To evaluate a pigment of the flower of cockscomb, Cclosia critata. as a natural food colorant, jelly-po, candy and sherbet were chosen as model foods and colorized to red with the pigment of the flower. Color changes were evaluated by analyses with Hunter color difference colorimeter. Lovibond tintometer and UV-visible spectrophotometer. Also sensory evaluation was carried out. The results obtained indicated that the red pigment of the flower had a good potential as food colorant, when it is utilized under the certain limited conditions: low water activity such as candy or low temperature. Data obtained indicated good correlation between instrumental analyses and sensory evaluation as well.
Fungi which produce red pigment were isolated from tapioca chips, Korean Koji, air, and plant leaves. Among the Fungi, T-1 strain was selected as test strain. This strain was identified as a Monatcus sp. by the morphological propeties. Various culture conditions, and physical and physiological characteristics of red pigment were studied. According to the studies of culture conditions, optimum condition was found to be pH 6.5; 4 days of incubation; temperature, 32~33 c: 3.5% of Tapioca chips powder as carbon source, 0.2% of sodium nitrate as nitrogen source and 100 ml of medium in the 500 ml Erlenmyer flask at a rotary shaker (rpm180) as aeration condition. Also effective levels of vitamins, amino acids and inorganic compounds was found to be l$\mu\textrm{g}$/ml of folic acid and niacin; 0.3% of L-arginine, L-glutamic acid and L-proline; and 0.001% of manganese dioxide giving good results.
Objective: An experiment was conducted to assess the antioxidant contents and activities of colored rice grains and to evaluate their nutritive characteristics in terms of chemical composition and in situ ruminal degradation. Methods: Ten cultivars of colored rice grains (Oryza sativa L.) collected from several areas of Japan were studied, and control rice without pigment, maize, barley, and wheat grains were used as control grains. Their chemical compositions, pigment, polyphenol contents, total antioxidant capacity (TAC), and degradation characteristics were determined. Results: The starch contents of the colored rice grains were in the range of 73.5% to 79.6%, similar to that of the control rice grain. The black and red rice grains contained anthocyanin (maximum: $5,045.6{\mu}g/g$) and proanthocyanidin (maximum: $3,060.6{\mu}g/g$) at high concentrations as their principal pigments, respectively. There were significantly (p<0.05) positive relationships among the pigment contents, polyphenol content, and TAC values in the colored and control rice grains, indicating that the increase in pigment contents also contributed to the increased polyphenol content and TAC values in the colored rice grains. The dry matter and starch degradation characteristics, as represented by c (fractional degradation rate of slowly degradable fraction) and by the effective degradability, of the colored rice grains and the control rice grain were ranked as follows among commonly used grains: wheat>barley${\geq}rice$>maize. The colored rice grains also included the most-digestible starch, since their potential degradable fraction and actual degradability at 48 h incubation were almost 100%. Conclusion: Colored rice grains have high potential to be used as antioxidant sources in addition to starch sources in ruminants.
Flow properties of red flower cabbage pigment solutions were determined over a wide range of temperatures ($20-50^{\circ}C$) and soluble solid concentrations (1-65%) using a cone and plate rotational viscometer. Flow properties of the pigment solutions were adequately described by the simple power law model. Within the tested ranges of concentration, temperature and shear rate, the flow behavior index (n) and the consistency index (K) of the solutions were in the ranges of 0.841-0.998 and $0.008-31.525\;Pa{\cdot}s^n$, respectively. The effect of temperature on the apparent viscosity of the solutions followed an Arrhenius type relationship. Activation energy of flow varied from 9.36 to 52.48 kJ/mol depending on the solid concentration and shear rate. The combined effect of temperature and concentration on the apparent viscosity at the shear rate of $100\;s^{-1}$ could be represented by a single equation as ${\ln}\;{\eta}_a\;=\;6.11\;-\;3103.94(1/T)\;-\;0.03C$.
The pigments composition and structure of the mural painting at Pongjongsa Kuknakjon is discussed. The structure of inner wall is consisited of Paint layer, Ground divided two layers of yellow and white pigments, Support. In case of outer wall, it is consisted of Paint layer, Ground divided three layers of yellow and green pigments, a layer mixed green pigments and paint layer, Support. As a result of compositon analysis of mural painting pigments at Pongjongsa Kuknakjon using Micro-area X-ray diffraction system, the red pigment on inner wall is consisted of Heamatite($Fe_2O_3$), Magnetite($Fe_3O_4$)of deep black pigment, and Chalcocite($Cu_2S$) of light black pigment. The white pigment on outer wall is consisted of Anglesite($PbSO_4$) and Atacamite($Cu_2CI(OH)_3$) of green pigment. We found out that natural pigments painted in the mural painting at Pongjongsa Kuknakjon has kept up its own color for a long time due to using the natural pigment not to artificial synthetic pigment.

In general, the root color of Codonopsis lanceolata is white, but red or blue-colored root is found at a low frequency in nature. Red or blue-colored roots have scarcity value, thus farmers wish to produce colored roots. The factors for determining the color of roots are unclear whether the color is controlled by genetically or simply by environmentally such as soil environment. Using in vitro culture system which is advantageous for setting of the same culture condition, we analyzed the physiological and morphological characteristics and genetic differences among red-, blue- and white lines of C. lanceolata. In the red colored roots, stems of in vitro cultured plantlet were colored in dark red pigment. Histological analysis revealed that the red pigment was accumulated in the outer cortex layer of the stem and determined as anthocyanin. Chlorophyll contents in red root lines were higher than those in white- and blue root lines. Plantlets from red roots were smaller in both shoot length and total leaf area than those from white- and blue roots. Genetic differences among the three different colored C. lanceolata were determined by RAPD (Randomly Amplified Polymorphic DNA) analysis. Each line of colored roots had clear DNA polymorphism. These results indicate that the occurrence of red- and blue colored roots in nature was determined by genetic factors rather than soil enviromental conditions.
Light-emitting-diodes (LEDs) are a lighting source useful for the precise evaluation of light quality effect on biological systems. Despite the importance of light spectra on the regeneration of land plant protoplasts ("naked cells"), this factor has not been tested yet on protoplasts from multicellular algae. This study reports on the effects of pure primary colors (red, blue, and green), dichromatic (red plus blue, RB, 1 : 2) and white LEDs on protoplast regeneration from male and female Undaria pinnatifida gametophytes. We also evaluated the effect of different light spectra on pigment composition (chlorophyll a, chlorophyll c, and fucoxanthine), and the light intensities under the best condition on the regeneration process. In the early stages, blue or RB LEDs increased the percentage of dividing female protoplasts, whereas red, blue, and RB LEDs enhanced that of dividing male protoplasts. In the later stages, RB LEDs showed a positive effect only on the percentage of multiple rhizoid-like protrusions (male gametophyte). They also increased the final area of both regenerated gametophytes. The LEDs did not affect pigment composition in female gametophytes. In male gametophytes, in contrast, they reduced chlorophyll c, while blue, RB, and green LEDs decreased fucoxanthin. Under RB LEDs, the optimal light intensity was 80 µmol photons m-2 s-1 for female gametophytes and 40 to 60 µmol photons m-2 s-1 for male gametophytes. Our results suggest that dichromatic LED illumination (red-blue) improves regeneration of U. pinnatifida gametophyte-isolated protoplasts. Thus, dichromatic LEDs might a suitable light source for enhancing protoplast regeneration in brown seaweeds.
1) Higher yield of red color was observed by the isolated strain (Monascus D-7) than the type cultures in steamed rice medium. 2) In a case of Monascus purbigerus IAM 8004, best yield of color was obtained at Lin's submerged culture medium containing 1% wheat bran, 2% starch and 3% corn meal instead of rice powder as carbon source. However, in a case of isolated strain (M. D-7), good result was shown at 1% rice bran and 2% starch as a source of carbon in Lin's medium. 3) Good yields were obtained from both strains in Nishikawa's medium which was added with 3% defatted soybean flour. 4) There were no significant differences in pigment extractability among solvents. Extracted pigment was stable in wide range of pH and heat, whereas relatively unstable in sunlight. 5) Toxicological study of extracted pigment determined $LD_{50}$ at 0.2539g/20g, when injected in mouse. When injected in to mouse in 25% ethanol solution: considering the toxicity of ethanol, the toxicity of pigment itself is believed to be none.
This study, a part of scientific analysis of the 23 Neolithic red earthenwares excavated from southeastern coast and islands. We analyzed earthenware through statistical method and hardness analysis of clay, following the analysis of clay composition, its firing temperature, pigment composition and its thickness. Clay composition was analyzed by using ICP-AES and XRF, and then Principal Component Analysis (one of multivariate methods) was used for classification. As a result, clay of the earthenware was classified into 3 groups(Bumbang, Youkjido and other sites). In addition, hardness analysis of pigment and clay based on the depth of earthenware surface showed that pigment layer containing lots of Fe2O3 had higher hardness than clay part, which can be interpreted that Fe2O3 contributes to raising hardness in case of high temperature firing. The fact that pigment hardness is higher than that of clay part implies that pigment was applied before firing.
