대구지역 주부들의 쌀 가공식품 이용실태조사 (A survey on the rice-based processed food consumption of the housewives at Daegu)

  • This research investigated the consumption of various rice-based processed foods of 279 housewives in Daegu. 70% of the housewives that responded to the question graduated from a high school or college, was 30∼40 years old and full-time housewives. The main places for purchasing the rice-based processed foods were large size discount store and supermarkets, as other industrial products and the family′s preference was the most critical factors in choosing the products. The fact that the main reason of purchasing the rice breads and cookies, instead of wheat, was "They may be good for health” indicated many housewives have a positive perception of rice-based foods. Among the rice-based processed foods, the using frequency of rice cake (dduk) was the highest, with rice cookies and rice drinks being the next most frequent. However, the frequencies of cooked rice (bob) and rice flour were very low. An analysis of the correlation for the using frequency of 15 rice-based processed foods showed that the use of rice cookies and breads, instead of wheat, was highly correlated to another 13 foods. The critical reasons why they do not consume cooked rice and rice flour were uncertainty of the purity of the rice and the addition of preservatives, and that with rice bread and noodles there was no information available about the products, and hey have a poor taste. The most common reasons of using cooked rice were no time to cook and simple curiosity about the products. However, the consumers were suspicious of containers, which were a potential cause of environmental hormones, and the high price of the products. Packed rice flour was mainly used as an ingredient to give the viscosity to a product. The advantages of using rice flour were that it was available to control the amount of buying and the convenience to buy. However, it was pointed out that the taste of products containing packed rice flour were poorer than that of rice flour ground at a mill.

A Study on the Export Priority Indicators of Rice Processed Food for Export Business

  • As the trade among the countries increases, domestic agriculture is facing a crisis. Especially domestic rice industry is suffering from the rice market opening problem and the domestic rice industry itself. As a counter measure against this, despite the promotion of the rice processing food industry, the export of rice processed food has decreased by an average annual rate of 12.3% since 2011 due to the lack of customized export strategy, such as low price competitiveness, insufficient quality and brand management. As a measure, we selected indicators to prioritize establishment of export strategy of rice processed food business and used AHP methodology to draw the weight for each indicators. The selection of export strategy prioritization indicator was based on the marketing mix theory, various previous research reviews and expert consulting. Five higher level indicators and nineteen detailed indicators were derived, and a weighted value of them was analyzed using a professional package. As a result, the relative importance of higher level indicators was 45.5% for product differentiation, 18.4% for management competence, 13.0% for export infrastructure, 12.0% for product pricing, and 11.1% for product distribution. The relative importance of the lower level indicators was 17.3% for product safety, 15.3% for product quality, 9.1% for management expertise, and 7.0% for product brand. This result is expected to be used as export strategy indicators of rice processed food export business.

소비자의 식단 요구도 분석을 통한 쌀빵의 학교급식 적용 가능성 분석 (Possibility Analysis of a Rice Based Bread by Analyzing Customers' Needs of Menus for School Foodservice)

  • School foodservice customers are likely to be tired of repeated cycle menus and their satisfaction for meals offered in school is inclined to be low. The menu variety is an important factor in increasing customer satisfaction. The purpose of this study was to investigate customer perspectives for applying rice based bread menus in order to add menu variety and promote using rice processed products in school foodservice. The questionnaire was distributed to 760 parent samples in elementary schools and 520 student samples in middle/high schools and a total of 665 and 387 usable data were collected, respectively. Food habits such as preference for cooking method, menu preference, food allergy and nutritional perspectives for menu and customer perception for rice based bread like quality, reliability, price, and purchasing convenience were investigated using 7 Likert scale. Also expected menu types applying rice based bread and offering frequency of rice bread menu were examined. Preference level for bread-based meals were moderate and students' preferences were slightly higher than parents. Menu types applying rice bread expected by middle/high school students were western food (49.4%), spaghetti (28.4%), set menu (13.7%), noodle (17.6%), Korean food (11.1%), Chinese food (10.9%) and porridge (4.5%). The most occupied rate was once in a week for expected offering frequency. Most respondents perceived that rice bread was more nutritive and qualitative than the wheat based one.

쌀가루 첨가 크림수프의 관능적 특성 (Sensory Characteristics of Cream Soup Prepared with Rice Flour)

  • The sensory characteristics of cream soup containing 0, 25, 50, 75 and 100% rice flour were investigated in order to develop a new processed food using rice. The Hunter L(lightness) value increased with the amount of rice flour, while the a(redness) value and b(yellowness) value decreased, significantly. The viscosity of rice cream soup significantly decreased with the increasing amount of rice flour. Based on the sensory evaluation, the cream soup samples with larger rice flour component showed a higher clean taste score, while those with the least rice flour resulted in higher darkness, viscosity, greasy taste, md softness. The overall acceptance was the highest in the cream soup with 75% and 100% rice flour. In terms of the color and viscosity, good correlations were observed between the sensory evaluation and the objective analysis. The overall acceptance showed a significant positive correlation with a clean taste, while there was a negative correlation with a greasy taste and the viscosity measured by a viscometer.

  • Background: The Korean government launched a project in 2008, where the amount of rice used as raw ingredient in rice-based foods in 2012 was planned to increase up to 10% (470,000 ton) of the total rice production through developing various new rice-based processed foods and their commercial manufacturing technology. Among the four major rice-based processed foods, rice cakes and noodles need rice flour as their main raw ingredient. Technology in rice flour utilization and manufacturing is far behind than the technology pertinent to wheat flour in many subject areas. Purpose: This review aims to provide information on rice flour utilization and manufacturing with some fundamental subjects in the area of size reduction. Results: A variety of food items including bread, noodle, cake, cookie, muffin, pre-mix, beverage, vinegar, surimi, and artificial meat have found rice flour as their raw ingredient. Rice bread made out of 100% rice flour has been developed and is now sold in retail stores. Various noodle products made from rice flour are also on the market. Issues on product definition and labeling regulation about rice flour content of the products were explored. Generalized grinding equations available in the literature were seldom used in practice; instead, it has been a general practice to develop empirical equations from test milling data. Introductory remarks on three popular particle size measurement methods (sieving, Coulter counter, light diffraction) were explained. Mathematical expressions frequently used to describe particle size distribution and to correlate cumulative quantity of particles with particle size were represented. Milling methods used in producing rice flour were described along with their advantages and disadvantages. Because of their profound effect on functional properties of the rice flour, four rice flour milling equipments used at both laboratory experiments and commercial manufacturing plants were discussed.

CODEX의 쌀과 보리에 대한 농약 가공계수 고찰 (A review on pesticide processing factors during processing of rice and barley based on CODEX)

  • 본 연구에서는 2006년부터 2016년까지 JMPR보고서 중 쌀과 보리의 농약 가공계수 자료를 고찰하였다. 쌀은 정조를 현미, 백미, 왕겨, 쌀겨 및 쌀밥으로 가공할 때 17종 농약의 가공계수를 비교하였다. 17종 중 acephate, methamidophos, glufosinate, quinclorac과 sulfoxaflor 5종 농약을 제외한 12종은 정조를 현미로 가공할 때 대부분의 농약이 감소하였고, 현미에서 백미로 가공할 때 농약이 일부 감소하는 경향을 보였으며, 도정과정 중 발생된 왕겨와 쌀겨는 농약이 농축되었다. Acephate 등 5종 농약은 침투성 농약으로 농약이 식품 내부로 침투되어 도정공정 중에 많은 양이 제거되지 않는 것으로 나타났다. 백미에 잔류된 농약은 물과 함께 가열하여 쌀밥으로 가공한 후 대부분 제거되어 농약 성분이 미량 잔류되었다. 보리는 통보리, 정맥, 분말, short, 맥아, 맥주, 겉껍질 및 겨로 가공 중 23종 농약의 가공계수를 비교하였다. 침투성 농약인 ethephon, pyraclostrobin, penthiopyrad, sulfoxaflor 4종을 제외한 농약은 통보리를 탈피하여 정맥으로 만드는 과정에서 대부분의 농약 성분이 감소하였다. 정맥을 침지시켜 만든 맥아의 경우 농약성분이 농축되었으나, 맥주로 가공할 경우에는 대부분 분해되어 미량의 농약만 잔류하는 경향을 보였다.

유색미 미강층 추출물을 첨가하여 제조한 도병의 제병 적성 검정 (Processibility aptitude of Dobyeong with pigmented rice bran extract)

  • 본 연구에서는 유색미를 미강과 배유 부분으로 분리 활용함으로써 쌀 가공제품의 다양화에 대한 연구의 일환으로, 유색미 미강층 에탄올 추출물 일정량 첨가시켜 제조한 도병의 가공적성을 검토하였다. 일반미에 유색미 미강층 에탄올 추출물 0.5% 첨가하여 제조한도병과 유색미로만 만든 도병을 비교분석하였다. 연구결과 유색미 도병이 유색미 미강추출물을 첨가한 도병에 비해 부피가 줄어들어 있고 조직도 거침을 알 수 있다. 유색미 도병에 비해 유색미 에탄올 추출물을 첨가한 도병에서 점도가 더 낮게 나타나 유색미 단독으로 도병을 제조하는 것보다 일반미에 미강 추출분획을 첨가하여 도법을 제조하는 것이 노화억제 효과가 더 큼을 알 수 있다. 탄력성, 부착성, 응집성, 껌성 및 씹힘성은 유색미 도병에 비해 유색미 분획추출을 첨가한 도병에서 유의하게 증가하였고, 유색미 도병과 유색미 추출분획을 첨가한 찹쌀도병 간에 경도 차이는 없었다. 유색미 도병에 비해 유색미 에탄올 추출물을 첨가한 찹쌀도병은 유색미의 강한 향은 반감시키고, 노화가 덜 일어났으며 색감과 전반적인 기호도에서 높은 점수를 나타내었다. 따라서 유색미 미강추출물을 첨가하여 도병을 제조 할 경우 식품에서 중요한 기능인 기호성도 고려하면서 유색미의 생리활성물질까지 이용할 수 있으므로 건강 기능성 쌀 가공식품 제조용 신소재로서의 적극적인 활용이 가능할 것으로 사료된다.

마카 분말을 첨가한 쌀쿠키의 항산화 활성과 품질 특성 (Antioxidant Activity and Quality Characteristics of Rice cookies Prepared with Maca (Lepidium Meyenii) Powder)

  • This study was conducted to find out the bakery processing suitability of maca and to develop rice-based processed foods. We investigated the antioxidant activity and physicochemical properties of rice cookies prepared with the addition of maca (Lepidium meyenii) powder (1%, 2%, 3%, and 4% of the total materials). We observed an increase in the total polyphenol and flavonoid content, and DPPH-ABTS+ radical scavenging activity of the rice cookies as the proportion of added maca powder increased (p<0.05). The quality characteristics such as the "a" value, "b" value, and the hardness of the cookies increased with an increase in the proportion of maca powder (p<0.05) in the cookie, whereas the moisture content, pH of the dough, spread ratio, loss rate, leavening rate, and "L" values showed a significant decrease (p<0.05). In the sensory evaluation results, consumer acceptability showed a significantly higher value in the 2% maca cookie group (p<0.05), and the characteristic intensity rating (color, flavor, bitterness) increased as the proportion of maca added to the cookie increased (p<0.05). Therefore, this suggests that adding 2% maca powder as the functional ingredient in rice cookies can result in rice bakery products with excellent qualities.

쌀눈 분말을 첨가한 양갱의 품질 특성 (Quality Characterization of Yanggaeng with Rice Germ Powder)

  • This study examined the quality characteristics of yanggaeng with rice germ; it was incorporated into yanggaeng at different levels (containing 5% rice germ, 10% rice germ, 15% rice germ, and 20% rice germ) based on the total weight of red bean extracts. For analyzing the quality characteristics of yanggaeng, moisture content, hardness, color, antioxidant activity, total polyphenol content, reducing sugar, and vitamin E were determined. There was no significant difference in the moisture content and hardness except in the control. For color, lightness and yellowness of yanggaeng increased as the concentration of the powder was increased, whereas there was no significant difference in redness. As the rice germ powder was increased, total polyphenol content and antioxidant activity increased significantly, whereas reducing sugar decreased. Especially, total vitamin E, including isomers, increased as the concentration of the powder increased from 0.41 mg/100 g to 4.03 mg/100 g. Therefore, it could be possible to develop processed products with functional snack for yanggaeng prepared by adding 10% rice germ.

식품 데이터 정규화를 위한 쌀 음식의 건물중 기반 영양 편차 고찰 (A Study on Dry Weight-Based Nutritional Deviations in Rice Foods for Normalization of Food Data)

  • 동일한 재료를 사용하고, 식품명이나 음식명이 같음에도 불구하고 동일한 중량에서 식품의 영양성분이 편차를 나타내는 경우가 많이 있다. 그 원인은 조리 방법과 조리 공정에 따른 음식의 수분함량과 깊은 관계가 있다. 개인의 건강 맞춤형 식단을 설계하고, 정확한 열량과 양분을 공급하기 위해서는 조리 공정이나 조리 방법에 영향을 받지 않는 음식 데이터의 표시 방법이 필요하다. 이 연구에서는 동일한 식자재나 식품이 함수율의 차이로 인해 다른 식자재나 식품으로 분류됨으로 데이터베이스의 복잡성과 활용측면의 어려움이 증가하는 문제를 개선하기 위해 건물중(乾物重) 기반의 식품 데이터 표시를 제안하고자 하며, 이를 위해 식품재료로서 쌀의 특징과 쌀을 재료로 한 다양한 쌀 가공 식품의 물성에 대하여 수분의 변화에 따른 주요 영양성분의 변화를 고찰하고, 이를 통해 식품 데이터를 정규화 하기 위한 예시로서 쌀의 건물중 기반 영양 표시를 제안하고자 하였다. 동일한 재료로 가공된 32종의 쌀 가공 식품 데이터는 수분 분포에 있어 1.1~95%, 에너지량은 20~415kcal, 단백질은 0.3~9.1g, 지질은 0.1~3.9g, 탄수화물은 4.4~91.0g의 범위로 매우 넓은 영역에 분포하고 있다. 그러나 수분영향을 제거하고 고형물로 환산한 쌀가공 식품의 100g 당 영양성분은 에너지량의 최대값과 최소값의 범위는 376.9~421.1kcal, 단백질의 최대값과 최소값의 범위는 4.3~12.6g, 지질의 최대값과 최소값의 범위는 0.1~4.1g, 탄수화물의 최대값과 최소값의 범위는 80.5~95.1g 로 나타났다. 수분 중량을 포함한 음식의 영양성분 데이터에 비해 최대값과 최소값, 데이터의 표준편차가 90%이상 감소하고, 정규화되는 경향을 나타내었다.
