  • This study investigates the chemical components and biological activities in Picrasma quassioides (D.Don) Benn. extracts for the purpose of developing natural pharmaceutical products. The proximate components in Picrasma quassioides (D.Don) Benn. extracts were 81.56% of carbohydrate, 5.80% of crude fat, 7.75% of crude protein, and 2.07% of crude ash. Calcium was the most predominant mineral and followed phosphorus, potassium, sodium, and magnesium, in a decreasing order. The content of the unsaturated fatty acids, such as oleic acid, linoleic acid, and linolenic acid, was find to be higher than those of saturated fatty acids. Water and methanol extract exhibited antioxidative activity with $IC_{50}$ of $128{\mu}g/ml$ and $144{\mu}g/ml$, respectively, suggesting that the extracts are the major biological component in Picrasma quassioides (D.Don) Benn. extracts. The ${\alpha}-glucosidase$ inhibitory activity showed that methanol and water extract were the high inhibitory activity. Considering these results, water extracts of Picrasma quassioides (D/Don) Benn. showed the possibility that they can be used as a new material for natural pharmaceutical products.

  • The effect of physical properties of coal fuels and carbon particle on performance of DCFC (Direct Carbon Fuel Cell) was investigated. Shenhua and Adaro were selected as coal fuel and carbon particle was used for comparing with coal. The Ultimate, proximate, SEM, XRD, and BET analysis of samples were conducted. The component of char was more important than that of raw coal because the operating temperature of reactor is higher than devolatilization region of coal. The surface area and volume of pores affected significantly the performance of the system than content of fixed carbon or char rates. The performance of DCFC with carbon particle was in proportional to working temperature.

  • A 10-week feeding trial was conducted to investigate the effects of several yeasts with or without chemical treatment (protoplasted) in formulated diets on growth and body composition of juvenile abalone(Haliotis discus hanai). There replicate groups of the abalone average weighing 210 mg were fed one of eight isonitrogenous (30%) and isolipidic (4.4%) diets containing 3% Kluyveromyces fragilis protoplasted K. fragilis Candida utilis protoplasted C. utilis, Saccharomyces cerevisiae protoplasted S. cerevisiae or brewer's yeast. In addition these formulated diets were compared with commercial diet. Survival rate and proximate analysis of soft whole body of abalone were not significantly affected by the different dietary yeasts and commercial diet (P>0.05) Body weight gain and soft body weight control diet and diets containing S. cerevisiae or brewer's yeast (P<0.05) Shell length of abalone fed yeast and commercial diet (P<0.05) Th results suggest that protoplasted K. fragilis as an additive in this formulated diet can improve weight gain of abalone.

  • Fermented foods with probiotics having functional properties may provide beneficial effects on health. These effects are varied, depending on the type of lactic acid bacteria (LAB). Different probiotic LAB might have different functional properties. Thus, this study was performed to evaluate the quality of fermented sausages manufactured with functional starter cultures (Lactobacillus plantarum 115 and 167, and Pediococcus damnosus L12) and different fat levels, and to determine the optimum condition for the manufacture of these products. Medium-fat (~15%) fermented sausages reduced the drying time and cholesterol contents, as compared to regular-fat counterparts. In proximate analysis, the contents of moisture and protein of regular-fat products were lower than medium-fat with reduced fat content. The regular-fat products also had a lighter color and less redness, due to reduced fat content. Approximately 35 volatile compounds were identified in functional fermented sausages, and hexanal, trans-caryophyllene, and tetradecanal were the major volatile compounds. Selected mixed starter culture showed the potential possibility of replacing the commercial starter culture (LK30 plus) in flavor profiles. However, medium-fat fermented sausage containing selected mixed starter culture tended to be less acceptable than their high-fat counterparts, due to excess dry ring developed in the surface. These results indicate that the use of combinations of L. plantarum 115 and 167, and P. damnosus L12 as a starter culture, will prove useful for manufacturing the fermented sausage.

  • This study was conducted to improve the food functional and sensory food quality of Hizikia fusiforme by the fermentation of lactic acid bacteria. Seven strains of lactic acid bacteria isolated from traditional Korean fermented food were inoculated and cultivated in H. fusiforme water extract. Among them, Lactobacillus brevis LB-20, isolated from Kimchi, was selected for further study by considering the results of bacterial growth, DPPH radical scavenging activity, and sensory evaluation. No significant differences in proximate compositions (moisture, crude protein, crude fat, and crude ash) were observed by the fermentation of L. brevis LB-20. The most dramatical change was the conversion from glutamate to ${\gamma}$-aminobutyric acid (GABA) in H. fusiforme water extract fermented by L. brevis LB-20. The GABA content increased approximately 60-fold after 48 hr of fermentation. The bacterial fermentation also resulted in low-molecularization of the extract. The particle size of the fermented extract became approximately 4-fold smaller than that of the law extract. In addition, the analysis of volatile flavor compounds using GC/MS revealed that the bacterial fermentation dramatically removed off-flavors such as acetaldehyde, haxanal, diallyl disulphide and 1-penten-2-ol in the H. fusiforme extract.

  • This study was performed to determine the proximate analysis of Pleurouts eryngii and quality characterisitcs of pork cutlet sauce with added king oyster mushroom (Pleurotus eryngii). Pork cutlet sauce was prepared with different levels of king oyster mushroom powder (0, 1, 3, 5, and 7%) and stored for 21days at $25^{\circ}C$. Antioxidant activity was significantly increased by addition of king oyster mushroom powder (p<0.001). L, a and b value ignificantly increased with the increased of king oyster mushroom powder concentration. As king oyster mushroom powder concentration increased, pH value was increased and titratable acidity (%) value was decreased. pH value and titratable acidity (%) value were stable during storage period. Viscosity value and $Brix^{\circ}$ were significantly increased by addition of king oyster mushroom powder (p<0.001). The overall acceptability, sweetness and taste of the pork cutlet sauces with added 5% king oyster mushroom powder attained high scores.

  • This research was conducted in order to investigate thermal stability and nutritional value of corn lipids and proteins during thermal processing. The lipids of raw and popped corn were fractionated and analyzed by column and gas chromatography. The effect of thermal processing on corn proteins was examined by sodium dodecyl sulfate polyacrylamide gel electrophoresis (SDS-PAGE) and amino acid analysis. There was no remarkable change in proximate compositions during thermal processing. The lipid fractions obtained by silicic acid column chromatography were composed of neutral lipid(93.5%), glycolipid(3.8%), and phospholipid(2.7%), Although the thermal processing showed the increase in the ratio of unsaturated/saturated fatty acid, there was no significant differences in the lipid composition between raw and popped corn. Most of each protein fractions had lower molecular weight than 25,000 dalton and albumin fractions were distributed in the molecular weight range 11,500-94,000 daltons. Popped corn proteins did not show marked differences in their electrophoretic migrations when compared with raw corn proteins.

  • In this paper, by using D2D communications that perform direct communications among devices within small transmission range of each device without base station, we assume that a device generates and transmits data packets to other proximate devices and the devices which receive the data packets relay those to other adjacent devices. To maximize the total number of devices which successfully receive data packets, Epidemic routing protocol is considered in this paper. In Epidemic routing protocol, all devices which received data packets try to relay the packets to other adjacent devices. We assume various network environment where devices are densely distributed in specific area(crowded area). In this environment, D2D SD can be a source node and D2D devices can be relay nodes. By setting transmission range of D2D SD and D2D devices as parameters, we analyze performance results of coverage probability of Epidemic routing protocol through intensive simulations.
