산란계 사료에 첨가된 식물유지류가 난황의 콜레스테롤 농도 및 지방산 조성에 미치는 영향 (Effects of Dietary Plant Oils on the Cholesterol Level and on the Composition of Fatty Acids in Hen Egg Yolks)

  • White Leghorn hens were fed a commercial formula feeds as a basal diet, which was supplemented with 3 types of plant oil safflower, evening primrose and pine seed, at the 10% level for 3 weeks. No significant changes was found between the basal diet and the oil feeding trials in the egg yolk cholesterol content, the laying rate, the egg weight, and the yolk weight, except the feed intake. In the fatty acid composition of the egg yolk lipid, however, the plant oil feedings to hens resulted in considerable increase of $C_{18:2}$ acid with a simultaneous decrease of $C_{18:2}$ acid ,and, consequently, followed by the improvement of balance with P /S and P /M /S ratio close to 1.0 and 1:1:1, which is known a desirable ratio for human health in lipid nutrition, respectively.

종실유(seeds oil)의 위치별 지방산 및 트리아실글리세롤의 조성 연구 (Study on the Positional Distribution of Fatty Acids, and Triacylglycerol Separation, of Seed Oils)

  • 본 연구에서는 6종류의 종실에서 기름을 착유하여 조지방 함량(crude fat content) 측정 및 총 지방산 조성과 위치별 지방산 조성을 비교 분석 하였으며, triacylglycerol(TAG)의 조성과 tocopherol 함량을 분석하였다. Folch법을 이용하여 분석된 조지방 함량은 들깨 21.64%, 홍화씨 13.85%, 고추씨 9.60%, 석류씨 8.85%, 녹두 2.25%, 결명자 2.00%로 나타났다. 추출된 종실유의 지방산 분석결과 불포화 지방산인 linoleic acid(C18:2)가 81.57 wt%~46.17 wt%로 가장 높은 비중을 차지하였으며, sn-2 위치의 지방산 조성에서도 linoleic acid의 함량이 88.30 wt%~15.99 wt%로 높은 함량을 나타내었다. Triacylglycerol(TAG)의 조성은 reversed-phase HPLC를 이용하여 분석하였으며 partition number(PN)=36~48의 분포를 보였다. Total tocopherol의 함량은 석류씨에서 가장 높은 377.74 mg /100 g으로 나타났으며 이 외에 각각 녹두(141.16 mg/100 g), 결명자(107.23 mg/100 g), 고추씨(33.88 mg/100 g), 들깨(30.05 mg/100 g), 홍화씨(29.80 mg/100 g) 순으로 측정되었다.

Dietary Manipulation of Lean Tissue Deposition in Broiler Chickens

  • Two experiments were conducted to examine the effect of graded levels of dietary chromium and leucine, and different fat sources on performance and body composition of broiler chickens. The results showed that chromium picolinate at 0.5 ppm significantly (p<0.05) lowered the carcass fat level. Gut weight and carcass water content were increased as a result of chromium treatment. Body weight, plucked weight, carcass weight, abdominal fat pad weight, breast yield and feed efficiency were unaffected by chromium treatment. Leucine did not interact with chromium to effect lean growth. Dietary leucine above the recommended maintenance level (1.2% of diet) markedly (p<0.001) reduced the breast muscle yield. The addition of fish oil to broiler diets reduced (p<0.05) the abdominal fat pad weights compared to birds on linseed diets. Fish oil is believed to improve lean growth through the effects of long chain polyunsaturated fatty acids in lowering the very low-density lipoprotein levels and triglyceride in the blood, in the meantime increasing glucose uptake into the muscle tissue in blood and by minimizing the negative impact of the immune system on protein breakdown. The amount of fat in the diet (2% or 4%) did not affect body composition.

홍화씨추출물의 피부 주름개선 효과(I) (Anti-wrinkle Effect of Safflower (Carthamus tinctorius) Seed Extract (I))

  • 홍화(Carthamus tincforiu L.)는 한방에서 어혈, 통경 및 고지혈증 치료제로서 그리고 홍화씨는 진정 및 보혈 등의 약용 소재로 이미 널리 이용되고 있으며, 화장품 원료로서 홍화추출물과 홍화씨유가 사용되고 있다. 본 실험에서는 홍화씨 유박(oil cake)으로부터 식물성유사여성호르몬(phytoestrogen) 거동의 세로토닌(serotonin)유도체를 함유한 정제분말을 제조하여 화장품 원료로서리 적용 가능성을 실험하였다. 홍화씨추출물을 식물성유사여성호르몬으로 알려진 레즈베라트롤(resyeratrol)과 제니스테인(genistein) 및 기능성 주름개선제로 알려진 레티놀(retinol)과 우르소릭애씨드(ursolic acid)와 함께 항주름 효과와 관련한 항산화 효과, 엘라스타제 활성저해 효과, 섬유아세포 활성촉진 효과 및 콜라겐 생성촉진 효과에 대하여 비교 실험하였다. 실험 결과, 세로토닌유도체를 함유한 홍화씨추출물은 피부에 자극없이 항산화 효과, 엘라스타제 활성저해 효과, 섬유아세포로 활성촉진 효과 및 콜라겐 생성촉진 효과가 우수하여 주름개선용 기능성 화장품 원료로 기대되고 있다. 피부의 주름을 개선할 수 있는 가능성있는 원료로 기대되었다.

CLA와 selenium의 투여가 닭의 체구성과 혈중 콜레스테롤 수준에 미치는 영향 (Effects of conjugated linoleic acid and selenium on body composition and serum cholesterol concentration in broiler chickens)

  • The purpose of this study was to examine whether conjugated linoleic acid and selenium supplementation in broiler chicken diets would be effective, enhance indices of immune status and body weight, and modulate serum lipid concentration. Forty Hyline brown chickens, 1 weeks of age, were divided into 5 groups of 8 chickens. Chickens were fed the experimental diets supplemented with 1% CLA (conjugated linoleic acid; Group 1), 1% CLA + selenium (Group 2), 1% safflower-seed-oil as LA (Group 3), 1% safflower-seed-oil as LA + selenium (Group 4) or nothing (Control) for 4 weeks. After 4 weeks, serum, liver, spleen and abdominal fat were taken. Measurement of total immunoglobulin were executed using sandwich ELISA. Weight ratio of liver to body showed that the group fed with CLA were significantly higher than the group fed with CLA + selenium. Weight ratios of spleen and fat to body showed no significantly differences. In concentrations of serum total cholesterol and HDL-cholesterol, the group fed with CLA showed significantly higher values than that fed with CLA + selenium. In concentrations of serum triglyceride and LDL-cholesterol there were no significantly differences between the treatment groups. In conclusion, supplementation of CLA with selenium protected hepatomegaly and reduced level of serum total cholesterol and HDL-cholestererol in chickens.

  • In order to study the stability of herbal oil(Yoo-Je), the Yoo-Je from walnut and safflower measured their rancidity by gas chromatographic analysis. The use of specificity of column for estimating the oxidative deterioration of Yoo-Je was attempted. These results suggested the possible implication of pentanal and hexanal as an stability index for rancidity evaluation of Yoo-Je.

필수지방산 결핍이 유도된 기니피그에서 보라지유와 홍화유 섭취의 표피 과증식 억제 및 세라마이드 대사에 미치는 효과 비교 (Comparative effect of dietary borage oil and safflower oil on anti-proliferation and ceramide metabolism in the epidermis of essential fatty acid deficient guinea pigs)

  • 본 연구에서는 기니피그에 8주간 필수지방산 결핍 식이 공급에 의해 표피 과증식을 유도한 후 계속된 2주간의 보라지유 또는 홍화유 식이 공급에 의한 과증식 억제 및 Cer, GlcCer, SM의 표피 함량 및 세라마이드 대사 관련 효소들의 단백질 발현 변화를 정상대조군인 BO군 및 필수지방산 결핍 군인 HCO군과 비교하였으며 그 결과는 다음과 같다. 1. 8주간의 필수지방산 결핍 식이 공급 후 계속된 2주간의 보라지유 식이 공급 (HCO + BO군)은 2주간의 홍화유 식이 공급에 (HCO + SO군) 비해 더욱 현저히 표피 과증식을 억제하였다. 2. 10주간 필수지방산 결핍식이를 공급한 HCO군은 정상대조군인 BO군에 비해 Cer의 총 함량 및 Cer1/2/5/6/7, GlcCer-A/B의 함량이 유의적으로 감소되었다. HCO + BO군의 Cer과 GlcCer의 총 함량 및 Cer1/2, GlcCer-A/B, SM1의 함량은 HCO군에 비해 유의적으로 증가한 반면 HCO + SO군의 이들 함량은 HCO군과 유사하였다. GlcCer-C/D, SM의 총 함량 및 SM 2/3의 함량은 군간 변화가 없었다. 3. HCO군에서는 GCase 발현이 감소한 반면 HCO + BO군에서는 현저히 증가하였다. HCO + SO군의 aSMase의 단백질 발현이 HCO군에 비해 유의적으로 증가하였으나 aCDase의 발현 또한 다른 군에 비해 현저히 증가하였다. HCO + BO군과 HCO + SO군 모두 SPT의 단백질 발현이 HCO군에 비해 유의적으로 증가하였다. 결론적으로 표피 과증식이 유도된 기니피그에 보라지유 식이 공급은 GlcCer-A/B을 포함하는 GlcCer 총 함량, SM1 및 GCase의 발현 증가와 더불어 Cer1/2를 포함하는 Cer 총 함량을 증가시켜 궁극적으로 표피 과증식을 현저히 억제하였다.

식이 $\omega3$$\omega6$계 지방산 조성이 제 2세대 쥐의 RBC과 뇌조직 Synaptosome, Microsome 및 Mitochondria의 인지질 및 행동발달에 미치는 영향 (Effects of Dietary $\omega3$ and $\omega6$ Fatty Acids on the Fatty Acid Composition of RBC and Brain Synaptosomal, Microsomal and mitochondrial Phospholipids and on Behavioral Development of Rats)

  • The supply of different fatty acids during the development period has significant effects. This study examined the effects of dietary $\omega$3 and $\omega$6 fatty acid compositions on phospholipids (PLs) of RBC and rat brain subcellular fractions (synaptosome, microsome, mitochondria), and on learning ability of the 2nd generation rat. Rats were fed experimental diets 3-4 wks prior to the conception. Early in the lactation period, the feeding mothers were exchanged. Diets consisted of 10% fat(by weight), which was either safflower oil('S') poor in $\omega$3 fatty acids or computer-searched mixed oil('M') with P/M/S ratio, 1/1.4/1 and $\omega$6/$\omega$3 ratio, 6.1/1. The 'S' and 'M' rats were subdivided further into SS, SM, MS & MM rats according to their lactation stauts. At 3 (weaning) & 9 wks of age, the percentage of total $\omega$3 fatty acids to their lactation status. At 3 (weaning) & 9 wks of age, the percentage of total $\omega$3 fatty acids and the ratios of $\omega$3/$\omega$6 fatty acids in PLs of RBC and brain subcellular fractions in SM and MM groups fed milk from the mixed oil-fed mothers for 2 wks tended to be higher than those in SS and MS groups respectively. In contrast, the concentrations of $\omega$6 fatty acids, especially 22:5$\omega$6 in all fractions, were significantly lower in the SM & MM groups compared to those of the SS & MS groups respectively. In contrast, the concentration of $\omega$6 fatty acids, especially 22:5$\omega$6 in all fractions, were significantly lower in the SM & MM groups compared to those of the SS & MS groups, The values for the DHA$\omega$3/22:5$\omega$6 ratios after the lactation period were markedly higher in the groups (SM & MM) which were reared by mixed oil(MO) fed mothers. In carring out Y-water maze at 9th wk of age, the SM(4.2$\pm$0.5) & MM (5.3$\pm$0.5) groups made significantly less errors compared to the SS(6.2$\pm$0.6, p<0.05 compared with SM) & MM (7.2$\pm$0.5, p<0.05 compared with MM) groups which were lactated by the safflower oilfed mothers. Therefore, by feeding a balanced fatty acid diet from the lactation period up to 9 wks of age as compared with the groups fed $\omega$3 fatty acid-deficient diet regardless of mother's diet given before parturition. The levels of DHA(synaptosome) and 22:5$\omega$3 (mitochondria) were positively correlated not only with these values in RBC but also with visual discriminating ability. The levels of DHA and 22:5$\omega$3 in RBC can, therfore, reflect visual discriminatng ability in the rat.

식물성 유지를 첨가한 가공치즈의 조직특성에 관한 연구 (Studies on the Texture Properties of the Processed Cheese Substituted with Vegetable Oils)

  • This study was carried out to develop the processed cheese with the increase of unsaturated fatty acid by substituting different vegetable oils for the improvement of nutritional aspects without reducing its sensory advantage and texture properties. The texture properties(hardness, elasticity, adhesiveness, cohesiveness, brittleness and gumminess), meltability, fat leakage degree and sensory evaluation of the processed cheese were analyzed and compared. The meltability of the processed cheese was measured in the range from 59.7 to 138.3mm, the sample substituted with corn oil showed the lowest meltability but the sample substituted with butter resulted in the highest meltability. The degree of fat leakage had the range from 8.28 to 14.71$\textrm{cm}^2$. The sample substituted with safflower oil showed the lowest fat leakage degree but the sample substituted with butter had the highest fat leakage degree. The sample substituted with butter had the lowest hardness. There was no significant difference in the elasticity between the samples tested. The sample substituted with butter showed the lowest value in adhesiveness, cohesiveness, brittleness and gumminess, respectively. The preference score of the processed cheese samples ranged from 3.22 to 6.59. The texture score ranged from 3.12 to 3.26.

산란계 사료내 Conjugated Linoleic Acid(CLA)와 불포화지방산 함유 Oil의 첨가가 산란율과 계란의 품질에 미치는 영향 (Effects of Dietary Conjugated Linoleic Acid (CLA) and Oil Containing Unsaturated Fatty Acid Supplementation on Egg Production Rate and Quality in Laying Hens)

  • 본 시험은 산란계 사료내 conjugated linoleic acid(CLA)와 불포화지방산 함유 oil의 첨가가 산란율과 계란 품질에 미치는 영향을 알아보고자 실시하였다. 시험 동물은 36주령 ISA Brown 갈색계 288수를 공시하였으며, 사양 시험은 5주간 실시하였다. 시험 설계는 1) BO(basal diet + 1% soybean oil + 1% oat), 2) BS(basal diet + 1% safflower oil + 1% oat), 3) BF (basal diet + 1% free fatty acid + 1% oat), 4) CD(basal diet + 1% CLA containing diglyceride + 1% oat), 5) CT(basal diet + 1% CLA containing triglyceride + 1% oat), 6) CP(basal diet + 1% CLA by-product + 1% soybean oil)로 6개 처리를 하여 처리당 8반복, 반복당 6수씩 완전 임의 배치하였다. 산란율에 있어서는 처리구간에 유의적인 차이를 보이지 않았다(P>0.05). 난각 강도에 있어서는 3주째에 CP 처리구가 BS, BF, CD, CT 처리구와 비교하여 유의적으로 낮았으며(P<0.05), 4주째에는 BO와 CP 처리구가 다른 처리구들과 비교하여 유의적으로 낮았다(P<0.05). 난각 두께에서는 3주와 4주째 모두에서 CP 처리구가 BS, BF, CD, CT 처리구와 비교하여 유의적으로 낮았다(P<0.05). 난중에 있어서는 3주와 4주째 모두에서 CP 처리구가 다른 처리구들과 비교하여 유의적으로 낮았다(P<0.05). 시험 4주째의 난황고에 있어서는 BF와 CT 처리구가 BO, CD, CP 처리구와 비교하여 유의적으로 가장 높았으며(P<0.05), BO와 CD 처리구는 CP 처리구와 비교하여 유의적으로 높았다(P<0.05). 또한, 4주째의 난황색에 있어서는 CP 처리구가 BO와 BS 처리구와 비교하여 유의적으로 높았다(P<0.05). 호우 유닛(Haugh unit)에 있어서는 3주와 4주째 모두에서 BO와 CP 처리구가 다른 처리구들과 비교하여 유의적으로 낮았다(P<0.05). 본 시험 결과 산란계 사료내 CLA와 불포화지방산 함유 oil을 첨가.급여하면 산란율에는 아무런 영향을 미치지 않으나, 계란 품질에 있어서는 향상되는 결과를 보였다.
