Mycelial growth of L. edodes by supplement nutrition of softwood was studied on a sawdust medium. The sawdust used was from the following softwood species : Larix leptolepis, Pinus densiflora and Pinus koraiensis. The added nutritions consisted of carbon nutritions(sucrose, active carbon, xylose, glucose, paper pellet), nitrogen nutritions(potassium nitrate, ammonium chloride, asparagine, glutamic acid) and vegetable oil(rice bran oil). The sawdust medium was a mixture of 76% sawdust, 20% rice bran, 3% carbon nutrition, 0.4% nitrogen nutrition and 0.6% calcium carbonate. Following addition of carbon and nitrogen nutritions on the sawdust medium proved most suitable : L. leptolepis (glucose, glutamic acid), P. densiflora (active carbon, asparagine) and P. koraiensis (xylose, glutamic acid). The highest mycelial growth was obtained from sawdust medium of optimum condition with 97% of L. leptolepis, 110% of P. densiflora and 98% of P. koraiensis. This study has provided useful preliminary information for the cultivation of L. edodes.
To produce fruiting bodies of Oudemansiella mucida, porcelain fungus, on the oak sawdust medium, additives suitable for the mycelial growth and fruiting body formation were screened. In general, the mycelial growth of the three strains of O. mucida used in this study have been good on oak sawdust mixed rice bran of $20{\sim}30%$. The mycelia incubated in potato dextrose broth for 7 days were inoculated on oak sawdust medium supplemented with various ratios of rice bran and incubated for 30 days at $25^{\circ}C$ in the dark condition until the mycelia of O. mucida fully colonized the media from top to bottom. Then, top surface of the media in the bottles were horizontally scratched with a spatula and filled with tap water for 3 hours. To induce the primordial formation of O. mucida, the bottles were transferred to the mushroom cultivating room under 12 hrs of light (350 lux) and dark condition with relative humidity of 95% at $17^{\circ}C$. The primordia of O. mucida were formed on the surface of oak sawdust media after 7 days of incubation. The mature fruiting bodies were observed 5 days after primordial formation. The fruiting bodies O. mucida were formed on oak sawdust medium mixed with 5 to 30% rice bran. However, abundant fruiting-bodies of O. mucida were produced in oak sawdust medium supplemented with 20% rice bran. This is the first report associated with an artificial fruiting body production of O. mucida in Korea.
This study was performed to find a medium material that can replace Douglas fir sawdust and rice bran in spawn media for growing spawn directly in the oyster mushroom farm. The pH range, total nitrogen source, and total carbon source of the mixed spawn medium were 5.3~5.9, 0.65~1.11%, and 47.0~49.1%, respectively. The C/N ratio was high in the mixed medium of poplar sawdust, with a low total nitrogen content. The protein content was high in the medium containing fermented Douglas fir sawdust. The mycelium growth rate was higher in the medium containing wheat bran than that in the medium containing rice bran. The highest yield per bottle was observed with poplar sawdust, oak sawdust, and rice bran mixed at a ratio of 40:40:20 (v/v/v); however, there was no significant difference observed in terms of productivity with the other treatments. Thus, when growing sawdust spawns in farms, it is efficient to use poplar sawdust, oak sawdust, and wheat bran, which are also easily available, instead of Douglas fir sawdust and rice bran.

This study was performed to evaluate the efficiency of using softwood as the sawdust medium for Lentinula edodes cultivation, effect of nutrient on the mycelial growth, spawning, the mushroom yield, and quality. The nitrogen nutrition significantly enhanced the mycelial growth of L. edodes. The glutamic acid in the L. leptolepis and P. koraiensis, and asparagine in the P. densiflora were appeared to slight increase in the mycelial growth. The vegetable oil showed very effective on the mycelial growth in the P. koraiensis sawdust medium. Carbon/nitrogen ratio of all the test was reduced after mycelial growth. The mycelial growth was exclusively dependent on reduction of carbon. The mushroom yield (32.7%) of the P. densiflora sawdust medium (carbon source: 3% active carbon, nitrogen source: 0.4% asparagines) was the best in mushroom production of L. edodes, followed by the Q. variabilis sawdust (35.4%) of the control medium. The diameter of mushroom cap was obtained from the P. densiflora sawdust (carbon source: 3% sucrose, nitrogen source: 0.4% potassium nitrate) and P. koraiensis sawdust (carbon source: 3% sucrose, nitrogen source: 0.4% potassium nitrate), and the P. koraiensis sawdust (carbon source: 3% xylose, nitrogen source: 0.4% glutamic acid, supplement: 0.05% amino acid), with values 71.5 mm, 71.5 mm and 72.1 mm, respectively. In the polypropylene bag cultivation, the weight losses of the block medium gradually increased for 80 days in the dark (13.8~16.8%) and then became stable in the range of 20.7~25.8%.

Mycelial growth of L. edodes by pretreatments of softwood was studied on a sawdust medium. The sawdust used was from the following softwood species : Larix leptolepis, Pinus densiflora and Pinus koraiensis. The pretreatment consisted of cold-water (48 h), hot-water (3 h) and steam extractions (3 h) at a ratio of 500 g : 3,000 mL (sawdust : distilled water). The sawdust medium was a mixture of 76% sawdust, 20% rice bran, 3% glucose, 0.4% potassium nitrate and 0.6% calcium carbonate. Following sawdust pretreatments proved most suitable : L. leptolepis (steam extraction), P. densiflora (hot-water extraction) and P. koraiensis (hot-water extraction). Mycelial growth on P. koraiensis sawdust increased in proportion to an increase in hot-water extraction time. Mycelial growth was optimum on the sawdust extracted for 12 hours, hot-water extraction beyond this period proved unsuitable. With the exception of P. densiflora at 100 ㎍/mL, antifungal activity occurred in every sample. Maximum inhibition of mycelial growth was obtained from following concentration of hot-water extractives : P. densiflora (104 ㎍/mL) and P. koraiensis (104 ㎍/mL). This study has provided useful preliminary information for the cultivation of L. edodes.
Cauliflower mushroom ($Sparassis$$crispa$) is being cultivated as a functional mushroom since the mushroom contains larger amount of ${\beta}$-glucan than other edible or medicinal mushrooms. In this study, as a fundamental study for the cultivation process of cauliflower mushroom, we assayed the mycelial growth and the productivity of the mushroom cultivated on the sawdust-based medium made of larch ($Larix$$kaempferi$) by 4 kinds of medium densities and 6 kinds of particle sizes. Low densities of sawdust-based media (0.68~0.72 g/$cm^3$) showed high variations in mycelial growth at early stage on sawdust-based medium. The coefficient of variance for the mycelial growth decreased from higher than 40% at the 3rd week to lower than 10% at the 7th week. High density of sawdust-based medium (0.80 g/$cm^3$) showed relatively lower variation in the mycelial growth at early stage with less than 30% of coefficient of variance, the high density of sawdust-based medium was thought to be quite stable compared to the lower densities of sawdust-based medium. From the viewpoint of mushroom productivity especially for the goods (excluding bottom of fruiting body), 0.76 g/$cm^3$ was better than any other densities; the return rates of fruiting body from each medium were 12.2, 13.6, 13.1, and 12.0% for 0.80, 0.76, 0.72, and 0.68 g/$cm^3$, respectively. By the way, it took about 40 days for harvesting from primordium formation with the sawdust-based medium excluded the particles less than 1 mm, while it took about 70 days with the medium including the particles less than 1 mm. The yield from the sawdust-based medium with the particles less than 1 mm was also quite less than any other sawdust-based medium especially for the goods. Therefore, we recommend that the sawdust-based medium with larch for the cultivation of cauliflower mushroom be prepared as 0.76 g/$cm^3$ in medium density with excluding the particles less than 1 mm.
For artificial cultivation of Phellinus baumii, we have conducted a study on cultural characteristics and condition of fruitbody formation in sawdust cultivation. Mycelial density and incubation rate were higher in oak sawdust+rice bran (4 : 1) medium than oak sawdust 100% medium. However, primordia and fruitbody formation were higher in oak sawdust 100% medium than rice bran added medium. Bigger bottle capacity (1,100 ml) resulted in a little higher yield and more biological efficiency than 850 ml bottle.

We investigated the cultivation characteristics of Neolentinus lepideus (21 strains derived from Korea and Japan) on Pinus densiflora sawdust medium as follows; period of mycelial growth, fruiting period, productivity of fruit body and color and morphology of fruit body. The periods for mycelial growth and fruiting on the sawdust medium of N. lepideus were 40~65 days and 6~22 days, respectively. It was produced approximately 48.3 g of fresh weight and 9 fruit-bodies per 600 g of sawdust medium. The productivity of fruit body was reduced by scratching off the surface of sawdust medium. We suggest that three strains (KFRI 1199, 1302, 1331) might be good candidates for sawdust cultivation.
Effects of various kinds of sawdusts, supplements and culture conditions on activities of several enzymes such as protease, phenoloxidase and cellulase produced from mycelium of P. ostreatus grown on sawdust medium were studied and the results are as follows; Higher specific activity of these enzymes was observed when oak tree sawdust and poplar tree sawdust were supplemented with rice bran or wheat bran at rate of 30%, 20% and 10% in total volume respectively. Higher total activities of protease, phenoloxidase and cellulase were observed at 70% of the moisture contents of culture media, while lower activity of these enzymes was observed with 40% moisture contents of sawdust culture medium. The pH 4 and 9 of the sawdust media appeared to be optimum pH for the. production of protease while pH 5 and 7 were optimal for the production of phenoloxidase. The pH 6 of the sawdust medium was optimal for the production of cellulase. The optimum incubating temperature for the production of protease, phenoloxidase and cellulase was $25^{\circ}C$. Higher total activities of protease and phenoloxidase were observed when culture medium was added with wood vinegar at the control, and 0.5% for cellulase.
This study investigated the possibility of using pine tree sawdust in thinning-out tree as a substitute for poplar and douglas-fir tree sawdust in oyster mushroom cultivation. Mycelial growth was 10.8 cm in medium supplemented with 70% pine sawdust after 18 days of culture and 10.2 cm in control medium. Mycelial density showed high density with no significant difference between treatments. Fresh weight and diameter of fruiting bodies were slightly lower in medium supplemented with pine tree sawdust. The hardness of pine tree sawdust was slightly higher in the medium supplemented with 20% and 30% of pine tree sawdust. The L value showed a tendency to be higher in the pine added medium, but the a and b values d id not show any significant difference between the treatments. The yields of fruiting body were 157 g / 850 ml for the control and 170 g / 850 ml for the 40% added pine tree sawdust.
