Effects of Extraction Temperature of Plum(Japenese Apricote) Extract Juice by Osmosis of Yellow Sugar (추출온도가 황백당에 의한 매실액 추출에 미치는 영향)

  • Even though plum is well known as a health food, the available processed food of it is quite limited. Furthermore it is difficult to find an easy processing method for leading to a value added product at farmhouse. This study was investigated to effects of temperature for plum extract juice by osmosis of yellow sugar. The plum was mixed with yellow sugar at equal ratio(w/w) to obtain yellowish extracted plum juice and then located in incubator at 15, 25, 35$^{\circ}C$, respectively. The sugar content of extract was high at the early period but decreased throughout extraction period and it was about 66.1~67.4$^{\circ}$Brix. The color difference was increased yellowish throughout the extract period. The pH of it was decreased throughout extract processing but citric acid content was increased. The speed of extraction during extraction processing was more rapid at 15$^{\circ}C$ than 3$0^{\circ}C$. However sensory evaluation score of taste and flavour was obtained at 15$^{\circ}C$ than 3$0^{\circ}C$, so the prefer temperature for plum extract juice by osmosis of yellowish sugar was 15~2$0^{\circ}C$.

Compressive Strength Reduction Characteristics of Linerboard as Influenced by Temperature and Humidity (온도 및 습도 변화에 따른 라이너원지의 압축강도 열화에 관한 연구)

  • Compressive strength reduction characteristics of 4 different linerboards(SC, KA, SK and IK) as influenced by temperature and humidity were investigated by ring crush test. No significant effect of temperature on the reduction of compressive strength was found for samples prepared at 5$^{\circ}C$ and 30$^{\circ}C$. At the relative humidity of 66 percents, IK linerboard showed the lowest reduction of the compressive strength. At the relative humidity of 93 percents, KA linerboard lost 40 percents of its initial compressive strength while SK linerboard lost its strength up to 56 percents. The result indicated that KA linerboard was the most cost effective and material with the highest compressive strength among tested linerboards.

Effects of storage temperature on quality characteristics of texturized vegetable protein

  • This study evaluated the impact of storage temperature on the quality characteristics of texturized vegetable protein (TVP). TVP was prepared by mixing defatted Daewon soybean flour at 80℃, gluten, and corn starch in a 5:3:2 ratio, which was then extruded at a screw speed of 250 rpm and a barrel temperature of 190℃ with moisture addition at 9 rpm. Subsequently, the extruded TVP was vacuum-sealed in polyethylene packaging and stored at -20℃, 0℃, and 4℃ for 9 days. Texture analysis revealed that the curing rate followed 4℃ > 0℃ > -20℃ sequence. No significant color variation was observed across the storage conditions, although water content increased at all temperatures. Notable changes were detected in moisture absorption capacity (%) and solid leaching (%), following the order of -20℃ > 0℃ > 4℃. The turbidity of the solution released during cooking varied, with the highest to the lowest sequence being -20℃ > 4℃ > 0℃, while pH levels remained neutral. Regarding free amino acids, sweetness and textural quality improved with storage across all temperatures, whereas bitterness components diminished at 4℃. The study suggests that refrigerated storage at 4℃ is a viable method for distributing TVP, which was previously distributed only in a frozen and dry state.

  • The review was conducted to organize the desirable salting process from the literatures. In this study the principle of salting and effects of physicochemical changes in salting and salting factors such as cultivars of baechu(Chinese cabbage), concentration of salt, salting temperature, pH condition for salting and quality of kimchi were studied. The method of salting standard, treatment techniques in salting, and selection and mixture ratio of sub-ingredients were also reviewed. In future studies greater attention should be paid to salting and fermentation of kimchi.

  • Most of countries differ from their favors, in Taiwan fruit juice and sweet taste are emphasized while external appearance in Japan. During transportation, movement of the container, fluctuation of temperature, decrease of the fruit freshness and undesirable packing materials tend to decline fruit marketability. For these problems, it is believed that shortening of boarding time by utilization of plate and styro form box for packing, the author believed.

  • Spices(Tumeric, Celery-seed, Cumin, Black pepper, Coriander) were irradiated at dose levels of 0, 5, 7 and 9kGy using Co60 source and stored at room temperature. After 12 months of storage following 9kGy irradiated spice, total aerobic bacteria were significantly decreased. When the irradiation dose was 7kGy, microbial levels showed l02-103 levels. However, total lactic acid bacteria and E-coli were shown negative at below 5kGy.

  • This study was performed to investigate the optimum moisture content and the best packaging method of dried persimmons for long term storage at room temperature. The package material to be used were 0.05mm polyethylene film, Wrap film, 0.08mm LDPE film exchanged nitrogen gas, and non package for untreated control. Before the storage, the initial moisture contents of dried persimmons were treated with 40%, 35% and 30%, respectively; 40% as traditional dryness, 35% as extending dry period one more week, and 30% as for two more weeks. The best package method was 0.08mm LDPE film exchanged nitrogen gas, and the optimum moisture control was 35%

Characteristics of Red Mold Isolated from Traditional Meju (전통메주에 증식하는 붉은 곰팡이의 특성)

  • Red mold was isolated from meju prepared by traditional mtehod and characterized. The isolated red mold grew well on potato dextrose agar medium, In microscopic observation, it had a septum in mycelium and ellipsoidal spore. Optimal temperature and pH for growth were 30$\^{C}$ and 6.0, respectively. Enzyme activities such as protease, a-amylase and glucoamulase in ted mold were lower than those in Aspergillus oryzae. A competitive growth between red mold and Asp. oryzae was greatly affecten by cultivation temperature. The growth of isolated red mold on meju was predominant at below 30$\^{C}$ as compared with Asp. oryzae.

  • Although the drying times of paddies were significantly shortened by the application of higher drying temperatures, the 12, 10 and 8 hours were needed for the reduction of moisture contents from 23.55 to 15% at the temperatures of 45, 50 and 55$\^{C}$, respectively. Milling yields(MY) and rice rates(HRR) were decreased by increasing of the drying temperature. The MY ratios were 75.50, 75.42 and 75.31% and HRR were 93.28, 92.14 and 91.12% in drying temperature of 40, 50 and 55$\^{C}$, respectively. In the milling processes of tough rice with the used of a milling machine equipped with both of abrasive and friction types in a body, the reduction rates of bran and the occurrence of broken rice increased with the pressures at outlet or the recycled passing tines. In the process for humidified friction whitening of rice, it was found that the optimum addition rate of water for the best quality was the 11.2 liters per tone of white rice.

Optimum Conditions for Keeping the Fresh Quality of Shiitake(Lentinus erodes) by Low-temperature and Frozen Storage (생표고의 저온 및 냉동저장시 선도유지의 최적화)

  • This experiment was hocused on the improvement of postharvest management of fresh shiitake to increase the marketing duration. the respiration rate of fresh shiitake at 2$0^{\circ}C$ was ranged from 395mg to 551mg CO2/kg/hr depending on the cultural condition. The rapid precooling is considered as one of the most important postharsvest management to remain shiitake quality. The optimum temperature for precooling and storage was -3$^{\circ}C$ because the occurrence of physical damage on frozen tissue at below -5$^{\circ}C$. Frozen storage at -3$^{\circ}C$ had benefits to minimize weight loss, browning induction at gill tissue and consumption of stored materials where as storage at $0^{\circ}C$ appeared not to be adequite for the extension of marking duration. Frozen shiitake was succesefully thawed when exposed to RH 40-50% at below 1$0^{\circ}C$.
