Comparison of Proximate Composition, Mineral Nutrient, Amino Acid and Free Sugar Contents of Several Panax Species (인삼(Panax)속 식물의 일반성분, 무기성분, 아미노산 및 유리당 함량조성)

  • Chemical components of Panax (P) species were compared. p. species used were Korean white ginseng, Korean, Chinese and Japanese red ginseng (P ginseng), American and Canadian ginseng (P. quinquefolium) , and sanchl ginseng (P. notoginseng). No significant difference in the proximate contents was observed among P. species. Ash, crude lipld and total sugar contents in root of P. notoginseng were found to be relatively lower than those of P. ginseng and P. quinquefolium, but the contents of crude protein and crude fiber were similar among those ginsengs. Mineral nutrient con tents showed a little difference among ginseng species. Total nitrogen contents were slightly higher in P. ginseng than P. quinquefolium and P. notoginseng and Fe and Cu were lower in Chinese and Japanese red ginsengs. Kinds and compositions of amino acids were similar but contents of amino acids were different among ginseng species. Total amino acid contents were 76.3∼83.9 mg/g in P. ginseng 53.8∼60.4 mg/g in p. quinquefolium and 54.9 mg/g in P notoginseng. Free sugar contents were lower in P. notoginseng than P. ginseng or P. quinquefolium. Sucrose accounted for 90∼92% of total free sugar contents with relatively high content in white ginsengs, while sucrose and maltose were 32-36% and 55∼60%, respectively, in red ginseng.

Food Components of Striped Jewfish Stereolepis doederleini (돗돔(Stereolepis doederleini)의 식품성분)

  • The proximate, fatty acid and total amino acid compositions of striped jewfish Stereolepis doederleini muscle were studied. The proximate composition was: 76.4% moisture, 19.4% protein, 2.92% lipid, and 1.19% ash. The predominant total lipid fatty acids were 16:0 (18.7%), 18:1n-9 (16.5%), 22:6n-3 (16.0%), 16:1n-7 (8.53%), 20:5n-3 (7.97%) and 18:0 (5.34%). Glutamic acid (17.4%), lysine (10.6%), aspartic acid (10.4%) and leucine (8.27%) were the predominant amino acids in striped jewfish muscle. These food components of striped jewfish were similar to those of costal and reef dwelling fishes such as black rockfish, black sea bream and rock trout, which are common sliced raw fish in Korea. Therefore, these results suggest that striped jewfish may represent a new aquaculture fish species.

  • The effect of pan frying method was evaluated for proximate composition of selected fish species Pampus argenteus, Lethrinus nebulosus and Acanthopagarus arabicus which were determined by standard procedures. Proximate compositions found in the frying fillets were different to the raw fish samples. The moisture content seems to decrease in all fried samples. The reason of moisture loss at the time of frying produced is excessive protein amount in fried fish as compare to raw fish. Protein content seemed to increase in Pampus argentus > Lethrinus nebulosus and >Acanthopagrus arabicus in their particular fried form. The outcomes shown that protein content was in the ranges of 14.83-25.07 g/100g in fried samples, while the fat content was between 3.76-9.77 g/100 g. The energy content was the highest in the fried fish Lethrinus nebulosus (236 kcal/100 g), Pampus argentus (161 kcal/100 g) and Acanthopagrus arabicus (135 kcal/100 g). The information achieved in this study would be very important to fish consumers, processors and nutritionists to academically increase their awareness regarding the nutrients contents in selected fish species.

  • Leucaena leucocephala (lam. de Wit) is a multipurpose leguminous tree/shrub, promoted extensively for reforestation and rural development programmes, as well as in ruminant production. After a year of establishment in the plots, the overall leaves and twigs yield was on average 0.92 kg/plant, containing an average 23.34, 10.61, 5.32 and 10.13 percent CP, CF, and ash, respectively. The proximate and mineral compositions are affected by factors such as stage of maturity, type of cultivar, seasons, cutting intervals, different plant parts. Though leucaena contains toxic mimosine and tannins, these are not always deleterious for ruminants and rumen microbes can often degrade toxic factors into a nontoxic utilizable product Mimosine content is generally higher in the seed than other plant parts. Leucaena supplementation in ruminant ration showed higher digestibility co-efficient of proximate component, which may results in higher productivity. Considering its productivity, composition and nutritive value. L. Leucocephala could be more widely used as a protein source for ruminants in tropical and sub-tropical countries.

  • LOHAS(Lifestyles Of Health And Sustainability) drinks were prepared by the addition of mulberry leaf powder(MLP) at various levels(0%, 5%, 10% and 20%). Their characteristics of the drinks were examined according to antioxidant activity and sensory evaluation. In the sensory evaluation, there was no significant difference between the control group(0% MLP group) and 5% MLP group for overall quality. For the proximate compositions of the LOHAS drinks, moisture, crude ash, crude protein and crude fat were all increased as the ratio of MLP increased. For the mineral contents, the amounts of calcium and magnesium were increased, but sodium, according to adding levels of MLP.

  • Proximate compositions of the roots of cultured and wild Codonopsis lanceolata were examined as tile basic reasearch for the study of their source of processed foods.No significant difference in the contents was found between the wild root and thecultivated at 3$0^{\circ}C$ in biotronroom. In view of the results to have measured mineralswhich is included in 14 sorts of Codonopsis lanceolata and surveyed their distribution.12 kinds of minerals including T1, Co, Ge, Sm, Mo, Sc, Be, Cd, As, Ga, Bi, ph are ne-vel or little included in almost source. Other twenty-one sorts of minerals (Ni, Se,Ba, Sb, Si, Ti, B, Li, Ifs, Ca, Sr, Mn, Fe, Cu, Zn, p, Al, Na, V, Cr, K) are more or less in-cluded in all source and Ca, Mg, p, K, and Fe are metals that are included in large qu-entities in comparison with others. No minerals difference in the contents was foundbetween the cultivated temperature. The content of elements of inorganic metal differsaccording to the part of C. lanceolata.

Proximate, Saponin and Amino Acid Compositions in Camellia (Camellia japonica L.) Seeds and Defatted Camellia Seeds (동백종실(Camellia japonica L.)과 유박의 일반성분, 사포닌 및 아미노산 조성)

  • To furnish basic data for the utilizatin of camellia(Camellia japonica L.) seeds as a raw material of industrial products, major chemical components of camellia and defatted camellia seeds were investigated. The moisture, crude ash, crude fat and crude protein contents of camellia seeds were 4.06%, 1.83%, 65.75% and 8.44%, respectively. Defatted camellia seeds indicates that it contains 10.31% moisture, 5.28% crude ash and 17.49% crude protein while no crude fat was detected. The curde ginseng saponin, crude saikosaponin and red ginseng saponin contents of camellia seeds were 108.0mg%, 0.4mg% and 40.3mg%, respectively. Total amino acid contents of camellia seeds and defatted camellia seeds were 7,851mg% and 13,002mg%, respectively, and the major amino acids were glutamic acid, arginine, aspartic acid and leucine. The ratio of essential/total amino acid of camellia seeds was 0.29.

  • Proximate composition, reducing sugar, and mineral content of several cultivars of Rehmannia glutinosa were analyzed. the moisture and soluble solid content of fresh Rehmannia glutinosa ('Korea', 'Kokang', 'Sewon 10', 'Sewon 11' and 'Jihwang 1') were 74.6~78.4% and $19.6{\sim}22.4^{\circ}Brix$, respectively. Proximate composition of dried Rehmannia glutinosa ranged from 82.91~86.94% carbohydrate, 3.38~5.70% crude protein, 2.5~3.0% crude ash and 3.47~3.80% fiber. Sugar composition by HPLC/ELSD showed that sucrose (4.49~7.75 g/100 g), raffinose (2.96~4.78 g/100 g) and stachyose (42.36~45.87 g/100 g) were present, whereas monosaccharides were not detected in 5 cultivars of dried Rehmannia glutinosa. Mineral compositions of dried Rehmannia glutinosa by ICP-AES were Ca (639.9~782.0 ppm), Fe (128.5~634.9 ppm), Na (119~150 ppm), K (6,639.1~10,448.0 ppm), Mg (372.2~981.8 ppm) and Zn (8.8~474.2 ppm). However, Co and Mo were not detected. Among 5 cultivars of Rehmannia glutinosa, 'Kokang' and 'Sewon 10' contain higher amounts of Fe, Ca, K, Mg, Cu and Zn than the other cultivars.

  • Mulberry was dried with low temperature vacuum dryer using microwave. The nutritional compositions of microwave-dried mulberry including proximate composition, sugar content, mineral content, total phenolic, flavonoids, and anthocyanin, beta-carotene, vitamin C, and amino acid composition were measured. Sugar contents of mulberry were 42.6 mg/100g (Cheongilppong) and 43.27 mg/100g dw (Gwasang No. 2). The main components of mulberry sugars were fructose and glucose. Mineral analysis showed that K, P, Ca, and Mg were abundant regardless of mulberry cultivars.
