대학 급식소의 성공적인 운영을 위한 필수관리요소 평가 : 서브퀄모델을 활용한 서비스품질관리 활동 평가 (Assessment of Main Management Components for Successful University Foodservice Operations By Using SERVQUAL Model)

  • The purpose of this study were to assess main management components that can lead to successful university foodservice operations. Specifically, it was intended to develop the tool which assesses the service quality, management, to assess the difference between customer importance from and perceptions of service quality, to compare management perceptions of customer importances with actual service delivery, and to identify internal problems which affect service quality with the use of gap model. Three types of questionnaires were developed and implemented for customers, foodservice personals and foodservice manager. Assessment tools were developed based on the literature review, SERVQUAL, GAP model, and the pilot study. Through the validity and reliability test, the questionnaires were revised. Questionnaires were distributed to 900 university students, 207 foodservice personnels, and 54 foodservice manager respectively. 831 university students, 177 foodservice personnels, and 48 foodservice manager were responded with a response rate of 92.3%, 85.5%, and 88.8% respectively. Statistical data analysis was completed using the SPSS programs for descriptive analysis, ANOVA. and SNK test. The results of this study can be summarized as follows : 1. In quality service management components, 31 quality service attributes were categorized and named into primary quality, secondary quality, hygiene, empathy, tangibles, reliability, responsiveness, and price by the factor analysis. 2. Importance mean score of customers was 4.02 out of 5, but perception mean score of customers was 2.55. So there was a relative big gap(1.47) between importance and perception scores, especially in three dimensions of responsiveness, primary quality, and hygiene. 3. It showed that customers' mean scores of perceived service quality by dimensions were the following order : price > reliability > secondary quality > hygiene > tangibles > primary quality > responsiveness > empathy. And the perception mean score of rented(2.59) or contracted(2.58) management was significantly higher than that of self-operated(2.48). 4. Customers' importances mean score which internal customers recognize was 4.23 out of 5, but service delivery mean score was 3.85. So there was a little gap(0.39) between management perceptions of customer importances and actual service delivery. 5. In gap model, SERVQUAL score showed -1.47, Gap 1 positive 0.15, gap 2 negative 0.61, and gap 3 was positive 0.19. 6. The internal problems were as follows : (1) The managers of University foodservice perceived well enough the customers' expectation value but their management competency was lacked in terms of responding customer needs, (2) The foodservice staff perceived service performance more highly than service quality specifications.

비도시지역 배후마을 서비스전달체계 활성화방안 연구 (A Study on Way to Revitalize the Service Delivery System in the Hinterland Villages in Non-Urbanized Area)

  • 농림축산식품부는 농촌 중심지의 기능(문화·복지·경제·교육 등)을 강화하고, 중심지의 서비스가 배후마을로 전달되어 연계시키는 정책을 추진해왔다. 이러한 정책목적을 위해 일반농산어촌개발사업 내 농촌중심지활성화사업, 기초생활거점조성사업을 추진중에 있지만 실제 사업을 추진하는 과정에서 농촌 중심지의 기능 강화에 초점이 맞춰져 배후마을과의 서비스 전달 및 연계 등은 활성화되고 있지 않은 실정이다. 따라서 본 연구에서는 무주군 적상면에서 기 수행했던 사업과 지역현황을 분석하여 배후마을 서비스가 연계 및 활성화되지 못한 이유를 분석하여 앞으로 수행하게될 기초생활거점조성 2단계사업의 추진방향을 제시하고자 하였다. 배후마을 서비스가 활성화되지 못한 원인을 분석한 결과, 농촌의 분산거주 및 지형구조의 한계성으로 나타나는 서비스 접근의 불리함과 배후지역의 수요 발굴을 위한 서비스 전달 체계의 미확보 등이 문제점으로 나타났으며 그에 따른 개선방안을 다음과 같이 도출하였다. 첫 번째로, 지형적 한계를 극복하고자 제안한 디딤거점 조성계획이다. 서비스 중간 터미널 기능을 담당할 디딤거점을 설정하여 효율적인 서비스전달이 이루어지도록 한다. 두 번째로, 합리적 의사결정구조를 위해 중심지 및 배후마을 주민 그리고 다양한 계층이 포함된 주민위원회의 효율적 구성과 함께 다양한 소규모 커뮤니티를 운영하여 지역의 견을 촘촘하게 수렴할 수 있는 소통창구 배치계획을 제안하였다. 세 번째로, 지역주민을 전문강사로 양성하는 선순환 지역인력 양성계획이다. 서비스 전달에서 가장 중요한 서비스 전달자, 즉 활동가를 양성하여 지속 가능한 주민 주도 서비스 공급체계를 완성하고자 한다.

인터넷을 통하여 접속가능한 상업적 문헌전달서비스의 성능 평가 (Performance Evaluation of Commercial Document Delivery Suppliers Accessible through the Internet)

  • 인터넷을 통하여 서비스되고 있는 대표적인 상업적 문헌전달 기관을 선정하여 성능을 비교 평가하였다. 서비스의 유형을 고찰한 후, 실제로 정보센터에 접수된 문헌요구를 표집하여 기록을 조사하고 각 기관에 신청함으로써 데이터를 수집하였다. 신청문헌의 특성을 파악하고 항공우편과 팩스송달 두 가지 전달방식으로 구분하여 공급률 소요시간 비용 등의 평가요소에 따라 문헌전달력을 분석하였다. 문헌의 주제는 과학기술 분야로 유형은 연속간행물 기사로 한정하였다. 각 서비스의 성능은 전달방식과 평가요소별로 다양하게 나타났다. 마지막으로 현행 서비스의 문제점과 개선방안을 제시하였다.

  • Development of digital information and internet technology causes the changes of technology environments and companies, and the variety of customer needs has been dynamically changed in terms of integrating information system with customer satisfaction. Moreover a new logistics concept is needed through the sharing information between suppliers and consumers, which maximizes the level of customers service and its flexibility by changing functional-oriented to process-oriented. In other words, Supply Chain Management (SCM) is now considered as a key aspect of business, which controls the flows of information, funds, and goods in the supply chain. Rationalization of transport-delivery system will be one of the most important issues on logistics management to the domestic companies. The companies need the effective delivery system. Especially in the case of delivery system from distribution centers to customers or vendors, it might take a long time to control the delivery system manually because it would be hard to apply the automatic vehicle routing algorithm effectively considering all the practical constraints. Thus this study develops a heuristic algorithm of automatic vehicle delivery support system in terms of grouping by short ranges of vehicle movement utilizing postal coordinates, which satisfies a variety of realistic constraints and reduces controlling time of manual operations. In addition, the performance of the algorithm developed in this study is evaluated through the case study.

Study on the improvement of online food information services

  • Recently, food delivery apps are seeing rapid growth into a market worth 1 trillion won under a simple but unique business model of connecting nearby restaurants with consumers via smartphone. Though basic similarities with social commerce exists in aspects such as mail-order sales intermediaries, startups, types of services and market competition structure, food delivery apps resemble social commerce in many ways in that they use excessive marketing to secure market dominance, causing a spike in consumer complaints. If the excessive marketing and increase in customer complaints are not rectified, the food delivery app could also see rapid decline as it gradually grows distant from consumers, just like social commerce. Accordingly, this study will identify the factors consumers recognize as important for continuous use vis-a-vis social commerce and food delivery apps to perform an empirical analysis on what areas need improvement. After deriving the four upper factors of product, information system and service along with eight sub-factors by referring to existing literature, the areas with opportunity for improvement were derived through satisfaction level and relative importance evaluation. The results of this study present a strategic direction for maintaining customers of social commerce and food delivery apps.

사물인터넷 컴퓨팅 환경에서 QoS를 고려한 데이터 전송 구조 (QoS-aware Data Delivery Infrastructure for IoT Computing Environments)

  • 최근 사물인터넷(IoT) 기술의 발전과 함께 수많은 센서와 소형 구동장치들로 구성된 새로운 컴퓨팅 환경이 도래했다. 본 논문은 이와 같은 IoT 기반 컴퓨팅 환경에서 데이터 제공자들과 소비자들 사이에 센싱 데이터를 쉽게 공유하고 접근하도록 지원하는 공유 플랫폼으로서, 확장성있는 데이터 전송 기반구조를 제안한다. 확장성과 효율성을 제공하기 위해, 이 논문은 특히 소비자들 간의 서로 다른 QoS 요구사항을 활용하여 전송 대역폭을 효과적으로 활용한 전송 경로를 구성하는 방법을 제시한다. 전송경로 구성과 재구성 과정이 제안하는 구조의 가장 큰 오버헤드로 판단되므로, 본 논문에서는 그 비용을 산정하는 기본적인 실험을 수행하였는데, 결과는 제안된 구조의 우수한 확장성에 비해 오버헤드는 비교적 적은 것으로 확인되었다.

음식 배달 및 1인 가구가 생활 폐기물 발생량에 미치는 영향: 코로나-19 시기를 중심으로 (The Effects of Food Delivery and Single-Person Household on Municipal Solid Waste Generation: Focus on the COVID-19 Period)

  • Purpose - This study empirically analyzes the effects of food delivery service use frequency and the proportion of single-person households on the generation of MSW (Municipal Solid Waste). Additionally, the study analyzes MSW increase during the COVID-19 period. Design/methodology/approach - The study uses annual information on MSW and related characteristics of 228 Si, Gun, and Gu, which are administrative districts of Korea, from 2015 to 2020. Panel fixed effect model is employed for estimations. Findings - The study finds that food delivery and single-person household have significant effects only on recyclable and standard garbage bag MSW, respectively, not on all produce types of MSW. Additionally, it is estimated that, during the COVID-19 period, the increasing effect of food delivery is intensified while single-person households diminish its increasing effect. Lastly, the study confirms that the marginal effect on the increasing effect of MSW generation by the number of household members. Research implications or Originality - The estimated results are expected to provide useful information for the related policies. In particular, it is necessary to focus more on recyclable MSW concerning the developing delivery culture, and regarding changes in the family structure, focus more on the number of household members than single-person households.
