Quality Analysis of Fresh Rice Straw Wrapping Silage by Softening Treatment of Fresh Rice Straw and Colors Effects of Wrapping Stretch Film (생볏짚의 연화처리와 피복스트레치 필름의 색깔에 따른 랩사일리지의 품질분석)

  • Recently, in Korea, round bale wrapping silage made by fresh rice straw are partially utilized. The colors of stretch film using far wrapping the fresh rice straw round bale are white, green and black. The light transmittance of green and white color stretch film was not founded the difference. However, the light transmittance of black color stretch film was largely difference of two stretch films. This study was carried out to measure qualities of fresh rice straw wrapping silage by softening processing of fresh rice straw and colors effects of wrapping stretch film. The analyzed factors were the light transmittance of stretch film, variation of the temperature in fresh rice straw round bale and qualities of the silage in crude protein, ADF, NDF, organic acid, etc. It was difficult to find in this study the colors effects of stretch film on silage qualities by the silage wrapping. But, when make fresh rice straw wrapping silage, wrapping silage fermentation effect goes well more if handle softening the fresh rice straw.

Quality Characteristics of the Steamed Cake Containing Rice Flour (쌀가루를 첨가한 찜 케이크의 품질 특성)

  • This study was conducted to test the characteristics of dough made with rice flour for preparation of steamed cakes containing rice flour. We used a RVA (Rapid Visco Analyser), farinogram and alveogram to analyze cake flour and mixed powder containing 10, 20, and 30% rice flour for the water activity, texture, and, color changes after different storage periods. We found that rice flour inhibited starch aging, and that gluten free rice flour made the cakes more delicate. However, steamed cakes containing rice flour were harder than wheat cakes during storage. Because the cake was steamed, it had more moisture and was softer than cakes baked in an oven. The steamed cake prepared with rice flour became brighter than the control. The results of the consumer acceptance test and sensory characteristics showed that the steamed cake containing 20% rice flour obtained the highest score, indicating that this is the most appropriate level for making steamed cakes.

  • A partial replacement($0{\sim}30%$) of non-waxy rice(Samgangbyeo, Tongil type) was attempted in Yukwa(Korean traditional puffed rice cake) preparation. The yukwa prepared with the replacement of non-waxy rice up to 20% level was comparable in quality to the traditional yukwa in view of expansion rate, crispness and hardness followed by sonsory evaluation. Continuous whipping machine for making yukwa bandaekee(rice cake) could be successfully introduced for mass production.

Quality Changes of Steamed Rice Bread with Addition of Active Gluten and Rice Nuruk (활성 글루텐 및 쌀 입국 첨가에 의한 쌀 찐빵의 품질 변화)

  • This study was conducted to investigate the effects of different active gluten and rice Nuruk(Asp. oryzae, Asp. kawachii rice Nuruk) levels on the quality properties of steamed rice breads. Enzyme(amylase and acidic protease) activity of Asp. oryzae rice Nuruk is higher than Asp. kawachii rice Nuruk. Among the loaf volume of active gluten that were tested (10, 13, 15 and 17%) an active gluten loaf volume of 15% produced the best steamed rice bread. As a result of the loaf volume test steamed rice bread with rice Nuruk was decreased than steamed wheat bread. Regarding color, all treatments produced significant differences. The L value was decreased in steamed rice bread more than in steamed wheat bread, and a and b values were increased, respectively. Hardness, gumminess and chewiness of SRB-2, 3, 4 were lower than SWB-1 but springiness were higher. According to the sensory evaluation of steamed rice bread, color, flavor, and uniformity of pores were the highest in the steamed wheat bread, and the chewiness and texture were good in the steamed rice bread containing added active gluten and rice Nuruk. In this study, addition of rice Nuruk in steamed rice bread did not increase loaf volume, but had an advantage for overall desirability.

Storage Characteristics of Low Temperature Grain Warehouse using Ambient Cold Air in Winter

  • Purpose: This study was conducted to investigate the storage and quality characteristics of brown rice under the low temperature warehouse conditions using ambient cold air in the winter. Methods: This new technique maintains rough rice warehouse temperature below $15^{\circ}C$ without cooling operation until the end of May. Four hundred tons of rough rice were stored in the low temperature grain warehouse, and were aerated from the top to the bottom using ambient cold air in February. The quality of rough rice was evaluated from February through October. Results: The results were as followings. Moisture contents of rough rice in the low temperature storage had decreased less than the ordinary temperature storage. Cracked rate of brown rice in the ordinary temperature storage and low temperature storage increased by 4~10.8% and 1.6~7.2%, respectively. The germination rate of rough rice under the ordinary and the low temperature warehouse decreased by 15.0~25.0% and 1.7~8.0%, respectively. The acid value of brown rice under the ordinary and the low temperature warehouse increased by 3.67~6.72 KOH mg/100g and 3.08~4.08 KOH mg/100g, respectively. Conclusions: The result indicates that low temperature storage using ambient winter air showed better maintaining germination of rice, less change of physiological activities and cracked kernel, and better maintaining of rice quality, comparing the ordinary temperature storage.

Quality Characteristics and Sensory Properties of Reduced-fat Emulsion Sausages with Brown Rice Fiber

  • We evaluated the effects of dietary fiber extracted from brown rice on the quality of reduced-fat emulsion sausage. Reduced-fat emulsion sausage was supplemented with brown rice fiber at levels of 0, 1, 2, 3, and 6%. Adding different levels of brown rice fiber affected the proximate composition of the reduced-fat emulsion sausages (p<0.05), except for protein content. Adding different levels of brown rice fiber influenced the physicochemical properties of the reduced-fat emulsion sausages. The cooking yield, emulsion stability, textural properties, and viscosity of the reduced-fat emulsion sausages containing brown rice fiber improved with increases in added brown rice fiber (p<0.05). The reduced-fat emulsion sausages containing 1-3% brown rice fiber generated sensory evaluation scores similar to those of the high-fat sausage control. These results indicate that reduced-fat emulsion sausages with 1-3% added brown rice fiber had the most acceptable sensory properties and highest quality characteristics compared to the others.

Quality Characteristics of Rice Nutritional Bar added with Aronia Byproducts Powder (아로니아 부산물 분말 첨가 쌀 영양바의 품질 특성)

  • The quality characteristics, total phenolic content, anthocyanin content, and DPPH radical scavenging activity of rice nutritional bar with added powder of aronia byproducts were investigated in this study. The rice nutritional bar was prepared by adding aronia byproducts powder at concentrations of 0%, 2%, 4%, and 6%. The pH of the rice nutritional bar batter was lowered for the control and 2% aronia byproducts powder was added. The moisture content, baking loss rate, leavening rate and specific volume of the rice nutritional bar decreased with as the aronia byproducts powder content increased. In relation to measurements of the colors of the rice nutritional bar crust and crumbs, as the content of aronia byproducts powder increased, the L and b values decreased while the a value increased. From texture analysis, the hardness and chewiness increased according to the level of added aronia byproducts powder, but the springiness and cohesiveness decreased. The total phenolic content, anthocyanin content, and DPPH radical scavenging activity showed the highest values in the rice bar with 6% aronia byproducts powder added. According to a sensory evaluation, overall preference was highest for the rice bar with 4% added aronia byproducts powder, whereas the color and taste was rated higher for the rice bar added with 4% and 6% aronia byproducts powder.

Quality Characteristics of Takju Prepared from Different Ingredients and Fermentation Temperature (쌀, 누룩, 발효 온도를 달리하여 제조한 탁주의 발효 기간 중 품질 특성)

  • Rice, nuruk, and water are the main ingredients to prepare takju, a traditional Korean liquor. Takju quality varies depending on the type of ingredients and fermentation temperature. In the current study, different combinations of nuruk (SH, JJ) and rice (glutinous rice, non-glutinous rice) were fermented at different temperatures (20, 25℃) and analyzed for quality characteristics over the fermentation period of 10 days. Regardless of the temperature, higher soluble solids (27.1~29%) were measured in the takju prepared with glutinous rice compared to non-glutinous rice. And acidity increased from 0.03% to 1.1% to all takju fermented at both 20 and 25℃, and, higher acidity was measured in the takju prepared with JJ nuruk. The color value of lightness (L) decreased from 57.9 to 23.9. Alcohol content was less than 15.5% in glutinous rice takju and less than 12.3% in non-glutinous rice takju. Total bacteria count (7~8 Log CFU/mL) and lactic acid bacteria count (4~7 Log CFU/mL) increased in different takju. However, the very high yeast count was recorded in takju prepared from SH nuruk compared to takju prepared from JJ nuruk at 0 day of fermentation. A sharp decline (84.92~98.57%) of yeast was observed just after the 1st day of fermentation which gradually reduced to lowest at 4th day of fermentation. No yeast was observed at 6th day fermentation and onwards. These results indicate that the raw materials, especially rice and nuruk, affect the physiochemical properties of takju.

Preparation and Evaluation of Dried Noodle Products Made from Composite Flours Utilizing Rice and Wheat Flours (쌀가루와 밀가루 복합분(複合粉)의 제면성(製麵性)시험)

  • In an attempt to make dried noodles with composite flours utilizing rice and wheat flours, noodle-making characteristics were improved by the addition of popped rice and wheat flours to rice flour. Their quality was studied in terms of physical properties, noodle-making characteristics, cooking quality test and sensory evaluation. Dried noodle of the composite flour was produced by the conventional method. The results are summerized as follows; 1. In comparing the composite flours, the rice flour containing 30% popped rice flour had a lower maximum viscosity than that with 40% popped rice flour by method of amylograph. The composite flour(20% rice+30% popped rice+50% wheat flour) with added 2% xanthan gum showed the viscosity characteristics which was similar to that of wheat flour. 2. Addition of $1.5{\sim}2.0%$ xanthan gum and $40{\sim}50%$ wheat flour to rice and popped rice flour mixture helped to improve the noodle making properties and the cooking quality, and the noodle making properties and the cooking quality of the mixed flour were almost the same as those of wheat flour alone. 3. The composite flour (rice+popped rice+wheat flour) with xanthan gum showed a higher score in sensory evaluation than that without xanthan gum. The general acceptability scores obtained with the noodle products made of the composite flours with 30% popped rice flour was not significantly different from that of noodle products made of wheat flour alone. However, the noodle products made of the composite flours showed rather higher scores in odor and palatability than the products made of wheat flour alone.

Effect of Application Time and Amount of Liquid Pig Manure on Growth of Rice and Infiltration Water Quality (벼에 대한 돈분뇨 액비의 시용량 및 시용시기 구명)

  • This study was carried out to investigate the effect of application time and amount of liquid pig manure on growth and yield of rice plant and infiltration water quality. Liquid manure treatment with higher application rate and closer application time to transplanting time showed higher plant height and number of tiller at panicle formation stage, but it caused the plant disease and pest and lodging. In liquid manure treatment with higher application rate, number of panicles per hill and number of spikelets per panicle were higher but yield of rice was less than chemical fertilizer treatment due to low rate of ripeness and 1,000 grain weight. $NO_3-N$ concentration in infiltration water sample was increased with increasing application amount of liquid manure and closer application time to transplanting of rice plant. With consideration yield of rice and environment such as groundwater quality, the proper application amount were 150% and 100% of recommending N fertilizer level (11kg) at before winter and April or May treatment, respectively.
