Glucosinolate (GSL) contents were investigated (i) at 1~7 days after sowing (DAS) in seed sprouts and (ii) at 3-7 weeks after sowing for the time-course. Moreover, (iii) They were compared with five different cultivars of rocket salad (Eruca sativa). Seventeen GSLs were separated by HPLC analysis, and 10 GSLs among them were identified as glucoraphanin, sinigrin, glucoalyssin, diglucothiobeinin, glucobrassicanapin, glucoerucin, glucobrassicin, dimeric, 4-mercaptobutyl GSL, 4-methoxy glucobrassicin, gluconasturttin by using LC-APCI-MS analysis, but 7 compounds were not identified. (i) The total GSL content in seed sprouts initially increased up to 3 DAS and then decreased according to their seedling growth. In particular, glucoraphanin known as a strong anti-cancer reagent was found the highest level (5.05 ${\mu}mol/g$ dry wt.) at 3 DAS. The most abundant GSL was glucoerucin ranged from 26.0~49.6 ${\mu}mol/g$ dry wt. (ii) In the time-course, the total GSL contents increased dramatically from 3-week (5.91 ${\mu}mol/g$ dry wt.) to 7-week after sowing (32.2 ${\mu}mol/g$ dry wt.). The major GSLs were glucoraphanin, glucoerucin and 4-methoxy glucobrassicin. (iii) By comparing GSL contents with five different cultivars, the total GSL contents increased from 4-week to 6-week after sowing, regardless of cultivar. In 4-week-old, the order with the total GSL content was "Rucola" > "Rocket Herbs" ${\geqq}$ "Odyssey" > "Takii" > "Herb", but in 6-week-old it is changed as "Takii" > "Herb" > "Odyssey" > "Rucola" > "Rocket Herbs" even there was almost no significantly difference between them.
This study investigated the spicy hot flavor related quality characteristics of cucumber salad prepared using spicy hot flavor graded gochujang that had been stored for 60 and 120 days. The results showed that the pH of both the 60-day and 120-day fermented gochujang was significantly higher in the cap-200 sample (p<0.001). In contrast to the results on pH, the acidity of both the 60-day and 120-day fermented gochujang was found significantly lower in the cap-200 sample (p<0.001). Measurements of salinity were found to be significantly lower in the sample with higher capsaicin content than in the sample with lower capsaicin content. The sugar content was found to be generally higher in the sample with the 120-day fermented gochujang than that with the 60-day fermented gochujang. Lightness (L) was higher in the sample with a lower capsaicin content than in the sample with a higher capsaicin content. The redness (a) was found to be significantly higher in the cap-200 sample than in other samples (p<0.001). The values of the L, a, and b tended to be lower in the sample with the 60-day fermented gochujang than in the sample with the 120-day fermented gochujang. The hardness of the cucumber salad was found to be lowest in the 120-day fermented sample with the cap-200 gochujang, which had the highest capsaicin content (p<0.05). The results of the sensory evaluation of the cucumber salads showed that the spiciness was stronger with the higher capsaicin content (p<0.001), and approximately one-level higher than the spiciness rating of hot pepper. The results of a key ingredient analysis showed that the sample with high capsaicin content was classified as having a relatively hot spicy aroma and flavor, and strong stinging pain, and the sample with the low capsaicin content was classified as having a salty aroma and a dark appearance.
We attempted to develop a seafood menu by applying the most preferred recipes to the most disliked seafood menus in order to improve elementary schoolers' seafood menu preferences and consumption levels. A survey was conducted on the attitudes of 106 fifth graders about nine cooking methods and 37 school seafood menus served in the past 2 years. The deep-frying method was the most preferred by both boys and girls. The next preferred methods by boys were grilling and batter-frying while those by girls were stir-frying and batter-frying. The most disliked menus were cold jellyfish salad, mussel soup, dried-pollack soup, and sea-snail salad in that order. Mussel soup, dried-pollack soup, and seasnails salad ranked as the least preferred menu as well. Finally, standardized recipes for mussel croquette, dried-pollack Gangjeong, and batter-fried seasnails were developed. Consumption ratios of mussel croquette (85.94%), dried-pollack Gangjeong (79.55%), and batter-fried seasnails (75.5%) were significantly improved compared to the original menu (p<0.001). For mussel croquette, satisfaction scores for serving size, appearance, flavor, texture, and taste were significantly higher, and intakes of protein, phosphorus, iron, potassium, vitamin A, vitamin B1, vitamin B2, niacin, and vitamin C were significantly improved, as compared with mussel soup (p<0.001). Dried-pollack Gangjeong, texture and taste scores were significantly improved compared to dried-pollack soup. For batter-fried seasnails, protein, phosphorus, and iron intake levels and taste score were significantly improved compared to seasnail salad. Findings of the study suggest that a combination of disliked seafood ingredients and preferred recipes may be helpful in improving elementary school foodservice by increasing menu preference and consumption ratio.
Antioxidant activity, total phenolics level and cytotoxicity of the methanol extracts from the young sprouts of 5 Korean woody salad plants were determined. Methanol extracts of Kalopanax pictus had the highest DPPH radical scavenging activity, with an $IC_{50}$ value of 23.5mg $100g^{-1}$, and followed by Valeriana fauriei(43.1mg $100g^{-1}$), and Morus alba(>100mg $100g^{-1}$). Total phenolic content showed the highest amount in methanol extracts from Kalopanax pictus(23.7mg $100g^{-1}$), and followed by Valeriana fauriei(22.7mg $100g^{-1}$), Aralia elata(16.8mg $100g^{-1}$) and Morus alba(14.2mg $100g^{-1}$). In a MTT assay, methanol extracts of Aralia elata with $IC_{50}$ values of 151.0 and $140.7{\mu}g\;mL^{-1}$ showed the most potent cytotoxicity on Calu-6 and MCF-7, respectively. On the other hand, methanol extracts of Kalopanax pictus($IC_{50}=96.5{\mu}g\;mL^{-1}$) showed the highest activity against HCT-116, and followed by those of Aralia elata($123.3{\mu}g\;mL^{-1}$), and Actinidia arguta($162.0{\mu}g\;mL^{-1}$). Total phenolic content of the tested plant extracts was correlated with the DPPH radical scavenging activity, suggesting the phenolic compounds may contribute to the antioxidant properties of Korean salad plants.
본 연구는 항산화능이 우수한 오디, 오미자, 생마즙(0, 7, 18%)을 사용하여 개발한 고품질 샐러드드레싱의 저장($5^{\circ}C$, 4주) 기간 중 품질 특성 및 항산화능을 분석하였다. pH 및 산도는 생마즙의 첨가량이 증가할수록 pH는 높아지고 산도는 낮아졌으며 저장기간에 따라 pH는 다소 증가하고 산도는 감소하였으나 그 변화 폭이 적어 품질 변화가 일어나지 않았다. 점도는 대조군은 83.2 cP로 낮았으나, 생마즙의 첨가량이 증가할수록 유의적으로 값이 증가하였으며(p<0.001) 저장기간에 따라 모든 군에서 점도가 증가하는 경향을 나타냈다. 유화안정성은 생마즙 첨가량과 상관없이 49~50의 수준으로 나타났으며 저장기간이 경과되어도 변화를 나타내지 않았다. 색도는 저장 초기 대조군에 비해 생마즙을 첨가한 실험군의 명도, 적색도, 황색도 수치가높았으며 저장기간이 길어질수록 모든 군에서 명도, 적색도, 황색도 값이 감소하는 경향을 보였다. DPPH 라디칼 소거능 $IC_{50}$ 값과 총 페놀함량을 통한 항산화성은 생마즙의 첨가량이 증가할수록 항산화성이 증가하였고, 저장기간에 따른 항산화성 저하는 관찰되지 않았다. 과산화물가는 저장 초기 1.51~1.12 meq/kg 이었으며, 생마즙 첨가량이 증가함에 따라 감소하였고, 4주 경과 후에도 큰 폭으로 증가하지 않았다. 이상의 결과로 본 실험에서 제조한 생마즙, 오미자 및 오디 첨가 샐러드드레싱은 항산화성이 우수한 고품질 샐러드드레싱으로 저장($5^{\circ}C$, 4주)중 산패 및 품질에 큰 변화가 없어 저장성이 우수한 것으로 보여 진다.
항산화제(抗酸化劑)인 TBHQ와 BHA/BHT와 소포제(消泡劑)인 methyl silicone등이 식용유의 저장성과 고온에서의 안전성에 미치는 영향을 알아보기 위하여 일련(一連)의 실험을 하였다. 실험결과 methyl silicone은 소포제로써뿐만 아니라 고온$(195^{\circ}C)$에서의 산패를 방지하였고 저장성에는 별 영향이 없었으며 TBHQ는 식용유를 고밀도 polyethylne병(용량 3.8l)에 넣어서 $32^{\circ}C$와 $38^{\circ}C$에서 1년간 저장 했을 때 산패를 지연시켰으나 고온에서의 안정성에는 별 영향을 주지 않음을 알았다. 한편, BHA/BHT(100ppm/100ppm)는 식용유의 저장성과 고온에서의 안정성에 별 도움이 되지 아니하였다. 또한 methyl silicone $1{\pm}0.5ppm$이 적정량(미국 FDA의 최대허용량 : 10ppm)이었으며 TBHQ는 FDA의 최대 허용량인 200ppm일때 가장 효과적임을 알았다.
This study aimed to determine inhibitory effect of pathogen growth by adding green tea extracts to some cook-chill foods. For this study, chicken meat salad and pyeonyuk were blended with green tea extracts to different concentrations of 0, 2 and $3\%$ and prepared in a cook-chill system. S. typhimurium in chickien meat salad; Better antibacterial effects of green tea extracts were observed at a $3\%$ concentration, compared with a $2\%$ concentration. Populations of S. aureus in chicken meat salad; antibacterial effects at a $3\%$ concentration became significant from 3days while that at a $2\%$ concentration remained steady throughout the five-day duration. All three testing samples exhibited a decrease in populations of S. aureus during storage. In pyeonyuk, S. aureus counts at a $3\%$ concentration were 7.26 CFU/g on day 3 and declined to 6.61 CFU/g and 6.48 CFU/g on the following days, showing a greater degree of decline than that of a $2\%$ concentration.
A series of aqueous or methanol extracts from four different Korean salad plants were assayed to determine their allelopathy and antioxidant activity. The extracts applied on filter paper in a Petri-dish bioassay significantly inhibited root growth of against alfalfa (Medicago sativa) seedlings. Leaf extracts from 40 g dry tissue $L^{-1}$ of Aster yomena was most phytotoxic to alfalfa root growth, and followed by that of Cirsium japonicum, Taraxacum officinale, and Ixeris dentate. Methanol extracts of plants dose-dependently increased DPPH free radical scavenging activity in vitro. Antioxidant activity of methanol extracts from the same plant species was investigated, and the result showed high DPPH free radical scavenging activity in Cirsium japonicum, Aster yomena, and Ixeris dentate, however, in Taraxacum officinale was least activity. By means of HPLC analysis, chlorogenic acid, p-coumaric acid, and total phenolics with 7.68, 17.47 and 18.64 mg, $100g^{-1}$, respectively, showed the highest amounts in methanol extracts from Cirsium japonicum leaves. These results suggest that Compositae salad plants contain water-soluble substances with allelopathic potential as well as antioxidant activity.
This study was conducted to present fundamental data on the physicochemical properties and sensory qualities of salad dressings made with chicken foot gelatin. Preliminary experiments were performed to confirm the gelatin powder concentrations in preparing gelatin solutions. A 2% gelatin solution, including 0.5% agar, was prepared for use in the experiments that followed. Sensory evaluations were conducted to compare the organoleptic acceptance of dressings manufactured with differing concentrations of the additive in seasoning soybean sauce, mayonnaise, and sesame powder. The viscosities of the dressings significantly increased with increasing gelatin powder concentration. A decrease in turbidity was observed in the mayonnaise and sesame dressings. The color difference values of all dressings indicated no changes. In sensory evaluations of dressings prepared with gelatin solutions at different concentrations of 2 g (1%), 4 g (2%), and 8 g (4%) of gelatin powder, the 4 g (2%) sample received the highest score for overall acceptance. From this study, which was conducted to find an efficient use for chicken house wast product, it is anticipated that chicken feet will be utilized as a new raw material for producing collagen and gelatin, protein sources widely increasing in use with in the food and bio-industries.
Purpose Domestic asset management fintech companies are expected to grow by leaps and bounds along with the implementation of the "Data bills." Contrary to the market fever, however, academic research is insufficient. Therefore, we want to analyze user reviews of asset management fintech companies that are expected to grow significantly in the future to derive strengths and complementary points of services that have been provided, and analyze key elements of asset management fintech companies. Design/methodology/approach To analyze large amounts of review text data, this study applied text mining techniques. Bank Salad and Toss, domestic asset management application services, were selected for the study. To get the data, app reviews were crawled in the online app store and preprocessed using natural language processing techniques. Topic Modeling and Aspect-Sentiment Analysis were used as analysis methods. Findings According to the analysis results, this study was able to derive the elements that asset management fintech companies should have. As a result of Topic Modeling, 7 topics were derived from Bank Salad and Toss respectively. As a result, topics related to function and usage and topics on stability and marketing were extracted. Sentiment Analysis showed that users responded positively to function-related topics, but negatively to usage-related topics and stability topics. Through this, we were able to extract the key elements needed for asset management fintech companies.
