A Study to Investigate Ways to Improve Tofu Menu Developments and Tofu Menu Image in Relation to Purchasing Promotion (소비자의 구매 촉진을 위한 새로운 두부 메뉴개발 및 두부 메뉴의 이미지 설정을 위한 조사 연구)

  • This study is to investigate the recognition and preference of tofu food among general consumers and housewives in order to develope new tofu menu. The questionnaires are consisted of general questions, style of dining out, frequency of dining, health status, preference of tofu, reason for prefer tofu. A total of 262 questionnaires were analyzed for statistical analysis. The statistical analysis was completed using SAS program (Version 8.2) for descriptive analysis and ${\chi}^2\;-test$. Main results of this study were as follows: Most of the respondents prefer Korean food, 70% of the respondents are general consumers while 73.5% of the respondents are housewives. The frequency of dining out was 1-2 times per week. The two groups bought pre-cooked food one to two times per week. Fourity seven percent of the general consumers and 50% of housewives did not like the taste of tofu due to plain flavor. The respondents overall preferred many different ways to prepare tofu dishes. The results also indicated that tofu dishes are used as side-dishes. Thirty three percent of house wives had tofu with miso soup and pan-fried tofu, while 29.6% of the general consumers had soft tofu stew. 34% of the general consumers preferred stuffed tofu with shrimp, while 35.5% of the housewives liked it. 17% of the general consumers liked grilled tofu with crab meat sauce while only 14.5% of the housewives preferred the menu. Tofu teriyaki was preferred among 8.2% of the general consumers while 13.2% of the housewives liked tofu teriyaki.

A Study on the Housemaker's Interest in Dietary Life and the Knowledge of Cooking Principle and Method (주부들의 식생활에 대한 관심도와 조리원리 및 조리방법 지식에 관한 연구)

  • This study attempted to investigate the effect of housemaker's interest in dietary life on the knowledge of cooking principles and cooking methods, and on the daily meal management. Housemakers whose age ranged from 20 to 50 were surveyed in their residence. The results of this study were as follows. First, the level of interest in dietary life was positively related with ages, education and income levels. Moreover, housemaker who did not work or did not take care of relatives had higher level of interest in dietary life than those who did. Second, most housemakers bought foods and prepared a meal by themselves. The average time spent in preparing meals was 2 to 3 hours, and the number of side dishes cooked per day expect for the main dish was 5.46 percent of the total respondents ate out more than once a month for a 'family tie'. Third, there was no relation between the knowledge of cooking principle and the variables such as ages, education and income levels. Fourth, the level of the knowledge of cooking method about Korean traditional dishes was positively related with ages, education and income levels. In addition, housemakers who did not work or did not take care of relatives had less knowledge of Korean traditional dishes than those who did. Finally, the interest in dietary life was significantly correlated with the knowledge of cooking principle and cooking method of Korean traditional dishes.

The Comparative Analysis of Understanding the Conceptions of Japanese, Korean, Chinese and Western Cuisine by SD between the Japanese and the Korean (SD법에 의한 한국, 일본, 중국, 서양 각 요리에 대한 개념의 일본인과 한국인의 인식에 대한 비교 분석)

  • In the survey of Korean and Japanese female students at the age of $20{\sim}22$, the conceptions of Japanese, Korean, Chinese and Western daily foods were recorded by SD and factor analysis and their perceptions about cuisine of their own countries and other countries in the diets of young people were figured out on the basis of their conceptions. The results are given below. The trends of perceptions about cuisine of their own countries and about Chinese and Western cuisine were coincided in both the Korean and the Japanese. The perceptions of their own countries‘ cuisine might seem to be traditional, familiar, cheap, and delicious. About Western cuisine, they felt that it seemed to be elegant and expensive but not familiar or delicious. Furthermore, the Korean had stronger perceptions about it than the Japanese had. For Chinese cuisine, the Korean felt the same as they did toward the Japanese foods just as the Japanese felt that the Korean cuisine was similar to the Chinese cuisine. The Japanese have thought that the Korean food-style was similar to that of their own country and Kimchi and Bulgogi have emerged in popular Japanese cooking. Also, they felt that the Korean cold noodle dish and Bibimbab were very familiar. On the other side, the Korean have become familiar with sushi, grilled meat, and Japanese noodles, but they were not familiar with other foods.

A Survey of Visitors to the Guemo Mountain Resort - Dining Out Preferences and Visitor Suggestions for Tourism Promotion - (금오산 외식단지 방문고객의 외식소비성향 및 관광촉진을 위한 선호메뉴 조사연구)

  • This study examined 389 customers visiting restaurants located in the Guemo mountain resort who filled out self-administered questionnaires. The results showed that 60% of the participants dined out monthly. The 30 to 40-year-old age group did so the most frequently, dining out one to two times weekly. For men, the favorite menu item was the sanchejeongsik along side traditional liquor and for women was the samgaetang. By age, the 20, 30, and 60-year-olds selected samgaetang as their favorite, the 40-year-olds selected traditional liquor, and the 50-year-olds selected the sanchejungsik. The reasons for selecting the dishes were because participants previously enjoyed them or considered the dishes healthy, regardless of sex or age. Participants suggested that the sanchejeongsik and samgaetang be promoted for tourism, without significant differences between gender. The current findings suggest that the quality of certain local menu such as sanchejungsik and samgaetang could be improved to become more nutritious for future customers. Also, traditional Korean liquor may become even more popular with visitors to the Guemo mountain resort if paired with simple menu items such as jeon or muk.

  • Steam reforming of methane is the most wide spread method for hydrogen production. It has heed studied more than 60 years. methane reforming has advantages in technological maturity and economical production cost. Using a high-temperature solar thermal energy is an advanced technology in Steam reforming process. The synthesis gas, the product of the reforming process, can be applied directly for a combined cycle or separated for a hydrogen. In this paper, hydrogen conversion rate of a solar chemical reactor is calculated using commercial CFD program. 2 models are considered. Model-1 is original model which is designed from the former researches. And model-2 is ring-disk set of baffle is inserted to enhance the performance. The solar chemical reactor has 3 inlet nozzle at the bottom of the side wall near quartz glass and an exit is located at the top. Methane and steam is premixed with 50:50 mole fraction and goes into the inside. Passing through the porous media, the reactants are conversed into hydrogen and carbon monoxide.

Survey on the Serving Size and Waste Rate of Frequently Consumed Dishes in Korean Style Restaurants (외식으로 제공되는 한식의 1 인 1 회 제공량 및 음식잔반량 조사 연구)

  • This survey was conducted to find out one serving size and waste rate of frequently consumed dishes in 37 Korean style restaurants. The range of one serving size and waste rate of Pab(boiled rice) were 180-290g and 0-21%, respectively. The mean intakes of Pab were varied according to the kind of dishes served. The waste rate of Yukgaejang(Hot meat soup) is low among Tangban(meat soups). The waste rate of Jeongol(stew with various foods) was higher than other menu items. The average one serving size per person of Pulgogi(grilled meat with sauce), Galbi gui(grilled beef ribs with sauce), Deongsim gui(grilled meat) were 270g, 360g, and 210g, respectively. The average waste rate of side dishes were varied according to dist served. The dish which has higher waste rate than other dishes were Samgaetang(boiled chicken with ginseng), Bokmaeuntang(stew with puffer), Naengmyeun(cold noodle), Pulgogi(grilled meat with sauce), Galbi gui(grilled beef ribs). The reasonable one serving size of dishes based on this survey results was suggested for serving in restaurants.

A Study on Utilization of Japanese Consumers and the Present Condition of Northeast Asia Processed Eels (장어 시판제품에 대한 동북아시아의 가공현황 및 일본인 소비자의 구매실태 조사)

  • This study investigated the current processing degree and ingredients of sauce on the packaging of the commercial eel products made in Northeast Asia (Korea, Japan, China and Taiwan) and surveyedthe perception of nutritional functionality and purchasing pattern of Japanese consumers for the processed eels. The results are considered as a useful aid for preparation of processed eel products. The commercial eel products, purchased at a department store, supermarket and discount market, were divided by processing method, package quantity, storage method and sauce ingredients. The processing method was indicated in many different ways in each country, such as sauce ingredients and intake method. A questionnaire survey was conducted on 105 Japanese consumers (male 43, female 62) visiting Korea. Of the respondents, 44% answered and the major reasons for purchasing processed eel products were as a side dish for meals. The results for this factor were significantly different in relation to age (p <0.05). The degree of perceptions of functional excellence about processed eel products was well known (37%), some (49%), and seldom (14%). The results for this factor were significantly different in relation to age (p <0.001). Seventy-five percent of the respondents had experienced processed eel products. The type of purchase of the respondents was highest for vinegared rice and fish (47%), followed by freezing (33%), canning (5%), and dried food (4%), in that order.

Colletotrichum Disease of Mungbean Sprout by Colletotrichum acutatum

  • Decayed samples of marketed mungbean sprout were collected from Sacheon, Suncheon, and Dangjin cities in Korea. Initial symptom on hypocotyls was dark-brown diamond speck, which developed into enlarged sunken brownish-black spot with irregular margin, followed by softening yellowish decay. Brown speck on cotyledon further developed into irregular lesions. This study isolated the fungus Colletotrichum sp. The fungal colony was pale orange, which turned greenish gray after 1 week at $25^{\circ}C$. Colony of reverse side in a petri dish was pink. Neither conidiomata nor setae were present in the culture. Typical fusiform conidia sized 7.5-15.0$\times$2.5-2.9 $\mu\textrm$were hyaline, aseptate, smooth, and had salmon color in mass. Conidiogenous cells were phialidic, hyaline, smooth, and cylindrical with terminal distinct collarette. Basedon these mycological characteristics, the casual organism was identified as Colletotrichum acutatum. This is first report of Colletotrichum acutatum in Korea.

Seasonal and Market Group Variation in the Microbiological Quality of Seasoned Soybean Sprouts

  • Mesophilic aerobic bacterial counts were measured and compared for seasoned soybean sprouts produced in different seasons and sold in different market types. Very significant differences in microbial counts were found among seasoned soybean sprouts produced in different seasons (winter, spring, and summer) and among different market types (a traditional market, discount store, and department store). However, there was no significant difference among the stores within each market group. The interactions were significant at a 1% significance level. The variance of summer counts was much lower than spring and winter counts. Discount and department stores showed a higher variation in microbial counts than traditional markets. The microbial counts differed substantially from season to season in the same market group (summer > spring > winter) except between spring and summer in traditional markets. The microbial loads in the winter and spring seasons of seasoned soybean sprouts in traditional markets were clearly higher than in other market groups, while discount stores had the highest microbial count in summer.

A Survey on Singapore University Students' Perception and Preference for Korean Kimchi (싱가포르 대학생의 김치에 대한 기호도)

  • The purpose of this study was to investigate the perception and preference for Korean Kimchi in Singapore. A questionnaire was answered by both male 236(43.0%) and female 313(57.0%) college students residing in Singapore. The results were as follows : the nationality of Kimchi as Korean was given by 86.9% of the participants, and 48.7% had eaten Kimchi. For their perceptions on Kimchi, the highest answer at a mean of 3.95 was 'Kimchi is a good side dish with cooked rice'. It was significantly different than 'Kimchi is delicious'(M=3.14, p<.05). In the evaluation of different kinds of Kimchi, taste was highest for anchovy dachi Kimchi(M=5.50) on the fourth day of fermentations, and overall acceptability was also highest for the anchovy dachi Kimchi(M=6.18) on the fourth day(p<.001). In the sensory evaluation by Kimchi use, the best taste was in the order of Kimchi Salad(M=6.10), Kimchi Bacon Roll(M=6.00) and Kimchi Croquette(M=5.67), and the order for overall acceptability was Kimchi Salad(M=6.10), Kimchi Bacon Roll(M=6.00) and Kimchi Croquette(M=5.92).
