Lee's 메뉴엔지니어링 분석법(LME)의 적용 - 이탈리아 피자류를 중심으로 - (The Application of the Lee's Menu Engineering Method for Italian Pizzas)

  • The purpose of this study is an application of Lee's Menu Engineering (LME) method for menu analysis on the eight kinds of pizza selected from 17 kinds of pizza served by an Italian restaurant near by the Keimyung College University campus. The eliminated nine items were in the third quadrant or below the trend line. The LME method is more efficient than generally used methods such as the Miller, Kasavana & Smith, Uman, Pavesic and Merricks & Jones method. The LME method comprises reference lines and four quadrants created by x, y axes and its average values. The x and y axes comprise the sales ratio (MM%, percentage of the Menu Mix) and the weighted contribution margin (WCM%, percentage of the Weighted Contribution Margin) respectively. The obtained results are such that total sales increased by 1.59% from 58,747,200 won to 59,684,000 won, despite the decrease in sales volume. Total contribution margin also increased from 35,248,320 won to 35,810,400 won. The trend line also shows from y=0.9147x (R2=0.703) to y=0.9944x (R2=0.9893). These results indicate that the LME method is superior in practical applications.

Nutrient Contributions of the Five Meal Components in School Lunch: $Entr{\'{e}}e$, Milk, Vegetable/Fruit, Bread/Grain, and Miscellaneous

  • This retrospective study was designed to evaluate the nutrient contributions of the five meal components of school lunch menus planned for elementary students in two school districts (District A and B) in the Midwestern state of the United States. The 4-week cycle menu was planned for two time periods (Period 1 and Period 2) following guidelines for NuMenus and general menu planning principles. Menu components of planned and served menus for two time periods were analyzed using $Nutri-Kids^{TM}$. No significant differences in the nutrient content of between Periods 1 and 2 were found for District A. District B served significantly more vitamin A and total fat in Period 1 and significantly more calories, iron, vitamin A, protein, and total fat in Period 2 than was planned. The major nutrients provided by the entree component included protein, calories, cholesterol, total fat, saturated fat, and sodium. Milk was an important source of calcium and provided approximately one-third of the total protein and vitamin A in the meal. The vegetable/fruit component was the major source of vitamins A and C. The grain/bread component provided approximately 20% of the carbohydrates among five meal components. The miscellaneous component affected the sodium and fat content of the menus. Menu planners can use the results of this study to enhance their knowledge of the nutrient contributions of each meal component and as inputs for planning menus that meet children's nutritional requirements.

중요도-만족도 분석을 활용한 일식 레스토랑의 품질특성에 관한 연구 (A Study on the Foodservice Quality of Japanese Restaurants using the Importance-Performance Analysis (IPA))

  • 일식 레스토랑 경영자는 급변하고 경쟁적인 환경속에서 전략적 경쟁우위를 선점하기 위해서 차별화된 서비스를 제공하고자 노력하고 있다. 이러한 위협속에서 브랜드 마케팅, 확장, 그리고 파트너쉽 등이 경영전략으로 제시되고 있다. 본 연구는 일식레스토랑 고객들의 관점에서 서비스 품질 속성에 대한 중요도와 만족도를 파악하여 차별화된 경쟁우위를 지속하기 위한 전략을 제시하기 위해 수행되었다. 이를 위해, 자기기입식 설문지 230부를 배포하여 205부를 분석에 이용하였다. 전체 20 항목에 대한 Cronbarch's 알파값은 0.911으로 나왔으며 중요도 항목에서 0.887(음식), 0.796(메뉴), 0.851(종사원), 0.815(서비스), and 0.730(물리적 환경)으로 내적일관성이 있음을 보여주었다. 만족도 항목에서도 Cronbarch's 알파값은 0.876(음식), 0.860(메뉴), 0.880(종사원), 0.851(서비스), 0.730(물리적 환경)으로 내적 일관성을 보여주었다. 또한, 탐색적 요인분석은 20항목과 5개의 요인에 대한 타당도를 검증해 주었다. 전반적으로 일식레스토랑에 대한 중요도는 만족도보다 높은 수치를 보여주었다. 특히 IPA 분석 결과 음식과 서비스 요인은 1사분면에 위치하여 중요도에 비해 고객 만족도 역시 좋음을 보여주고 있다. 하지만, 서비스 요인은 2사분면에 위치함으로서 고객이 중요하게 여기지만 그 만족도가 높지 않음을 보여주고 있다. 따라서 이 연구 결과는 일식레스토랑은 2사분면에 위치한 서비스항목에 더욱 집중하여 고객만족도를 위한 노력이 필요함을 보여주고 있다. 마지막으로 메뉴와 물리적 환경요인은 3사분면에 위치해 중요도와 만족도 모두 낮게 나타났음을 알 수 있었다. 이러한 IPA 분석은 일식레스토랑 경영자에게 그들의 강점과 약점을 보여주고 있으며 전략적으로 자신의 서비스 품질을 높일 수 있도록 도와주는 좋은 도구임을 입증해주었다.

메뉴프로모션에 대한 특급호텔 종사원의 주관적 인식에 관한 연구 (A Study on the Subjectivity Recognition of Superior Hotel Employees for Menu Promotion)

  • 본 연구는 메뉴프로모션에 대한 특급호텔 종사원의 주관적 인식에 관한 주관성 유형을 파악하고자 Q방법론을 적용하였다. 연구목적은 메뉴 프로모션에 대한 종사원의 주관적 인식에 관한 구조를 유형화 하며, 각 유형들 간의 구조화된 특성을 분석하여 향후 시사점을 제시하는데 있다. 연구결과, 유형내용은 크게 총 3가지의 유형으로 분류되었는데, 제 1유형(N=13): 적극적인 자기 개발형(Active personal development type), 제 2유형(N=10): 평범한 메뉴 추구형(Normal menu Pursuit type), 제 3유형(N=2: 기업발전 추구형 (Enterprise Development Pursuit type) 으로, 각 유형마다 다양한 특징이 있는 것으로 분석되었다. 향후 호텔 종사자의 근무환경에 관련한 연구에서는 많은 자료 및 문헌을 통해 보다 정밀한 Q방법론적인 질문항목과 분석방법으로 수정 보완하여, 응답자들의 다각화된 의견을 객관적으로 분석하는데 시도하고자 한다. 결과적으로, 계량적인 실증 연구와 관련한 이해 당사자들의 종합적 비교 및 발전방안이 추가되면 호텔 종사원의 근무환경에 관한 연구 방향성이 보다 심도 있고, 긍정적 연구결과가 제시될 수 있을 것으로 사료된다.

양식레스토랑의 메뉴선택속성과 디자인이 고객가치, 고객만족에 미치는 영향에 관한 연구 (A Study on the Influence of Menu Selection Attributes and Design of Western Restaurants on the Customer Value and Customer Satisfaction)

  • 메뉴선택 속성과 메뉴디자인 속성이 고객가치와 고객만족이 어떻게 영향을 미치는 분석하자 하는 것이 연구의 목적이다. 연구를 목적을 달성하기 위하여 서울지역 4개의 호텔 양식당 이용자 223명을 분석한 결과, 메뉴선택속성에서는 다양성, 메뉴 설득력은 고객가치에 유의한 영향을 미치는 것으로 나타났다. 가설 2에서는 메뉴선택속성은 고객만족에 유의한 영향을 미칠 것으로 나타났다. 가설 3은 메뉴디자인은 고객가치에 유의한 영향을 미칠 것으로 나타났다. 가설 4는 메뉴 디자인은 고객만족에 유의한 것으로 나타났다. 가설 5는 고객가치는 고객만족에 유의한 것으로 나타났다. 연구결과 메뉴의 선택속성과 디자인 모두 중요한 것으로 나타났다. 본 연구에서는 메뉴의 선택속성과 디자인은 모두 중요한 것으로 났다. 향후 연구에서는 외국인 고객과 내국인 고객의 차이비교를 통해, 보다 세분화된 연구와 각 업장의 메뉴선택속성을 모색해 보아야 할 것으로 사료된다.

외식업체 한우 이용 실태조사를 통한 저지방 부위 한우 이용 메뉴 개발 (Hanwoo Usage Survey and Menu Development using Lean Cut Hanwoo for Restaurants)

  • The purpose of this study was to analyze Hanwoo usage in restaurants and to develop menus of lean cut Hanwoo. Restaurant served customers Hanwoo menus, with the exception of broiled or roasted meat, mainly to provide various menus to customers (4.14), due to customer needs (3.87) and utilizing stocks (3.59). On the other hand, the reason for not providing Hanwoo menus, with the exception of broiled or roasted meat was manpower shortage (3.63), lack of popularity (3.58), low profit (3.29), preservation of Hanwoos' original flavors (3.28) and complex cooking methods (3.22). Concomitantly, the restaurant owners' intentions to apply new menus with lean cut Hanwoo was 73.4%, showing an interest in developing new menus and recipes using lean cut Hanwoo suitable to the changing owner awareness of customer health and trends. This study has established a standard for developing cooking methods and developed menus according to classified recipes for lean cut Hanwoo, based on the survey of restaurants' current status of using Hanwoo and the owners' opinions. 20 menus using lean cut Hanwoo (rump or shank) were developed by $1^{st}$ and $2^{nd}$ cooking experiments, and in-depth interview of experts-groups. Of these, 12 menus suitable for the restaurant were finally selected based on the results of consumer's evaluation using JARS. Structured recipe flow diagram and recipe instructions were developed for future semi-processed or processing foods. Diverse recipe methods using lean cut Hanwoo were obtained from the study, however aggressive public relations work is required for promoting the developed menus.

관광지역 외식점포의 운영실태 및 관광객의 - 동해시를 중심으로 - (Analyzing the Current Operating Management and Customer Royalty of Restaurants at Tourism Provineces in Donghea city)

  • The purpose of this study was to analyze the current operating management practices and tourist royalty of restaurants at the tourism provinces in Donghae city. Forty restaurants were surveyed for sales status, customer management, menu management, advertising, marketing strategy and seventy seven tourists replied to the attitudinal and behavioral aspects of customer royalty for regular visiting restaurant. Statistical data analyses were completed using the SPSS/WIN pact(age program for descriptive analysis, paired difference test, t-test, ANOVA, and pearson correlation. The results of quantitative analysis indicated that the average sales per day on a high-demand season were 1,571 thousand won and one on a slack season were 614 thousand won. The average check on a high-demand season(109 persons) and a slack season(38 persons) were significant difference(t=6.834, p<.001). A total of 93.5% of the restaurateurs answered that menu pricing was decided by the owner and 21.7% of the subjects used the only restaurant homepage in the advertising method. A total of 40.6% of the restaurants utilized the only kind service for regular customers and 35.1% of the subjects had no method for them. The results suggest that systematic management policies and marketing strafes for regular customer is very necessary. Also, the correlation between tourists' attitudinal and behavioral aspects of customer royalty for regular visiting restaurant was found out. High correlation was existed between the overall tourists' satisfaction on regular visiting restaurant, the intention to revisit(BCL 1, p<.001), the intention to recommend(BCL 2, p<.001), and indicators of customer royalty. Finally, restaurateurs at the tourism provinces should focus on marketing strategy to keep and improve current customer to rise the tourist royalty.

수원시 거주 성인의 외식 메뉴 영양표시에 대한 인식 (Perception of Nutrition Labeling on Restaurant Menus among Adults in Suwon)

  • The purposes of this study were to investigate the perception of nutrition labeling on restaurant menus, and to analyze the differences among subject's characteristics, eating-out behaviors, and dietary attitudes. Information concerning general characteristics, health status, eating-out behaviors and dietary attitudes of subjects was collected by a structured questionnaire. From January 5th to February 27th in 2009, 406 questionnaires were completed by 157 males and 249 females. Statistical analyses were performed using by SPSS 14.0 package program. The perception of the importance of nutrition labeling was 3.89, while knowledge of whether restaurants provided sufficient nutrition information scored 2.26 indicating that being highly conscious of nutrition labeling, respondents did not view the supplied information as sufficient. Nutritional perception was greater in females and varied in both genders with age and health status. Significant differences concerning the perceptions of nutrition labeling were evident, based on eating-out behaviors and dietary attitudes. The results imply that nutrition labeling on restaurant menus should be based on consumer characteristics. Relevant nutrition labeling might help improve health by encouraging proper dietary habits and providing valuable nutritional information. Recognition of the importance of nutrition labeling and strategic implementation of labeling in menus would be prudent strategies for restaurant managers. 중소 요식업체의 소셜커머스 활용 전략에 관한 연구 (A Study on the Utilization Strategy of Social Commerce in Small Restaurants)

  • Recently, Social Commerce that provides customer with cheap deals is under the spotlight. The purpose of this study is to propose how to use social commerce on small restaurant business, which encompass almost a half of entire deals. We analyzed each element from the last transaction data of three social commerce company and survey obtained from the restaurant business. As a result, we can find that the purpose of promoting, the location of restaurant, whether is franchise or not, price and menu composition have an effect on sales of coupon. Based on these results, we proposed two step approaches to use the social commerce company. The first step is to decide whether social commerce is used or not and the second step is to define the detail content of deal including the social commerce company. We convinced that our proposed strategy is very helpful to the small restaurant which considers utilization of social commerce company.

패밀리 레스토랑의 서비스 스케이프 및 이미지 포지셔닝 맵에 관한 연구 (A Study on the Servicescape and Image Positioning Map in the Family Restaurant Industry)

  • The growth of foodservice industry has caused keen competition in the family restaurant industry. For a differentiation strategy to be competitive, on the preferential basis, it is necessary for each family restaurant business to analyze its position in the market. Therefore, this study is to certify customers' perceived servicescape and image similarity and analyzes positioning of seven family restaurants. For this research, multidimensional scaling(MDS) is performed to determine how they are positioned relative to competitors. According to the result of the positioning map(ALSCAL and PROFIT map), it is found that Outback steakhouse, T.G.I. Friday's, Bennigans' have more strong competitiveness than VIPS, Marche and Sizzler in servicescape factors and restaurant selection attribute except menu diversity. But the preference order does not follow the order of competitiveness. This result from the positioning map means that each business needs various marketing strategies that cannot be copied easily.
