밥의 1회 섭취량을 줄인 다이어트 밥그릇이 음식섭취량과 포만도에 미치는 영향 (The Effect of the Reduced Portion Size by Using a Diet Rice Bowl on Food Consumption and Satiety Rate)

  • Using the diet rice bowl, this study examined whether visual cues related to portion size can influence intake volume without altering satiation. 24 subjects ate lunch and subsequent dinner meal in the lab once a week for 2 weeks. Each week at noon, they were served one of two different sizes of a rice (150 g of rice by the diet rice bowl and 210 g of rice by the general rice bowl) but recognized the same volume of which they could eat as much as they wanted of side dishes. Subjects returned to the lab five hours later for a standard dinner, which was consumed ad libitum. Results showed that the subjects who were eating from the diet rice bowl ate less rice (222.4 Kcal vs 306.5 Kcal, p < 0.001) and total energy intake (412.5 Kcal vs 499.2 Kcal, p < 0.001) than those eating from a general rice bowl at lunch. However, despite consuming 21% less energy intake at lunch, the rates of satiety were not significantly different after eating from the diet rice bowl and from the general diet bowl. And there were no significant difference in rice intake and energy intake at dinner between the diet rice bowl and the general rice bowl. These results suggest decreasing the portion size by the diet rice bowl with biased visual cues leads to decreased rice intake and energy intake without altering the satiation. This is, the decreased amount of rice in a diet rice bowl may implicitly suggest what might be construed as an appropriate amount to consume and eventually it suggests smaller consumption norms.

미맥혼식(米麥混食)이 백서(白鼠)의 단백질(蛋白質) 대사(代謝)에 미치는 영향(影響) (The Effect on the Protein Metabolism in Albino Rats by feeding on the Rice Mixed with Wheat or Barley Diet)

  • Some effect on the protein metabolism in growing albino rats by feeding on the rice mixed with wheat or barley have been studied. The species of wheat and barley used in this experiment were either 80% polished or nonpolished wheat, barley and naked barley. The growing rats to be examined were fed on 30% wheat or barley mixed with rice diets for 8 weeks. The total nitrogen, creatinine, amino acid nitrogen and urea-nitrogen contents in the liver and the creatinine and urea-nitrogen contents in the urine have been measured. The results obtained are summarized as follows: 1. The total nitrogen contents in the liver and the serum were no remarkable difference by feeding on each mixed diet, compared with the rice diet group. 2. The creatinine contents in the liver of the unpolished wheat and barley mixed diet groups were the similar to that of the rice diet group, but these were higher by feeding on the polished wheat and barley mixed with rice diets. 3. The amino acid nitrogen contents in the liver of the polished naked barley mixed with rice diet groups were the similar to that of the rice diet group, but these were higher by feeding on the other mixed diets than the rice diet. 4. The urea-nitrogen contents in the serum of the polished wheat and naked barley mixed with rice diet groups were higher than that of the rice diet group, but these were significantly lower by feeding on the polished barley mixed with rice diets than the others. 5. The creatinine and the urea-nitrogen contents in the urine of the original wheat and barley mixed with rice diet groups were higher than that of the polished wheat and barley mixed with rice diet groups. In the view of the above results, it could be seen that the protein metabolism was remarkable change according to polish of the wheat and barley.

밥그릇의 크기와 형태에 의한 시각적 차이가 정상체중 여대생의 섭취량과 포만도에 미치는 영향에 관한 연구 (Influence of Visual Differences in Bowl Size and Types on Dietary Intake of Female College Students with Normal Weight)

  • Objectives: This study examined the impact of perceived volume on satiety using normal rice bowl, diet rice bowl and small rice bowl. Methods: Thirty-six normal weight college female students participated in this study once a week for 3 weeks. Three hundred grams of fried rice in a normal rice bowl (1st week), 300 g of fried rice in a diet rice bowl (2nd week), and 300 g of fried rice in small rice bowl (3rd week) were served to the same participants over three consecutive weeks. After each lunch, the consumption volume of fried rice and the satiety rate were measured. Results: The consumption volume of fried rice was 248 g (414.5 kcal) with a normal rice bowl, 254 g (429.8 kcal) with a diet bowl, and 270 g (456.8 kcal) with a small rice bowl. Results showed that the subjects who were eating from the small rice bowl ate more fried rice (p<0.05) than eating from the normal rice bowl and diet rice bowl. However, the satiety rate of fried rice in a diet rice bowl was significantly higher than that of normal rice bowl and small rice bowl (p<0.05). The five point scale of perceived volume on fried rice served normal rice bowl, diet rice bowl and small rice bowl were 2.4, 4.0 and 2.1. Conclusions: The visual cue plays a critical role in determining satiety and that perceived volume is perhaps more important than actual volume of consumed food in determining the level of fullness.

Effects of Cordyceps militans Cultivated on Rice on Lipid Metabolism in Rats Fed High Fat-cholesterol Diets

  • Dongchunghacho rice, produced by cultivating Dongchunghacho fungus on rice, could be an effective functional food because it offers added value to rice and thus increases rice consumption. However, the physiological effect of Dongchunghacho rice has not been reported yet although there is increasing consumers demand. Therefore, we investigated the effect of Dongchunghacho rice (unpolished rice cultivated with Cordyceps militaris) on lipid metabolism in hyperlipidemic rats. Forty of 8 wk-old male Sprague-Dawley rats were divided into four groups after a 1 week of adaptation period and fed either a normal diet (66% polished rice diet, NC), high fat (12 g/100 g)-high cholesterol (1 g/100 g) diet with 53% polished rice (HC), or high fat-high cholesterol diets supplemented with 30% of the total rice as either unpolished rice (DR) or Dongchunghacho rice (DR). After 4 weeks, rats fed the Dongchunghacho rice diet with high fat and cholesterol had dramatically lower plasma LDL cholesterol concentrations and atherogenic indexes and higher plasma HDL cholesterol levels compared with the rats consuming polished rice or unpolished rice with high fat and cholesterol diet. Dongchunghacho rice led to less total lipid and total cholesterol accumulation in liver. However, these significant reductions in plasma or hepatic lipid profiles were not closely correlated with fecal total lipid or total cholesterol excretion. The plasma concentration of total cholesterol and triglycerides were not affected by Dongchunghacho rice. This hypolipidemic effect of Dongchunghacho rice seemed to be unrelated to unpolished rice itself, because the plasma and hepatic lipid profiles of DR group were not different from that of the HC group. These results suggest that unpolished rice containing cultivated Cordyceps militaris can improve plasma and hepatic lipid profiles in rats fed with high fat-high cholesterol diet.

Instant 식품(食品)(라면)이 백서(白鼠)에 미치는 생화학적(生化學的) 연구(硏究) (A Biochemical Study of Instant Food (Ramyon))

  • Biochemical studies such as growth rate, blood cholesterol and ascorbic acid contents in various organs of albino male rats were studied both in the instant food (Ramyon) and rice diet fed groups. The conclusion was as the followings: 1) Either single ramyon or rice fed rats were not shown growth rate properly. In supplementation of 10% or 20% protein on ramyon, growth rate was a little increased than that of the rice diet group. 2) No essential difference of vitamin C contents in various organs was observed between ramyon and rice diet fed rats. Serum vitamin C level of the rice diet group was shown higher than that of the ramyon group. 3) Blood cholesterol level of ramyon fed rats was higher than that of the rice diet group, whether single or protein supplemented diet was fed. 4) Liver lipid contents showed higher in the rice diet group than in the instant ramyon group.

Hypoglycemic and Antioxidative Effects of Functional Rice Goami and Nokwon in High Fat-Fed Mice

  • Effects of newly developed functional rice grains Goami (high-amylose rice) and Nokwon (green-kerneled rice) on the glucose metabolism and antioxidative defense system in C57BL/6N mice under high fat diet condition were investigated. Animals were randomly divided into five groups (n = 8) and given experimental diets for eight weeks: normal control diet (NC), high fat diet (HF), and high fat diet supplemented with white rice (HF-WR), Goami rice (HF-GR), and Nokwon rice (HF-NR). At the end of the experimental period, the HF group exhibited markedly higher blood glucose level, insulin concentration, plasma lipid peroxidation and lower hepatic glycogen concentration than that exhibited by NC group. However, diet supplementation of Goami and Nokwon suppressed the high fat diet-induced hyperglycemia and oxidative stress through inhibition of the glucose-regulating enzymes and enhancement of the antioxidant enzymes activities. The results illustrate that the new functional rice Goami and Nokwon may be useful in the development of functional foods with preventive effect against high fat diet-induced hyperglycemia and oxidative stress.

보리와 속(粟)의 혼식(混食)이 성장기(成長期) 백서(白鼠)에 미치는 영양효과(營養效果) (Nutritive Effects of Feeding Rice Diet Mixed with Barley and/or Millet on the Growth Rate and Biological Availability of Some Nutrients by Albino rats)

  • 이유(離乳) 직후(直後)의 백서(白鼠)를 대상으로 주곡(主穀)인 백미(白米)와 잡곡(雜穀)인 보리와 속(粟)의 혼식(混食)에 의(依)한 영양효과(營養效果)를 관찰하였다. 시험식이(試驗食餌)는 대조식이(對照食餌), 백미식이(白米食餌), 백미(白米) 70%에 보리 30%, 속(粟) 30%, 보리 20% 일속(一粟) 10%, 보리와 속(粟) 각각(各各) 15%, 보리 10% 일속(一粟) 20% 혼합식이(混合食餌) 등(等) 동열량(同熱量) (357kca1/100g) 및 동단백질수준(同蛋白質水準)(12%)의 7종(種)이었다. 7주간(週間)의 사양(飼養)과 4일간(日間)의 대사시험(代謝試驗)을 통(通)하여 증체량(增體量), 식이효율, 단백질효율(蛋白質效率), 단백질소화율(蛋白質消化率), 생물가(生物價)와 단백질이용률(蛋白質利用率) 및 간장실소(肝臟室素)와 혈청단백질함량(血淸蛋白質含量) 등(等)을 관찰한바 다음과 같은 결론(結論)을 얻었다. 1) 증체량(增體量)은 보리 또는 속혼합식이군(粟混合食餌群)이 백미식이군(白米食餌群) 보다 양호(良好)하였으나 유의적(有意的) 차(差)는 없었다. 2) 식이섭취량(食餌攝取量)은 식이군별(食餌群別)로 약간의 차이(差異)가 있을 뿐 일정한 경향은 없었다. 식이효율은 보리와 속혼합식이군(粟混合食餌群)이 백미식이군(白米食餌群)보다 양호(良好)하였다. 3) 단백질효율(蛋白質效率)도 보리와 속혼합식이군(栗混合食餌群)이 백미식이군(白米食餌群) 보다 양호(良好)하였고 유의차(有意差)는 없었다. 4) 단백질소화율(蛋白質消化率)은 백미식이군(白米食餌群)이 현저히 (P<0.01) 높았고 보리와 속(粟)를 함께 혼합(混合)한 식이군(食餌群)이 높은 경향(傾向)이였다. 생물가(生物價)와 단백질이용율(蛋白質利用率)은 백미식이군(白米食餌群)보다는 보리 또는 속혼합식이군(粟混合食餌群)이 유의(有意)하게 (各各 p<0.05, p<0.01)높았고 속혼합식이군(粟混合食餌群)은 다소 낮았다. 5) 간장실소(肝臟室素)와 혈청단백질함량(血淸蛋白質含量)은 유의차(有意差)없이 유사(類似)하였고 정상치(正常値)의 범위내(範圍內)에 있었다. 본시험(本試驗)의 결과(結果) 백미(白米) 혹은 곡류단백질(穀類蛋白質)을 보강(補强)한다는 것은 많은 단백질(蛋白質)을 첨가(添加)한다는 것 보다는 전체적(全體的)인 균형(均衡)을 이루어 주는 점(點)이 중요(重要)하며 백미식이(白米食餌)가 소화율(消化率)은 우수하나 일단 소화(消化)된 실소(室素)의 체내이용률(體內利用率)이 혼합식이(混合食餌)보다 낮았음은 섭취(攝取)한 단백질(蛋白質)을 절약하며 식품(食品)과 단백질(蛋白質)의 효과적(效果的) 이용(利用)을 위(爲)해서는 곡류(穀類)끼리의 적당한 혼합(混合)과 백미(白米)에 대(對)한 곡류(穀類)의 혼합률(混合率)이 중요(重要)하다고 보며 백미식(白米食)의 보강개량(補强改良)과 절미(節米)의 목적(目的)으로 잡곡혼용(雜穀混用)의 권장 등도 의의(意義)있다고 사료(思料)된다.

백미사과(白米飼科)가 실험용백서(實驗用白鼠)의 Methionine대사(代謝)에 미치는 영향(影饗)에 대(對)한 생물화학적연구(生物化學的硏究) (Biochemieal Effect on Methionine Metabolism to the Expperimental Rats on Rice Diet)

  • Using the $Methionine-2-C^{14}$, the metabolism of methionine to the experimental rats on rice diet was studied comparing with that to the rats on stock diet in this paper. The National Institute of Health strain of weaning albino rats were housed into the individual cages deviding into 2 groups, the rice diet (RD) group and the stock diet (SD) group, and fed on rice diet and stock diet respectively for 10 weeks. On the day of experiment, the rats were parenterally administered. the $methionine-2-C^{14}$ solution after fasting over night. And then the rats were sacrificed by ether anesthesia by time being of one, three, six, and twelve hours each and the organs, pituitary gland, pancreas, spleen, liver, and kidney, were taken out for the determinations of radioactivities. And also the excretion of radioactivities through urine were determined by time being. The radioactivities were determined by Autoscaler SC-51 using the planchets. The results of radioactivities of urine excretion were shown at table 3 and the results of radioactivities distibutions in the organs by time being after parenteral administration of $methionine-2-C^{14}$ were shown table 4 in the original paper. According to the results, the following are summarized; 1. The growth experiment result of rats on. rice diet and stock diet were same as shown by the previous workers indicating significant growth inhibition at the rice diet group. 2. Due to the result of radioactivity excretion through urine after administration of $methionine-2-C^{14}$, it might he considered that methionine in the rice diet seems to be limited. However, it seems to be not 주 mostly limited. 3. And due to the results of radioactivity distribution in the organs by time being, the radioactivity in the liver tissue showed appearently higher readings at this methionine study compared with the results at the lysine study shown by HAW and his co-worker. This might be interpreted, though it is not clear, that liver might require methionine as a deficient amino acid at the tissue because methionine is limited at the rice diet.

고식이섬유쌀의 급여가 KK 당뇨 마우스의 혈당에 미치는 영향 (Supplementary Effect of the High Dietary Fiber Rice on Blood Glucose in Diabetic KK Mice)

  • This study was carried out to investigate the supplementary effects of Suwon 464, which has over two times of dietary fiber content compared with normal rice (Ilpum), on blood glucose in diabetic mice. We supplied 5 kinds of experimental diets (corn starch diet as a control (CO), Ilpum polished rice diet (IP), Ilpum brown rice diet (IB), polished rice diet (SP) and brown rice diet (SB) of Suwon 464) to diabetic mice for 8 weeks, after analyzing dietary fiber contents of 5 experimental diets. Diet intake, body weight and contents of blood glucose, hemoglobin $A_{lc}$ and insulin were measured. The dietary fiber contents in CO, IP, IB, SP, and SB diets were 1.0, 1.2, l.4, l.4, and 2.0% respectively. Body weight was lower in SB group than the other groups though there was no significant difference in diet intake among experimental groups. The concentration of blood glucose in diabetic mice was lower in SB group than the other groups during the supplementary period of experimental diets. The hemoglobin Ale and serum insulin levels were lower in SP and SB groups. These results suggested that the brown rice of Suwon 464 with high dietary fiber can control diabetes in diabetic mice by reducing the blood glucose and hemoglobin Ale. 밥 식이와 빵 식이가 지구성 운동 후 혈중 중성지방, 인슐린 및 그렐린에 미치는 영향 (Effects of Rice Diet and Bread Diet on Plasma Triglyceride, Insulin and Ghrelin Level after Endurance Exercise)

  • 본 연구는 밥 식이와 빵 식이가 지구성 운동 후 중성지방, 그렐린, 인슐린, 혈당, 유리지방산, 지방과 탄수화물 산화율을 조사하여 두 식이의 차이점을 분석하였다. 중성지방은 지구성 운동 시 두 식이 간에 유의한 차이는 나타나지 않았으며 운동 후 회복기에서 중성지방은 밥 식이가 빵 식이보다 유의하게 감소하였다. 인슐린과 혈당에서도 밥 식이는 빵 식이보다 유의하게 감소된 결과를 나타냈다. 밥 식이와 빵 식이의 유리지방산과 지방 산화율은 운동과 운동 후 회복기에서 통계적 유의한 차이는 나타나지 않았지만 밥 식이가 빵 식이보다 다소 높은 경향을 나타내었다. 운동을 병행한 두 식이 간 비교에서 밥 식이가 중성지방 감소, 낮은 혈당 반응, 인슐린 민감성 향상의 결과가 나타났다. 이상의 결과를 종합할 때 일회성 운동이지만 서구의 주식인 빵 식이보다 우리의 주식인 밥 식이의 섭취가 운동과 병행하였을 경우 심혈관질환 예방 효과의 가능성을 볼 수 있었다.
