Analysis of Trans Fatty Acid and Crude Fat Contents of Bakery Foods in Chung-cheong Province (대전, 충천 지역 제빵류의 조지방 및 트랜스 지방산 함량 조사)

  • Bakery food items distributed in Chung-cheong province Daejeon, Cheonan, and Cheongju) were studied to determine their contents of total crude fat and trans fatty acids (TFA). After fat extraction by the Folch method, methylation was carried out to analyze the fatty acid compositions by GC, using a SP-2560 column and flame ionization detector. The total fat contents of the foods were in the approximate range of 2$\sim$34%. The total fat contents of the items were as follows: whipping cream cake : 0.03$\sim$1.31 (g/100 g food), pastries = 0.21$\sim$2.64 (g/100 g food), cream puff = 0.09$\sim$0.43 (g/100 g food), croquette = 0.22$\sim$1.99 (g/100 g food), and glutinous rice doughnut = 0.03$\sim$0.38 (g/100 g food).

A Study of Food Taboos on Jeju Island (I)-Focused on Pregnancy- (제주지역(濟州地域)의 식품금기(食品禁忌)에 관(關)한 연구(硏究) (I)-임신기(妊娠期)를 중심(中心)으로-)

  • Nutrition counselors in Korea often encounter difficulty in their attempt to change village women's attitudes regarding food taboos which are counter to good eating habits. There are a great many food superstitions which are not due to religious influence, but seem to be related to shape and composition of food. Many expectant mothers superstitiously avoid eating certain foods for fear that they may cause mental or physical abnormality in their babies. As was shown in a previous survey (Mo, 1966)of villages in all provinces except Jeju Island, such superstitions were common among pregnant and lactating mothers. Many food taboos and superstitions based on non-scientific and irrational ideas do exist even in modern society, and are a major obstacle to nutritionally adequate food consumption. A study of food taboos among women of Jeju Island was undertaken from November to December of 1976, these results to be compared as well with those of the previous study. There were 73 items found to be prohibited during pregnancy. Of these, 48.7% were of the deaf group, 17.4% fish, 5.5% eggs, 4.7% cereal, and only 2.2% fruit. Of 252% women respondents, 111 (45% ) abstained from eating chicken, duck, and shark because of the belief that they would cause their babies to be born with gooseflesh or shark skin. Many of them avoided rabbit meat for fear that their babies might be born with harelip. It was also feared that a baby would become disfigured if his mother ate duck, goat, dog meat, chicken or duck eggs, or soup made of bones. A common superstition was that highly spiced or salty foods would cause the fetus to be hairless. Squid and octopus were believed to cause babies to have weak bones, or none at all. Most of these food taboos were associated with fears concerning Physical structure and appearance of unborn babies. Other taboos were associated with fear of undesirable behavioral characteristics. For example, some mothers thought that a baby would pinch or bite the mother's breast during the weaning period, if crab meat were eaten during pregnancy. Unevenly sliced rice cake, loach, snake meat and eel were also believed to cause a baby to be ill-tempered. The findings of this study are remarkably similar to those of the previous study conducted by the authour in 1966. Most of the same food taboos, based on non-scientific and irrational reasons, were found on Jeju Island as on the peninsula, and thor were similarly wide-spread. The results of correlational analysis show that the most significant factors related to prevalence of food taboos, are level of education and religious background. Number of food taboos is correlated with level of education. Also, food taboos are least freqent among the Christian woman. Proper nutrition education should he undertaken in order to encourage intake of protein-rich food, particularly during pregnancy when nutritional needs of mother and fetus are great.

  • 쌀을 주식으로 하는 우리의 식생활과 일치하고 전통적으로 나누어 함께 먹는 식품으로 자리 잡고 있는 떡을 현대화하기 위해서는 인식의 전환과 상품화 및 유통기간연장을 위한 연구가 이루어 져야한다. 영양학적으로 우수한 전통 떡류가 있지만 현대에 이르러서 생활양식과 식문화 등의 급격한 변화로 일반화 및 다소비 되지 못함은 소비자의 변화에 맞추지 못하기 때문이나 떡에 대한 인식은 매우 긍정적이라고 한다. 떡은 언제 어디서나 먹을 수 있는 간편한 생활 음식이며, 우수한 전통음식이라고 인식시킴으로써 떡에 대한 긍정적인 이미지를 확대해 나갈 필요가 있다. 전통의 맛을 유지하면서 기능성과 영양상의 균형을 갖춘 새로운 맛의 떡으로 소비층을 확대하여야 한다. 유통기간이 짧아 떡집에 자주 가서 구매해야 한다는 인식에 탈피 할 수 있도록 제품개발이 되어야 한다. 떡집은 영세하고, 비위생적이며 포장이 깨끗하지 못하다는 인식이 전환이 되도록 작업환경, 시설 및 제품포장을 현대화 하여야 한다. 새로운 형태의 매장을 운영하는 것도 필요하다. 새로운 형태의 카페 형 또는 베이커리형의 떡집이 선보임으로써 다양한 종류의 떡이 개발되어 편의성과 고급화되면 소비층이 점차 확대되고 있는 점은 떡의 상품화와 관련하여 매우 의미 있는 변화이다. 또한 떡 공장에서 위생적으로 생산, 소규모 포장, 급속 동결, 냉동 유통, 소비자에게 전달되는 냉동제품이 활성화 되어야 한다. 노화억제에 의한 저장성 향상은 상품화 떡의 품질향상이다. 품질과 관련된 인자는 원료 쌀의 품질, 분쇄 정도, 수분함량, 제조공정, 전분분해 효소처리, 당류, 유화제, 콜로이드 물질 등의 첨가제에 의한 연구가 지속되고 있다.학적 특성에는 영향을 미치지 않고 혈중 IGF-I 농도를 증가시켰다. 또한 이들 측정항목에서 Revalor H implant는 제한사양, 저에너지 사료, 혹은 Compudose 이상의 효과를 나타내었고, 증체를 억제하였으나 사료효율은 증진시켰으며, 후자(사양, 사료)와의 상호작용은 나타나지 않았다. 이상의 결과는 거세비육돈에서 1) androgen과 estrogen은 공히 자발적인 사료섭취와 등지방 침적을 억제하고 IGF-I 분비를 증가시키며, 2) 성선스테로이드호르몬의 이 같은 성장에 미치는 효과의 일부는 IGF-I을 통해 매개될 수도 있을을 시사한다. 약 $70 {\~} 90\%$의 phenoxyethanol이 유상에 존재하였다. 또한, 미생물에 대한 항균력도 phenoxyethanol이 수상에 많이 존재할수록 증가하는 경향을 나타내었다. 따라서, 제형 내 oil tomposition을 변화시킴으로써 phenoxyethanol의 사용량을 줄일 수 있을 뿐만 아니라, 피부 투과를 감소시켜 보다 피부 자극이 적은 저자극 방부시스템 개발이 가능하리라 보여 진다. 첨가하여 제조한 curd yoghurt는 저장성과 관능적인 면에서 우수한 상품적 가치가 인정되는 새로운 기능성 신제품의 개발에 기여할 수 있을 것으로 사료되었다. 여자의 경우 0.8이상이 되어서 심혈관계 질환의 위험 범위에 속하는 수준이었다. 삼두근의 두겹 두께는 남녀 각각 $20.2\pm8.58cm,\;22.2\pm4.40mm$으로 남녀간에 유의한 차이는 없었다. 조사대상자의 식습관 상태는 전체 대상자의 $84.4\%$가 대부분이 하루 세끼

Importance-Satisfaction and Usage of Traditional Market Foods of Undergraduate Students in Jeonbuk Area (전북 일부 지역 대학생들의 전통시장 음식 이용 현황 및 중요도-만족도 분석)

  • The aim of this paper was to provide basic data on revitalizing traditional markets in 389 undergraduate students who had purchased foods sold at a traditional market in order to understand the current state of usage of traditional market foods and to analyze degree of importance and satisfaction. From September 2015 to November 2015, questionnaires were filled out by respondents. Of the 389 questionnaires that were returned, 343 were used while 46 were discarded as incomplete. In the traditional market, high popularity was detected in foods such as 'Hotteok', 'stir-fried rice cake', 'Korean sausage', and so on in that order, which were mainly simple foods. There was a tendency that 'taste', 'hygiene', 'price', and 'quality' were considered as important, all of which scored more than 4 points for all residence types. In the difference analysis of the degree of satisfaction and importance in traditional market foods according to residence types, degree of importance was much higher than that of satisfaction for all selective attributes. In the results of ISA analysis for attributes of traditional market foods, those selling food in the second quadrant need to make more effort to improve 'hygiene' and 'quality' of food.

Demand for Elderly Food Development: Relation to Oral and Overall Health -Focused on the Elderly Who Are Using Senior Welfare Centers in Seoul- (구강 및 전신 건강 기반 고령자용 식품 개발을 위한 요구도 조사 -서울 일부 지역 복지관 이용 노인을 대상으로-)

  • Oral health is a critical factor for diagnosing overall health, as poor oral health has a negative impact on food intake and results in deterioration of nutritional status. The purpose of this study was to research the needs for food developments for the elderly based on their oral and overall health status. Oral status was significantly associated with self-reported health status, and dry mouth (lack of saliva) especially showed a significant relationship with negative self-perception of both oral and overall health. For both elderly men and women, fish and leafy vegetables were the most preferred side dishes. Bread, rice cake, and beverage-type foods were also preferred for snack development. Disease status of the elderly was significantly related with their preference for food development. For instance, those with diabetes were more likely to ask for anti-diabetic diets. The most important factor for the elderly in choosing food was nutritional balance, and less than 3,000 won was cited as an affordable price. The results could be utilized as basic data to develop foods for the elderly.

Quality of characteristics of Paeksulgis Added powder of Opuntia Ficus indica var. Saboten (백년초가루 첨가 백설기의 품질특성)

  • Paeksulgis (Korean rice cake), containing $0\~0.5\%$ Opuntia Ficus indica var. Saboten powder, was prepared to enable the quality of the mechanical and sensory characteristics to be tested. The pHs of the Paeksulgis without and with 0.05 to $0.5\%$ Opuntia Ficus indica var. Saboten powder were 5.99 and about 5.7 respectively. With regard to the Hunter's color values of the control Paekulgis, the lightness (L), redness (a) and yellowness (b) were 94.78, -0.01 and 5.58, respectively. The lightness (L) decreased with increasing Opuntia Ficus indica var. Saboten powder concentration, whereas the redness (a) and yellowness (b) were both increased. with regard to the mechanical characteristics of Paeksulgis, the strength hardness, adhesiveness and gumminess were highest in the control group. In the sensory evaluation of Paeksulgis, the control group had the highest score for texture (p<0.05), but the addition of Opuntia Ficus indica var. Saboten powder gave higher scores for color, flavor, moisture, consistency, after taste and overall preference than the control (p<0.05).

Effect of the Addition of Surichwi on Quality Characteristics of Surichwijulpyurn (수리취 첨가량을 달리한 수리취 절편의 특성)

  • Hardness and elasticity for SurichwijuIPyun(Korean rice cake supplemented with Surichwi) made with various levels of Surichwi(O∼40%) boiled in 1% sodium bicarbonate added water were decreased by increasing additional rate of Surichwi, but adhesiveness and cohesiveness didn't show constant increase or decrease. Guminess and chewiness showed significant differences by decreasing additional rate of Surichwi. As a results of sensory evaluation of Surichwiiulpyun, Julpyun supplemented with 20fs Surichwi showed the most favorite tendency in color, flavor and overall acceptability. Textural characteristics of Surichwijulpyun supplemented with 20 and 30% Surichwi in storing at 20$^{\circ}C$ showed less change than those of 0 and loft group. Gumminess and chewiness showed similar trend to hardness, and there were significant differences in additional rate of Surichwi and storage time.

Changes in the Quality Characteristics of Topokkidduk Prepared with Garlic Powder (마늘분말을 첨가한 떡볶이 떡의 품질 특성 변화)

  • In this study, the quality characteristics of Topokkidduk, a traditional Korean rice cake, containing different amounts of garlic powder (0, 1, 3, 5, 7 w/w %) were investigated. The moisture content of Topokkidduk containing garlic ranged from 45.72~46.74% and was significantly higher than Topokkidduk in the absence of garlic. The Hunter color L value decreased with an increase in the amount of added garlic powder, whereas the a and b values increased. Texture analysis revealed that the hardness of uncooked Topokkidduk was significantly lower than Topokkidduk not containing garlic (p>0.05). The adhesiveness and springiness of both uncooked and cooked Topokkidduk did not vary significantly at the different garlic concentrations (p>0.05). The chewiness of Topokkidduk tended to decrease with an increase in the amount of added garlic powder. For the sensory evaluation, the intensity (color and flavor) and acceptability (color, flavor and taste) were lower for Topokkidduk containing 7% garlic powder than the other samples. The chewiness intensity was highest for Topokkidduk containing 1% and 3% garlic powder (p>0.05). The Topokkidduk containing no garlic powder and 3% garlic powder had the highest overall acceptability score (p>0.05).

A Bibliographical Study of Korean Fan Fried Side dishes(Jeon) in Korean Literatures before the 1900s (1900년대 이전 문헌에 기록된 전 조리법의 문헌적 고찰)

  • Jeon refers to a type of Korean cuisine used as a side dish, made with various ingredients such as meat, vegetables, or fish, mixed with flour batter and coated with egg batter and then pan-fried on both sides with oil so that heat spreads through them well. The aim of this study was to provide a cornerstone of further research on Korean dietary life, by reviewing types, recipes and names of Jeon recorded in ancient cookbooks (Korean literatures) and by analyzing changes in recipes to make Jeon, which our ancestors used wisely as one type of side dish. Considering developments and changes recorded in old documents, the Jeon recipe appeared relatively later than the recipes for grilling, steaming et al, which had been developed much earlier, and it had not been recorded until the 1600s. Changes of Jeon recipes by time period are as follows. In the 1600s, there were three recipes: frying only with grain batter after preparation of ingredients, frying right after preparation of ingredients, and putting ingredients on already fried watery batter. These three recipes were still used in the 1700s, in addition to a new recipe, in which ingredients were oil-fried to be skewered. Today's recipe in which prepared ingredients are fried after getting coated with flour and egg only appeared in 1800s. This has been the main recipe for Jeon ever since. In that time period, there was more variety of recipes and ingredients than before. For instance, Jeon was used for soup or steamed dishes instead of being served as a dish itself. Buchimgae with mixed ingredients was also considered Jeon. In the 1900s, there appeared more names for Jeon as more sorts of ingredients got used, even though there were no new recipes for Jeon. The above-mentioned historical records show that traditional recipes for Jeon have been applied to various dishes, using diverse ingredients, and it might be a smart solution to today's problematic dietary habits involving excessive intake of nutrients, in that it provides a healthy way to add fat. In the same sense, the recipe for Jeon can play an active role in internationalization of Korean foods, in which healthiness is a main feature. According to ancient documents, the recipes for Jeon were used even for meals that were not side dishes, such as Jun-Gwa (Jung-Gwa), Jun-Yak and fried rice-cake. Also, there were dishes using the same recipes even without carrying the name of Jeon, like Buchim or Jijim. This might be worthy of further examination in culinary science.

Quality Characteristics of Topokki dduk With Respect to Added Whole Soybean Curd (Chun-Tofu) by Different Storage Time (전두부를 첨가하여 제조한 떡볶이용 떡의 저장시간에 따른 품질특성)

  • The purpose of this study was to investigate the quality characteristics of Garaedduk with regard to the amount of added whole soybean curd (Chun-Tofu). Whole soybean curd was added in amounts of 0, 3, 6 and 9%. Whole soybean curd Topokki dduk was stored at room temperature for 48 hours. The moisture contents had no significant difference for increases in the amount of whole soybean curd. The L value and b values of Garaedduk increased significantly with increases in the amount of whole soybean curd. Texture characteristics of Garaedduk measured with a texture analyzer revealed that hardness and cohesiveness decreased significantly for different amounts of whole soybean curd, and hardness increased significantly and cohesiveness and chewiness decreased with increase of storage time. As for sensory characteristics, samples with 9% added whole soybean curd rated higher in overall acceptability compared with other samples. In regard to cooking properties, water absorption increased and solid contents decreased with increases in the amount of whole soybean curd. Therefore, Garaedduk containing 9% whole soybean curd was most preferable.
