  • This thesis enhanced the degree of utilization of smart phone through carrying out the application/app. which search and visit matjip (reputable restaurant) at the travel sites using smart phones. When we search matjip (reputable restaurant) using materialized application, we can select the best matjip (reputable restaurant) we want. Especially, this application evaluates individual restaurants through the level of utilization and satisfaction by consumer including appropriate menus, the style and design of the restaurant, reasonableness of prices, service of restaurant employees and sanitation management by region and registered the information input to DB in advance while classifying based on the evaluation scores to keep track for individual tastes. And individuals can record their personal memories to input columns. On top of that, information field for transportation is also designed to enhance the accessibility during travel, and in the future the application can be further utilized through the expansion of the DB through the input of famous tour sites and acquaintance's house information.

Analysis of Causal Relationship between Chinese Restaurant Chefs' Work Environment and Burnout : Focused on Moderation Role of Enthusiasm

  • Purpose - The current study attempts to enhance competitiveness by improving Chinese restaurant chefs' work environment and analyzes its effect on work environment and burnout. Also, this study analyzes to see if there is moderation role of enthusiasm between work environment and burnout. Based on analyzation, the present study aims to suggest more effective measure of human resource management by reducing burnout and turnover through providing chefs with more stable and consistent work environment and through their enthusiasm. Research design, data, methodology - Surveys were distributed to chefs working in Chinese restaurant in Seoul and Kyunggi region. Total of 500 surveys were distributed between September 1, 2017 and September 20, 2017 (about 20 days), and 417 surveys were returned to be used in the analysis. Results - As a result of testing effect of chefs' work environment on burnout (1) welfare environment, personal environment, and institution environment had significant effect on loss of accomplishment. (2) welfare, personal, and institution environment had significant effect on deindividuation. (3) welfare environment and institution had significant effect on emotional deprivation while personal environment did not. Second, as a result of analysis on moderation role of obsessive enthusiasm between Chinese restaurant chefs' work environment and burnout (1) as a result of interaction between work environment and loss of accomplishment, personal environment had significant effect while welfare environment and institution environment did not. (2) As a result of interaction between work environment and deindividuation, welfare, personal, and institution environment did not have significant effect. (3) As a result of interaction between work environment and emotional deprivation, institution environment had significant effect while personal environment and welfare environment did not. Conclusions - There is manpower shortage due to poor work environment of Chinese restaurant. Studies that are not limited to work environment are needed to more efficiently utilize human resources.

The Effects of Quality Factors on Customer Satisfaction, Trust and Behavioral Intention in Chicken Restaurants (치킨전문점의 품질요인이 고객만족, 신뢰와 행동의도에 미치는 영향)

  • Purpose - The purpose of this study is to classify the quality factors of chicken restaurant customers with the service quality based on the SERVQUAL, the quality factors based on the selection attributes and service qualities of chicken restaurants used in the previous studies. Research design, data, and methodology - This survey was carried out on the students of Kangwon University in Samchuk City, Kangwon Province from November 20 - November 30, 2017, and a total of 260 questionnaires were distributed, with 222 collected. Of them, effective questionnaires applied in the final study were a total of 193 except 29 that couldn't be used. Results - The findings of this study are as follows: Firstly, chicken restaurants' quality factors were divided into seven categories like cleanliness, service encounter quality, product quality, aesthetics, overall interior, purchase quality, and convenience. Secondly, it showed that service encounter quality, purchase quality, and cleanliness had a positive impact on customer satisfaction, respectively. Thirdly, it showed that service encounter quality, purchase quality, and cleanliness had a positive impact on trust, respectively. Fourthly, it showed that customer satisfaction had a positive impact on behavioral intention. Additionally, it suggested that customer satisfaction of chicken restaurant consumers had a positive impact on behavioral intention and thereby, higher customer satisfaction leads to higher levels of reuse and recommendation intention. Lastly, after checking the effect relations of trust between customer satisfaction about chicken restaurant and behavioral intention, it was analyzed that customer satisfaction has a positive impact on trust and trust has a positive impact on behavioral intention. On the other hand, it showed that trust have a partially mediating effect in the relations between customer satisfaction and behavioral intention. But, it showed that product quality, aesthetics, overall interior, purchase quality, and convenience did not have a positive impact on customer satisfaction. Conclusions - Chicken restaurant consumers put more priority on friendly and good services of chicken restaurant staff in service encounter and delivery order, rather than on reasonable price and discount systems. Thereby, chicken restaurant marketers need to take factors like service encounter quality, cleanliness into more consideration.

Forecasting the Business Performance of Restaurants on Social Commerce

  • Purpose: This research delves into the various factors that influence the performance of restaurant businesses on social commerce platforms in Bangkok, Thailand. The study considers both internal and external factors, including but not limited to business characteristics and location. Moreover, this research also analyzes the effects of employing multiple social commerce platforms on business efficiency and explores the underlying reasons for such effects. Research design, data, and methodology: Restaurants can be classified into different price ranges: low, medium, and high. To further investigate, we employed natural language processing AI to analyze online reviews and evaluate algorithm performance using machine learning techniques. We aimed to develop a model to gauge customer satisfaction with restaurants across different price categories effectively. Results: According to the research findings, several factors significantly impact restaurant groups in the low and mid-price ranges. Among these factors are population density and the number of seats at the restaurant. On the other hand, in the mid-and high-price ranges, the price levels of the food and drinks offered by the restaurant play a crucial role in determining customer satisfaction. Furthermore, the correlation between different social commerce platforms can significantly affect the business performance of high-price range restaurant groups. Finally, the level of online review sentiment has been found to influence customer decision-making across all restaurant types significantly. Conclusions: The study emphasizes that restaurants' characteristics based on their price level differ significantly, and social commerce platforms have the potential to affect one another. It is worth noting that the sentiment expressed in online reviews has a more significant impact on customer decision-making than any other factor, regardless of the type of restaurant in question.

  • The plan for Shinseon Seolleongtang Restaurant in Kimpo has as its goal to create an environment strongly fused with the design of the modern city and the spirit of food culture craftsmanship, and it proceeded as follows. In order to carry out the goal of the plan, the direction of the design concept was set to be a harmonious blending of Ecology and Minimal. Also, for detailed plan direction, in the Minimal domain, conciseness, cleanliness, and high quality were established as the ultimate goals in order to create a spacious food and drink area in today's complicated and energy-draining society, and in the Ecology domain, ancient hieroglyphs representing the forms of natural objects were used that prayed for years of plentiful harvest and blessing, and colorfully expressed the events of the populace.

A Study about Interior Design Characteristics of Korean Restaurants - Focusing on Seoul and New York Modernized Upscale Korean Restaurants - (한식레스토랑의 실내 공간 디자인 특성 분석 - 서울·뉴욕 소재 현대식 고급 한식레스토랑을 중심으로 -)

  • The upscale Korean restaurants that appeared as a way for the globalization of Korean food by introducing Western modern elements into Korean traditional elements are presenting a new direction. For this study, the researcher visited a total of ten modernized upscale Korean restaurants including five ones in each of Seoul (Dadam, Bistro Seoul, Bicena, Today, and Poom Seoul) and New York (Gaonnuri, Danji, Ban, Jung Restaurant, Korea Spoon), where the globalization of Korean food is concentrated, and the results of comparing, investigating, and analyzing the characteristics of interior and spatial design through observation, photo taking, sketches and preparing a questionnaire were as follows. First, a modernized upscale Korean restaurant was first built in New York in 2011, and then also appeared in Seoul in 2012. The Korean restaurants in New York were mostly operated by individual person, while the Korean restaurants in Seoul were operated by large corporation. Second, the spatial configuration elements were classified into the reception, garden and rooms in Seoul and into the reception, bar hall and rooms in New York depending on the function of the interior space, showing differences in the spatial configuration elements of the garden and bar. There was a difference in spatial layout; the restaurants in Seoul were room-centered, while the ones in New York were hall-centered. Third, in terms of spatial design elements, the size of the space and furniture in the reception space of the Korean restaurants in New York were smaller as compare to those in Seoul, while the restaurants in New York represented Korean atmosphere by decorating many Korean traditional elements. The Korean restaurants in New York gave consistency to the design of the hall space as compared to the restaurants in Seoul by decorating interior decorative accessories associated with the restaurant name. The Korean restaurants in Seoul decorated room space by using more traditional elements as compared to the restaurants in New York. Fourth, in terms of food design elements, the restaurants in Seoul are characterized by the introduction of Western services and table setting, while the restaurants in New York sought originality that applied foreign ways as compared to the restaurants in Seoul. The results of this study can be used as useful basic data when setting the interior spatial design guidelines for the modernized upscale Korean restaurants that advance into the world beyond Seoul and New York, and it is expected that in-depth follow-up studies would be conducted in various cities beyond Seoul and New York where there are modernized upscale Korean restaurants based on the results of this study.

  • O2O service contribute to sales increment by marketing of offline store using online. In particular, O2O business allowed various services by smart-phone due to rapid increase of mobile device use and various services depend on customer's location. This O2O service play major roll in real purchase making of offline store. In smart-phone apps. development for O2O service, recent an Object-oriented Analysis and Design Method, that is, UML is more useful method than Structured Analysis and Design Method. Therefore in this paper, Software analysis and design method which is smart-pone app. for O2O restaurant service is presented. Also it shows that this analysis/design method is very useful for the Restaurant O2O Commercial System production.

The Impacts of Restaurant Qualty on Brand Love and Hate, and Off-line and On-line Word-of-Mouth (레스토랑 품질이 브랜드 사랑과 증오, 그리고 온·오프라인 구전에 미치는 영향 )

  • Purpose: During COVID-19, consumers prefer social distancing or contactless activities for safety, and hygienic condition has become one of the most important factors in evaluating restaurants. Therefore, this study aims to investigate whether offline/online word-of-mouth is affected by restaurant quality. Research design, data and methodology: The data were collected from 480 consumers who had experiences of visiting a restaurant in the past 90 days and analyzed with SPSS 28.0 and SmartPLS 4.0 programs. Results: Physical environment and menu had positively significant effects on brand love, while employee service and hygiene had no significance on brand love. Restaurant environment, menu, and hygiene had negatively significant effects on brand hate, but employee service had not significant impact on brand hate. Brand love had positively significant effects on offline and online word-of-mouth, and brand hate had negatively significant effects on offline and online word-of-mouth. Conclusions: First, restaurants need to develop a pleasant space where customers can have emotional experiences. Second, restaurants need to fulfill customers' desire for global food consumption. Third, restaurants should ensure hygiene and safety to prevent customers' brand hate. Lastly, restaurants need to establish offline/online word-of-mouth strategy to identify which restaurant quality attributes influence brand love/hate and offline/online word-of-mouth.

The Needs and Behaviors of the Elderly in Existing and Future Restaurants (현재와 미래 외식공간에 대한 노인의 이용행태와 요구에 관한 연구)

  • The world is changing drastically by digital information technology and ubiquitous networking. Meanwhile, with the demographic avalanche, South Korea officially became an 'ultra-aging society' in 2026. Simultaneously, this demographic change will also stimulate a cultural climate which facilitates the formation and dissemination of 'slow culture' from the existent urban 'fast culture' which has been weakening the retirement living. One of the fundamental connections with the slow movement appears in the cooking and dining area. With this point of view, this study aims to identify the needs and behaviors of the elderly in current restaurants and a digitally planned multi-purpose one for the future. Small group workshop was employed for this study. In order to elicit detailed information from the elderly group members, scenarios were developed. A group facilitator kept the discussion on track by asking a series of open-ended questions meant to stimulate discussion. As the results, it was revealed that the elderly were interested in digitally planned restaurant which provides one-stop service including entertainment activities, health related contents and socializing with family. Even though this study took restaurant scenarios, the ideas in them also provide holistic perspectives on the direction of marketing and planning strategies on various future environments and services.
