Microorganisms growing on Dried-Persimmon have heed isolated ana identified. Fluorescent substance were extracted from a putrefactive Dried-Persimmon after invaded Toxigenic Fungi, and compared with Aflatoxin by Thin layer chromatography and u. v. absorption spectra. The results obtained were summarized as follows: 1) Fungal invasion was frequently appeared at the beginning of storage, and after then Bacteria invasion was followed. 2) Several Genera of microorganisms (Aspergillus sp., Escherichia sp., Mucor sp., Alternaria sp., Penicillium sp. ) were observed in Dried-persimmon during storage. Aspergillus sp., one of all Genus was predominant. 3) Two strains (Aspergillus flavus Group, Penicillium citrimum Series) of 6 Fungi had Fluorescent substance, which was presumed Aflatoxin-like substance. 4) The Rf value of T. L. C. ana λ max of u. v. absorption spectra showed the same value as the standard of Aflatoxin. It is suppose that the Fluorescent substance in Dried-Persimmon is a Aflatoxin-like substance.
Two antimicrobial extracts of Rheum palmatum L. and Coptis chinesis France root as well as grapefruit seed extract(GFSE) were applied to dipping treatment for green chilli peppers, which were then packed in low density polyethylene(LDPE) films incorporated with 1% antimicrobial extracts and stored 10$^{\circ}C$. Dipping and packaging treatments suppressed the growth of putrefactive microorganisms and the duly ratio of green chilli peppers. In addition, the loss ratio of ascorbic acid content and their weight during the storage was lower with treated green chilli peppers. Consequently, the combined method of dipping and packaging in antimicrobial agents turned out to be superior to dipping treatment or film-packaging in the view point of decay ratio and the keeping qualities of green chilli peppers.
The contents in large intestine of Sprague Dawley rats fed polygalae radix(Polygala tennuifolia), onion(Allium cepa) and mugwort(Artemisia asiatica)-supplemented diets for 14 days were analysed for changes of major intestinal microflora, activities of ${\beta}-glucosidase\;and\;{\beta}-glucuronidase$ and amounts of putrefactive products such as indole and volatile basic nitrogen. The rats having ingested $5%{\sim}10%$ mugwort water or ethanol extract-supplemented diets showed a significant increase in intestinal bifido-bacteria and a decrease in clostridia and E. coli (p<0.05). And 10% onion juice group also showed a similar beneficial microflora change. In 5% mugwort powder-supplemented group, ${\beta}-glucosidase\;and\;{\beta}-glucuronidase$ activities in the intestinal contents were lowered, but the changes were not significant. Indole contents and pH in this group were significantly low compared with that of control (p<0.05). However, the activities of ${\beta}-glucosidase$ in 5% polygalae radix water extract and 10% onion juice-supplemented group and ${\beta}-glucuronidase\;in\;5%{\sim}10%$ mugwort water and ethanol extract-supplemented group were significantly higher than those of control (p<0.05). The intestinal indole contents of rats were significantly increased by feeding diet with water extract of polygalae radix and ethanol extract of mugwort which had brought comparatively large amount of protein in intestine (p<0.05). However, polygalae radix, onion, and mugwort-supplemented group had no effect on volatile basic nitrogen.

In addition, the loss ratio of ascorbic acid content of zucchinis and their weight were decreased during the storage of zucchinis. Consequently, the combined method of dipping and packaging in antimicmbial agents tumid out to be superior to dipping treatment or film-packaging in the view point of decay ratio and the quality control of zucchinis.

Prunus mume extract showed antimicrobial efface remarkably against the wide spectrum of putrefactive and food spoilage microorganisms above 250 ppm of concentration. Their thermal and pH stabilities were effective under the range of temperature $(40^{\circ}C{\sim}120^{\circ}C)$ and $pH(3{\sim}11)$. Prunus mume extract seemed to be a natural antimicrobial ideally with the view of their effectiveness and thermal & pH stabilities. In addition, their action modes suggested that their hydrophillic components would perturb the fucntions of microbial cell membranes synergistically.
Quality changes of satsuma mandarin (Citrus unshiu Marc. var. miyagawa) during storage by storage warehouse were investigated. Citrus were treated with 2000-folds diluted iminoctadime-triacetate solution and 1.5% chitosan with 0.5% CaCl$_2$ solution, and were at 30$\^{C}$ for 24 hr before storage. The citrus of about 12kg/26L plastic container were stored at room temperature, and at 4$\^{C}$ with 87% relative humidity. Decay ratio of citrus with precise temperature and humidity control were lower than the others during storage. Penicillium italicum Monilia candida Alternara citri, Mucor hiemalis, Phomopsis citri Botrytis cinerea, Phoma citricarpa Clomererella cingulata, Penicillium digitatum were identified as putrefactive microorganisms in citrus storage. Weight loss, moisture content of peel and flesh were decreased slowly during storage. 24% of original acid content were decreased at room temperature on 120 days storage, compared to 15∼18% loss on cold storage. Total sugar of citrus was decreased rapidly after 90 days, and vitamin C content were also decreased rapidly after 60 days during storage.
Optimal storage conditions were investigated for 'Fuyu' persimmon fruits and cucumbers were stored under conditions of 70% relative humidity(RH) at 25$^{\circ}C$, 80% RH at l0$^{\circ}C$ and 90% at 5$^{\circ}C$ or l0$^{\circ}C$ of relative humidity, respectively and their qualities in microbial counts, decay ratio, surface color difference and chemical attributes were monitored during the storage period. 'Fuyu'persimmon fruits and cucumbers stored under 90% of relative humidity showed the minimal change in weight loss, decrease of ascorbic acid content, surface color difference and decay by putrefactive microorganisms. As the results of this experiment, 'Fuyu' persimmon fruits and cucumberf stored under 9% of relative humidity were best fer maintaining their freshness.
Apples and pears for investigating the optimal storage conditions were purchased from the farmhouse located in Hadong-Goon and Geochang-Goon Gyeongnam just before the beginning of this experiment. Apples and pears were, stored under 70%(storage temperature : 25$^{\circ}C$), 80%(10$^{\circ}C$) and 90%(5$^{\circ}C$) of relative humidity, respectively and their qualities in microbial counts, decay ratio, surface color difference and chemical attributes were monitored during the storage period. Apples and pears stored under 70% of relative humidity showed the minimal change in weight lass, decrease ratio of ascorbic acid content, surface color difference and degrees contaminated by putrefactive microorganisms. As the results of this experiment, apples and pears stored under 90% of relative humidity showed the optimal storage conditions for maintaining their freshness.
Paeonia lactiflora Pall. was extracted with water and the Paeonia lactiflora Pall. extract (PLE) was tested for antimicrobial activities against Corynebacterium xerosis, Candida albicans, Listeria monocytogenes and Pseudomonas syringae. PLE showed pronounced antimicrobial effects at concentrations at or above 50 ${\mu}g$/mL. The activities were stable at $100^{\circ}C$ and over the pH range of 3-11. PLE may serve as a natural antimicrobial agent in food preservation. It is suggested that hydrophillic components in the extract synergistically perturb microbial membrane functions.
In order to examine the antimicrobial effect on dairy processing facilities and products, Prunus mume extinct (PME) was applied to the pilot plant system of dairy industry and yogurt, PME showed thermal and pH stability in the wide spectrum of temperature ($40{\sim}150^{\circ}C$) and pH ($4{\sim}10$) and remarkable antimicrobial activities against dairy spoilage microorganisms. As the result of aseptic treatment of dairy processing facilities with PME microbial colony including coliform bacteria was not detected canpore to those detected in the control. In the level of PME concentration which inhibit the growth of putrefactive microorganisms we could produce yogurt with good scores of sensory evaluation.
