A Study on the Success Factors for the Restaurant Service Industry: Moderating Effects of Restaurant Types and Locations

  • We develop the success factors model including research hypotheses in the restaurant service industry. The research model in this study was tested on survey data collected from 282 restaurant owners. In this study, we tried to identify the success factors of the restaurant service industry and analyze the relationship between those success factors and business performance. Especially, we analyzed the impact of success factors on business performance being moderated by the restaurant type and location. Through the analysis of the research model, it is shown that operation management and customer relationship management and so on play an important role in the improvement of business performance. In addition, we found that the impact of the success factors on business performance is moderated by the restaurant type and location. A limitation of our study is the sampling. Franchise restaurants will need to be included in future studies. We expect that our research will help start-up restaurant managers to get useful insights to better manage their own businesses. Although the study on the success factors of the restaurant service industry is very important, there are few researches on that in Korea. Therefore, this study can give new insights on how the restaurant owners do business in the restaurant service industry.

간호·간병통합서비스 병동 간호사의 긍정심리자본, 직무만족, 사회적 지지가 간호업무성과에 미치는 영향 (Influences of Positive Psychological Capital, Job Satisfaction, and Social Support on Performance of Nurses in Comprehensive Nursing Care Service Wards)

  • Purpose: This study aimed to prepare basic data for the development of a nursing intervention program to improve nursing performance by identifying the factors affecting nursing performance in an integrated nursing care service ward. Methods: Participants were 166 nurses who had worked for more than six months in the integrated nursing care service wards of three general hospitals located in B city. Data were collected from July 15 to August 30, 2022 using structured questionnaires and analyzed by T-test, ANOVA, Scheffé test, Pearson's correlation coefficients and multiple linear regression using the IBM SPSS/WIN 25.0 statistical program. Results: Factors affecting the nursing performance of participants were age (β=.58, p<.001), positive psychological capital (β=.41, p<.001), and social support (β=.28, p<.001). The total explanatory power of these variables for nursing performance was 55.8%. Conclusion: The results of this study suggest the need for programs that improve psychological capital and social support while considering nurse's age to enhance their performance in nursing integrated service wards.

  • 본 연구는 서비스 스케이프와 정보기술이 직원의 직무만족과 정서적 몰입 및 서비스 수행에 미치는 영향을 3차 의료기관 입원병동 간호사를 대상으로 실증분석하였다. 구조방정식모형에 의한 실증분석 결과 서비스 스케이프와 정보기술은 직무만족과 정서적 몰입에, 직무만족과 정서적 몰입은 서비스행동에, 정서적 몰입과 서비스행동은 서비스회복에 긍정적인 영향을 미치는 것으로 나타났다. 또한 직무만족은 서비스행동을 통해 서비스회복에 영향을 주는 간접효과는 유의하나 직접효과는 유의하지 않은 것으로 나타났다. 본 연구에서 서비스 스케이프, 정보기술이 직무만족과 정서적 몰입을 통해 서비스 수행에 영향을 주는 순차적 관계를 확인하였다. 결론에서는 실증분석 결과에 대한 논의와 연구의 시사점 및 한계점을 제시하였다.

의류기업의 협력업체에 대한 신뢰와 몰입이 기업성과에 미치는 영향 (The Effects of Trust and Commitment on Firm Performance in Apparel Manufacturer-Contractor Relationships)

  • This study examines the effects of trust and commitment on firm performance in the apparel manufacturer-contractor relationships. A total of 92 apparel manufactures participated in the study. Factor analysis, Cronbach's alpha coefficient, and multiple regression analysis were conducted for the statistical analysis. Two factors of trust were identified: credibility and benevolence. Two factors of commitment were identified: affective commitment and calculative commitment. Three factors of firm performance were identified: customer service performance, finance performance, and product performance. The credibility of the apparel manufacture in a contractor had a significant positive effect on the affective commitment of an apparel manufacturer and on the calculative commitment in a contractor. Meanwhile, the benevolence of the apparel manufacture on a contractor had a significant positive effect on the affective commitment of an apparel manufacturer on a contractor. The credibility of the apparel manufacture on a contractor was positively related to customer service performance, finance performance, and product performance. The benevolence of the apparel manufacture on a contractor was positively related to customer service performance and finance performance of an apparel manufacture. The affective commitment of the apparel manufacture in a contractor was positively related to service performance. The calculative commitment of the apparel manufacture on a contractor was positively related to finance performance and to the product performance of an apparel manufacture. The results of this study provides practical guidelines toward exchange partners of apparel manufacturers as to how to facilitate from performance in apparel manufacturer-contractor relationships.

균형성과표(BSC)개념을 적응한 학교급식 운영성과 측정지표 개발 (Development of Performance Indicators Based on Balanced Score Card for School Food Service Facilities)

  • This study raised the necessity of developing performance indicators for measuring the management efficiency and effectiveness of school food service, and as a means of helping its implementation, a balanced score card (BSC) approach developed by Norton and Kaplan was adopted. This study established BSC in seven phases through literature: Phase 1 Defining a school food service and the scope of working activities, Phase 2 Establishing the vision of a school food service, Phase 3 Setting strategic goals, Phase 4 Identifying critical success factors (CSFs), Phase 5 Developing Key Performance Indicators (KPIs), Phase 6 Extracting cause and effect relationship, and Phase 7 Completing a preliminary BSC. The preliminary BSC was fumed into a survey, which was administered to food service related people working at the Office of Education and School Food Service including 16 offices,209 dietitians, 48 school administrators both from self-operated and contract-managed, and 9 experts in areas related to school food service. They were asked questions about strategies from 4 different perspectives,12 CSFs, 39 KPls, and the cause and effect relationships among them. As a result, among the CSFs based on 4 different perspectives, all factors other than ' zero sum on profit/loss ' from the financial perspective turned out to be valid. In terms of KPIs, manufacturing cost percentages, casualty loss count/reduction rates, school foodervice participation rates, and sales goal achievement rates were found to be valid from the financial perspective, while student satisfaction index, faculty satisfaction index, leftover ratio, nutrition educational performance count, index of evaluating nutrition education, customer claim count/reduction rate, handling customer claim count/reduction rate, and parent satisfaction index were found to be valid from the customers' perspective. Besides, nutritional requirement sufficient ratio, nutritional management score, food poisoning outbreak count, employee safety accident count, sanitary inspection assessment index, meals per labor hour (productivity index), computerization ratio, operational management index, and purchase management assessment index were also found to be valid from the perspective of internal business processes. From the perspective of innovation and learning, employee turnover ratio/rate of absenteeism, annual education and training count, employee satisfaction index, human resource management assessment index, annual menu-related customer feedback, food service information index for employees and parents/schools were also found to be valid. The significance of this study is to present indices for measuring overall performance of school lunch food service operations without putting any limitation on types of school food service management, and to help correctly assess the contribution of the current types of school food service management to schools and students. 사회서비스 시장화에 따른 비영리 사회복지조직의 시장지향성과 조직성과 관계 연구 (Relation of Market Orientation and Organizational Performance in Nonprofit Human Service Organization toward Social Service Marketization)

  • 본 연구는 사회서비스 시장화에 따른 비영리 사회복지조직의 경쟁 우월성을 확보하기 위한 방안으로 시장지향성이 조직성과에 어떠한 영향을 미치는지 경험적으로 검증하기 위한 것이다. 사회서비스 시장화는 사회복지조직의 재정 환경 압박과 더불어 조직 간의 경쟁을 심화시키고 있다. 다양한 공급주체들이 참여하는 사회서비스 시장에서 비영리 사회복지조직이 생존을 유지하기 위해서는 환경에 대한 민감성이 필요하다. 이를 위해 시장지향성 도입의 필요성이 제기되고 있으며 이 시점에서 비영리 사회복지조직의 시장지향성 수준과 시장지향성이 조직성과에 어떠한 영향을 미치는지 확인하는 것은 의미가 있다고 보여진다. 자료 수집은 바우처 사업에 참여하고 있는 부산의 사회복지조직을 대상으로 이루어졌으며, 총 92개 기관이 분석대상이 되었다. 조사대상 기관의 시장지향성은 3.63으로 나타났으며 선행연구들에 비해 다소 높은 시장지향성을 보였다. 시장지향성이 조직성과에 미치는 영향은 유의미하게 나타났다. 사회서비스 시장에서 바우처 사업을 수행하고 있는 비영리 사회복지조직의 시장지향성이 높을수록 바우처 사업에 대한 연간 수익금 총액이 높은 것으로 나타났다. 본 연구는 비영리 사회복지조직의 시장지향성 도입 유용성을 경험적으로 검증하였다. 또한 비영리 사회복지조직이 조직의 생존과 유지를 위해 외부 환경에 더욱 민감하게 반응하는 것이 필요하다는 함의를 제공해 주고 있다.

Cross-layer Dynamic Subcarrier Allocation with Adaptive Service Rate Control in SC-FDMA System

  • In this paper, an improved utility-based cross-layer dynamic subcarrier allocation (DSA) algorithm is proposed for single carrier frequency division multiple access (SC-FDMA) system, which adopts adaptive service rate control (ASRC) to eliminate the service rate waste and improve the spectral efficiency in heterogeneous network including non-real-time traffic and real-time traffic. In this algorithm, furthermore, a first in first out (FIFO) queuing model with finite space is established on the cross-layer scheduling framework. Simulation results indicate that by taking the service rate constraint as the necessary condition for optimality, the ASRC algorithm can effectively eliminate the service rate waste without compromising the scheduling performance. Moreover, the ASRC algorithm is able to further improve the quality of service (QoS) performance and transmission throughput by contributing an attractive performance trade-off between real-time and non-real-time applications.

서울지역 초등학교 급식관리 영양사의 위생관리와 관련된 직무 수행도 (Perceived Performance of Sanitary Management of School Food Service Managers in the Seoul Area)

  • Seven constructs of sanitary management :time temperature, storage, cross-contamination, personal hygiene, equipment facility and documentation management were evaluated to investigate the perceived performance of sanitary management for school food service managers, Using a four-part questionnaire containing the seven constructs of sanitary management HACCP program, demographic information and characteristics of food service facilities participants rated their self-perceptions regarding sanitary management. Of the 550 possible respondents, 248(45.1%) completed the study. For the perceived sanitary manage-ment variables, the participants rated them between 2.66 and 4.16(5-point Likert scale). Temperature management presented the lowest performances while storage management showed the highest. The number of years of work experience of the food service managers and the serving location correlated significantly to sanitary management variables. Documentation management was also highly correlated to the other sanitary management constructs. The respondents ranked the managers leadership and professional knowledge regrading HACCP as most important, followed by the facilitys supporting equipment and human resources second, to successfully implement the HACCP system at the school food service facilites, Awareness of this study indicating low performance on temperature management suggests an active training program is needed for sanitary management of school food service.

Mobile Web Service Architecture Using Context-store

  • Web Services allow a user to integrate applications from different platforms and languages. Since mobile applications often run on heterogeneous platforms and conditions, Web Service becomes a popular solution for integrating with server applications. However, because of its verbosity, XML based SOAP messaging gives the possible overhead to the less powerful mobile devices. Based on the mobile client's behavior that it usually exchanges messages with Web Service continuously in a session, we design the Handheld Flexible Representation architecture. Our proposed architecture consists of three main components: optimizing message representation by using a data format language (Simple_DFDL), streaming communication channel to reduce latency and the Context-store to store context information of a session as well as redundant parts of the messages. In this paper, we focus on the Context-store and describe the architecture with the Context-store for improving the performance of mobile Web Service messaging. We verify our approach by conducting various evaluations and investigate the performance and scalability of the proposed architecture. The empirical results show that we save 40% of transit time between a client and a service by reducing the message size. In contrast to solutions for a single problem such as the compression or binarization, our architecture addresses the problem at a system level. Thus, by using the Context-store, we expect reliable recovery from the fault condition and enhancing interoperability as well as improving the messaging performance.

  • Recently many companies have increased their investment in IT because they are increasingly interested in taking advantage of IT and they recognized that it was a very important strategic resource that any organization should manage. That means that the members of a company or an organization realized the importance of IT specialists' coordinating and working in partnership with the business employees to ascertain the high quality and productivity through IT services. While the company looks at IT cost reduction, there is a pressure from users for more support and service from IT departments. That means IT service providers have to offer improved service quality at reasonable cost. To solve the contradictory problem, this paper proposes the application of IT service management. If the IT service management is implemented properly, an organization can attain the tangible and intangible results which are profitable and effective. In Korea, studies on IT service management have focused only on getting a certification and development issues, and there are few papers which accomplished empirical studies. From the viewpoint of Resource-based theory, this study reviews the definition of IT service management and its elements. It has demonstrated empirically how IT service management can have an impact on IT service management performance. As a result, IT service management plays a role in adding and improving the practical use and efficiency of IT service management. In conclusion, this study contributes to support and show the critical point of the previous literatures about IT service management and offers the new practical implications for business sectors.
