일부 시판되고 있는 한과류 중 쌀유과, 깨유과 및 약과의 적정 유통기한 설정에 관한 연구 (A Study on Setting the Shelf Life of Commercial Korean Traditional Cookies: Rice Yoogwa, Sesame Yoogwa and Yackwa)

  • This study was conducted in order to set the shelf life of Rice Yoogwa, Sesame Yoogwa and Yackwa to marketed in department store. It was investigated acid value, peroxide value, microbiological test and sensory evaluation for 50 days. Acid value of Rice Yoogwa, Sesame Yoogwa and Yackwa were not significantly different during storage period. Peroxide values of Rice Yoogwa and Yackwa were significantly increased after 30 days of storage but there was no different in Sesame Yoogwa. Fungus were appeared Sesame Yoogwa of A company, Rice Yoogwa and Yackwa of B company after 40 days of storage. In sensory evaluation, odor, taste, texture and overall acceptability after 40 days were significantly lower than 10 days of storage and rancid odor was gradually increased with preservation period in all materials. Correlation of acid value and peroxide value were positive throughout whole preservation period and rancid odor was increased. Odor, taste, texture and overall acceptability of Yoogwa and Yackwa were negative correlation with preservation period. In view of the above results, it came to the conclusion that shelf life of Yoogwa and Yackwa was 40 days.

CiteSpace 적용을 통한 디지털 보존 지식영역 비주얼화 연구 (A Study on Visualization of Digital Preservation Knowledge Domain Using CiteSpace)

  • 디지털 보존 주제분야를 중심으로 지식영역 비주얼화(knowledge domain visualization)를 시도하였다. 분석을 위한 데이터는 1990년부터 2005년까지의 기간 동안의 Web of Science DB를 중심으로 총 74건의 문헌을 추출하여 활용하였다. 지식영역 비주얼화를 위하여 사용한 툴은 서지DB를 중심으로 비주얼 데이터마이닝 결과를 제공하는 Java 어플리케이션인 CiteSpace이다. 분석 결과, 디지털 보존 분야의 핵심적인 지식 영역은 최신정보기술을 중심으로 한 디지털 보존전략, 정보네트워크와 보존시스템, 전자정부와 지식관리의 세 영역인 것으로 나타났다.

마늘의 열풍건조 특성 (The Convective Drying Characteristics of garlic(Allium sativum L.))

  • We examined the drying characteristics and the drying rate model equation of garlic(allium sativum L.) using computer aided convective drying. The drying chanacteristic curve of garlic divided into constant rate drying period and 2 stage of falling rate drying period. The drying rate was fairly affected by hot air temperatures during the total drying period, but air flow rates has nearly no effect on the drying rate except initial drying period. Of the several model equation, r2 values of page model equation was the highest, and the estimated drying profiles were comparatively coincided with the observed drying profiles. Page model equation was suitable to predict the drying rate and moisture content during drying of sliced garlic.

The Japanese Government-General of Korea: A Hermeneutic Understanding of the Effects of Historic Preservation from a Western Perspective

  • This paper investigates the characteristics of preservation of Korean modern architecture through Western historic preservation theories and philosophies. This research focuses on the Japanese Government-General of Korea (1926-1995) which was built in 1926 and used as the chief administrative building in Seoul (Keijo in Japanese) during the Japanese colonial period (1910-1945). After Korea was liberated from Japanese rule in 1945, this building was used until 1995 for the South Korean National Assembly, the United States Army Military Government in Korea, and the National Museum of South Korea. Although it served a variety of roles, this building was the most controversial case of historic preservation in Korean modern architecture. To analyze the peculiarities and characteristics of Korean modern architecture and its preservation, this research applied Western historic preservation theories, not exclusively from classical historic preservation theories developed by Viollet-le-Duc and John Ruskin, but also from modern historic preservation theories by Theodore H. M. Prudon, Daniel Blunstone, and Frances A. Yates. This cross-cultural and comparative study of historic preservation helps identify Korean modern architecture's characteristics. It can also be a useful reference in finding the origins of Korean modern architectural identity.

성견의 연속 양측 폐이식을 이용한 폐보존 평가 연구 (Evaluation of Lung Preservation by Using of Canine Bilateral Sequential Lung Tranplantation)

  • Background: Numerous studies of safe, long term preservation for lung transplantation have been performed using ex vivo models or in vivo single lung transplantation models. However, a safe preservation time which is applicable for clinical use is difficult to determine. We prepared LPDG solution for lung preservation study. In this study we examined the efficacy of LPDG(low potassium dextran glucose) solution in 24-hour lung preservation by using a sequential bilateral canine lung allotransplant model. Material and Method: Seven bilateral lung transplant procedures were performed using weight-matched pairs(24 to 25kg) of adult mongrel dogs. The donor lungs were flushed with LPDG solution and maintained hyperinflated with 100% oxygen at 1$0^{\circ}C$ for a planned ischemic time of 24 hours for the lung implanted first. After sequential bilateral lung transplantation, dogs were maintained on ventilators for 3 hours: arterial resistance were determined if the recipients hourly after bilateral reperfusion and compared with pretransplant-recipient values, which were used as controls. After 2hours of reperfusion, the chest X-ray, computed tomogram and lung perfusion scan were performed for assessmint of early graft lung function. Pathological examinations for ultrastructural findings of alveolar structure and endothelial structure of pulmonary artery were performed. Result: Five of seven experiments successfully finished the whole assessments after bilateral reperfusion for three hours. Arterial oxygen tension in the recipients was markedly decrased in immediate reperfusion period but gradually recovered after reperfusion for three hours. The pulmonary artery and pulmonary vascular resistance showed singificant elevation(p<0.05 versus control values) but also recovered after reperfusion for three hours(p<0.05 versus immediate period value). The ultrastructural findings of alveolar structure and endothelial structure of pulmonary artery showed reversible mild injury in 24 hours of lung perservation and reperfusion. Conclusion : This study suggests that LPDG solution provides excellent preservation in a canine model in which the dog is completely dependent on the function of the transplanted lung.

일제강점기 문화재 법제 연구 - 「조선보물고적명승천연기념물보존령(1933년)」 제정·시행 관련 - (A Study of the Cultural Legislation of Historic Properties during the Japanese Colonial Period - Related to the Establishment and Implementation of the Chosun Treasure Historic Natural Monument Preservation Decree (1933) -)

  • 「보존령(1933년)」은 식민지 조선의 문화재 보존에 관한 기본 법령으로서 앞서 시행된 일본의 근대 문화재 법제인 「고사사보존법(1897년)」, 「사적명승천연기념물보존법(1919년)」, 「국보보존법(1929년)」 등의 영향을 받았으며, 실제 그들 법령의 해당 법조문을 원용하였다. 이로써 「보존령」이 조문 구성에 있어서 일본 근대 문화재 법제를 이식 또는 모방하였다는 사실은 어느 정도 입증된다고 할 수 있다. 「보존령」의 주요 특징과 성격을 요약하면 다음과 같다. 첫째, 문화재 보존 측면에서 볼 때, 「보존령」은 기존 「보존규칙」보다 보존을 강화하고 확대하였다. 「보존규칙」에서는 문화재 범주를 고적과 유물로 한정했으나 「보존령」에서는 보물, 고적, 명승, 천연기념물 등 4가지로 문화재를 분류하였다. 또한 「보존령」은 문화재 보존 기준을 설정하고 문화재 범위를 확대하였으며, 소유권 제한에 대한 명시적 규정과 문화재 지정제도를 도입함과 동시에 국고 보조 지원 근거를 규정함으로써 문화재 보존 법제로서 진일보한 것으로 평가된다. 둘째, 그러나 「보존령」은 식민지 문화재 법제로서 한계를 가지고 있었다. 「보존령」 제1조에서 보물의 지정 기준으로 "역사의 증징(證徵) 또는 미술의 모범"이란 기준을 설정하였으나 이 기준은 일제의 관점에서 총독부의 동화정책에 입각하여 문화재를 취사선택하는 기준으로 작용하여 문화재 보존 기준으로서 한계를 드러내었다. 또한, 일제는 「보존령」의 시행으로 문화재 법제가 완비되어 문화재 도굴이 감소하였다고 평가하였으나 「보존령」 시행 이후에도 도굴과 밀매매 그리고 일본으로의 반출 등 문화재 약탈과 반출은 끊이지 않았다. 이것은 일반적인 도굴과 밀매 외에도 법령을 준수하고 수호해야 할 총독과 총독부 관료들이 약탈과 반출의 당사자가 되거나 그들의 묵인하에 일본인들에 의한 문화재 약탈과 반출이 지속적으로 자행되었기 때문이다. 이는 당시 문화재 법제가 총독부가 허용한 또는 묵인한 반출과 약탈에는 법적기능을 제대로 발휘하지 못했다는 사실을 알려 준다. 이처럼 일제강점기의 문화재 법령은 문화재 지정과 보존에 있어서 총독부의 시각에서 선택되고 적용된 식민지의 차별적 법제였으며, 일제의 문화재 정책 또한 그들의 동화정책을 실현하는 수단으로 문화재를 이용하는 데 초점이 맞춰졌다. 따라서 일제강점기 문화재 법제는 일제의 조선에 대한 문화적 식민 지배 체제를 공고히 하고 총독부의 동화정책을 실현하는 기제로 활용되었다고 할 수 있다.

수확한 포도의 선도유지를 위한 항균성 포장필름 (Antimicrobial Packaging Films for the preservation of Harvested Grapes)

  • To develop a wrapping film, which suppresses the microbial decay through the storage and distribute of greenhouse fresh produce, the antimicrobial packaging films were made and applied to the preservation of grapes(Campbell early). For the purpose the films were made by adding 1% grapefruit seed extract(GFSE) to LDPE film(Control). Graps were separately wrapped with packaging films in the state of closely-adhered packaging as well as modified atmosphere packaging(MAP). The wrapped grapes were stored at 5$^{\circ}C$ for 65 days and then the colony count of contaminated microorganims, decay ration of grapes, the gas component within the packages and chemical qualities were investigated. The antimicrobial film packaging showed the efficient results to suppress microbial growth as compared with control. The total number of containated microorganisms were decreased gradually through all the storage period. In the closely-adhered packaging and MAP the decay ratios of grapes was 31% and 19%, indivisually. After the storage period of 65 days, the interior gas components of MAP were 4.5% of O2 and 17.6% of CO2, which were efficient for the storage of grapes. In addition, no negative effects in sweetness and acidities occurred.

EFFECT OF UREA ON WET RICE STRAW FOR PRESERVING ITS KEEPING QUALITY AND NUTRITIVE VALUE IN CATTLE DIETS

  • About 8 million tons of straw (dry matter) become rotten during the monsoon(June to August) season in Bangladesh. The possibility of preserving straw with urea, under wet condition during dry period (December to May) and its utilization by cattle has been studied. Five tons of fresh and wet(600g DM/kg material) rice straw were preserved for six months, with 5% urea(W/W) in either dome or rectangular shaped heap without any polythene cover. The preservation quality, acceptability and nutritive value of preserved straw were then comparted with that of dry straw in growing cattle. In both types of heaps, straw was excellently preserved having strong ammonia smell,dark brown in colour with no fungal infestation. Urea preservation of straw increased its CP and ADF content. Preserved straw was readily accepted by the animals and they were healthy throughout the experimental period. Compared to dry straw, urea preserved straw had nonsignificantly higher rumen degradability, straw intgake and growth rate. Similarly, digestibilities of DM(p<0.01), OM(p<0.01) & ADF(p<0.01) were significantly higher in the preserved than the dry straw. It was concluded that wet straw with relatively lower moisture(400 to 500 g/kg straw) content can be readily preserved by using urea without being covered with polythene. Whether the same phenomenon occurs in the preservation of fresh and weet rice straw with relatively higher moisture(600 to 700 g/kg straw) content is yet to be determined.

저장기간에 따른 동결채소의 품질 변화 (Changes in the quality of frozen vegetables during storage)

  • 본 연구에서는 동결채소의 저장 중 품질 변화를 측정하여 동결채소의 장기저장 가능성과 이용 가능성을 모색해 보고자 하였다. 수확직후 여러 가지 채소는 선행실험을 통한 최적 조건에서 blanching 처리한 후 $-40^{\circ}C$에서 24시간 동안 급속동결시켜 $-20^{\circ}C$에서 저장하면서 분석하였다. 동결시킨 취나물, 콩나물, 얼갈이배추, 애호박 및 대파는 저장 기간 12개월 동안 색도의 증가와 감소가 크게 나타나지 않았다. 취나물, 애호박 및 대파의 경도는 저장기간 동안 비슷한 수준을 유지하였고, 얼갈이배추는 약간 증가하는 경향을 나타내었다. 반면에 콩나물의 자엽부와 배축부는 저장 6개월째에 경도가 큰 폭으로 증가하는 경향을 나타내었다. 저장기간 동안 취나물의 총균수는 $10^3$ CFU/g 수준을 콩나물, 얼갈이배추, 애호박 및 대파는 $10^2$ CFU/g 수준을 유지하였으며, 대장균군은 모든 시료에서 검출되지 않았다. 관능검사는 외관, 색, 이취, 조직감 그리고 맛 등의 전반적인 품질 요소들을 종합하여 전체기호도를 조사한 결과 5점을 marketable의 한계점으로 두었을 때 저장기간에 따른 동결채소의 상품성에는 큰 문제가 없는 것으로 나타났다. 따라서 동결 취나물, 콩나물, 얼갈이배추, 애호박 및 대파는 동결저장 12개월까지 저장 안전성이 있는 것으로 판단된다.
