  • This study was carried out to investigate the flame retardant characteristics of wood finished with painting by followed in exposure conditions and flame retardant application method. According to painting types and flame retardant application methods salting occurrences undergoing an influence about the wood finished painting, confirmed.   • Kimchi is an important traditional fermented food a korean eating habbit. It is an outstanding food to supply its taste, dietary fiber, vitamins and inorganic substances by microorganism. And recently Kimchi has spotlighted as an international food. To make study of contents concerned Kimchi, analyzed the girl’s high school economics textbook, made questionnaires about necessity of Kimchi education, practiced process of Kimchi to present how to pickle vegetables into Kimchi. The results were: 1. The most of the respondents wanted for Kimchi making and answered that they prepare Kimchi at home by themselves. 2. The most suitable pickling time was about 4 hours and salting conditions by dry and wet styles were 20% for good taste and nutrition of Kimchi. 3. Teaching-learning program by cooperative learning model developed.

Changes in Quality of Salted and Dried Brown-Croaker Product Prepared with Deep Seawater Salt (해양심층수 소금을 이용한 민어 염건품 제조 및 저장 중 품질 변화)

  • The physicochemical properties and quality changes in salted and dried brown croaker products using deep seawater salt were investigated for preparation with different pretreatment, salting and drying conditions. Optimum salt concentration, salting time and drying time for product were 20% of body weight, 12 hrs at room temperature ($25{\pm}2^{\circ}C$), and 24 hrs at $30{\pm}2^{\circ}C$, respectively. The volatile basic nitrogen (VBN), peroxide value (POV), viable cell count and acid value (AV) of viscera and blade removed products were 18.9~22.4 mg%, 21.0~32.5 meq/L, and 2.3~4.4 mg/mL, $2.0\sim3.5{\times}10^3$ CFU/g, respectively and only viscera removed products were 31.2~38.1 mg%, 40~55.2 meq/L, 7.0~11.5 mg/mL, $4.1\sim5.5{\times}10^3$ CFU/g, respectively. Changes in quality of salted and dried brown croaker products were investigated during storage at room temperature and $5{\pm}2^{\circ}C$. The POV, AV and viable cell counts of salted and dried brown croaker products increased in commercial salt used and only viscera removed products compared with deep seawater salt used and viscera and blade removed products during storage time. Results in this study showed that the deep seawater salt was very effective for quality control of salted and dried brown croaker products and pretreatment method was a very important factor for preparation products. The optimum conditions for preparation of salted and dried brown croaker product were 20% of body weight for salt concentration, 12 hrs at $25{\pm}2^{\circ}C$ for salting time, and 24 hrs at $30{\pm}2^{\circ}C$ for drying time. Optimum storage time for quality maintenance was 14 days at $5{\pm}2^{\circ}C$.

Preparation of the Multilayer Membrane Using the Phase Separated and Pressurization (PSP) Method (가압식 코팅법을 이용한 다층막 제조)

  • The porous support polyvinylidene fluoride (PVDF) with a salting out based on the hollow fiber membrane polyethyleneimine (PEI) and polyvinylsulfonic acid (PVSA) by coating with by phase separated and pressurization (PSP) method to produce a multilayer membrane. The resulting membranes were characterized under the various conditions, such as the heat treatment temperature, coating concentration, feed concentration, cross-linking time and cross-link agent concentration in terms of flux and rejection rate for NaCl 100 ppm solution at 4 atm. The best results were PEI 20,000 ppm and PVSA 1,000 ppm, PEI 15% with a 2% malic acid aqueous solution coated by PSP method the hollow fiber membrane heat-treated for 1 minute showed flux 24.3 LMH, the rejection of 82.1%.

Analysis of 12 chlorophenols in waste-water using automated liquid phase microextracion (LPME) device (자동화된 Liquid Phase Microextraction(LPME)를 이용한 폐수 중 12종의 클로로페놀 분석)

  • Twelve chlorophenols (CPs) were extracted by liquid phase microextraction (LPME) from the industrial waste-water and analyzed by GC/MS. To establish the optimal conditions, species of extraction solvent, sample amount, pH of sample, salting out effect, a number of sampling and plunger movement speed were investigated. As a result, the linearities of calibaration curves ranged from 0.9913 to 0.9999, while LODs and LOQs were from 0.05 to 10.0 ng/mL except 2,3,4,5-tetrachlorophenol and pentachlorophenol. Using this method, 4-chloro-3-methylphenol confirmed from waste water at the concentration of 784 ng/mL. The method can be applicable to detect chlorophenols from industrial waste-water.

Changes in Amines, Formaldehydes and Fat Distribution during Gulbi Processing (굴비 제조중 아민류, 포름알데하이드 및 지방분포의 변화)

  • Gulbis were made of raw Pseudosciaena manchurica by different salting methods and drying conditions. During the Gulbi processing, the contents of trimethylamine(TMA), dimethylamine(DMA) and formaldehyde(FA) were chemically analyzed and the distribution of fat was microscopically observed. The contents of TMA, DMA and FA in raw sample were 0.9mg, 3.19mg and 0.19mg per 100g, respectively. The TMA contents in Gulbi were rapidly increased to 24.82-76.32mg during drying, while the DMA contents in Gulbi were slowly increased and FA contents in Gulbi remained nearly unchanged. These changes were not influenced by the kinds of salt and salting methods. The formation rates of TMA and DMA were twice faster dried by the controlled condition than the natural condition. The fat in muscle moved to the skin layer through connective tissue with the laps of drying time. The extent of fat shifting was smaller salted by purified salt than by bay salt. The muscle tissue of Gulbi dried by the controlled condition had clearer spaces between white muscles than that of the natural condition. The muscle tissue of Gulbi salted with purified salt exsisted orderly, while the sample salted with bay salt was clumped.

  • The analytical method of extracting compounds from human blood to examine accumulated organochlorine pesticides (OCPs) has been widely used the traditional liquid-liquid extraction (LLE) method and solid-phase extraction (SPE) method, yet these methods have certain limitations in purification and usafe of a large amount of sample. In order to overcome the se problems reside in these, solid-phase microextraction (SPME), known as a highly efficient extration method with less samples and relatively simple, was employed to collect 18 different kinds of OCPs in blood as extraction method in this study. To optimize extraction method, we examine various experimental SPME-parameters such as adsorption (fiber type, adsorption time, adsorption temperature, salting out effect), and desorption (desorption time, desorption temperature etc.). From the experimental results, the optimal conditions are as follows: fiber was polyacrylate with $85{\mu}m$, adsorption time was for 5 min, adsorption optimum temperature was at $280^{\circ}C$, and salting out effect was NaCl with 0.1 g. MDL, precision and accuracy was in the ranges of 0.05~0.20 ng/mL, 5.59~13.39%, respedively, and accuracy was -0.5% ~24.5% for all OCPs.

Effects of Traditional Salt on the Quality Characteristics and Growth of Microorganisms from Kimchi (자염(煮鹽)으로 담근 배추김치의 발효숙성 중 이화학적.관능적 특성 및 자염이 김치발효 미생물의 생육에 미치는 영향)

  • This study was carried out to investigate the effects of various kinds of commercial salts, including sun-dried (Korea), purified, and traditional salts on the chemical and sensory properties and growth of microorganisms involved in kimchi fermentation. Kimchi was prepared by salting in 10% NaCl solution for 2 hours followed by addition of other spices and fermentation at $20^{\circ}C$. The decreases in pH suggested that kimchi fermentation can be classified into 3 steps: initial, intermediate, and final stages. In texture analysis, the hardness and fracturability of traditional salt kimchi were higher than those of regular kimchi. From the sensory evaluation test for kimchi, sensory scores were high for traditional salt addition, especially taste, overall preference and texture. Among various microorganisms related to kimchi fermentation, the growth of Leuconostoc mesenteroides, Lactobacillus plantarum, Pichia membranaefaciens and Escherichia coli were examined. Based on the conditions of kimchi fermentation, a 2% and 5% concentration of each salt were studied. Also, the conditions of the cultures at $37^{\circ}C$ were examined. There was no considerable difference in the growth of Leuconostoc mesenteroides, Lactobacillus plantarum, Escherichia coli in the different kinds of salts. However, the growth of Pichia membranaefaciens was strongly inhibited by a 5% concentration of traditional salt during incubation at $37^{\circ}C$.

Quality Characteristics of the Salt-Fermented Oysters in Olive Oil (기름담금 염장발효 굴의 품질특성)

  • To develop the new type of salt-fermented seafoods, the salt-fermented oysters in olive oil (product SO) were manufactured, and food components and quality characteristics of product SO were examined. The optimum processing condition for product SO is as follows. The raw oyster with no shell was washed off with 3% saline solution. Then dewatered, and dipped in the brine-salting solution made up with saturated saline solution and oyster sauce (2 : 1 v/v) mixture added 1% sodium erythorbic acid and 0.2% polyphosphate. After salt-fermentation it ripened by brine salting at 5$\pm$1$^{\circ}C$ for 15 days. Then dried at 15$^{\circ}C$ for 4 hours with cool-air, and packed in No. 3B hexahedron type can. Finally, poured with olive oil and seamed it by double-seamer. The moisture, crude protein, crude ash and volatile basic nitrogen contents of the product SO were 61.6%, 12.0%, 16.3% and 34.3 mg/100 g, respectively. In taste-active components of the product SO, total amount of free amino acids is 2,335.4 mg/100 g and it has increased by 50% overall during salt-fermentation 15 day. Taurine, glutamic acid, proline, glycine, alanine, $\beta$-alanine and lysine were detected as principal free amino acids. The contents of inorganic ions were rich in Na and K ion, while the amounts of nucleotide and its related compounds and other bases except betaine were small. From the results of this research, the product SO had a superior organoleptic qualities compared with conventional oyster product, and could be reserved in good conditions for storage 90 days at room temperature.

A Mechanical Model for Texture Changes and Rheological Properties of Radish During Salting (염농도의 확산에 따른 무의 물성학적 특성의 예측 model에 관한 연구)

  • The amounts of salt diffused into radish after immersing in various concentrations of salt solution at different temperatures were measured and the changes of radish texture by the salt diffusion were estimated with the viscoelastic constants of a 3 element solid model determined by a stress relaxation test. The amount of salt diffused through radish was increased with increasing the salt concentration and soaking temperature. While the instantaneous stress, equilibrium elastic solid content and viscoelastic constants of radish were decreased as salt concentration and soaking temperature increased, the stress relaxed fast. Viscoelastic constants as well as the diffusivity were influenced by salt concentration more than by soaking temperature. The rheological equations for the predictable stress changes of radish after immersed in the salt solution at various conditions (temperature, salt concentration and impure salt) were suggested as a function of time.
