  • A grilled-type shrimp flavor was developed through the Maillard reaction to reduce or mask fish odor or off-flavor in seafood. Model systems were created by using enzymatic hydrolysate of shrimp and adding precursors to increase flavor quality and stability. Amino acid precursors such as cysteine and methionine, sugar precursors such as glucose, xylose, ribose, and sucrose, and one particular compound of glucosamine were tried and their flavor qualities were tested by sensory evaluation. Also, the optimum reaction condition was investigated using the pH values of pH 5, 6, 7, and 8 with reaction times of 1 hr, 2 hr and 3 hr after the best precursors were determined. The best condition of the precursors for grilled-type shrimp flavor was the mixtures of methionine, threonine, xylose, and glucosamine. The optimum reaction condition was at pH 8.0 and 2 hr reaction time.

  • The fast pyrolysis characteristics of lignocellulosic biomass are investigated for a bubbling fluidized bed reactor by means of computational fluid dynamics (CFD). To simulate multiphase reacting flows for gases and solids, an Eulerian-Eulerian approach is applied. Attention is paid for the primary and secondary reactions affected by gas-solid flow field. From the result, it is scrutinized that fast pyrolysis reaction is promoted by chaotic bubbling motion of the multiphase flow enhancing the mixing of solid particles. In particular, vortical flow motions around gas bubbles play an important role for solid mixing and consequent fast pyrolysis reaction. Discussion is made for the time-averaged pyrolysis reaction rates together with time-averaged flow quantities which show peculiar characteristics according to local transverse location in a bubbling fluidized bed reactor.

  • An improved tandem time-of-flight (TOF) mass spectrometer for the photodissociation (PD) study of ions generated by matrix-assisted laser desorption ionization (MALDI), MALDI-TOF-PD-TOF, has been designed and constructed. Recording a full spectrum with better than unit mass resolution even in low mass range has been achieved without reflectron voltage stepping which was needed in the previous version. Other aspects of the improvement, such as those in the data system which now allow 10-100 times faster spectral acquisition than with the previous instrument, are described. Rationale for the ideas which have led to the improvements is presented also.

  • This study was a method that used a hydrolysis for increasing the efficacy of alcohol decrease from Hovenia dulcis extract. The best pH was 2.0 to obtain a maximum activity at fixed reaction temperature and time. At pH 2.0, reaction temperature $80^{\circ}C$ and reaction time 4 hr gave the highest activity which was 124.2% of control. This is very simple and efficient method to increase the efficacy of alcohol decrease from Hovenia dulcis extract. The mechanism that increases the efficiency of alcohol decrease be examined through hydrolysis.

  • A series of L-LA polymerizations initiated by $Sn(Oct)_{2}\;([LA]_{0}/[Sn]_{0}=200)$ were carried out in scR22 at $130^{\circ}C$ and 300 bar, where $[LA]_{0}$ is the initial L-lactide concentration and $[Sn]_{0}$ is the initial $Sn(Oct)_{2}$ concentration. The reaction time dependences of monomer conversion and PLLA MW improved. The monomer conversion and PLLA MW increased with increasing reaction time. The effect of temperature on monomer conversion and PLLA MW was investigated in a series of polymerizations conducted at temperatures ranging from 90 to $150^{\circ}C$ and at a constant pressure of 200 bar. In all of these experiments, the ratio of monomer to R22 concentration was held constant at 12.4 wt.-%. Increasing the reaction temperature from 90 to $130^{\circ}C$ resulted in increased monomer conversion from 11.5 to 72.2 %.

  • The electrochemical removal (ECR) of water pollutants by activated carbon fiber (ACF) electrodes from wastewater was investigated over wide range of electrochemical reaction time. The ECR capacities of ACF electrodes were associated with their internal porosity and were related to physical properties and to reaction time. And, surface morphologies and elemental analysis for the ACFs after electrochemical reaction are investigated by SEM and EDX to explain the changes in adsorption properties. The FT-IR spectra of ACFs for the investigation of functional groups show that the electrochemical treatment is consequently associated with the homogeneous removal of pollutants with the increasing surface reactivity of the activated carbon fiber surfaces. The ACFs were electrochemically reacted to waste water to investigate the removal efficiency for the COD, T-N and T-P. From these removal results of pollutants using ACFs substrate, satisfactory removal performance was obtained. The outstanding removal effects of the ACFs substrate were determined by the properties of the material for adsorption and trapping of organics, and catalytic effects.

  • Gait parameters for the Korean normal adults were compared with sex and age. Time-distance measurements and ground reaction force parameters were studied in relation to walking speed. Regression analysis was performed to establish functional relations between walking speed and various gait parameters. It is found that cardence and stride length varied linearly with walking velocity whereas time of double support was inversely proportional to walking velocity. The amplitude of ground reaction force was increased with increasing velocities of gait due to the greater heel-strike force and toe-off forces associated with these higher velocities. The results of this study can be usefull utilized as basic data to design and evaluate prosthetic devices, and to detect abnormal gait performances.
