패류의 정미성분에 관한 연구 (Studies on the Taste components of shellfishes.)

  • This studies was conducted to elucidate the taste components of shellfishes, producted in Korea. Four kinds of shellfishes including sea mussel, short-necked clam, corb shell and ark ahell were selected according to the higher sales order and cheaper retail price at 50 fish markets in Seoul in August 1982. The results are : Palatable taste of shellfishes should be caused by nucleotide related products, organic acids and free amino acids. Thus taste components found in four shellfishes were succinic, fumaric, and lactic acids as organic acids, glycine, alanine and glutamic acid as free amino acids.

패류중의 중금속 함량조사 (Survey on Contents of Heavy Metals in Shellfishes)

  • This survey was performed to find out the heavy metal concentrations in shellfishes. Experimental subjects were 60 cases in 10 kinds of shellfishes purchased in markets in july, august, 1987 and february, 1988. Contents of lead, cadmium, zinc, copper and mangangese were determined by atomic absorption spectrophotometer and mercury contents by mercury analyzer. The results were as follows: The range of mercury contents in shellfishes was from ND to 0.22 ppm, cadmium from 0.22 to 2.46 ppm, lead from 0.09 to 4.90 ppm, copper from 0.62 to 12.45 ppm, manganese from 0.09 to 13.8 ppm and zinc from 4.01 to 129.96 ppm.

한국산 식용패류중의 지방질성분에 관한 연구 (Studies on the Lipid Components of Edible Shellfishes in Korea)

  • This study was designed to elucidate the lipid contents, neutral lipids components and fatty acid composition in fresh shellfishes, produced in Korea. Four kinds of shellfishes including sea mussel, short-necked clam, corb shell and and ark shell were selected according to the higher sales order and cheaper retail price at fish markets in Seoul in July 1985. The results abtained were as follows; 1. The average total lipid contents in four shellfishes were 2.3% by wet weight basis. The ratios of neutrial lipid, glycolipid and phospholipid in the total lipid were 51.1 : 4.9 : 44.0 in sea mussel, 66.0 : 3.2 : 30.8 in ark shell, 37.8 : 2.2 : 60.0 in short-necked clam and 54.5 : 2.0 : 53.5 in corb shell, 2. The average value of acid value, iodine value and unsaponifiables contents of total lipids were 1.3, 217.8, 92.0 and 20.3%, respectively. 3. The composition of the neutral lipids were triglycerides, esterified fatty acids, sterylesters, free sterols and monoglycerides in four shellfishes. 4. The major fatty acid composition of total lipids were palmitic, eicosapentaenoic, docosahexaenoic and palmitoleic acids in four shellfishes. The average total unsaturated fatty acids of total lipid were 64.5%, and $\omega$-3 highly unsaturated fatty acids were 27.0%. The average p/s Ratiio were 1.3.

방사선 조사된 조개류의 확인을 위한 ESR Spectroscopy의 이용 (ESR Spectroscopy for Detecting Gamma-Irradiated Shellfishes)

  • Electron spin resonance (ESR) spectroscopy was used to investigate the effect of irradiation dose on the ESR signal intensity and to identify the stability of radicals after 9 weeks of storage in order to detect irradiated shellfishes. The irradiated shellfishes (short-necked clam, purplish washington clam, freshwater clam, jackknifed clam, scallop and hard-shell mussel) presented an asymmetric absorption in shape at $g_{1}$=2.002~2.003 and $g_{2}$=1.998. The strength of the ESR signal increased linearly with the applied doses (1~7 kGy). A highly positive correlation coefficients ($R^{2}$=0.9136~0.9896) were obtained between the irradiation dose and corresponding ESR signal intensity. The intensity of the signals after irradiation was stable even after 9 weeks of storage at 5$\pm$1$^{\circ}C$.

미색동물 및 패류의 Carotenoids 색소성분과 돌연변이 및 종양세포 증식의 억제효과 (Carotenoids Components of Tunicata, Shellfishes and Its Inhibitory Effects on Mutagenicity and Growth of Tumor Cell)

  • To investigate the composition of carotenoids present in marine organisms and the biological activity of the carotenoids, carotenoids of the muscles and tunic of tunicates and shellfishes were isolated and identified. Anitmutagenic activities of the carotenoids for S. typhimurium TA 98 and cytotoxic activity for cancer cell lines were determined. Total carotenoid contents in the muscle of tunicata ranged from 18.65 mg% to 2.39 mg%. The highest amount of the total carotenoid was found in the muscle of Halocynthia aurantium, followed by Styela clava (HERDMAN), H. roretzi, H. hilgendorfi f. igaboya, H. hilgendorfi f. retteri, S. plicata (LESUEUR) in order. Interestingly, total carotenoid content in the muscle of S. clava (HERDAMAN) was higher than that of H. roretzi. Total carotenoid content of all tunicata, other than H. aurantium and H. roretzi, were higher in muscle than tunic. The major carotenoids in H. roretzi, H. aurantium, S. plicata (LESUEUR), and S. clava (HERDAMAN) were cynthiaxanthin (25.1∼42.2%), halocynthiaxanthin (9.7∼26.3%), diatoxanthin (8.0∼18.7%) and β-carotene (7.7%∼21.7%). Similarly, cantaxanthin (19.6%), cynthiaxanthin (15.4%), halocynthiaxanthin (14.8%), and (3R, 3'R), (3S, 3'S)-astaxanthin (22.6%) in H. hilgendorfi f. retteri and fucoxanthin (26.6%), cynthiaxanthin (21.8%), halocynthiaxanthin (15.2%), and β-carotene (9.3%) in H. hilgendorfi f. igaboya were major carotenoids in both tunicate. However, the composition of carotenoids in muscle and tunic of tunicata was similar each other. Among the shellfishes examined, total carotenoid content of the muscle of Peronidia venulosa (Schrenck) and Corbicula fluminea, and of the gonad of Atrina pinnata and Chlamys farreri, was ranged from 2.51 to 6.83 mg% which were relatively higher than that of other shellfishes. The composition of the carotenoids of shellfishes, which might depend upon their living environments, was varied. But cynthiaxanthin (15.9∼39.0%) and zeaxanthin (9.6∼21.9%) in gonad of C. farreri, and muscles of Buccinum Volutharpa perryi (JAY) and Crassostrea gigas, cynthiaxanthin (21.5∼48.6%) and mytiloxanthin (14.6%) in muscle of C.fluminea and gonad of A. pinnata, and canthaxanthin (60.6%) and isozeaxanthin (20.5%) in muscles of P. venulosa (Schrenck), and β-carotene (23.7%∼37.8%) and zeaxanthin (18.2∼20.4) in muscles of Semisulcospira libertina and Meretrix lusoria were major carotenoids. Interestingly, diester type-carotenoids were present along with free type-carotenoids in muscles of C. gigas. antimutagenic effect of the carotenoids isolated from tunicata and shellfishes against 2-amino-3-methylimidazol [4,5-f]quinoline (IQ) for S. typhimurium TA 98 was proportional to the amount (20, 50 and 100㎍/plate) treated. Mutagenicity of IQ was significantly reduced by astaxanthin, isozeaxanthin, mytiloxanthin and halocynthiaxanthin, whereas the mutagenicity of aflatoxin B₁(AFB₁) was significantly reduced by β-carotene, isozeaxanthin, and mytiloxnthin. Growth inhibition effect of carotenoids isolated from tunicata and shellfishes for cancer cell was proportional to the amount (5, 10, and 20㎍/plate) treated. The growth of HeLa cell by β-carotene, cynthiaxanthin, astaxanthin and halocynthiaxanthin, NCI-H87 cell by β-carotene, astaxanthin, cynthiaxanthin, and halocynthiaxanthin, HT-29 cell by β-carotene, cynthiaxanthin, mytiloxanthin and halocynthiaxanthin, and MG-63 cells by β-carotene, cynthiaxanthin, astaxanthin, canthaxanthin and halocynthiaxanthin were statistically reduced.

연체류, 갑각류 및 패류 중 N-Nitrosamine 함량 (The Content of N-nitrosamine in Mollusk Crustacea and Shellfish)

  • This study analyzed the levels of N-nitrosamine(NA) and its precursors such as nitrite, nitrate, dimethylamine and trimethylamine in 10 samples of mollusk fish, 4 samples of crustacea fish and 11 samples of shellfish from fish distributed in a local markets. Mollusk fishes had nitrite concentrations ranging from non-detectable(ND) to 9.4 mg/kg, crustacea fishes ND to 8.8 mg/kg, and shellfishes ND to 4.3 mg/kg. Nitrates in mollusk fishes ranged from ND to 19.3 mg/kg, crustacea fishes 4.1 to 79.9 mg/kg, and shellfishes 1.5 to 61.9 mg/kg. DMK concentrations were 11.2 to 551.4 mg/100g in mollusk fishes, 44.4 to 79.9 mg/100g in crustacea fishes, and 1.3 to 5.9 mg/100g in shellfishes. TMA concentrations in mollusk fishes, crustacea fishes, and shellfishes were 10.3${\sim}$292.4 mg/100g, 35.5${\sim}$90.3 mg/100g, and 2.3${\sim}$17.1 mg/100g respectively. Only N-nitrosodimethylamine (NDMA) was detected for NA in fish distributed in local markets. NDMA contentrations ranged from ND to 41.4 ${\mu}g/kg$ in mollusk fishes, 3.0 to 47.3 ${\mu}g/kg$ in crustacea fishes, and 1.7 to 12.1 ${\mu}g/kg$ in shellfishes.

서해안 조개류의 껍질과 열수 추출물의 무기질 함량 (Mineral Contents of Hot Water Extracts and Shell of Shellfishes from Western Coast of Korea)

  • 서해안에서 수집한 모시조개, 바지락. 맛조개. 꼬막, 소라 및 굴 등 6종의 조개류의 껍질수율과 외관, 껍질 및 열수 추출물의 무기질 및 중금속 함량을 조사하였다. 조개류 껍질의 비율은 70.1~80.5% 범위였으나 맛조개는 40.7%로 낮았다. 개체당의 껍질무게는 소라가 26.2 g으로 가장 높았고 맛조개가 5.6 g으로 가장 낮았다. 모시조개껍질은 노랑색을 띈 갈색, 바지락은 밝은 갈색. 맛조개와 꼬막은 검은색이었고 소라는 녹색을 띄는 갈색을, 굴은 어두운 회색을 띄었다. 조개류의 주 무기질은 Ca로 36.23~38.78%였으며, K는 0.23~4.54%, Na는 1.48~l.59%였다. 그외 Na, Mg, Fe, Mn, Zn, Cu, P, S 등은 0.0l~0.21% 범위로 함유되어 있었다. 중금속으로 Pb는 1.90~7.75 ppm, Cd는 0.5~4.50 ppm, As는 1.40~4.30 ppm, Se는 0.2~l.50 ppm Cr은 1.00~8.30 ppm, Hg는 0.002~8.2ppm이었다. 조개류 껍질로부터 물에 의하여 추출되는 Ca의 함량은 l15~2.448 mg/100g으로 맛조개가 가장 높았으며 바지락이 가장 낮았다. 물에 의하여 추출되는 K는 10~952 mg/100 g으로 모시조개가 가장 낮았고, 맛조개가 가장 높았다. 조개껍질의 무기질 추출율은 맛조개에서 전반적으로 높았으며 종류에 따라서 상당한 차이를 나타내었다. 특히. P는 맛조개가 201 mg/100 g으로 바지락 0.36 mg/100g에 비하여 현저히 높았다. Pb. As, Se 및 Cr의 물추출량은 맛조개에서 가장 높았으며 각각 110. 40, 90 및 20 $\mu$g/100 g이었다. 그러나 Cd는 바지락껍질에서만 검출되었다.

어패류 및 종에 내재되어 있는 ${\beta}-Galactosidase$의 활성 비교 (Comparative Study on Endogeneous Activities of ${\beta}-Galactosidase$-like Enzyme in Several Finfishes and Shellfishes)

  • 어류 및 폐류내에 내재하는 내재성 ${\beta}-galactosidase$의 활성도를 분석함으로서 외래유전자의 이식시 기초자료로 활용하고자 어류 6종 및 패류 4종을 대상으로 본 실험을 행하였다. 어류에 있어서의 X-gal 염색 결과 혈청 및 근육을 제외한 모든 조직에서 모두 positive ( + ) 염색 양상을 보였다. 패류에 있어서도 어류와 같은 양상을 보여 근육을 제외한 모든 조직에서 모두 positive 염색 양상을 보였으며 더욱이 참굴에 있어서는 폐각근 및 근육에 있어 매우 진한 염색 반응을 보였다. 근육으로 부터 DNA를 추출한 후 PCR을 수행한 결과 모든 종에서 positive (+) 결과를 나타내었으며, 어패류간 그리고 각 개체간 차이는 없었다. 각 장기별 ${\beta}-galactosidase$의 활성도 측정결과 모든 종에 있어서 혈청의 활성도는 무시할 만한 수준이었고, 근육에서 가장 낮게 나타났다. 미꾸라지와 잉어에서는 신장에서 가장 높은 활성을 보였고, 틸라피아는 소화관에서 가장 높은 값을 보였다. 해산어인 넙치의 경우 돌가지미, 문치가자미의 경우에 비해 간에서 활성이 높았다. 그러나 돌가자미 및 문치가자미인 경우 신장에서 가장 높은 값을 보였다. 패류에 있어서는 소화맹낭에서 가장 높은 활성값을 나타내었고 폐각근 및 외투막에서 매우 낮은 활성값을 나타내었다. 그러나, 참굴에 있어서는 참전복, 피조개 및 진주조개 보다는 상대적으로 폐각근 및 외투근에서 높은 활성을 나타내었다.

서울시내 수산 시장에서 유통되는 수산물의 유해성 중금속(Hg, Cd 및 Pb) 분포에 관하여 (Distribution of Hazardous Heavy Metals(Hg, Cd and Pb) in Fishery Products, Sold at Garak Wholesale Markets in Seoul)

  • 2001년 1-12월 서울시 가락농수산물시장에서 총 951건의 수산물(어류 34종 468건, 패류 17종 373건, 갑각류 10종 39건 그리고 두족류 등 11종 71건)을 대상으로 중금속 함량[average(minimum∼maximum), Unit:mg/kg]을 분석한 결과, Hg 0.025(N.D.∼0.19), Cd 0.288(N.D.∼l.85), Pb 0.227(ND∼l.68)이었다. Hg의 경우, 패류[0.033(N.D.∼0.19)]>두족류 등[0.026N.D.∼0.11)]>갑각류[0.026(N.D.∼0.09)]>어류[0.018(N.D.∼0.19)]순이었고, 가장 높은 함량은 미꾸라지 (0.19)와 꼬막(0.19)이었으며, Pb의 경우 패류[0.223(N.D.∼1.38)]>어류[0.213(N.D.∼1.68)]>두족류 등 [0.151(N.D.∼0.39)]>갑각류[0.144(N.D.∼0.44)]순이었고, 가장 높은 함량은 미꾸라지 (1.68)>빙어(1.44)>바지락(1.38)>뱀장어(1.35) 순이었다. 한편, Cd의 경우 패류[0.288(N.D.∼1.85)] 중 가장 높은 함량은 꼬막(1.85)이었다.

Investigation of Domoic acid in Shellfish Collected from Korean Fish Retail Outlets

  • The purpose of this study was to determine the extent of domoic acid (DA) a potent neurotoxin, responsible for the syndrome amnesic shellfish poisoning (ASP) contamination of various species of bivalve shellfish purchased from fish market in Korea and the implications for food safety. Liquid chromatography (LC) methods were applied to quantify DA in shellfish after sample clean-up using solid-phase extraction (SPE) with strong anion exchange (SAX) cartridges. Toxin detection was achieved using photodiode array ultraviolet (LC-UV) and electrospray ionization-mass (LC-ESI-MS). DA was identified in 4 bivalve shellfishes of 872 shellfishes collected from March, 2006 to October, 2007 in Korea. DA amount of 3 surf clams (Mactra veneriformis) collected at Seoul, Daejeon, and Daegu were 4.13, 1.99, and 1.94 mg/kg, respectively. DA amount of 1 pink butterfly shell (Peronidia venulosa) collected at Seoul was 3.02 mg DA/kg. The amounts of DA that were present in 4 bivalve shellfishes were within EU guideline limits for sale of shellfish (20 mg DA/kg).
