Differential effects of various dietary proteins on dextran sulfate sodium-induced colitis in mice

  • BACKGROUND/OBJECTIVES: Chronic colitis is a risk factor for colorectal cancer (CRC) development in both animals and humans. Previously, we reported that a diet rich in protein (with casein as the protein source) significantly increased the risk of mouse CRC development in a dose-dependent manner. In this study, we investigated the effects of different protein sources on the risk of colitis development. MATERIALS/METHODS: Balb/c mice were divided into 7 experimental groups: 20% casein (20C), 20C-dextran sulfate sodium (DSS), 40% casein-DSS (40CD), 40% whey protein-DSS (40WD), 40% soy protein-DSS (40SD), 40% white meat-DSS (40WMD), and 40% red meat-DSS (40RMD). Mice were fed an experimental diet for 4 wk and received 3% DSS in their drinking water for 6 days during the 4th wk of the experimental period. RESULTS: Compared to other groups, the 40CD group showed the most aggravated colitis with increased disease activity and inflammatory markers. In the 40RMD group, interleukin (IL)-6 levels were the highest among all the groups. The 40SD group showed conflicting effects, for example, elevated mortality and disease activity but decreased nitric oxide (NO) levels. The 40WD group showed attenuated colitis with increased IL-10 levels and decreased NO levels. The 40WMD group showed conflicting effects, including decreased NO levels and elevated fecal lipocalin-2 and IL-6 levels. CONCLUSIONS: These results suggest that, at levels of 40% in the diet, casein and red meat exacerbate colitis, whereas whey protein mitigates it the most effectively.

  • 관상가치와 교재생물로서 교육적인 이용도가 높은 흰동가리속 red and black clownfish Amphiprion melanopus의 인공종묘생산의 기초자료를 확보하기 위하여 실험실적인 규모에서 친어를 사육하여 산란과 부화를 조사하였다. 한마리의 암컷이 2004년 4월 19일 부터 2007년 4월 16일 까지 총 48번의 산란을 하였으며, 산란 직후의 수정란의 장경은 $2.6{\sim}2.15\;mm$ (평균$2.32{\pm}0.11\;mm$, n=50), 단경은 $0.94{\sim}0.96\;mm$ ($0.94{\pm}0.001\;mm$, n=50)로 타원형이다. 수정란은 유백색으로 유구를 많이 가진 상태로 난막에 쌓여 배체의 동물극 쪽이 부착사에 의해 산란기질에 부착되어 있었다. 산란상에 대한 선택성은 red clay pot > ceramic pot > volcanic scoria > live rock으로 나타났으며, 부화율은 red clay pot에서 66%로 live rock 34%에 비하여 유의적으로 높았다(P<0.05). 먹이종류에 대한 산란량은 Tetra bits+바지락육질+진주담치육질+astaxanthin을 혼합하여 먹인 실험구에서 $638{\pm}16.04$개로 Tetra bits만 공급한 구간 $477{\pm}28.96$ 개와 비교하여 유의적으로 높게 나타났다(P<0.05). 부화를 위한 배발생의 최적 환경요인은 수온 $28^{\circ}C$, 염분 33 psu, 광주기 6L:18D로 나타났다. 갓 부화한 자어의 전장은 $3.7{\sim}4.8\;mm$ (평균 $4.6{\pm}0.14\;mm$, n=50)로 7일째 까지는 $7.5{\pm}0.60\;mm$, 14일까지는 $11.0{\pm}0.77\;mm$, 20일에는 $12.4{\pm}0.85\;mm$, 30일에는 $18.8{\pm}0.82\;mm$, 70일에는 $37.9{\pm}2.26\;mm$로 성장하였다.

홍국쌀 첨가 소시지의 품질 특성 (Quality characteristics of sausage added red yeast rice)

  • 육류가공제품의 발색제로 사용하는 아질산염을 대체할 수 있는 천연색소 개발과 건강지향적 소시지 제품 개발을 위해Monascus purureus KFRI 1134 균주로 배양한 홍국쌀을 0, 1, 3 및 5%(w/w) 첨가하여 소시지를 제조한 후 품질특성을 조사하였다. 홍국쌀 색소는 $100^{\circ}C$ 이하에서 안정성이 유지되었으며, 홍국쌀 첨가량이 증가할 수 록 수분 함유율이 감소하였고, 색도 측정 결과 적색도인 a 값이 증가하여 소시지의 색상 개선 효과가 있었다. 홍국쌀 소시지의 물성 측정 결과, 경도는 낮았으나, 신장성, 검성, 탄력성은 모두 높은 것으로 나타났으며, 홍국쌀 1%(w/w)를 첨가하여 제조한 소시지가 전체적인 기호도 값이 제일 높았다. 홍국쌀의 적색소는 열안정성이 강하여 소시지 가공 및 냉장 보관시 변색의 염려가 없으며, 소시지의 색상 개선이 가능하고, 물성과 맛에 영향을 미치지 않으면서 전반적인 기호도를 증가시키는 범위인 1%(w/w) 첨가가 적당한 것으로 나타났다.

홍국 분말을 첨가한 유화형 소시지의 이화학 특성 연구 (Physicochemical properties of emulsion-type sausage added red yeast rice powder)

  • 본 연구는 홍국 분말 첨가수준에 따른 유화형 소시지의 이화학적 특성에 대하여 조사하였다. 수분함량은 홍국분말 첨가량이 증가할수록 유의적으로 높아지는 추세를 보였으며, 단백질함량과 지방함량은 감소하는 경향을 보였다. 색도는 홍국 분말 첨가량에 따라 명도와 황색도는 감소하는 반면 적색도는 크게 증가하였다. 가열감량, 수분리, 유분리와 점도는 홍국 분말 첨가량이 증가함에 따라 감소하는 경향을 보였다. 관능평가에서 색도와 다즙성은 홍국 분말 3% 첨가 처리구가 유의적으로 가장 높은 값을 나타내었고, 풍미는 홍국분말 2~3% 첨가 처리구가 유의적으로 가장 높은 값을 나타내었다. 연도는 홍국 분말 첨가 처리구가 대조구보다 높은 값을 보였으며, 전체적인 기호도에서는 홍국 분말 2% 첨가 처리구가 가장 높은 값을 나타내었다. 연구결과를 종합하면 돈육 유화물에 홍국분말을 첨가하여 제조하였을 때 홍국 첨가에 따른 적색도가 증진되어 육색을 개선시키는 효과가 있으며 이화학적 품질특성을 향상시키는 것으로 생각된다.

  • 소형 적색육어의 소비기호에 부정적으로 작용하고 있는 잔뼈를 연화시켜 제거하고 비린내를 저감시키기 위하여 대표적인 소형 적색육어인 꽁치, Cololabis saira를 김치양념과 유기산 그리고 미강을 첨가하여 $5\pm0.5^{\circ}C$에서 60일 동안 숙성시키면서 15일 간격으로 숙성 중 화학적 변화를 검토하였다. 마른간이 물간에 비해 염침투도 및 탈수도가 높아 조미양념과의 평형이 15일 정도 빨랐으며, 그로 인해 숙성 중 pH가 높고, 휘발성염기질소함량과 TBA가가 낮아 조미숙성제품 제조시 염 첨가방법은 마른간이 적합하였다. 마른간에 미강을 첨가한 제품은 첨가하지 않은 제품에 비해 미강에 함유되어 있는 아미노산이 제품으로 이행되어 정미성분의 함량을 나타내는 아미노태질소가 높았고, 단백질 산패억제 및 미강의 carotenoid와 tocopherol 둥의 항산화물질에 의한 지질산화 억제효과도 있어 저이용 자원의 활용 증대측면에서 상업적 제품화가 기대된다.

유황을 급여한 육용 교잡계의 성장능력과 계육의 물리.화학적인 성상의 비교 (A Comparison of Fattening Performance, Physico-Chemical Properties of Breast Meat, Vaccine Titers in Cross Bred Meat Type Hybrid Chicks Fed Sulfur)

  • 본 실험은 유황을 육용 교잡계에 급여하여 성장능력, 계육의 물리$.$화학적인 성상, 항체가, 관능검사에 미치는 영향을 구명하고자 실행하였다. 8주령 교잡 육용계를 케이지에 암수 1:1의 비율로 처리구당 4반복으로 반복당 18수씩 총 288수를 배치하여 3주간 사양실험을 실행하였다. 유황은 황 함유량이 45%제재로서 0, 1.0, 2.0, 4.0%를 시판용 사료에 첨가하여 급여하였다. 증체량, 사료섭취량, 사료요구율은 주간별로 측정하여 계산하였으며, 실험 종료시에 계육의 일반성분, 물리$.$화학적인 성상, 백신항체가, 관능검사를 실행하였다. 유황 급여구에서 증체량, 사료섭취량, 사료요구율은 대조구와 통계적인 차이가 없었지만 복강지방은 대조구에 비하여 증대되는 경향을 보였다. 가슴육의 지방함량은 유황급여구가 대조구에 비하여 매우 낮았으며(P<0.05), 적색도가 높아지는 경향을 나타냈다. 조리감량은 유황 급여구에서 대조구에 비하여 현저하게 낮았으며(P<0.05), 조직감 특성중 응집성, 탄력성 및 검성은 증가하는 경향을 나타냈다. 관능평가 결과 유황을 첨가함에 따라 다즙성은 증가하고, 기름이 있는 입촉감은 감소하는 경향을 보여(P<0.05) 유황 첨가가 닭고기의 수용도에 좋은 영향을 주는데 기여하였으며, 씹힘성은 유황 첨가수준 2%에서 가장 연한 것으로 나타났으며(P<0.01) 닭고기에 대한 전체적인 수용도는 유황 2% 첨가구에서 통계적인 차이를 보였으므로 가장 좋은 것으로 평가되었다. 유황의 급여로 혈액의 AST, ALT, BUN은 대조구와 차이가 없었다.

Evaluation of the Effect of Low Dietary Fermentable Carbohydrate Content on Growth Performance, Nutrient Digestibility, Blood Characteristics, and Meat Quality in Finishing Pigs

  • A total of 96 pigs ($49.23{\pm}3.20$ kg) were used in an 11 wk growth trial to evaluate the effect of fermentable carbohydrate (FC) content on growth performance, apparent total tract digestibility (ATTD) of nutrient, blood profile, and meat quality. The dietary treatments were: i) negative control (NC), basal diet, ii) positive control (PC), NC+antibiotics (positive control diet with 5 ppm flavomycin), iii) PCL, PC-13% lower FC, and iv) NCL, NC-13% lower FC. The growth performance (average daily gain, average daily feed intake, and gain/feed) didn't differ among treatments through the whole experiment. These pigs fed the PCL diet had the greater (p<0.05) apparent total tract digestibility (ATTD) of dry matter than those from PC and NC treatment at the end of the experiment. No differences were observed in white blood cell (WBC), red blood cell (RBC), and lymphocyte concentration among different treatments. After the feeding period, meat samples were collected from the pigs at slaughter. The pigs in NCL and PCL treatments had greater (p<0.05) backfat thickness and lower lean percentage. The color value of loin was higher (p<0.05) in NCL treatment compared to PCL treatment. Also, the NCL treatment had higher (p<0.05) marbling value than PC treatment. The drip loss was depressed by PCL and NCL treatment comapared to NC treatments. The water holding capacity (WHC) was higher (p<0.05) in NC and PCL treatment. In conclusion, the low FC can improve digestibility and meat quality of finishing pigs.

EFFECT OF SUPPLEMENTATION AND PARASITIC INFECTION ON PRODUCTIVITY OF THAI NATIVE AND CROSS-BRED FEMALE WEANER GOATS II. BODY COMPOSITION AND SENSORY CHARACTERISTICS

  • This paper presents results from a study of the body composition and sensory characteristics of female weaner goat meat. A completely randomized $3{\times}3{\times}2$ factorial design was used. Factors were genotype (Thai native; TN, 75% TN $\times$ 25% Anglo-Nubian; AN and 50% TN $\times$ 50% AN), feeding {grazing only, low (1.0% BW/d) and high (1.5% BW/d) concentrate supplementation and parasite control (undrenched and drenched)}. It was shown that there was no effect of genotype on body components and dressing percentage. However, TN and 75% TN $\times$ 25% AN kids had significantly (p<0.05) higher muscle to bone ratios (4.20% and 4.20%, respectively) compared with 50% TN $\times$ 50% AN kids (3.88%). Kids on grazing only had significantly (p<0.01) higher muscle percentage (64.12%) than did kids in low (61.30%) and high (60.62%) supplementary feeding program, but there was no significant (p>0.05) difference between low and high supplementary feeding groups. Kids offered supplementary feeding had significantly (p<0.01) higher percentages of total fat, intermuscular fat, pelvic fat and kidney fat than those of grazing only. Kids offered supplementary feeding had significantly (p<0.05) higher muscle to bone ratios and significantly (p<0.01) higher muscle plus fat to bone ratios compared with those of grazing only. This may be due to significantly lower (p<0.01) bone contents (14.95, 14.17 and 16.8% for kids offered low and high supplementary feeding and grazing only, respectively. There was no significant difference in sensory characteristics of goat meat between genotypes or feeding groups.

Effects of Strain on Performance, and Age at Slaughter and Duration of Post-chilling Aging on Meat Quality Traits of Broiler

  • This study was conducted to investigate the effects of strain on broiler performance, and age at slaughter and postchilling (PC) aging time on meat quality traits. A total of 500 one-day-old chicks (250 Hubbard classic and 250 Lohman) were reared under commercial conditions. Half of the broiler birds from each strain were slaughtered at 32 days and the other half at 42 days old. At each processing day, 168 carcasses were randomly selected (84 Hubbard and 84 Lohman) and divided into groups of 28 carcasses within each strain, and aged for 0, 4 and 24 h after chilling. Average weekly body weight was comparable between strains. Feed conversion ratio was higher (p<0.05) for the Hubbard strain during the second and third week of age. Initial carcass pH was significantly (p<0.05) affected by age where younger birds (32-d-old) had lower pH values than older (41-d-old) birds. Breast temperature was higher (p<0.001) for Lohman than Hubbard at 0, 2 and 4 h of PC. Younger birds had a lower breast temperature (p<0.001) at all measured times of PC. Thaw loss, cook loss and water holding capacity were not significantly affected by strain, age or aging time. Lohman strain had more tender meat (p<0.05) than Hubbard strain, and tenderness was improved with the increase of broiler age and aging time. Meats from Hubbard were lighter and less red than those from Lohman strain where younger birds had darker color. In conclusion, strain, age at slaughter and PC aging duration are critical to breast meat quality characteristics, and 4 h of aging are required before deboning in order to obtain more tender fillets.

Effects on the Qualities of Proteolysis to Beef by Non-coating and Coating Protease Treatment

  • This study was performed to improve the techniques used for tenderizing red meat as elderly food. Beef meat was immersed in liposome encapsulated enzyme solution and the effect of protease encapsulation on the beef properties was analyzed. The protease encapsulation properties were analyzed according to the size distribution and enzymatic activity. After enzyme reaction on the beef, the chemical properties of the meat such as pH, water holding capacity, shear rate, lipid oxidation and total volatile basic nitrogen (TVB-N) were analyzed. The pH of the beef increased during the reaction and coating protease (CP) was higher than non-coating protease (NCP). Total color differences were increased remarkably after 36 h and generally, the difference in CP was relatively lower than in NCP. WHC was significantly decreased within 24 h, and no effect from the protease coating was observed. Protease activity was significantly increased within 48 h and no differences in the enzyme coating were observed. The TVB-N value of NCP was increased within 24 h while CP was sustained for up to 36 h. The TVB-N value of protease treated meat increased after 36 h and no effect from the protease coating was detected. Consequently, liposome encapsulated protease was found to have similar properties as non-coated protease. Application of liposome seems to be an interesting option for injecting various functional materials without changing the properties of meat.
