가열시간이 바지락 육수 품질에 미치는 영향 (The Effect of Heating time on the Quality of Short Necked Clam Stock)

  • 본 연구에서는 소스나 수프 등의 기본 재료가 되는 바지락 육수를 제조함에 있어서 바지락 육수의 각종 영양 성분을 적절하게 이용하여 바지락 육수를 만들고자 하였다. 수분 함량은 가열시간이 증가함에 따라 유의적(p < 0.001)으로 낮아졌다. 색도 측정 결과, L값은 S1(31.15)이 가장 높았고, a값은 S5(-0.36)가 가장 높았으며, b값은 S5(0.67)가 가장 높았다. pH는 60분 가열한 S5가 7.35로 가장 낮아 가열시간이 증가시 유의적(p < 0.001)인 차이를 보이며 낮았다. 당도는 S5가 $3.30^{\circ}Brix$로 가장 높았고, S1이 $2.63^{\circ}Brix$로 낮았으며, 염도는 S1이 0.73%로 가장 낮았고 가열시간이 증가시 시료간의 유의적인(p < 0.001) 차이를 보이며 염도가 높아졌다. 무기질 용출량은 Na의 함량이 가장 높으며, 칼륨과, 마그네슘, 칼슘, 철 모두 60분에서 가열한 바지락 육수가 가장 높았으며, 유리 아미노산은 총21종이 검출되고, 필수 아미노산에서는 Arginine이 가장 많이 용출되었으며, 맛난 맛 아미노산에서는 Glygine, 그 밖의 유리 아미노산은 Taurine 가장 많이 검출되었다. 바지락 육수의 특성 차이 검사 결과에서는 시원한 맛과 구수한 냄새는 S4가 가장 강하게 평가되었고, 기호도 검사 결과는 외관, 향, 맛, 뒷맛, 전체적인 기호도 모든 항목에서 40분 가열한 S3가 가장 좋게 평가되었다. 이상의 결과로 볼때 해산물 육수의 경우 simmering 시간을 약 30~45분 이라는 사실을 확인 하였다.

  • We applied a combination of most probable number-polymerase chain reaction (MPN-PCR) methods using a PCR procedure targeting the H-NS (VP1133) gene to detect Vibrio parahaemolyticus presence and density in seawater as well as within short-necked clam Ruditapes philippinarum tissues collected from Gomso Bay, Korea. In 30 seawater samples, V. parahaemolyticus levels ranged from less than 1.8 to $1.1{\times}10^3MPN/100mL$, and samples from August showed higher than those from other months. Furthermore, the levels of V. parahaemolyticus in six short-necked clam samples ranged from $7.8{\times}10^2$ to $2.1{\times}10^3MPN/100g$, approximately 2.5 times higher than in seawater samples from the corresponding month. Our results provide data on V. parahaemolyticus contamination in seawater and short-necked clam tissues, and help to improve quantitative methods of assessing V. parahaemolytcius levels.

완도 영흥지선 연안의 천연 바지락 자원에 대한 연구 (Study on natural short-necked clam, Ruditapes philippinarum, stocks in Yeongheung coast of Wando Island, Korea)

  • In order to understand the effect of introduction of oyster rack culture on natural short-necked clam, Ruditapes philippinarum, stock, we investigated the status of natural clam stock prior to introduction of oyster rack culture at Yeongheung Coast of Wando Island. The growth equation of the clam was estimated as: $L_t=61.46{\cdot}(1-e^{-0.172(t+0.155)})$ from ring radius composition of shell. Instantaneous coefficient of total mortality and natural mortality were calculated as: 2.4087/year and 0.478/year, respectively. The age at first capture was estimated to be 2.55 year. The total biomass was estimated to 3.23 ton in the bed (0.8 ha). Applied by these parameters, the annual recruit biomass and the current yield per recruit (Y/R) was corresponded to $114.7individuals/m^2$ and $92.0g/m^2$, respectively. Maximum sustainable yield (MSY) was estimated 0.77 ton/year which was close to annual catches, 0.74 ton/year, in the area.

바지락치패의 폐사에 관한 연구-II 바지락 치패의 온도, 염분, 노출에 대한 저항성 (Studies on the Natural Mortality of the Young Short Necked Clam, Tapes Japonica-II . Resistance to Temperature , Salinity and Exposure for the Young Short Necked Clam)

  • In a previous paper, the dirunal and monthly changes of the tidal flat temperature and chlorinity were observed. In this paper the resistance of the young short necked clam in various growth stages to the temperature, to the chlorinity and to the exposure were studies. The young clam used were in early (E), medium (M) and late (L) young stages whose shell lengths were 2.0-3.5mm, 9.0-11.0mm. and 14.0-16.0mm., respectively. The results were : 1. At various sea water temperatures , the chlorinity resistance of the young clam was directly proportional to the shell length. 2. When both inadequate sea water temperature and abnormal chlorinity are simultaneously applied, the resistance of these young clams was more markedly reduced than the case of applying either one of these conditions. 3. In clams of M and L, no lethal effect were observed when daily immersion of four to eight hours for a week into the sea water of any concentration of chloriity at 26-34$^{\circ}C$, whereas in E, 37-90% of mortalities were obtained by immersion of eight hours daily into both the fresh water and the sea water of higher chloriniites (more than 23.5$\textperthousand$ Cl) at the same temperature above. 4. The lower critical thermal maximum for lethal to the young clam was 38$^{\circ}C$. With four hours immersion daily at the water temperature of 38$^{\circ}C$, the mortalities of E, M and L to the lower chlorinities (less than 6.7$\textperthousand$Cl) were 100, 70-100 and 27-37% respectively ; to the higher chlorinities (more than 23.5$\textperthousand$Cl) 10-70, 10-37 and 3 % respectively ; to the normal range of chlorinities (13.4-16.8$\textperthousand$Cl) 0-13, 3 and 0 % respectively. 5. No lethal effects were observed in E and M clams immersed continuously for seven days in sea water with chlornities of 7.2 -21.7$\textperthousand$Cl at 18-24$^{\circ}C$, while notable mortalities were observed in E which had been kept at lower (less than 4.8$\textperthousand$ Cl) and higher (more than 24.1$\textperthousand$ Cl) chlorinites. 6. Although the resistance of the young clam to the chlorinity may have to be related closely to the life history of the clam prior subject to the experiment, the adapted chlorinity range was 7.2-19.3$\textperthousand$ Cl and the optimum range was 13.4-16.8$\textperthousand$Cl. 7. Remarkable lethal effects were observed for the E and M clams to the exposure temperature of 38$^{\circ}C$ whereas the L and had no such fatal results.

  • 전라남도 광양시 송도 주변해역에서 2000년 12월에 형망에 의해 채집한 농조개의 연령과 성장을 조사하였다. 연령형질은 패각을 사용하였으며, 윤문은 패각에 나타난 불투명대에서 투명대로 이행하는 경계로 하였다. 출현한 개체의 각장은 13.1-44.2mm이었고, 평균은 19.6mm이었으며, 연령은 2세까지 출현하였다. 각장 (SL) 과 각고 (SH) 간의 상대성장은 SL = 0.2105 + 1.7569 $\times$ SH이었고, 각장 (SL)과 전중 (TW) 간의 상대성장은 TW = 2.5824$\times$ $10^{-4}$ $\times$ S $L^{2.6769}$이었다. Von Bertalanffy 성장식은 $L_{t}$ = 81.46(1-e $^{-0}$.20(t+1.19)/), $W_{t}$ = 33.68(1-e $^{0.20(t+1.19)}$)$^{2.6769}$ 추정되었으며, 극한 각장 ( $L_{\infty}$) 은 81.46 mm, 성장계수 (K) 0.20/year 이었다. 0.20/year 이었다..

보리새우의 섭이와 성장 (Studies on Feeding and Growth of the Oriental Brown Shrimp, Penaeus japonicus Bate)

  • 보리새우(Penaeus japonicus Bate)의 섭이량, 주간, 야간 섭이율과 일간 섭이율, 이료의 종류에 따른 섭이률의 차이, 보리새우의 성장과 이료의 전환효율등에 관해서 시험한 결과를 요약하면 다음과 같다. 1. 보리새우의 섭이율은 수온범위 $19\~30^{\circ}C$, 체중범위 $1.6\~14.9g$에서 수온이 높을수록, 또 새우의 크기가 작을수록 커지며, 평균 일간 섭이율은 $18\~44\%$에 달한다. 2. 항상 야간 섭이율이 주간 섭이율보다 크나, 무저질, 암상태 또는 직접광선을 피한 사육상태에서는 주간에도 일간 섭이률의 $22\~37\%$의 섭이를 이룩할 수가 있어, 그만큼 보리새우의 성장을 촉진시킬 수가 있었다. 3. 멸치와 바지락의 두가지 이료에서는 주야의 구별없이 멸치를 한층 더 많이 섭취하였으며, 일간 섭이율중에서 멸치 및 바지락육의 섭이율은 각각 $12.9\%$, $10.3\%$이었다. 4. 보리새우의 체중(W;g)과 일간 성장률 ($DGR;\%$) 사이에는 log DGR=0.7035-0.7864 logW의 관계식이 성립되고, 새우의 크기에 비예하여 일간 성장율은 작아진다. 5. 보리새우의 이료의 전환효율은 새우의 크기에 따라 큰 차이가 없이 평균 $2.8\~7.8\%$의 범위로 변동하며, 지금까지 알려진 어류 (문치가재미, 고등어, 방어 등)와 참오징어의 그것에 비교하면 매우 작은 값을 취한다.

바지락패곡의 형태변이와 바지락의 장형, 단형의 형태적 특성에 관하여 (On the Morphological Variations and Special Feature of the Elongated and the Stunted Forms in the Short Necked Clam, Tapes japonica)

  • The short-necked clam is distributed widely in Korean tidal flats and it is a much an important bivalve quantitatively as to control the production of the tidal flat. The shell of this clam tends to show remarkable morphological variations depending on the habitat. Under a seemingly favorable condition for the growth , the color pattern of shell of the clam is clear and obvious and having less weight and elongated shape, the ratios of shell length to both height and width are small . On the contrary , when the environment appears to be an unfavorable one, the shell is found to be heavy and stunted with smudgy color pattern. If this correlation between could be a basis for the judgement in suitability of growth environment for the clam. In the Ikawazu Bay, Japan, it is revealed that the elongated shell is produced from the coast outside of the Bay (1) , the stunted from the esturay (2) and the intermediate from the floodgate area (3) and the middle of the Bay (4). Followings are the results obtained from the morphological investigation of the claim in this Bay. 1. Relationship between the shell length and the largest shell rib length is linear and between the shell length and the shell width is also linear but with a critical point at the shell length of 17-20 mm. The ratio between the width and the largest rib length at a given shell length increases with the order of 1, 3, 4, and 2. 2. A gradual decreases of the ratio of the shell length to the largest rib length is observed when the former is less than 17-18 mm, and this ratio increases with the shell of longer. Also there is a different range of this ratio in each different location ; the greatest range in 2, the smallest in 1 and 4 being in between. 3. A similar biometric finding is apparent with the ratio between the length and width of the shell and the order in value is 2, 4, 1 and 3. 4. The ratios between the length and the largest rib length of elongated and stunted shell are 0.84-0.86 and 0.89-0.92, respectively , and those between the length and width are 0.40-0.51 and 0.49-0.58, respectively. 5. Generally , the elongated short necked clam shells are products of the tidal flat of good circulation of sea water with high salinity and smaller fluctuations of salinity and temperature within a day. The stunted shells are produced for tidal flats of opposite of above conditions.

통영 연기해역의 바지락자원 적정관리에 관한 연구 (Ecologically Sustainable Management of Short-necked Clam, Ruditapes philippinarum, on the Coast of Yeongi at Tongyeong, Korea)

  • In order to develop the sustainable ecological management, short-necked clams, Ruditapes philippinarum, were collected from Yoengi coast in Tongyoeng, Korea. The growth of the clam was estimated as: $L_f=68.08{\cdot}(1-e^{-0.145(t+0.324)})$ from ring radius composition of shell. Instantaneous co-efficiency of total mortality and natural mortality were calculated as: 0.991/year and 0.494/year, respectively. The age of the clams from the first capture was estimated to be 3.28. The total biomass was estimated to be 212 MT in the fisheries area (6.4 ha). Applied by these parameters, the annual recruit biomass and the current yield per recruit were calculated to be 649.5 individual/$m^2$ and $0.7\;g/m^2$, respectively. The current fishing intensity was much lower for maximum sustainable yield and acceptable biological catch. Although higher yield per recruit could be achieved by increasing fishing intensity, it is favorable to retain the current fishing intensity because of the unique fishing attitude on Yeongi coast in Tongyoeng, Korea.

한국산 식용패류중의 지방질성분에 관한 연구 (Studies on the Lipid Components of Edible Shellfishes in Korea)

  • This study was designed to elucidate the lipid contents, neutral lipids components and fatty acid composition in fresh shellfishes, produced in Korea. Four kinds of shellfishes including sea mussel, short-necked clam, corb shell and and ark shell were selected according to the higher sales order and cheaper retail price at fish markets in Seoul in July 1985. The results abtained were as follows; 1. The average total lipid contents in four shellfishes were 2.3% by wet weight basis. The ratios of neutrial lipid, glycolipid and phospholipid in the total lipid were 51.1 : 4.9 : 44.0 in sea mussel, 66.0 : 3.2 : 30.8 in ark shell, 37.8 : 2.2 : 60.0 in short-necked clam and 54.5 : 2.0 : 53.5 in corb shell, 2. The average value of acid value, iodine value and unsaponifiables contents of total lipids were 1.3, 217.8, 92.0 and 20.3%, respectively. 3. The composition of the neutral lipids were triglycerides, esterified fatty acids, sterylesters, free sterols and monoglycerides in four shellfishes. 4. The major fatty acid composition of total lipids were palmitic, eicosapentaenoic, docosahexaenoic and palmitoleic acids in four shellfishes. The average total unsaturated fatty acids of total lipid were 64.5%, and $\omega$-3 highly unsaturated fatty acids were 27.0%. The average p/s Ratiio were 1.3.

방사선 조사된 조개류의 확인을 위한 ESR Spectroscopy의 이용 (ESR Spectroscopy for Detecting Gamma-Irradiated Shellfishes)

  • Electron spin resonance (ESR) spectroscopy was used to investigate the effect of irradiation dose on the ESR signal intensity and to identify the stability of radicals after 9 weeks of storage in order to detect irradiated shellfishes. The irradiated shellfishes (short-necked clam, purplish washington clam, freshwater clam, jackknifed clam, scallop and hard-shell mussel) presented an asymmetric absorption in shape at $g_{1}$=2.002~2.003 and $g_{2}$=1.998. The strength of the ESR signal increased linearly with the applied doses (1~7 kGy). A highly positive correlation coefficients ($R^{2}$=0.9136~0.9896) were obtained between the irradiation dose and corresponding ESR signal intensity. The intensity of the signals after irradiation was stable even after 9 weeks of storage at 5$\pm$1$^{\circ}C$.
