastic pancreatitis in the eurytremiasis of cattle, sheep, goats and rabbits.
