A Study on the Preference and Satisfaction on the Menu of School Lunch Service of High School Students in Gyeongju Area (학교급식 메뉴에 대한 고등학생들의 기호도와 만족도에 관한 연구 -경주지역을 중심으로-)

  • This study was performed by questionnaire to investigate the preference and satisfaction on the menu of school foodservice of high school students. This study aims at providing useful information to establish subdivided menu developing direction. The subjects were consisted of 637 high school students(435 males and 202 females, 5 direct type schools and 5 trust type schools) in Gyeongju area. The results of this study were: The preferred school foodservice menu of subjects was 'seasoned roast chicken', 'steamed pork rib', 'beef rib soup', 'yogurt', 'sandwiches', 'boiled rice with assorted mixtures', 'boiled rice', 'watermelon', 'spaghetti' in that other. On the other hand, the preference for 'spinach soybean soup', 'steamed Mideodeok', 'boiled lotus root', 'roasted sweetpotato stalk', 'chopped and seasoned cucumber' was very low. Males favoured rice and meats, while females liked better noodles and vegetables. Direct type foodservice students' preference scores were higher than those of type foodservice students in side dish menu categories. The preferred and satisfied menu of subjects was meats and sweet foods, and but the preference and satisfaction for vegetables and tough foods was very low.

A Study on Elementary Schoolchildren's Knowledge, One's Value and Consumption Pattern for Rice Foods in Changwon and Gimhae City (창원.김해 지역 초등학생의 쌀음식에 대한 지식, 가치관 및 섭취실태 조사)

  • The informations concerning knowledge, value and consumption pattern for rice foods of elementary schoolchildren (630 boys and 550 girls in 5th or 6th grade) were investigated in Changwon and Gimhae of Gyeongnam province. They were asked based on knowledge, one’s value and intake frequence of rice foods by questionnaries. Menus for 3 days including 2 weekdays and 1 weekend day were taken from 136 students (77 boys and 59 girls) in two Elementary Schools in Changwon and Gimhae to know intake reality of rice product. The purpose of this survey was to find the way of encouraging rice intake and preference which now seemed to be low because of simplified, westernized eating habits, and to provide basic information needed for inheriting and improving our traditional cooked rice centered eating culture. The results are summarized as follows. The knowledge of rice was positively correlated to the one’s value (r=0.365, p<0.001) and the preference (r=0.132, p<0.001), the one’s value was positively correlated to preference (r=0.409, p<0.001). The score of knowledge for rice was 12.8 points out of 20, the girls get points(13.12) significantly higher than the boys (12.53) (p<0.01). One's value about rice foods was 37.35 points out of 50 what is relatively high. They have eaten cooked rice type food for 2.24 times per day. Both boys and girls in Changwon and Gimhae area were having cooked rice type food significantly more during weekdays compared to weekends (p<0.001) by 3 days food record. According the results, we can see the possibility that schoolchildren can be encouraged to eat more rice foods by nutritional education to go with the development of various programs.

Quality Characteristics of Ssukgaen Dduk Made with High-Dietary Fiber Rice 'Goami 2' Focused on Yam (마 첨가가 고아미 2호로 만든 쑥갠떡의 품질 특성에 미치는 영향)

  • This study describes the production of functional Ssukgaen Dduk though the addition of yam and mugwort to Goami 2, a healthy diet and diabetes. In this study, the rice is soaked for many hours and the particle size distribution of the rice was determined as a function of the water-soaking time. The produce Ssukgaen Dduk was repeated after the addition of varying concentration of yam. Non-glutinous rice was soaked for 4, 8, 12 hours and the Goami 2 rice was soaked for 4, 8, 12, 16, 20 hours and ground to a powder and passed through a 18~30 mesh sieve to determine the particle size distribution of the rice as a function of water-soaking time. Using this approach, optimal soaking time for Dduk was found to be 4 hours for non-glutinous rice(pass rate of 30 mesh: 58.29%) and 12 hours for Goami 2(pass rate of 30 mesh: 87.88%). When Ssukgaen Dduk made with Goami 2 rice powder only and those made with varying amounts of yam(10%, 20%, 30%, and 40%) were subjected to the sensory test, the control group(non-glutinous rice Ssukgaen Dduk) had the highest preference in general(3.73). Out of Ssukgaen Dduk containing yam, the S4 group, which contained 30% yam, had the highest preference(2.87) In addition the S4 group also had the highest extent of soft, and delicacy of texture general preference of S5, 40% the lowest(2.37), S1 only Goami 2 the hardness(112.59), as 91.46 lower (83.85) yam increased, the less hard the texture Ssukgaen Dduk. In conclusion Ssukgaen Dduk though the addition of mugwort and yam to the Goami 2 rice, it would be better to add 30% yam to 70% Goami 2 rice powder mixed with mugwort.

The Nature of the Variety Tongil (Suweon 213-1) in Resistance to the Striped Rice Border, Chilo suppressalis W. (이화명충에 대한 수도통일품종의 저항성)

  • This study was conducted to evaluated the nature of the variety Tongil(Suweon 213-1) in resistance to the striped rice borer, Chilo suppressalis Walker, comparing with those of Rexoro(susceptible check) and TKM-6(resistant check) selected at IRRI. 1. The striped rice borer moths much more preferred the variety Tongil for oviposition than the varieties Rexoro and TKM-6. The variety Tongil and more egg masses and number of eggs than the varieties Rexoro and TKM-6, while TKM-6 having more egg masses and more number of eggs than Rexoro. This reaction was consistent throughout the test regardless of the number of tillers per hill. 2. In laboratory, preference of larvae for feeding was studied with 5cm of stem pieces of the varieties. The results showed, in contrast to the case of ovipositional preference, that the striped rice borer larvae least preferred the stems of Tongil among the test varieties, while larvae much more preferred the stems of Rexoro than those of TKM-6. 3. The larval weights at 20 days later infested on the 40 day-old plants were the lowest on Tongil among the test varieties. On the variety Rexoro the larvae had heavier body weights(43.0mg), higher pupation(64.9%) and higher adult emergence(83.3%) than those on Tongil(larval weights 30.3mg, pupation 60%, adult emergence 60.7%) and TKM-6(larval weights 35.7mg, pupation 56.3%, adult emergence 51.9%). The pupal weights, however, were not consistent among the test varieties and/or sexes in comparison with the larval weights, pupation and adult emergence above mentioned. 4. Field experiments indicated that the incidence of dead hearts at 70 days after transplanting was relatively higher on the variety Tongil(11.1%) than those on Rexoro(8.9%) and TKM-6(8.4%), and the incidence of white heads at harvest was, in contrast to the dead hearts, lower on Tongil(9.8%) than those on Rexoro(27.4%) and TKM-6(13.9%). At harvest lower larval survival observed on Tongil (49 larvae/40 hills) than those on the susceptible variety Rexoro(104 larvae/40 hills) and on the resistant variety TKM-6(70 larvae/40 hills). The average larval weights collected from three test varieties at harvest were 80.5mg from Tongil, 83.7mg from TKM-6 and 99.6mg from Rexoro. 5. Increased nitrogen fertilizer application to the variety Tongil, the striped rice borer damage was increased. Also, preference of larvae for feeding significantly increased with the increase of nitrogen fertilizer application. 6. Any specific association between the plant characters and striped rice borer resistance could not be found. The variety Tongil even having large number of tillers, short plant height, large stem, broad leaf, etc, had still high preference of moths for oviposition, low preference of larvae for feeding, low damage, and relatively high antibiosis. 7. Resistance of the variety Tongil to the striped rice borers seemed to be associated with the low feeding preference and the relatively high antibiosis, not associated directly with the ovipositional preference.

Flavor Match and Hedonic Changes of Commercial Rice Wines with Food Pairings (동반음식 섭취에 따른 시판약주의 조화정도 및 기호도 변화 분석)

  • Four Korean commercial rice wines of diverse sensory properties were hedonically rated by 41 consumers. Each rice wine was paired with the selection from six widely popular compatible foods such as kimchi-jjigae, dotori-muk muchim, tteok-galbi, beoseot-jeongol, satae pyeonyuk, and haemul pajeon, and consumers were asked to rate the ideal match of each pair of four rice wines and six compatible foods by using a structured, 12-cm 'just right' line scale. Hedonic ratings of wines were additionally measured after intake of the food-wine pairs. Flavor matches of rice wines with strong ginseng, medicinal, and earthy flavor (JK) or with intense grain and sweet flavor (HS) were significantly higher compared to wines with fruity (SS) or mild-balanced (BS) flavor. The preference for HS wine, which ideally matched satae pyeonyuk, increased most significantly after intake of satae pyeonyuk, while the SS wine that matched ideally with kimchi jjigae did not show any significant increase in preference after intake of kimchi jjigae. Matching wines with food does not negatively affect the preference for the wine; rather, intake of a wine-food pairing increases the overall preference for rice wine.

Optimization of the Preparation of Rice Snack by Response Surface Methodology (반응표면분석법을 이용한 쌀과자의 제조 최적화)

  • This study aimed at the optimization and development of rice snack by response surface methodology (RSM). The effect of rice soaking time and additional ratio of soybean milk on physicochemical properties and sensory evaluation of dried rice flour for non-fried snack was studied. After soaking for 0 to 12 days, Baekjinju rice was milled and then air-dried. A quadratic model was selected for weight, volume, hardness, taste and appearance. Two-factor interaction model was selected for expansibility, color and overall preference. A linear model was selected for yellowness and flavor. Weight, hardness and appearance were increased and decreased thereafter as rice soaking time increased, but the volume was reversed. Expansibility, color, taste and flavor were decreased as rice soaking time increased, but yellowness was reversed. Weight and overall preference decreased as additional ratio of soybean milk increased, but volume, expansibility and yellowness were reversed. Hardness, taste and appearance were increased after initial decrease as additional ratio of soybean milk increased, color and flavor were not changed by additional ratio of soybean milk. The optimum conditions of each factor were set to where the rice soaking time and additional ratio of soybean milk were at their minimum. Weight, volume, expansibility, yellowness, hardness, color, taste, flavor, appearance and overall preference were established at maximum level where the objective of the optimum was in level. Our data indicated the statistically predicted values of the highest desirability was 1.24 day of rice soaking time and 15.80% of additional ratio of soybean milk.

The Breakfast Type and Rice Preference in students and workers living in Kyeonggi Province, Korea (경기지역 직장인과 학생의 아침식사형태와 쌀 음식의 섭취와 선호)

  • Breakfast consumption is important for nutritional balance in all population groups. The objective of this study is to seek healthy Korean with continuous traditional breakfast consumption of rice. One thousand participants who go to work or school every morning were selected by stratified method and interviewed by regional home extension workers in 24 cities, Kyeonggi province, Korea. The questions included breakfast eating habits, perceived health status,and food preferences for breakfast. The students (70.5%) were composed with elementary (17.2%), middle school(15.7%), high school(16.5%), and university(21.l%)students. The rest 29.5% were workers. The recognized importance of eating breakfast was negatively correlated with the perceived health status. It means that lowering health status made them recognize the importance of breakfast. Workers had more boiled rice with side dishes for breakfast(58.6%) than students (40.2%). The reasons of selected items for breakfast were habit (28.5%), and health (14.6%). The propensity of convenience and preference was more frequent in male workers than male students. For breakfast, ready-to-eat food (rice-roll or rice ball, retort rice, and fast-food) preferred more in middle & high school students, but boiled rice with side dishes was preferred more in workers. Boiled rice with divers cereals was selected for main dish in workers, however boiled rice only in students if obliged. We suppose the problem in next decade would be skipped breakfast in regular attendance position. For breakfast with ready-to-eat rice or something to eat in short time, students and workers should be educated to those who are too busy to eat breakfast for the enhancement of human resources.

The Development of Institutional Food-Service Menu with Temple Food (사찰음식을 활용한 단체 급식 식단 개발)

  • Objectives: This study developed two weeks menu using temple foods, assessed preference for the menu among ordinary people, and determined the possibility of using temple foods to make out institutional food service menu. Methods: To make out the menu, 153 typical types of temple food were selected, under several conditions, thus including balanced food groups, natural foods in season, preparation time, preparation methods, and foods appropriated for institutional foodservice. Results: Developed menu contained 1905.8 kcal, had low fat content, high dietary fiber, vitamin, and mineral content, and good protein content in the nutritional respect, and fit protein requirements with low calorie content and high nutritional value. In the assessment of the food preference for 73 temple food items, most of the foods scored high (4 out of 5 points) for preference in general; therefore, the menu tended to be satisfied to the adults' preference. In particular, boiled rice (rice with chwi, rice with cirsium, rice with mushroom, rice with mushroom & vegetable and gimbap with tofu) and fried foods (fried shiitake with sweet & sour sauce and fried kelp) were highly preferred. Conclusions: The menu using temple foods can be a healthy choice for adults if it is well planned and managed. This study may be expected to provide basic data that would help developing menu to popularize temple foods. The above results could be applied at home as well as at foodservice institutes and furthermore could offer information for developing temple food products.

A Study on the Preference of Hobakjook upon Material & Mixing ratio Change (호박죽의 재료와 배합비 변화에 따른 기호도 연구)

  • Determining the optimal mixing ratio of pumpkin, water, glutinous rice powder, red bean, kidney bean in preparing Hobakjook has been attempted and on the basis of it, Hobakjook with glutinous rice powder was set to be A group, and the one that glutinous rice powder was replaced by brown glutinous rice powder for the purpose of enhancing preference and nutrition was set to be B group. A group and B group with additional 0%, 5%, 10%, 15% perilla powder of pumpkin weight was labeled as Al-A4 and Bl-B4 respectively, and then analyzed nutritionally. Optimal material mixing ratio and preference was investigated by use of sensory evluation and instrumental test. As a result, the optimal material mixing ratio was determined as pumpkin 400 g, water 60 cc, glutinous rice powder 40 g, red bean 30 g, kidney bean 30 g, salt 4 g, sugar 10 g. In sensory evaluation significant difference (P < 0.05) was shown among the samples in color., flavor.1, falvor. II and overall quality. And A3 in viscosity, A2 in color, A4 in sweetness, B2 in flavor 1, Al and B2 in flavor 11, and B2 in overall quality was preferred most. Instrumental measurement shows that B4 in viscosity and A4 in sweentness was highestly recorded and showed significant difference (p<0.05). As the addition of perilla powder increased, the viscosity and sweetness was increased. In color measurement A4 in L value, A3 in a value, and Bl in b value was highestly recorded. And as perilla powder was added, L value and a value was increased while b value was decreased. Color in sensory evaluation was significantly correlated to b value in instrumental measurement. In summary, Hobakjook with brown glutinous rice was superior to the one with glutinous rice in preference and proximate composition, and as the addition of perilla powder was increased, proximate composition was increased but preference was rather decreased, and Hobakiook with 5% addition of perilla powder to brown glutinous rice powder was preferred most.

  • This paper was to use choice experiments in the analysis of consumer choice behavior and preferences for five different attributes(the origin of rice, a quality certificate, a quality control, a traceability system, the price of rice) in Cheongju City. Completed surveys yielded 712 responses which were analyzed using the conditional logit model to analyze the marginal willingness to pay of the four attributes(the origin of rice, a quality certificate, a quality control and a traceability system) per household and estimated the marginal willingness to pay of the set of feasible options. The result of this study can be used as a guide for the rice industry in the design of possible labeling schemes.
