Quality Characteristics and Antioxidant Properties of Rice Cookies Amended with Hibiscus Powder (히비스커스 분말을 첨가한 쌀쿠키의 품질특성과 항산화능)

  • This study evaluated the quality characteristics of rice cookies prepared with different amounts (0, 3, 6, 9%) of hibiscus powder. The pH of cookie dough decreased as the amount of hibiscus powder increased. Additionally, the moisture content and spread factor were higher in groups containing hibiscus powder than in the control groups. Furthermore, the L-value decreased with increasing hibiscus powder, while the a-value increased. The incorporation of hibiscus powder into cookies decreased hardness. Additionally, consumer acceptance testing revealed that the addition of up to 6% hibiscus powder was desirable in terms of overall acceptability. The total phenol content of the control groups was 12.32 mg GAE/100 g, while the levels in the groups containing hibiscus powder ranged from 23.32 to 59.86 mg GAE/100 g. Finally, DPPH and ABTS radical scavenging activity increased with increasing hibiscus powder level. Taken together, the results of this study indicate that amending cookies with 6% hibiscus powder can improve antioxidant activities without affecting sensory quality.

Quality Characteristics and Antioxidant Activity of Cookies Made with Black Carrot Powder (자색당근 분말 첨가 쿠키의 품질특성 및 항산화활성)

  • This study assessed the quality characteristics of cookies made with different amounts (0, 5, 10, 15%) of black carrot powder. The density and pH value of cookie dough were constant for all groups. Compared to the control group, the moisture content was higher in groups containing the black carrot powder. Increasing the amount of black carrot powder resulted in decreased L-value but increased a-value. Furthermore, the hardness of cookies increased with increasing amounts of black carrot powder. The consumer acceptance test revealed that up to 15% black carrot powder addition was desirable. Total phenol content of the control group was 24.0 mg GAE/100 g, while black carrot powder groups ranged from 45.5 to 103.5 mg GAE/100 g. The DPPH radical scavenging activity was also augmented with increasing volumes of black carrot powder. Taken together, we recommend that cookies with 15% black carrot powder are desirable in terms of overall acceptability and antioxidant activity.

A Study on Practical Engineering Model for Tool Temperature Control (금형온도제어에 대한 실천공학모형 연구)

  • In injection molding, the tool temperature has a great influence on the quality of the molded article. The appropriate temperature is determined by the molding material and the quality required for the molded part, and the important point is that the temperature should be stable. First, the tool temperature should be set in accordance with the quality required by the molded article within the range of the tool temperature conditions suitable for the material. That is, the tool temperature changes depending on the importance of the surface gloss of the molded article, shortening of the molding cycle, prevention of deformation, degree of shrinkage, ease of resin flow and the like. In order to improve practical tool technology, we propose a training model of the difficult process of tool temperature control which can be utilized in industry that design and manufacture injection mold.

Current Status and Tasks of Faculty Development Programs for Medical Education in Korea (국내 의학교육 교수개발 프로그램 현황과 과제)

  • This study aimed to investigate the current status of faculty development (FD) programs operated by medical colleges and institutions in Korea, and to suggest future-oriented directions for FD. A survey was conducted targeting medical colleges and medical education institutions that operate FD programs. We investigated the reasons for selecting topics, program themes, program operation methods, longitudinal program status, program improvement and quality control methods, the evaluation of the program effects, the outcomes and problems of the programs, and opinions on the latest trends. Twenty-nine out of 40 medical colleges and three out of six institutions responded. Topics were selected based on an analysis of medical education trends and the educational environment in both groups. The most common program themes were assessments in medical colleges, and teaching/learning and curriculum themes in institutions. FD was perceived to induce professors' and administrators' interest in medical education and improve the quality of medical education. The most common program method was workshops. Three medical colleges and one institution had longitudinal programs. Participant surveys constituted the most common method of evaluating programs' effects. Difficulties in publicizing programs and inducing voluntary participation were the most common problems in both groups. New attempts for FD were perceived as the role of external institutions. Based on the results, it is necessary to develop a framework and quality improvement indications for FD programs in the future, and FD programs are expected to be developed through new initiatives, such as longitudinal programs and those focusing on the community of practice.

Analysis of Applicability by Filter Technique for Water Level Correction of Agricultural Canal (농업용 수로부의 수위 보정을 위한 필터기법별 적용성 분석)

  • Due to the recent integrated water management policy, it is important to identify a reliable supply amount for establishing an agricultural water supply plan. In order to identify the amount of agricultural water supply, it is essential to calculate the discharge by measuring the water level and flow velocity of reservoirs and canal agricultural water, and quality control to ensure reliability must be preceded. Unlike agricultural reservoirs, canal agricultural water are more sensitive to the surrounding environment and reservoir irrigation methods (continuous, intermittent irrigation, etc.), making it difficult to estimate general water level patterns and at the same time a lot of erroneous data. The Korea Rural Community Corporation is applying a filter technique as a quality control method capable of processing large quantities and real-time processing of canal agricultural water level data, and applicability evaluation is needed. In this study, the types of errors generated by the automatic water level measurement system were first determined. In addition, by using the manual quality control data, a technique with high applicability is derived by comparing and analyzing data calibrated with Gaussian, Savitzky-Golay, Hampel, and Median filter techniques, RMSE, and NSE, and the optimal parameters of the technique range was derived. As a result, the applicability of the Median filter was evaluated the highest, and the optimal parameters were derived in the range of 120min to 240min. Through the results of this study, it is judged that it can be used for quantitative evaluation to establish an agricultural water supply plan.

  • Information technologies in higher education are the basis for solving the tasks set by monitoring the quality of higher education. The directions of aplying information technologies which are used the most nowadays have been listed. The issues that should be addressed by monitoring the quality of higher education with the use of information technology have been listed. The functional basis for building a monitoring system is the cyclical stages: Observation; Orientation; Decision; Action. The monitoring system's considered cyclicity ensures that the concept of independent functioning of the monitoring system's subsystems is implemented.. It also ensures real-time task execution and information availability for all levels of the system's hierarchy of vertical and horizontal links, with the ability to restrict access. The educational branch uses information and computer technologies to monitor research results, which are realized in: scientific, reference, and educational output; electronic resources; state standards of education; analytical materials; materials for state reports; expert inferences on current issues of education and science; normative legal documents; state and sectoral programs; conference recommendations; informational, bibliographic, abstract, review publications; digests. The quality of Ukrainian scientists' scientific work is measured using a variety of bibliographic markers. The most common is the citation index. In order to carry out high-quality systematization of information and computer monitoring technologies, the classification has been carried out on the basis of certain features: (processual support for implementation by publishing, distributing and using the results of research work). The advantages and disadvantages of using web-based resources and services as information technology tools have been discussed. A set of indicators disclosed in the article evaluates the effectiveness of any means or method of observation and control over the object of monitoring. The use of information technology for monitoring and evaluating higher education is feasible and widespread in Ukrainian education, and it encourages the adoption of e-learning. The functional elements that stand out in the information-analytical monitoring system have been disclosed.

Comparison of Quality Control for Chest Radiography between Special Examination and Medical Institution for Pneumoconiosis (진폐 정밀/요양기관과 요양기관의 흉부 방사선분야 정도관리 비교)

  • To compare of quality control for chest radiography between special examination (SEP) and medical institution for pneumoconiosis (MIP). For the first time, we had visited at 33 institutions (SEP; 17 institutions, MIP; 16 institutions) to evaluate the quality control of chest radiography which is used in diagnosis of patients with pneumoconiotic complications. Image quality was rated by two experienced chest radiologists, and evaluated for radiological technique (RT), reading environment (RE) and image quality (IQ) between SEP and MIP according to the guideline published by OSHRI. Generator capacity, used duration and modality of chest radiography equipment were not signigicant difference between SEP and MIP, but there were signigicant difference in tube voltage and grid ratio used for chest radiography except to tube current and exposure time. SEP was statistically significant higher in RT (71.2 vs. 54.5, p=0.015), RE (78.8 vs. 51.5, p=0.007) to MIP, but not significant difference in IQ (64.8 vs. 59.3, p=0.180). For reliable and precisional diagnosis of patients with pneumoconiotic complications, the MIP requires the evaluation and education of quality control for improving chest radiography.

Developing Food Safety Education Program for Employees at School Foodservice Implementing HACCP (HACCP 적용 학교 급식소의 조리종사자 대상 위생교육 프로그램 개발)

  • Objectives: This study was performed to develop a food safety education program for school foodservice employees and evaluate its effectiveness. Methods: Food safety education programs were made into two levels; one for new employees in school foodservice and another for employees in charge of Critical Control Point (CCP) monitoring. The programs were for 40-minute-long lecture using PowerPoint. The effectiveness of these programs were assessed based on eleven evaluation items by school foodservice dieticians (n=30) and the Hazard Analysis Critical Control Point (HACCP) specialist (n=13). All statistical analyses are conducted by SPSS package program (ver 20.0). Results: According to the results of evaluating the food safety education program by dietitian and HACCP specialist, the overall satisfaction score was 4.14, evaluated by 5 point scale. There were no significant difference in results of evaluation between dieticians and HACCP specialists. The score of 'it is helpful to work' and 'pictures, images and charts are pertinent to study' were higher than others while the score of 'education contents is pleasant and interesting' and 'screen is pleasant and interesting' were the lowest among all evaluation items. Conclusions: To increase the school foodservice quality, employees should be offered regular food safety education and training through effective education media including prerequisite program and HACCP manual for school foodservice.

Effect of Oral Health Education on Oral Health Knowledge, Oral Health Behavior and Oral Hygiene Status in Children from North Korea (북한이탈 학령기 아동에 대한 구강건강교육 효과)

  • Purpose: The purpose of this study was to investigate the effects of oral health education on oral health knowledge, oral health behavior, and oral hygiene status of children from North Korea. Methods: Participants were 32 North Korean children defectors (15 in the education group, 17 in the control group). The oral health education program, including theoretical training and toothbrush training, was done once a week for 4 weeks. Effects of the education program were assessed for oral health knowledge, oral health behavior, and oral hygiene status at pretest, 0, and 4 weeks after the intervention. Data were analyzed using repeated measures ANCOVA with the SAS program. Results: Children in the education group showed increased oral health knowledge and behavior over time compared to the control group and an improvement in oral hygiene status including significantly decreased S-PHP and Snyder test for oral micro-organism. Conclusion: Results indicate that oral health education is effective in improving oral health knowledge, oral health behavior and oral hygiene status. These improvements could lead to a better quality of life for North Korean children defectors.

Exploration of the Predictors of Lecture Evaluation in College of Engineering using Decision Tree Analysis (의사결정나무분석에 의한 공과대학 강의평가 예측요인 탐색)

  • In general, lecture evaluation has been used in most universities as an important criterion to evaluate quality of education. This study is exploratory research on the predictors that determine lecture evaluation in college of engineering to give practical implications for improvement of engineering education. For the exploration of predictors of lecture evaluation, the data of lecture evaluation in A College of Engineering located in the metropolitan area was used, and Decision Tree Analysis was utilized as an analysis method. As a result, the characteristics of students turned out to be the most distinct predictor comparing with those of course and instructor at lecture evaluation in college of engineering. That is, as various elements other than teaching competency influence lecture evaluation in college of engineering, it is necessary to be more careful in evaluating quality of lecture or teaching competence. Thus, a follow-up study should be conducted to adjust the influence by the predictors that instructors can hardly control.
