도시·농촌 고등학생의 식습관과 급식만족도 비교 (A Comparison on Dietary Habit and Foodservice Satisfaction of High School Students in Urban and Rural Areas)

  • This survey was conducted to compare food habit and food service satisfaction of high school students in urban and rural areas. The questionnaires were collected from 130 students in Daejeon and 140 in Geumsan. 19.8% of students skipped breakfast because of no time(48.7%), just habit(28.2%), no appetite(20.5%), for weight control(2.6%). The dietary behavior of rural students was better than city in taking snacks and light meal(p<0.05). For health they concerned highly about nutrition label expiration date of processed foods(72.3%) and least in considering nutrition than taste & price(37.9%). The satisfaction of food served was highest in nutrition(3.31), and taste(3.28), smell (3.23), color(3.03), temperature(3.02). The food service satisfaction of rural students was higher than city in proper temperature(p<0.001), nutrition(p<0.01), color(p<0.001). The satisfaction of rural students was higher than city in quantity of bap & side dishes, quality of food materials(p<0.001). The satisfaction of rural students was higher than city in convenience of dining hall, rapidity of food distribution, offer of nutrition information, sanitation of utensils & meals(p<0.001). It is suggested that school dietitian in city should be more concerned about sanitary food service based on students' dietary life & preference.

학동기 아동과 청소년의 도시와 농촌 지역 간 식생활 및 관련 요인 비교 분석 (A Comparative Study on Dietary Life and Associated Factors of School Children and Adolescents between Urban and Rural Area)

  • This Study was carried out to find out regional differences about dietary life and factors associated with meal of school children and adolescents between urban and rural area. Forty students from each of the nationwide 51 schools of three different levels(elementary, middle and high school) were surveyed by self-developed questionnaires. Total of 1,886 questionnaires (1,243 from urban and 681 from rural) were collected and distribution of subjects was 544 from elementary school, 661 from middle school, and 681 from high school. The results were summarized as follows. BMI and degree of satisfaction on body weight of elementary and middle school subjects were not significantly different between urban and rural area. But there were significant regional differences in $BMI(urban\;21.2{\pm}3.0,\;rural\;20.5{\pm}2.8,\;p<0.05)$ and degree of satisfaction on body weight of high school subjects(p<0.001). Elementary(p<0.01) and middle school(p<0.05) subjects in urban area had exercised more frequently than those in rural area. Regularity of having breakfast was not significantly different between urban and rural area at each of three different levels of school. Most subjects(urban 92.2%, rural 92.1%) had lunch regularly by virtue of school lunch service. Regularity of having dinner of elementary(p<0.01) and high school subjects (p<0.01) was significantly different between urban and rural area. Reason for skipping dinner of high school subjects was significantly different between urban and rural area (p<0.05). The most delicious meal was dinner for 51.8% of the urban high school subjects and lunch for 51.7% of the rural subjects. Only one third had intention of participating in school breakfast program regardless of region and levels of school. The findings suggested that nutrition education programs for school children and adolescents include different strategy according to region and levels of schools.

서울 일부지역 남자 고등학생의 주중과 주말의 식품 및 영양소 섭취에 관한 연구 (A Study on Food and Nutrient Intakes of Weekday and Weekend Among High School Boys in Seoul)

  • This study was conducted to examine food and nutrient intakes of weekday and weekend with 329 high school boys residing in Seoul using the 3-day food record. Frequency for breakfast skipping was the highest as compared with lunch and dinner skipping. Frequencies for breakfast and lunch skipping were significantly higher in weekend than weekday (p<0.05). The daily average food, vegetable food and animal food intakes were 1,327.6 g, 800.5 g, and 425.8 g, respectively. Total food and vegetable food intakes of weekday were significantly higher than weekend(p<0.05). The dietary variety score(DVS) was 20.5 in daily average, 23.3 in weekday and 15.1 in weekend, which showed significantly higher in weekday than weekend(p<0.05). The daily averages of energy, protein, fat and carbohydrate intake were 2244.9 kcal, 89 g, 72.6 g, and 311.2 g, respectively. Fat intake was significantly lower and carbohydrate, fiber, phosphate, iron, sodium, potassium, vitamin A, niacin, folate, and vitamin C intakes were significantly higher in weekday than weekend (p<0.05). The percentages of energy intake from carbohydrate, protein, and fat were 55.4%, 15.8%, 28.8% in daily average, 56.8%, 15.8%, 27.4% in weekday and 53.6%, 15.8%, 30.7% in weekend, respectively. The percentages of energy intake from carbohydrate in weekday and weekend were below 60%, and that from fat was above 27% in weekday and weekend. Carbohydrate intake was significantly higher and fat intake was significantly lower in weekday than weekend(p<0.05). Energy intakes of daily average, weekday and weekend were above 83% as compared with estimated energy requirement(EER). Intakes of dietary fiber, calcium, potassium, vitamin C, riboflavin and folate were below 75% as compared with adequate intake(AI) or recommended intake(RI). Mean adequacy ratios(MAR), an index of overall dietary quality were 0.78 in daily average, 0.80 in weekday and 0.75 in weekend. MAR of weekend showed significantly lower than weekday(p<0.05). This study revealed that the overall nutrient intake status was worse in weekend than weekday among high school boys.

충남 지역 일부 남녀 고등학생의 식습관과 학교급식에 대한 만족도 조사 (The Study of Dietary Habits and Satisfaction with School Lunch Program for High School Boys and Girls in Chungnam Province)

  • This study was investigated to examine the dietary habits and satisfaction with a school lunch program for high school boys and girls. The survey was conducted on 416 students(208 boys and 208 girls) using questionnaire. Overall, 40.1% of the respondents reported that they skip breakfast, and more girls skipped breakfast than boys(p<0.05). The major reason for skipping meal was 'no enough time'(48.3%) and duration of meal appeared the highest ratio in '10~15 minutes'(51.7%) and boys having meal with 10 minutes were significantly higher than girls(p<0.001). When asked if they have an unbalanced diet, 58.8% responded "little bit do it but it depends on food". Vegetables were the foods most absent from an unbalanced diet. Additionally, 90% of all respondents takes a snack a day, and 21.5% of the respondents reported that snacks were the most preferable meals. In terms of a satisfaction with school meals, 70.6% of the respondents reported that they were "unsatisfied". Additionally, 43.5% of the students reported that they did not finish their soup. Moreover, 57.5% of the students reported that they were dissatisfied because that food was "not tasty". Based on the results of this study, the meal habits of the students were determined by various factors including gender. To ensure that boys and girls receive the proper nutrition, development of proper eating habits through school meals, nutrition education and a guidance during meal service should be achieved.

보호자를 대상으로 한 초·중·고등학교 운동선수를 위한 영양관리와 급식지원 실태 및 요구도 파악 (Status and Needs Assessment on Nutrition Management and Meal Service for Elementary·Middle·High School Athletes among Athlete's Parents)

  • Objectives: Young athletes require adequate nutrition to maintain their athletic performance, growth and health. This study examined the status and needs of nutrition management and meal services for student athletes among the athlete's parents. Methods: The subjects were parents of elementary, middle, and high school athletes (n=323) from 18 schools participating mainly in the Sports Food Truck. The questionnaire included general characteristics, status and needs on nutrition management and meal service for student athletes, and satisfaction with the Food Truck. The survey was done during 2018. The data were analyzed according to the school groups using a ${\chi}^2-test$ or ANOVA. Results: Approximately 45% of subjects had difficulty in the nutrition management of athletes, and 87.1% had not received nutrition education. Approximately 74% wanted nutrition education held for athletes, and mainly wanted topics on nutrition management for health and eating for athletic performance. The preferred methods were lectures and cooking activity. The responses on the necessity of nutrition education for athletes, desired education topics, and desired times for education differed significantly according to the school groups (p<0.05). Most subjects also wanted nutrition information mainly through SNS. In the athlete's meal, breakfast and snacks were highlighted as the meal to supplement. Approximately 90.3% responded that providing a meal service is necessary. The subjects preferred snacks before/after exercise and dinner if a meal service was provided. They preferred Korean food, followed by snacks, and a dish meal. As the meal type, the subjects wanted the Food Truck and packed meal. The responses on necessity of a meal service (p<0.05), preferred food (p<0.001), and meal type (p<0.001) in the meal service differed significantly according to the school groups. Approximately 43% were satisfied with the Food Truck and 50.8% responded as average. They made suggestions for the Food Truck in terms of foods, operations and frequency. Conclusions: Based on the study results, nutrition education and meal service may support nutrition for student athletes considering the needs of the parents according to the school groups.

위탁운영 중학교 급식에 있어 중학생들의 메뉴 기호도 조사 (The Menu Preference of Middle School Student in Contracted Management Middle School Foodservice)

  • This research aimed to find out menu preference for middle school students and was conducted in a form of questionnaire sampled form middle school students in 10 schools where the meal program under commission was operating in Seoul. The questionnaire was distributed from Dec. 1 to 20, 2000 and gathered menu preference of staple, soup or stew, side dishes and dessert by each meal, season, gender. Statistical data analysis was completea using the SAS package, such as average and standard deviation, frequency analysis and T-test. The results can be summarized as follows : Most of the schools provided rice for lunch, while the students preferred noodles, mandu and bread. Most of students preferd beef rib soup. Gimchi stew with clear soup was favored for breakfast and stews for lunch and dinner. Side dishes were more favored by female students, in which shows the differences between male and female students. Students preferred dessert the most with fruits(4.49). It is required that the quality of school meals should be improved through the service of various kinds of desserts.

대전지역 고등학생들의 건강관련 인자 조사 연구 (Survey for General Traits of Health-associated Factors of High School Students in Daegeon City)

  • Objective: To obtain an overview of the status of health-associated factors of Korean high school adolescents. Methods: 2,455 high school students (1,808 boys and 647 girls) filled out questionnairesfor their health-related factors such as physical problems, sleep and exercise. Results: Students sleep about 5.5 hours per day while they exercise only 2.6 hours each week. 14.2% of students skip breakfast every day. 31.0% of students were under severe stress, and 46.4 % has at least one symptom of distresses such as indigestion, headache, frequently catching cold, or muscle pain. 40.7% of the students took a functional supplement, especially vitamins as the most common, and ginseng and herbal drugs as the second and third. Conclusion: These results present general health-associated status of high school students, thus they could be helpful to design medicinal strategies for high school students using traditional Korean medicine.

노인요양시설에서 요양보호사가 제공하는 일상적 구강청결관리 기록지의 내용분석 (Content analysis of daily tooth cleaning service records by caregivers in a long-term care facility)

  • Objectives: The purpose of the study was to investigate the content analysis of daily tooth cleaning service records by caregivers in a long-term care facility. Methods: The data were analyzed by qualitative research based on content analysis of the daily records of the processes and results of daily tooth cleaning service. Twenty caregivers provided tooth, gum and denture cleaning service after breakfast, lunch, and dinner to 48 elderly residents. The study lasted about two weeks(from August 4 to August 20, 2014). The researcher reconstructed the language by repeatedly reviewing the caregivers statements in the records. The content categories were derived from the records through a reiterative manual comparative analysis. Using constant comparison method, reconstructed meanings were incorporated into various meanings and reanalyzed by final categories called as analytic coding. In order to validate the reliability, 6 times of discussion made the common meanings through a master's degree student and a dental hygiene professor. Results: The caregivers identified lack of understanding and ability to recognize the functional physical and mental changes in the elderly. The elderly had difficulty in recognizing silent communication and daily tooth cleaning. The caregivers were so strenuous in taking care of the daily tooth cleaning service for the elderly. At last, they gave up the daily tooth cleaning service and took on it to the guardians. They found that there was no social supporting network for oral health of the elderly residents. Conclusions: Caregivers had insufficient understanding of the functional physical and mental changes in the elderly residents, and they had difficulty providing daily tooth cleaning service to the elderly due to poor skill and abilities.

An Epidemiological Study for Desirable Health Habits Affecting Workers' Health Status

  • This study identified the health habits affecting health status of industrial workers. Data was collected from 965 workers in 58 companies at Buchon. The research conducted a self-administered questionnaire survey and obtained the workers' health examination records. The results were as follows: 1. Among 965 respondents, men were 82.4%, women were 17.6%, 44.5% were of the 30${\sim}$40 age group, the married were 67.4%, the single were 30.8%, high school graduates were 81.1% and 38.8% were of people who worked between 1 and 5 years 2. As far as the seven health habits, current smokers were 52.8%, people who regularly exercise was 28.5%, 7${\sim}$8 hour of sleep, on the average were 71.4%, people eating breakfast nearly every day were 8.8%, and people eating between meals almost every day were 46.5%. Heavy drinkers who drink 3${\sim}$4 times or more per week were 14.2%, 1${\sim}$2 times per week were 32.6% and the obese were 9.3%. 3, Health status of A and B, estimated by doctors in the health examination were 80.8% and C, D1, D2, the unhealthy were 19.2%. For men, those who reported more than women in unhealthy groups and the results regarding health status reflects those for gender, educational level and age. That is to say that, lower educational level group and over 30 years of age group perceive their health to be worse than the higher educational level and under 30 age group. And these differences were statistically significant. 4. The relationship between health habits and health status were examined based on the odds ratio. Current smokers had a consistently worse health status than a non smokers with a 1.98 odds ratio. The workers who reported eating breakfast rarely or never were more associated with the unhealthy group than the regular breakfast eating group with a 2.96 odds ratio. One or more drink per week had a worse health status than a never or a little drinker with a 1.56 odds ratio. 5. General health habit score and duration of work were selected as significant factors influencing health status from the result of logistic regression analysis. According to the results of this model, the odds ratio of good health status was 2.08 for good health habit score, 1.63 for workers who worked five years or more duration at work. In summary, good health habits were associated with good health status. In particular, the workers who had 5 or more desirable health habits had a significantly better health status than the workers who had 4 or less than 4 good health habits. Therefore, in order to provide the health promotion programs to workers it is necessary to organize clear health management plans based on effective health education and health service perspective. If further research examines health habits and health status using a prospective study design, More precise findings for health promotion program development in the worksite and worksite health management planning.

대구지역 고등학생의 학교급식서비스 공급 유형에 따른 석식만족도 조사 (A Study on the Degree of Satisfaction with School Dinner by School Meal Service in Daegu)

  • 본 연구는 고등학교 학교급식서비스 공급유형에 따른 급식만족도를 비교해보기 위해 대구시내 석식 운영위탁 급식고등학교 133명과 운반위탁 급식고등학교 119명을 대상으로 총 252명(남학생 138명, 여학생 114)에게 실시하였다. 조사대상자의 신체계측을 실시한 결과 BMI는 남학생 68.1%, 여학생 41.2%가 정상인 반면에 남학생은 10.1%, 여학생의 경우 50.0%가 저체중으로 분류되어 성별에 따른 유의한 차이를 보였다. 음식 섭취 시 중요하게 생각하는 요인으로 두 학교 모두에서 맛, 영양, 위생, 기호도의 순이었으며, 식습관에 영향을 주는 요인에서 가족이 가장 많이 영향을 주는 것으로 조사되었다. 아침결식은 여학생(17.5%)이 남학생(8.0%)보다 많았다. 학교급식(석식) 만족도는 운영위탁 급식 학교의 68.4%, 운반위탁 급식학교는 9.2%가 '만족한다'고 답해 급식형태별 만족도 차이가 큰 것으로 조사되었다. 불만족한 경우 이유를 묻는 질문에서는 두 학교 모두에서 "음식의 맛'이 가장 높게 조사되었으나, 운반위탁 급식학교의 경우 '음식의 양'이 36.3%로 다음으로 높게 나타났다. 메뉴 만족도, 음식의 온도에 대한 만족도, 음식의 양에 대한 만족도에서 운반위탁 급식학교의 불만족도가 유의한 수준에서 높게 조사되었다. 학교급식(석식) 서비스 만족도, 시설 위생 관련 만족도에 대한 조사에서는 모든 항목의 만족도에서 운영위탁 급식학교의 만족도가 높게 조사되어 유의한 차이를 보였다. 학교급식(석식)에서 개선되어야 할 점은 운영위탁 급식학교에서는 음식의 맛 25.6%, 식단의 다양성 21.1%, 위생상태 17.3%, 균형 잡힌 영양과 음식의 양이 각 10.5% 등이었으며, 외부운반 급식학교는 음식의 맛 62.2%, 음식의 양 17.6%, 위생상태 8.4%, 식단의 다양성 8.4%로 응답해 운영 위탁급식학교와 외부운반 위탁급식학교와의 석식 개선사항에 유의한 차이가 나타났다. 이상의 연구결과를 통하여 볼 때 위탁급식의 운영형태에 따라 유의한 차이를 보였으며 운반위탁급식에 있어서 불만족한 응답이 많았다. 이는 운영형태에 따른 한계라고 판단하기보다는 민간위탁을 통한 학교급식서비스가 잘 운영될 수 있도록 정기적인 모니터링과 서비스의 질적 수준을 평가할 수 있는 객관적 측정지표 등의 제도적 뒷받침이 이루어져야 할 것으로 사료된다.
