소금농도 및 저장기간이 깍두기의 특성에 미치는 영향 (Effect of Sodium Chloride Concentrations and Storage Periods on Characteristics of Kakdugi)

  • 소금농도와 저장기간이 깍두기의 특성에 미치는 영향을 조사하기 위하여 깍두기의 관능적 특성, pH 및 적정산도를 측정하였으며 capillary gas chromatography로 비휘발성 유기산을 정성 및 정량 분석하여 비교하였다. 소금농도와 저장기간은 깍두기의 질긴 정도를 제외한 모든 관능적 특성에 영향을 주어 소금농도 2%군은 1%와 3%군에 비해 단단한 정도와 아삭아삭한 정도가 낮고 신맛이 강하였으며, 저장 8일군은 4일군보다 신맛과 이취는 강하나 단단한 정도와 아삭아삭한 정도는 낮았다. 저장기간이 증가할수록 pH는 감소하고 산도는 증가하였으며, 이 현상은 특히 2%군에서 두드러지게 나타났다. 깍두기에서 추출한 비휘발성 유기산으로는 lactic acid, succinic acid 및 citric acid가 대부분이었으며 소금농도 2%군은 다른 실험군들에 비해 유기산 생성량이 많았다. 이상의 결과에서 볼 때 소금농도 2%는 1%와 3%에 비해 깍두기의 연부를 억제하고 산의 생성을 감소시키는 숙성 억제효과가 낮았으며 깍두기의 신맛은 pH보다는 산도와 비휘발성 유기산 함량에 더 관련이 많았다.

뇌졸중의 회복에 영향을 미치는 요인에 관한 연구 -한방병원 입원환자를 중심으로- (A Study on Factors Related to Recovery from Cerebrovascular Accidents)

  • This study was designed to investigate factors related to recovery from cerebrovascular accidents(CVA). Medical charts of 100 CVA patients(40 males and 60 females) who had been treated at Bul-Guang hospital in Teagu from June to December 1994 were reviewed to assess their recovery from CVA. Not only types of CVA, blood pressure and serum cholesterol and triglyceride were factors affecting recovery from CVA, but also smoking and drinking status and food preference seemed to be important factors. The percentages of recovered patients were higher in the order of cerebral thrombosis(83.3$\%$), subarachnoid hemorrhage(57.1$\%$), cerebral embolism(50.0$\%$), and cerebral hemorrhage(26.7$\%$). Recovery rates of patients with serum cholesterol below 200mg/dl, 200-239mg/dl, over 240mg/dl were 81.8$\%$, 66.6$\%$, and 16.6$\%$ respectively. Recovery rates of patients with serum triglyceride below 160mg/dl, 160-209mg/dl, and oover 210mg/dl were 84.6%, 72.8$\%$, and 35.7$\%$ respectively. Patients with standard weight recovered better than those with overweight or obesity. Recovery rates of underweight, standard weight, overweight and obesity patients were 73.3$\%$, 85.7$\%$, 45.8$\%$, and 31.6$\%$ respectively. Smoking and drinking seemed to be important factors which inhibited recovery from CVA. Patients preferring spiced foods were recovered better than those preferring salty or pungent foods. 한국 음식과 일본 음식의 조미료 사용법 비교 (The Differences Between Korean and Japanese Ways of Seasonings)

  • In this paper, the differences between Korean and Japanese ways of seasonings are studied. The main results are summarized as follows: (1) Shouyu and Miso which are Japanese equivalents of soy sauce and bean paste of Korean foods are used in variety of different seasonings with some other ingredients while Korean counter parts are used only to add salty tastes. (2) Shouyu and Miso lose their flavors after considerable time of heating, while Korean soy sauce and bean pastes increase their tastes after heating. (3) Mirin adds sweety taste and glaze and Sake makes food soft or hard according to the moment of being added during cooking. (4) In Korean foods soy sauce, bean paste and red pepper paste are on the basis of tastes, Dashi is used in almost every Japanese food. (5) Seasoned vegetables of Korean food are prepared only with spices of green onion, garlic and sesame oil while seasoned fishes or vegetables are mixed with Shoyu or salt and vinegar in Japanese food. (6) In making Zorim, Korean traditional sauces are added from the beginning of heating. But in making Nimono, sugar, salt, vinegar, Shoyu and artificial taste are added in order during heating. (7) In grilling, main food for grilling in Korea is meat, which is prepared with a variety of spices such as soy sauce or/and red pepper pastes, garlic, green onion, sesame oil, sesame powder, pepper and sugar while mainly fishes are grilled with salt, occasionally with Shoyu or Miso in Japanese food. (8) Pan frying fishes are taken with soy sauce with vinegar in Korea but Tepura are eaten with Tentsuyu in Japan.

경남 일부 초등학교 중학년의 식행동, 영양지식 및 식생활교육요구도 (Eating Behavior, Nutrition knowledge, and Educational Needs of the Food and Nutrition of Elementary School Students in the Gyeungnam Province)

  • This study was conducted to provide basic data for development of a dietary education textbook and guidebook by investigating and analyzing eating behavior, nutrition knowledge and educational needs in elementary school students. Most of the subjects were eating three meals a day (71.5%) and breakfast (75.3%). The percentage of students who consumed proper amount of meals (49.2%) was low. The percentage of students consuming salty food and fatty foods was 28.6% and 42.1%, respectively. The consumption of meat, fish, egg, bean and tofu was high, while the consumption of vegetables, fruits and seaweed was low. The percentage of students consuming processed food was high, but the percentage reading nutrition labels (34.9%) and hazard analysis critical control point (HACCP) mark (26.9%) when buying processed foods was very low. Total scores of eating behavior and nutrition knowledge were significantly higher in female students than in male students (p < 0.05-p < 0.001). The desirable frequency of the education was once a week (60.5%). The most preferred educational method was 'experiment and cooking practice' (40.1%). The students wanted dietary information as 'cooking' (39.0%). As a result of this study, many problems were found in the eating behavior of students and nutritional knowledge was observed to be low as well. On the other hand, the demand for dietary education was very high. The findings of this study suggested the need for developing dietary education programs in order to encourage proper eating habits of students.

조선후기(朝鮮後期) 기근(飢饉) 만성화(慢性化)와 구황식품(救荒食品) 개발(開發)의 사회(社會).경제적(經濟的) 고찰(考察) (Socio economic Approach to the Chronic State of Famine and Exploitation of Famine Relief Food in the Later Half of Chosun Period)

  • This treatise deals with chronic state of famine and exploitation of famine relief food in the later half of Chosun Period and especially in relation with socio-economic changes. There with the impact of socio-economic factors on the chronic state of famine and exploitation of famine relief food is studied mainly with a literary approach. The influential factors which lead to the chronic state of famine were not only climatic restrictions such as flood and drought but socio-economic factors such as foreign invasion (Japanease invasion and Ching's invasion), frequent breaking out of revolt and technological development of agriculture (rice transplantation). And disorder of land system and cultivation of cash crops by the richer peasantry, lowering the economic status of the poorer peasantry who were a major constituents of the population, aggravated the famine state. Because the poorer peasantry were under the shortage of food, they had to seek something edible in the fields and mountains. In this process various kinds of famine relief foods were exploited by the poorer peasantry. The majority of famine relief foods were wild vegetables. Consequently the Chronic state of famine was a cause to introduce various edible wild vegetables into Korean food, which influenced modern vegetarian food habits and firmed the Korean's favorite taste to be hot and salty. These wild vegetables couldn't have a marvelous effect on the relief of starved people. Potatoes and sweet potatoes, which were newly introduced foreign crops, were encouraged to be cultivated for famine relief. But these tubers, unable to be staple food, didn't contribute to an increase in population.

중국 성인의 요오드 섭취 실태 및 요오드 급원 식품 섭취 패턴에 따른 특성 비교 -요오드 영양상태가 다른 세 지역을 중심으로 (Status of Iodine Intake and Comparison of Characteristics according to Iodine-sourced Food Intake Patterns of Chinese Adults: A Study Encompassing Three Regions with Different Iodine Nutritional Statuses)

  • Objectives: This study examines the status of iodine intake and compares the characteristics (region and thyroid disease prevalence) according to the iodine-sourced food intake pattern in Chinese adults. Methods: An online survey was conducted by enrolling 437 Chinese adults aged 18-65 years, living in three regions with different iodine nutritional statuses: Sichuan, Chongqing, and Guangdong. Results: The prevalence of thyroid diseases in Sichuan, Chongqing, and Guangdong were 12.5%, 8.5%, and 2.8%, respectively. Conversely, the proportion of people who received thyroid disease-related examinations was a mere 37.5%. Among the subjects who underwent thyroid examination, the prevalence of thyroid disease in the three regions was 32.2%, 21.8%, and 8.0%, respectively. No differences were obtained in the total iodine intake by region, but the type of iodine source foods differed. Regardless of the region, the highest iodine content was obtained from seaweed. However, the iodine content from iodized salt and other foods differed significantly by region. Factor analysis revealed three food intake patterns according to the iodine food source. The study further determined regional differences and differences in the prevalence of thyroid disease according to food intake patterns. Conclusions: High salt intake can also increase iodine intake, which is thought to have an effect on the occurrence of iodine-excess thyroid disease. Hence, efforts focused on improving salty eating habits need to be implemented.

위암 발생의 식이 및 관련요인에 대한 환자군-대조군 연구 (A Case -Control Study on Dietary and Other Factors Related to Stomach Cancer Incidence)

  • As stomach cancer is very prevalent in Koreans, various factors, especially dietary factors, related to stomach cancer incidence were examined in a case-control study. The study population consisted of 105 individual s diagnosed for stomach cancer in two general hospitals and 124 control subjects, matched for age and sex, in Seoul. Data for general characteristics, family history, smoking and alcohol consumption, personality , dietary habits and food preference were obtained by self-administered questionnaire and personal interview. Heredity was found to be one of the most important factors causing stomach cancer. In addition, genetic inheritance tended to differ between the sexes. The male patients showed significantly higher incidence of their father's relatives than mother's relatives but the female patients showed higher incidence of their mother's relatives that father's relatives. Smoking was significantly related to stomach cancer. It was also found that the cases drank alcohol more frequently and in much greater quantity than the controls. Personality was related to the incidence of stomach cancer. The cases tended to be more sensitive , impatient, and anxious to do things quickly. With regards to dietary habits, the male cases had meals significantly more irregularly than the male controls. The relative risk of preferencefor salty food and ramen showed to be significantly very high. The male cases consumed carbonated beverages and instant foods, low intake of green yellow vegetables, smoking of cigarettes and drinking of alcohol may contribute to the risk of stomach cancer.

농촌 중학생의 식사양식, 영양지식 및 식품기호도 (Meal pattern, Nutrition Knowledge and Food preference of Rural middle school students)

  • This study was undertaken to investigate meal pattern, nutrition knowledge and food preference of 438 rural middle school students living in ChunNam area. As far as nutrition knowledge is concerned, most subjects did not answer correctly on the items of basic five food groups, animal fat and vegetable oil, empty source of soft drink, nutrient requirement and water's role in energy metabolism. However they responded well on the item of iron deficiency and dietary source of Ca. Male students were significantly better in the answering the items of dietary source of energy and nutrient requirement than females, while female students were significantly better on the items of water's role in energy metabolism related to obesity. Generally the respondents did neither consume oil often nor consider consumption of salty food. Furthermore, only 38.6% of subjects drink milk daily in spite of understanding dietary source of Ca, which suggested that they should incorporate nutrition knowledge into dietary behavior. The preferred foods for most subjects were fruit, kimbab and ice cream. Contrastingly the food that they did not prefer was fermented vegetable probably due to strong flavor.

S-Adenosyl-L-methionine (SAM) Production by Lactic Acid Bacteria Strains Isolated from Different Fermented Kimchi Products

  • S-Adenosyl-L-methionine (SAM) is a bioactive material used in the treatment of depression, osteoarthritis, and liver disease. To obtain lactic acid bacteria (LAB) producing high concentrations of SAM, LAB were isolated from commercial kimchi and from prepared kimchi products that contained shrimp jeotgal (fermented salty seafood) or sand lance jeotgal or that were fermented at 5 or $10^{\circ}C$, respectively, when pH was 4.2 to 4.8 and titratable acidity 0.6 to 0.9. Among the 179 LAB strains isolated from the fermented kimchi products, the genus Leuconostoc produced the highest intracellular level of SAM (1.58 mM) and Lactobacillus produced the second highest level (up to 1.47 mM) in the strain culture. This is the first study to quantify SAM in LAB isolated from fermented kimchi prepared by a general kimchi recipe. Ultimately, the selected strains (Leuconostoc mesentroides subsp. mesenteroides/dextranicum KSK417, L. mesentroides subsp. mesenteroides/dextranicum KJM401, and Lactobacillus bifermentans QMW327) could be useful as starters to manufacture fermented foods containing high levels of SAM.

Umami Characteristics and Taste Improvement Mechanism of Meat

  • Taste is one of the five senses that detect vital information about what we are eating. Comprehending taste is crucial for enhancing the flavor of foodstuffs and high-protein foods like meat. Umami has global recognition as the fifth elementary taste, alongside sweetness, sourness, saltiness, and bitterness. Umami compounds are known to enhance the sensation of recognized flavors such as salty, sweet, bitter, and others. This could end up in greater food consumption by consumption by consumers. With the rising global population, meat consumption is rising and is projected to double by 2025. It is crucial to comprehend the umami mechanism of meat and meat products, identify novel compounds, and employ laboratory methodologies to gather varied information. This knowledge will aid in the development of new consumer products. Although very limited information is available on umami taste and compounds in meat through research data. This article discusses recent advancements in umami compounds in other foodstuff as well as meat to aid in designing future research and meat product development. Moreover, another objective of this review is to learn present techniques in foodstuffs to enhance umami taste and utilize that knowledge in meat products.
