포장방법이 동결계육의 이화학적 특성에 미치는 영향 (Effect of Packing Method on Physico-chemical Properties of Frozen Chicken)

  • This experiment was carried out to find out the effect of packing methods on physico-chemical properties of breast and thigh meats in chicken, which was dried by air spray chilling method. The chicken carcass was cut into breast and thigh muscles, which were either vacuum packed or atmosphere packed, and stored at -2O˚C for 1, 4, 8, 12 and 16 wk after quick freezing at -45˚C for 35 min. The pH values of atmosphere-packed breast meat and vacuum-packed breast meat after one wk of storage were higher than those of atmosphere-packed thigh meat and vacuum-packed thigh meat(P< .05). The pH values increased as storage period extended, but no significant difference was detected between two packing method(vacuum vs. atmosphere). Total moisture contents of breast meats after one wk of storage were higher than those of thigh meats. The total moisture contents decreased slowly as storage period extended, but no significant difference was detected between two packing method(vacuum vs. atmosphere). The shear force value of thigh meat was higher than that of breast meat. The shear force values of both meats decreased as storage period extended, regardless of packing method. The water soluble protein extractability of thigh meats was higher than that of breast meat, and the water soluble protein extractability of all treatments decreased until 8 wk after storage, but increased gradually after 8 wk of storage period. The salt soluble protein extractability of breast meat was higher than that of thigh meat, and the salt soluble protein extractability of all treatments decreased as storage period extended. With regard to the packing method, the vacuum packing showed higher value than that of atmosphere packing method until 8 wk of storage. Total lipid contents of atmosphere- and vacuum-packed thigh meats at 1 wk of storage were higher than those of breast meats, and the total lipid contents of all of treatments decreased as storage period extended. However, no significant difference was detected between two packing methods. The fatty acid contents of breast and thigh meats were in order of o1eic(33,5~42.4), palmitic(19.7~30.8) and linoleic acid(10.8~17.4).

Effects of Partial Substitutions of NaCl with KCl, CaSO4 and MgSO4 on the Quality and Sensorial Properties of Pork Patties

  • This study investigated the effects of NaCl replacers (KCl, $CaSO_4$, and $MgSO_4$) on the quality and sensorial properties of pork patty. In the characteristics of spray-dried salt particles, KCl showed the largest particle size with low viscosity in solution. Meanwhile $CaSO_4$ treatment resulted in the smallest particle size and the highest viscosity (p<0.05). In comparison of the qualities of pork patties manufactured by varying level of Na replacers, $MgSO_4$ treatment exhibited low cooking loss comparing to control (p<0.05). Textural properties of KCl and $MgSO_4$ treatments showed similar pattern, i.e., low level of the replacers caused harder and less adhesive texture than those of control (p<0.05), whereas the hardness of these products was not different with control when the replacers were added more than 1.0%. The addition of $CaSO_4$ also manifested harder and less adhesive than control (p<0.05), but the textural properties of $CaSO_4$ treatment was not affected by level of Ca-salt. Eventually, sensorial properties indicated that KCl and $CaSO_4$ influenced negative effects on pork patties. In contrast, $MgSO_4$ showed better sensorial properties in juiciness intensity, tenderness intensity as well as overall acceptability than control, reflecting that $MgSO_4$ was an effective Na-replacer in meat product formulation.

지구통계 기법을 활용한 울진 지역 천부 지하수의 수질 및 수리지구화학 특성 해석 (Geostatistical Interpretation of Water Quality and Hydrogeochemistry of shallow Groundwater in the Uljin Area, Korea)

  • 동해안 울진 지역 천부 지하수의 수리지구화학 자료에 대하여 지구통계 분석(이원배치 분산 분석, 군집 분석, 요인 분석)을 수행함으로써, 수질 자료와 오염 특성의 시간적.공간적 변화 양상을 규명하고 대수층에서 일어나는 주요 반응을 고찰하였다. 이원배치 분산 분석 결과, 광역적 수질 특성은 8개 수계분지를 따라 유의한 공간적 변화를 보여주지 않았으나, Ca, HCO$_3$,SO$_4$등 일부 이온종은 수계분지별로 의미 있는 변화를 나타내었다. 시료 채취시기에 따른 계절 변화는 SO$_4$를 제외하고는 인지되지 않았다. 그러나 군집 분석 결과, 수리지구화학 특성의 변화는 해안으로부터의 거리에 따라 아주 잘 설명될 수 있음을 지시하였다. 요인 분석 결과, 연구 지역 천부 지하수의 수리지구화학 특성은 다양한 요인에 의해 지배됨을 확인하였다. 중요 순서로 그 요인을 나열하면, 1) 물-암석 반응(주로 탄산염 광물의 용해), 2) 바다에서 기원한 해염의 혼입, 3) 비료와 각종 농화학 약품에 의한 오염으로 밝혀졌다.

  • 전통회화의 변색은 온도, 습도, 빛, 그리고 대기 오염에 의한 각종 화학 물질들과 사용된 무기 안료와의 화학반응에 의해 일어나기도 한다. 본 연구에서는 조선종이라고 불리는 한지에 석록, 석청 무기 안료를 사용해 전통방법으로 시험편을 제작하고, 인위적인 노화시험을 통해 안료와 환경 요인의 상호 작용에 의한 노화과정을 조사하였다. 석청은 XRD 및 TGA 결과로부터 내후성 시험의 습기와 내염수 시험의 염무에 의해 영향을 받는 것을 알 수 있었다. 하지만 석록은 내후성 시험이나 내자외선 시험 중 주로 자외선에 의해 화학적 변화가 일어나는 것을 색차 및 TGA 결과로부터 볼 수 있었다.

  • 양조(釀造)간장을 분무건조(噴霧乾燥)에 의하여 분말화(粉末化)하고 포장(包裝)하지 않은 분말(粉末)간장과 포장제품(包裝製品)의 수분흡착특성(水分吸着特性)을 $30^{\circ}C$에서 포화(飽和) 염용액(鹽溶液)을 사용(使用)하여 각상대습도(各相對濕度)에 따라 시험(試驗)하였으며 얻어진 결과(結果)를 요약(要約)하면 다음과 같다. 18.3%의 수분(水分)을 함유(含有)한 분말(粉末)간장의 평형수분함량(平衡水分含量)은 52%였으며, 포장(包裝)된 분말(粉末)간장 제품(製品)의 평형수분함량(平衡水分含量)은 낮은 상대습도(相對濕度)에서 감소(減少)되는 반면(反面)에 높은 상대습도(相對濕度)에서 급격(急激)히 증가(增加) 하였다. 분말(粉末)간장의 흡습속도정수(吸濕速度定數) K는 $311.4{\times}10^{-5}/hr$인 반면(反面)에 필름으로 포장(包裝)한 제품(製品)의 K'는 투습도(透濕度)가 높을수록 높았다. 포장제품(包裝製品)의 안전저장기간(安全貯藏期間)을 $38^{\circ}C$. 92% R. H.의 극한조건(極限條件)에서 Brown식(式)에 의(依)해 산출(算出)한 결과(結果), 필름의 투습도(透濕度)가 낮은 Al. foil/P.E.가 164일(日)로서 가장 길었고 P.V.C. 포장(包裝)은 18일(日)로서 가장 짧았다.

아세클로페낙 고체분산체의 특성 및 용출률 개선 (Characterization and Improved Dissolution Rate of Aceclofenac Solid Dispersion)

  • 아세클로페낙은 높은 결정성을 갖는 난용성 약물이다. 이러한 난용성 약물의 용해도를 증진시키기 위해서 고체분산법을 바탕으로 한 분무건조기를 이용하여 미립구를 제조하였다. PVP-K30을 수용성 담체로 사용하였고 폴록사머는 계면활성화제로 사용하였다. 제조된 아세클로페낙 고체분산체의 특성을 SEM, DSC, XRD 그리고 FT-IR을 이용하여 확인하였다. SEM, DSC, XRD을 통하여 아세클로페낙 고체분산체가 무정형임을 알 수 있었고 FT-IR을 통하여 아세클로페낙과 PVP-K30간에 수소결합을 통해 염을 형성하고 있다는 것을 확인할 수 있었다. 제조된 미립구는 pH 6.8에서 방출을 실시하였으며 시판제인 $Airtal^{(R)}$과 용출률을 비교하였으며 분무건조를 통해 제조한 미립구가 시판제인 $Airtal^{(R)}$ 보다 용출률이 크다는 것을 확인하였다.

음향방출법에 의한 용사코팅 피막부식재의 파손 해석 (Failure Analysis of Corroded Coating Materials by Acoustic Emission)

  • This paper is to investigate the effect of corrosion by acoustic emission method in tensile loading and the adhesiveness between substrate and coating layer. The powders used are Zn and Amdry625, respectively. They are coated on brass alloy substrate. AE signals of Zn and Amdry625 coating layer increase drastically in strain $2\%$. However, those of Zn specimen have more than those of Amdry625 specimen. When the specimens executed the corrosion test under $3.5\%$ NaCl solution for 500, 1000 hours, the salt solution penetrated into the surface of the substrate through the pores of the coating layer. As a result, corrosion production formed on the surface of the substrate. The adhesiveness between coating layers is weakened by the polarization and corrosion itself. The AE event, count, and energy of corroded coating specimens decrease, compared to specimens without corrosion. The results are summarized as follows : 1. In the tensile tests, the time that it took to start and develop the cracks and exfoliations between the surface of the substrates and the plasma spray coatings were different according to the type of plasma sprayed material, which are Zn and Amdry625. These phenomena were obvious at the strain rate 1 to $5\%$, and few available data were found after that stage. 2. The specimens with Zn coating showed the characteristics of crack, according to the changes of the tensile strength applied on the substrates while those with Amdry625 showed exfoliation as a result of low adaptation to the tensile strength. 3. The anti-corrosion specimens showed that the adhesive properties between the substrate and the plasma spray coating were strong in the order of Zn, Amdry. It showed that Corroded specimens cracked or exfoliated easily, even with the small energy, because those had a comparatively weakened adhesive property, due to corrosion. 4. Zn specimen showed no corrosion phenomena on the surface of the substrates, because they had the function of sacrifice anode however, Amdry625 specimen showed the corrosion, because it did not have that function.

굴 세척액을 이용한 인스턴트 분말 수프의 제조 및 특성 (Preparation of Instant Powdered Soup Using Oyster Wash Water and Its Characteristics)

  • 굴통조림 가공부산물인 세척수를 효율적으로 이용하기 위하여 굴세척액을 이용한 인스턴트 분말수프의 제조를 시도하였다. 대조구인 굴 열수추출물 분말 수프는 열수추출물 분말에 식염, 분말크림, 유대체 분말, 밀가루, 대두분말, 전분, 글루코스, 양파가루의 일정량씩을 각각 혼합하여 제조하였다. 굴세척액 분말수프는 열수추출물 분말 대신에 세척액 분말을 첨가하고, 기타 첨가물의 경우 굴 열수추출물 분말 수프와 같은 비율로 첨가하여 제조하였다. 굴통조림 가공부산물 유래 분말 수프인 세척수 분말 수프는 탄수화물이 71.1%로 거의 대부분을 차지하였고, 다음으로 조단백질(10.8%), 조회분(8.1%) 및 조지방(3.5%)의 순이었으며, 대조구인 열수추출물 분말 수프와 차이가 없었다. 굴세척액 분말 수프는 휘발성염기질소, 생균수, 대장균군 및 수분활성이 각각 29.4 mg/100g, $4.6{\times}10^4\;CFU/g$, <18 MPN/100 g 및 0.246으로 위생적으로 안전한 인스턴트 식품이었다. 굴통조림 가공부산물 유래 분말수프의 주요 지방산은 16 : 0(31.5%), 18 : 0(10.4%) 및 18 : 1n-9(27.4%) 등이었고, 단백질의 화학가는 59.4%이었으며, 주요 무기질은 철이었다. 관능평가 결과 대조구인 열수추출물 분말 수프에 대하여 세척수 분말 수프의 경우 점도, 색조, 향 및 맛과 같은 모든 항목에서 차이가 없었다. 이상의 이화학적 및 관능적 검사 결과로 미루어 보아 굴통조림 가공부산물인 세척수는 분말화하여 배합농도를 적절히 조절하면 우수한 인스턴트 분말 수프의 소재로 이용 가능하다는 결론을 얻었다.

EN(Electrochemical Noise)을 이용한 epoxy 도장 강판의 방청 성능 평가 (Application of EN(Electrochemical Noise) to Evaluate the Protective Properties of Epoxy Coated Steels)

  • Electrochemical methods have been widely used to study the performances and mechanisms for the degradation of organic and inorganic coatings. In this study, EN(Electrochemical noise) measurement was applied to the protective properties and review the parameters analyzed noise signals in the time and in the frequency domain for epoxy resin based coated steels during exposure to hot sea water($40^{\circ}C$) and salt spray for 200 days. It was also found that $R_n$(Noise resistance), $R_{sn}$($f_{min}$)(Spectral noise resistance) and 2H(Hurst exponent) represented the performance of epoxy coated steels. $R_n$ can be determined as the ratio of the standard deviations of potential and current noise signals and is decreased to exposure time. Data qualities can be easily checked by PSD(Power Spectral Density) plot and $V_{psd}$, $I_{psd}$ and $R_{sn}$($f_{min}$) is useful to research the protective performances and mechanisms of coated steels. Hurst exponent represents the degradation of coated steels. But, it is difficult to directly apply the protective criterion to the evaluation of epoxy coated steels used the shipbuilding processes.

반응성 스퍼터링법에서의 RF전력, 기판온도 및 가스유량비가 WCx막의 기계적 특성에 끼치는 효과 (Effects of RF Power, Substrate Temperature and Gas Flow Ratio on the Mechanical Properties of WCx Films Deposited by Reactive Sputtering)

  • Effects of rf power, pressure, sputtering gas composition, and substrate temperature on the deposition rate of the $WC_x$ coatings were investigated. The effects of rf power and sputtering gas composition on the hardness and corrosion resistance of the $WC_x$ coatings deposited by reactive sputtering were also investigated. X-ray diffraction (XRD) and Auger electron spectroscopy (AES) analyses were performed to determine the structures and compositions of the films, respectively. The hardnesses of the films were investigated using a nanoindenter, scanning electron microscopy, ana a salt-spray test, respectively. The deposition rate of the films was proportional to rf power and inversely proportional to the $CH_4$ content of $Ar/CH_4$ sputtering gas. The deposition rate linearly increased with increasing chamber pressure. The hardness of the $WC_x$ coatings Increased as rf power increased. The highest hardness was obtained at a $Ar/CH_4$ concentration of $10 vol.\%$ in the sputtering gas. The hardness of the $WC_x$ film deposited under optimal conditions was found to be much higher than that of the electroplated chromium film, although the corrosion resistance of the former was slightly lower than that of the latter.
