Changes in Growing Period and Productivity under Double Cropping of Spring Potato and Summer Cereals in Paddy Fields of Southern Korea (남부지역 논에서 봄감자와 하작물 이모작에 따른 생육기간 및 생산성 변화)

  • Changes in growing periods and productivities of crops under double cropping of potato-rice, potato-soybean and potato-maize, were investigated at the Paddy Experimental Fields in Miryang City from 2015 to 2018. Spring potatoes planted in early March showed a yield of 2.1-2.3 ton/10a and a period of 90 days. In double cropping, growing period of rice, soybean, and maize was about 130, 125 and 115 days, respectively. The potato yield obtained was as much as 616, 330 and 815 kg/10a under double cropping with rice, soybean and maize, respectively. It is beneficial to sow the spring potatoes as early as possible to increase the yield and to secure the growing period of sequential crops. The introduction of summer medium-late variety grain crops into double cropping of spring potato and rice as well as into double cropping of spring potato and soybean/maize, was possible because of no sowing in the fall and plants were able to reach the heading growth stage before the safe heading limit of rice in particular. In the case of maize, the growth period was different according to the change in temperature over the year. The introduction of upland crops such as soybeans and maize instead of rice improved soil physicochemical properties in a short period of time, contributing to the increase of spring potato yields, but there was also a risk of damage by successive cropping for more than three years. Spring potato-maize showed higher yield in terms of starch production, and spring potato-soybean was found to be advantageous for net income.

Food Quality of Muffin with Germinated Brown Rice Soaked in Mycelial Culture Broth of Phellinus linteus (상황버섯균사체 배양액 침지 발아현미를 첨가한 머핀의 식품학적 특성)

  • The purpose of this study was to examine the qualities of optimized muffins with germinated brown rice soaked in mycelial culture broth of Phellinuslinteus (GBRP) using response surface methodology. Firstly, general compositions of optimized muffins with GBRP were higher than that of control and total sugar contents were similar. However, the total free amino acid and constitutional amino acid contents except for GABA were lower than those of control. Starch hydrolysis in control was higher than in optimized muffins with GBRP, whereas protein digestibility and protein efficiency ratio were not. The weights of optimized muffins with GBRP were higher than that of control (p<0.01), whereas height (p<0.01) and pH (p<0.001) were similar. The hardness (p<0.05) and chewiness (p<0.05) of optimized muffins with GBRP were higher compared to control; adhesiveness, springiness, and gumminess were similar, but cohesiveness (p<0.01) was not. The flavor (p<0.05) and taste (p<0.01) of optimized muffins with GBRP were higher than those of control; appearance, texture and overall acceptability were similar, but color (p<0.05) was not. The total polyphenol contents (p<0.01), DPPH radical scavenging activity (p<0.01), and superoxide dismutase-like activity (p<0.05) of optimized muffins with GBRP were higher than those of control, but nitrite scavenging activity was similar.

  • The effects of cultural conditions on the mycelial growth and fruit-body formation and the yield of Pleurotus sajor-caju grown in rice straw medium were examined. The change of content of chemical components of mushroom and the medium during the cultivation period was also examined. The growth of mycelium was best in the medium sterilized for 60 min at $1.2kg/cm^2$ with a moisture content of 60%. The optimum pH and temperature for mycelial growth were 6.0 and $25^{\circ}C$, respectively, whereas the optimum pH and temperature for fruit-body formation ranged from 5.0 to 6.0 and from 20 to $30^{\circ}C$, respectively. Rice bran and starch cake were better than the other additives used for both mycelial growth and fruit-body formation. The optimum concentration of rice bran in the medium was 10%. The total yield of mushroom was $20.2kg/m^2$, 66% of which was prouduced from the first and second cropping period. As the harvest proceeded, the crude fiber cotent increased in the mushroom, whereas it decreased in the medium. The content of free sugar and crude ash, on the other hand, decreased in the mushroom, whereas it increased in the medium. The content of the other chemical components examined decreased in both the mush­room and the medium.

Quality properties of samkwang and palbangmi treated with atmospheric-pressure plasma by storage (대기압 플라즈마에 의한 삼광 및 팔방미의 저장에 따른 품질 특성)

  • Atmospheric-pressure plasma (APP) was applied to determine quality characteristics of brown rice (BR) and white rice (WR) of Samkwang and Palbangmi. APP (250 W, 15 kHz, ambient air) was generated and dielectric barrier discharge was applied for 0, 10, and 20 min for 2 weeks at 4 and $25^{\circ}C$. The growth of total aerobic bacteria and mold increased depending on the storage. Water content of BR and WR decreased by storage temperature and periods. No viable counts were detected for molds by APP-treated 20 min at $4^{\circ}C$. Changes in protein and damaged starch contents in plasma were not observed. Amylose contents were not changed, but WR (Palbangmi) showed a tendency to increase. The results show that APP improved the microbial quality of BR and WR of Samkwang and Palbangmi, although further studies should be conducted to determine change in quality by APP.

Studies on Degrees of Kojic Mycelial Penetration and Some Characteristics of Kojic Enzymes in Moromi (청주국(淸酒麴)의 균사침투 상태(狀態)와 국효소(麴酵素)의 주류중(酒謬中) 동태(動態)에 관(關)한 연구(硏究))

  • In order to make the koji in which kojic mycelium penetrate deeply, some koji making conditions were investigated, thereafter kojies were maked on a large scale, and kojic enzymes in moromi were in vestigated. After 30% of brown rice was polished out, moisture, crude protein, and crude fat was decreased by 9%, 26% and 26% respectively, and starch value was increased by 9%. The optimum conditions for the koji in which kojic mycelium penetrate deeply were found as below. Koji making time was 40 hrs., moisture of ${\alpha}-rice$ was 40%, relative humidity during the first half of koji making time was 98%, and also the relative humidity during the second half of koji making thme was 80% and inoculum size was $1.0{\times}10^4$ spores/g ${\alpha}-rice$. 23-27% of ${\alpha}-amylase$ was inactivated and 35-70% of that was adhered during the moromi fermentation. 14% of glucoamylase was inactivated and 74-92% of that was adhered during the moromi fermentation. 13-14% of acid protease(pH 3.0) was inactivated and 70-73% of that was adhered during the moromi fermentation. Remarkable enzymatic differencies in moromi were not found between the kojies in which kojic mycelium penetrate deeply and not.

Preparation of Garaedduk with Buckwheat Flour Using Retrogradation-retardation Technology (굳음방지기술을 적용한 메밀 대체량별 가래떡의 품질특성)

  • Garaedduk made with various levels of buckwheat flour (0, 15, 30, and 45%) for rice flour was prepared using retrogradation-retardation technology and their physical and sensory properties were investigated. The moisture content of garaedduk decreased and the color differences increased as the ratio of buckwheat flour to rice flour increased. During storage at $4^{\circ}C$, the hardness values of garaedduk made with 15 and 30% buckwheat flour were maintained for up to three days. Immediately after manufacture, garaedduk made with higher levels of buckwheat flour had reduced overall acceptability. However, there was no significant difference in the overall acceptability of garaedduk made with 0 and 15% of buckwheat flour after storage. Therefore, buckwheat flour can replace rice flour with retrogradation-retardation technology to inhibit the starch retrogradation of garaedduk, which maintained its overall quality at a buckwheat flour level of 15%.

Environmental Assessment and Characteristic of Refuse Derived Fuel by Mixed Biomass with Binder (바이오매스에 바인더 첨가에 따른 폐기물 고형연료 특성 및 환경성평가)

  • The total area of forest land in Korea is 64.2%, and significant forest resources can continuously be produced. However our country didn't separate the recyclable waste wood and was illegal landfill or incinerated. In this study, waste-wood and rice husk of biomass and low-grade-anthracite made refuse derived fuel by mixing and compressing. In addition, the binding effect of binders and additives were analyzed. Physical and chemical characteristics of manufactured refuse derived fuel were analyzed and evaluated suitability by compared with quality standards. A result of change with compressed and relaxed density, added 20% anthracite and 10% rice husk is optimal density change and average density increased large range when 20 wt.% P.V.A., guargum, molasses and 10 wt.% starch were added. All fuel samples be distributed over 3,500 kcal/kg LHV and grade of No. 3~4 fuels appeared. A result of the characteristics of physical and chemical compressed biomass refuse derived fuel with addictive, 12.9% of durability improvement appeared when is mixing asphalt and 5.8% of durability improvement appeared when is mixing rice bran by pretreatment of NaOH 5%.

Effect of Protease and Disulfide Bond Reducing Agent Treatment on the Physicochemical and Gelatinization Properties of Rice (단백질 가수분해 효소 및 이황화 결합 환원제 처리가 쌀의 이화학적 성질과 호화 특성에 미치는 영향)

  • Effect of the modification of rice protein by protease and 2-mercaptoethanol on physicochemical and gelatinization properties was investigated for the three cultuvars of rice. Total amylose contents of Chucheongbyeo(japonica type), Chosengtongilbyeo(tongil type, indica x japonica) and IR 36 (indica type) were in the range of $20{\sim}25%$. Total amylose and insoluble amylose content of IR 36 were higher than the others. The differential scanning calorimetric and X-ray diffraction results revealed higher relative crystallinity of IR 36 than the others. Water uptake was increased and amylographic viscosity was significantly decreased by 2-mercaptoethanol treatment. Amylographic viscosity was significantly decreased and hot water-soluble carbohydrate content was increased by protease treatment. The proportions of high molecular weight of soluble carbohydrate fractionated by gel filtration chromatography were increased by protease treatment. These effects were most significant in IR 36. This results suggested that starch gelatinization be accelerated by alteration of the protein with protease and reducing agent.

Effect of Added Sweet Potato Flour on the Quality Characteristics of the Korean Traditional Steamed Rice Cake, Backsulki (고구마가루 첨가가 백설기의 품질특성에 미치는 영향)

  • In order to enhance overall quality of the Backsulki, a sweet potato flour (SPF) which is rich in sugar and dietary fiber was added into the rice flour at 0, 5, 15, and 25% (w/w, db) ratios. Quality changes of the products were evaluated by storing at 5, 15, and 25$^{\circ}C$ for 4 days. Water binding capacity, swelling power, and solubility of the products increased as the SPF increased. Hunter colorimetric a- and b-value increased while L value of the products decreased as the SPF increased. Retarded retrogradation of the flour mixtures containing the SPF was shown from the DSC thermogram as indicated by the decreased $\Delta$H values. Increases in $T_{i}$ and $T_{p}$ values in relation with the starch gelatinization were shown from the DSC thermogram with a temperature margin of 15-20$^{\circ}C$ as the SPF increased. Increases in softness along with decreases in springiness and chewiness of the products were shown as the SPF increased. It was not so much the storage temperature as the added SPF affected the final texture of the products. Retarded growth of the total microbes of the products was noted by the added SPF during storage at 25$^{\circ}C$ for 3 days. Regarding the above and additional sensory preference scores of the products, a 15%(w/w) level of the SPF was suggested as optimum for the best Backsulki with improved qualities.

Antioxidant, Anti-thrombosis, and Lipid Accumulation Inhibition Activities of Different Dried Vinegars (3종 분말식초의 항산화, 항혈전 및 항비만 활성)

  • Vinegar is a fermented food product created by fermenting various sugar- and starch-containing ingredients with microorganisms. It contains a variety of organic acids, sugars, amino acids, esters, and other compounds that contribute to its unique sensory properties. Vinegar is known for its potential benefits, including aiding digestion, lowering blood sugar levels, anti-obesity effects, and antioxidant properties. It is also believed to contribute to improving alkaline body conditions. This study was conducted to develop functional dried vinegar powder from naturally fermented vinegars. Unripe apple, brown rice, and black chokeberry (aronia) were fermented using Gluconacetobacter xylinus for 90-180 days. The filtrate vinegar was spray dried with 37.46% maltodextrin, 5% glucose, 1% citric acid, and 0.04% vitamin C. Analysis of the acidity, color difference, water and soluble solid content, and heat stability of dried vinegar (DV) confirmed that spray drying is a suitable method for powder production. Moreover, the DVs exhibited excellent sensory attributes and solubility. Among the DVs, aronia-DV showed the highest 1,1-diphenyl-2-picryl hydrazyl and 2,2-azobis (3- ethylbenzothiazoline-6-sulfonate) radical scavenging activity (36.7% and 75.3%) and reducing power (0.334) at 0.5 mg/ml concentration, respectively. The nitrite scavenging activity was highest in brown unripe apple-DV, followed by aronia-DV and brown rice-DV. In the anti-thrombosis activity assay, aronia-DV showed the highest prothrombin inhibition. The brown rice-DV exhibited lipid accumulation inhibitory activity in 3T3-L1 adipocytes without cell cytotoxicity. Our results suggest the potential for commercialization of dried vinegar, highlighting its diverse benefits and applications.
