The purpose of this study was to investigate the effect of 3-month nutrition education (First Time Intervention, FI) + additional 3-month nutrition education (Repeated Intervention, RI) which was performed after the 8-month followup. FI was conducted during 0-3 months and RI for 11-14 months. Ninety-two subjects completed FI program, and 38 out of 92 subjects who received FI finished the RI. Anthropometric data, dietary assessment (24hr recall) and fasting blood analysis were measured at 0 month, 3 months, 11 months and 14 months time points. After FI (3 mo), waist circumference, triglycerides, total cholesterol were significantly decreased. At 11 month follow-up, body weight, BMI, hip circumference, SBP, DBP were significantly rebounced and HDL cholesterol was significantly decreased. Therefore, the effect of short-term nutrition education was not being sustained. After the secondary nutrition intervention (14 mo), waist circumference and hip circumference were again significantly decreased. Total diet quality index-international (DQI-I) score was significantly increased in both FI group and RI group. The changes in DQI-I scores were significantly correlated with the changes in body weight (r = -0.129, p < 0.05) and counts of nutrition education (r = 0.159, p < 0.05), indicating that effective nutrition education helps improve the diet quality leading to a possible role in CVD prevention among male workers. Although a short-term intervention seems to be a success, the effect was not retained in this study. Therefore, we suggest incorporating nutrition education as a routine program for male worker at worksite.
The purpose of this study was to improve the dietary attitudes of elementary students through nutrition labeling education. A class of fifth-grade elementary students was selected and educated for basic nutrition and reading of nutrition labeling for 8 weeks by using education materials from the KFDA. After the education, the children were subjected for the practice of reading nutrition labeling during winter vacation, and the changes in their dietary attitudes and practice were measured by using questionnaires for children and their parents along with measuring physical changes. The results were as follows: The level of nutritional knowledge was improved significantly after the education (p < 0.05). Nutrition labeling education Increased the children's frequency of reading nutrition labeling from 34.2% to 57.9% while purchasing processed foods (p < 0.05), and 92.1% of the children answered that their dietary attitudes improved by nutrition labeling education. However, no improvement in physical measurements was observed after education. This result suggested that 8-week of education were not enough to show the improvement in physical measurements, and long-term and repeated education is necessary. After the education, most children answered that they recognized the benefit of reading nutrition labeling and they would read the nutrition labeling when purchasing processed foods. Parents also recognized the necessity of nutrition labeling education in school and suggested the need of nutrition labeling be easy to read. The above results suggested that nutrition labeling education is an effective way for improving dietary attitudes of children.
This study was performed to evaluate the effectiveness of a nutrition education program developed for nutritionally imbalanced adolescents. A summer nutrition camp was held for 23 overweight and 16 underweight subjects. Its effectiveness with regard to was evaluated at the end of the camp and 6 months later. Nutrition knowledge, nutritional attitude, food behavior, nutrient intake, exercise habit and ideal body figures desired by the subjects. The results showed significantly higher nutrition knowledge scores at the end of the camp as compared to those obtained prior to the camp program, and these scores were maintained for at least six months. Nutrition attitude scores also improved after the education program, and these improved scores also lasted for 6 months. However, the food behavior scores measured 6 months after the education program were not significantly different from those obtained prior to the camp. Also, the exorcist habit, the ideal body figures and the body figures desired by the subjects remained unchanged. When nutrient intakes of subjects were assessed before the program and 6 months later, the mean daily vitamin C intake was significantly increased after the education program. Also, the intake of iron from plant food sources increased in the overweight subjects, while less iron from animal source were consumed by the underweight subjects. Both groups tended to consume more vegetables and fruits 6 months after the education program which may have contribute to the higher vitamin C and plant-based iron intakes. These results indicate that a 4-day nutrition education camp program sustained changes in nutrition knowledge and nutrition attitude for 6 months. The increased intake of vegetables and fruits was also achieved through this education program. However, changes in dietary behavior in adolescents may require repeated education. The purpose of this study was to examine 1) the relationship between the vegetable eating behavior of care givers and that of children, 2) the effectiveness of nutrition education with vegetable playing using direct visual stimulating programs on vegetable eating behavior of preschool children, and 3) the times and period of nutrition education with vegetable playing for significant changes on vegetable eating behavior. A total number of 56 individuals, aged 42 to 66 months old, participated in this study in which three kinds of vegetables (30 g)/meal were served per individual, and vegetable eating behavior was measured by the residue on the dish during 5 weeks (25 days). To the simple visual stimulating group, vegetable dish was served without education, and other groups included education 1 group (nutrition education 1 time/week), education 2 group (nutrition education 2 times/week), and education 3 group (nutrition education 3 times/week) with simple visual stimulation by the vegetable dish. The results showed 1) the significant relationship (P<0.001) between the vegetable eating behavior of the care giver and that of children by analysis of the questionnaire, 2) the effectiveness of nutrition education using vegetable playing on vegetable eating behavior of preschool children (P<0.05), and 3) the significant changes in vegetable eating behavior by the 3rd week in the education 3 group. This study shows that food neophobia caused behavior problems in children regarding vegetable eating and repeated exposure was able to reduce food neophobia.
The effects of a nutritional education program for first grade middle school students were evaluated from August to December, 2006. The study subjects were 82 boys and 90 girls, residing in Gwangju, Korea. To assess the effects of the nutritional education program, pre- and post-questionnaires examining nutritional knowledge, dietary attitudes, and dietary habits were developed. Paired t-test and repeated measures ANOVA were used to evaluate the effects of the nutritional education program. In the general subject, the main after-school activities were studying, watching TV, and using computer (85.5%), and sports (9.3%), suggesting their low physical activity. Parents (46.5%) were indicated as the source of nutritional education rather than teachers (13.4%). Twenty-five percent of girl students had diet experience of skipping meals (54.6%), suggesting the need of proper nutritional education for adolescents' health care. In dietary attitudes, both genders showed some improvement of recognition after education. In the changes in dietary habits, both genders had a significant effect on 'three meals a day, eating breakfast, and regular meal' after education. After education, the rate of having breakfast everyday increased from 52.4% to 65.9% for boys and from 33.3%to 57.8% for girls. In the changes in nutritional knowledge, the appreciation of the importance of school meals increased in both genders from 50.6% to 80.8% after education. The nutritional knowledge, scores of regular eating and well-mannered eating increased in both genders regardless of the students' characteristics. The study results revealed that this education provided an important motivation to improve basic nutritional knowledge and dietary habit. It is recommended to develop systematic and various educational programs and learning materials tailored to subjects before nutritional education.
Purpose: This study aimed to investigate the effect of a video-based enteral nutrition education program using QR codes on the perception, knowledge, and performance of enteral nutrition for intensive care unit (ICU) nurses. Methods: This was a quasi-experimental study with a nonequivalent control group pre- and post-test design. The participants were nurses working at six ICUs within a single university hospital, with 55 nurses in the experimental group and 55 nurses in the control group. The video-based enteral nutrition education program using QR codes was repeated three times to the experimental group. Results: There was a statistically significant pre-post difference in perceptions between the two groups (Z = -4.04, p < .001) with 2.00 points (± 5.57) for the control group and 7.89 points (± 7.95) for the experimental group, in knowledge (Z = -7.48, p < .001) with 0.02 points (± 1.91) for the control and 4.18 points (± 2.33) for the experimental, and in performance (Z = -2.20, p = .028) with 0.06 points (± 3.96) for the control and 2.00 points (± 5.14) for the experimental. Conclusion: The video-based enteral nutrition education program using QR codes was effective in improving the perceptions, knowledge, and performance of enteral nutrition among ICU nurses. This enteral nutrition education program using QR codes in clinical education can contribute to evidence-based nursing practice by improving perceptions and knowledge of enteral nutrition.

[Purpose] Lactate is a principal energy substrate for the brain during exercise. A single bout of high-intensity interval exercise (HIIE) can increase the blood lactate level, brain lactate uptake, and executive function (EF). However, repeated HIIE can attenuate exercise-induced increases in lactate level and EF. The lactate levels in the brain and blood are reported to be correlated with exercise-enhanced EF. However, research is yet to explain the cause-and-effect relationship between lactate and EF. This study examined whether lactate consumption improves the attenuated exercise-enhanced EF caused by repeated HIIE. [Methods] Eleven healthy men performed two sets of HIIE, and after each set, 30 min were given for rest and examination. In the 2nd set, the subjects consumed experimental beverages containing (n = 6) and not containing (n = 5) lactate. Blood, cardiovascular, and psychological variables were measured, and EF was evaluated by the computerized color-word Stroop test. [Results] The lactate group had a higher EF (P < 0.05) and tended to have a higher blood lactate level (P = 0.082) than the control group in the 2nd set of HIIE. Moreover, blood lactate concentration was correlated with the interference score (i.e., reverse score of EF) (r = -0.394; P < 0.05). [Conclusion] Our results suggest that the attenuated exercise-enhanced EF after repeated HIIE can be improved through lactate consumption. However, the role of lactate needs to be elucidated in future studies, as it can be used for improving athletes' performance and also in cognitive decline-related clinical studies.

The purpose of this study is to analyze connection of the field on 'Nutrition and Food' among grades in the Practical Arts and Home Economics. The subject of analysis is 'Practical Arts' textbook in elementary school and 'Home Economics' textbook in middle school and high school. The Practical Arts textbook of 5th, 6th grade and 5 Home Economics textbooks middle school 1st, 3rd and high school. First of all, it is arranged the aim and contents, used analysis connection frame. The following contents are to summarize the result. First, 'Nutrition and Food' unit is presented nutrition, food, meals management in textbook. Second, aim in curriculum is agreed with contents in curriculum, but how to description in textbook is needed agreements. Third, contents in elementary school and secondary school is connection to develope, but contents in middle and high school are repetition. With the results analyzing connection among text contents, it is concluded that contents' connection has more developed and repeated. Specially, contents of Nutrition are mostly developmental contents, contents of Food are that one part is developmental contents and the other part is repeated contents.

The purpose of this study was to test the effect of the health education on college students. The content of the health education was consisted of significance of health, smoking, alcohol use and sexuality, birth control, exercise and nutrition, chronic illness, contagious disease, stress management. Two groups non-equivalent to pre and post test quasi-experimental research design were used in this study. The total number of subjects were 174 college students who did not have a health related major. The experimental group attended this health education program for 16 weeks and the control group attended other liberal arts and science classes for 16 weeks. Data were analysed with the SPSS window program. The homogeneity between the experimental and the control group pretest data was tested by $X^2$ test and t-test. The differences in stress, self-esteem, general self-efficacy, locus of control and health promoting behaviors after the health education were tested with the repeated measure ANOVA. The results were as follows: 1. There was no significant difference in general characteristics, stress, self- esteem, general self-efficacy, locus of control and health promoting behaviors between the two groups before the health education. 2. There was a significant difference in stress(p= .000) and health promoting behavior (p= .000) between the two groups after the health education. 3. There was no significant difference in self-esteem(p= .531), self-efficacy(p= .110) and locus of control between the two groups after the health education. From the results above, it can be concluded that this health education for the college students was effective to relieve stress and improve health promoting behaviors. The above results suggest that repeated studies are needed for another college students and various health education programs should be developed to promote the health of the populace considering many health related concepts.
Enterobiasis and head lice infestations, contact-borne parasitic diseases, are the most prevalent parasitic infections of children in Korea, and they are transmitted by close contact with infected persons. They are not of major concern in public health, therefore their importance in children's health care are overlooked in Korea. Egg positive rates of Enterobius vermicularis have been reported to be 10~20% among children in kindergartens and primary schools. Enterobiasis is diagnosed by scotch tape anal swab, but repeated examination is necessary for accurate diagnosis. Albendazole or mebendazole are extremely effective for treatment, however, reinfections usually occur if treatment is not repeated at least three times at a 3-week-interval, targeting the whole family members including the patients. Environmental sanitation and health education are also necessary to guarantee the successful treatment of enterobiasis. Head lice infestation is still an indication of public health status. Children of 3 to 12 years old and their families have infestations more frequently, and girls have more than boys. Diagnosis can be made by identification of live lice or nits on the head. Pediculicides are effective treatment of infestations, however they do not kill nits completely, requiring second treatment. Recently wet combing is preferred as an alternative by parents in England because of possible toxicity of drugs and resistance of lice. It is impossible to completely prevent enterobiasis and/or head lice infestations. Therefore, mass screening and prevention are required, and, in local clinics, a thorough evaluation of the symptoms and past history, and appropriate laboratory tests are necessary.
