보양식에 대한 인지도 및 선호도 (Recognition and Preference of Korean Traditional Boyangsik)

  • The purpose of this study was to analyse the recognition and preference level associated with the preservation of Korean traditional health food. Self-administered questionnaires were collected from 289 individuals. The data was statistically analysed using I-test as well as the one-way analysis of variance (ANOVA). We studied whether or not respondents had the constitutional cuisine before Ed-comments : Please complete the sentence. Before what?. Twenty-two kinds of Korean traditional foods were randomly selected based on old cookbooks, and then recognition and preference of Korea traditional constitutional cuisine were asked. The tasting experience in the constitutional cuisine affected recognition and preference significantly. The coefficients of recognition and preference were the highest in Junbokjoog ($4.20{\pm}1.00$), Yookgejang ($4.18{\pm}1.03$), Jangagui ($4.05{\pm}1.17$), Origui ($3.97{\pm}1.19$) and Samgeitang ($3.94{\pm}1.15$). Bosintang ($1.81{\pm}1.60$) showed a low preference compared to high recognition, and was therefore considered to be enthusiasts' cuisine only. It is believed that promoting the greater awareness of Korean traditional constitutional cuisine through the mass media would result in a higher recognition and preference of the same.

  • One of the most important objectives that apparel company will pursue in 21 century is to achieve the critical factors of the sustainability. The concept of sustainability is to meet the demands for the valuable life of contemporary generation and to satisfy the desires for preservation of the species and the productive life of future generation by protecting the earth environment from the waste and pollution and by developing and maintaining harmoniously main economical, social, environmental and cultural factors. The practice of sustainability was focused only on the environmental factors in past. Now, the effective and efficient practice of sustainability should be fulfilled and executed in social factors of the responsibility company has, in economical factors and in the cultural factors that is the critical in fashion industry. The purpose of the study is to develop the practical framework consisting of four sustainable factors which apparel brand should refer and apply to the practice of sustainability. By executing the practical factors of the frameworks, apparel company can take a lot of advantages. By practicing the environmental factors, company can get Eco-efficiency. Apparel company can take the social responsibility by performing social sustainable factors, can make economical quality growth by fulfilling economical sustainable factors, and can understand cultural diversity by executing cultural sustainable factors. As one of the most important preparation in 21 century industry, the apparel brand should have an interest in and require the practical management of sustainability, objective setting and practice of brand unit, reflection on the sustainability in brand planning.

  • 본 논문에서는 "Co-word" 특허분석방법과 "기술로드맵(technique road-map)" 그리고 특허활성화 라이프 사이클그래프 및 추세분석을 활용하여 ITS(Intelligent Transportation System)의 미래녹색기술에 대해 예측한다. 분석 결과 미래의 ITS 녹색 기술 분야의 발달로 탄소배출 절감 효과가 발생하기 때문에 환경 보호에 도움을 줄 것으로 예측 되었으며, 미래의 ITS 녹색 기술은 fuel saving 분야에 대한 성장이 클 것으로 예상되었다. 또한 fuel saving 분야는 미래의 IT 기술과의 융합으로 인해 더욱 실용적인 기술 분야로 발전할 수 있을 것으로 예측 되었다.

관광호텔 조리사의 표준 원가제도에 관한 인지와 실태분석 -서울시 관광호텔 조리사를 중심으로- (A Study on Cooker's Recognition and Real Attitude abut Standard Cost System)

  • The purpose of this study is to analyze the cooker's regnition and real attitude abut standard cost system who are engazing in hotel restaurants in Seoul area. The sample was consisted of 307 cookers(male ; 82.7%, female ; 17.3%_ and the used method in analyzing is surveying method and statistical analysis(SPSS PC Package ; Version 3.0). The results of this study are summarized as follows ; 1. Standard cost system, mass purchase and proper recipe were presented in order to economize on real cost and the purchase and preservation of food were presented as important control factor to econimize cost. 2. Most coolers were recognizing the necessity of standard cost system and they relyed the purpose of standard cost calculation on standard cost control. They also thought standard cost accounting information system as good method to economize cost and they were favorable abut the usage of computer in improving working ability. 3. Most of cookers(80%) wanted to be independant restaurant manager and they were favorable Korean restaurant and Western restaurant. 4. The cookers represented the oder of importance by nutrition, preferance of food, economy in composing cooking menu and by taste, odor, variety, decoration in cooking.

  • Rural information sector is a strategic planning of agriculture in 21st century for the advancement of agricultural competive power and quality of life to farmers. In order to advance the agricultural competency and quality of life, firstly, it is necessary that rural information sector should focus on the foundation of agriculture and rural information. Secondly, it should construct an area of function and item in application systems. Thirdly, it must Improve to culture of agriculture and rural information. It should be able offer a variety of educational information to help build a recognition and accommodation of value of agricultural information. The agriculture and rural information sector is so desirable that an organization should take exclusive responsibility to maintain the public property of it and to guard it from variable pressure groups. Therefore, to the uninformed mind, it is desirable to build and nurture KICAFF(Korea Information Center for Agriculture, Forestry & Fisheries) which is empowered in the information business- instead of the government. This is necessary for agricultural information system preservation because law and institution corresponds with role and function of the information/education system.

  • We compared the texts of the two types of military books, 『Mubiji』 and 『Yungsalyujeom (戎事類占)』. In this research, it is proved that Lee-Jema transcribed a segment on martial mantic in 『Mubiji (武備志)』 which is a book on military studies and named it 「Jipungjo (知風兆)」 since he had practical interest in military affairs. Lee-Jema had been serving as a military officer when his peculiar thought was beginning to unfold and maintained his interest in military affairs until his latter years. It is necessary to take a military studies based approach to comprehend Lee-Jema's thought since military affairs had great influence on his life.

감마선 조사에 의한 우육의 저장에 관한 연구 (Studies on the Preservation of Raw Beef by Gamma Radiation)

  • 진공포장과 극저온에서의 중선량조사가 우육의 저장성 및 육색에 미치는 영향을 연구하기 위해 aluminum foil로 진공포장하고 0.25 Mrad와 0.5Mrad로 조사한 후 $5^{\circ}C$에서 저장했다. 저장 중 우육의 신선도와 육색소의 변화를 경시적으로 측정했다. 우육의 shelf life는 0.5Mard조사로써 비조사육보다 약 10일간 연장되었고 조사취는 나지 않았다. 또한 육색소도 방사선조사에 의하여 약간의 퇴색을 초래했으나 곧 회복되어 약 20시간 후에는 90%의 Mb을 나타냈다.

  • As modern society develops, it becomes very complex and diverse, and interests in the convenience of life and the natural environment are gradually increasing. Products used in our daily life are also changing according to the needs of consumers, and food packaging is one of them. In particular, retort packaging materials have been used for the purpose of long-term preservation of contents, but the appearance of products suitable for recent environmental issues has been somewhat delayed. Therefore, in order to develop eco-friendly and human-friendly products by replacing the metals used in the existing retort packaging materials, the possibility of substitution was examined using cellulose nanofibers, a natural material. As a result, it can be seen that all functions can be replaced according to the existing long-term storage characteristics for retort packaging films. In particular, not only oxygen permeability and water vapor permeability, which are one of the most important factors, but also heat resistance, which is heating durability, is evaluated as applicable to commercialization compared to products using metals currently in use.

  • In recent years, nanotechnology has revolutionized global healthcare and has been predicted to exert a remarkable effect on clinical medicine. In this context, the clinical use of nanomaterials for cancer diagnosis, fertility preservation, and the management of infertility and other pathologies linked to pubertal development, menopause, sexually transmitted infections, and HIV (human immunodeficiency virus) has substantial promise to fill the existing lacunae in reproductive healthcare. Of late, a number of clinical trials involving the use of nanoparticles for the early detection of reproductive tract infections and cancers, targeted drug delivery, and cellular therapeutics have been conducted. However, most of these trials of nanoengineering are still at a nascent stage, and better synergy between pharmaceutics, chemistry, and cutting-edge molecular sciences is needed for effective translation of these interventions from bench to bedside. To bridge the gap between translational outcome and product development, strategic partnerships with the insight and ability to anticipate challenges, as well as an indepth understanding of the molecular pathways involved, are highly essential. Such amalgamations would overcome the regulatory gauntlet and technical hurdles, thereby facilitating the effective clinical translation of these nano-based tools and technologies. The present review comprehensively focuses on emerging applications of nanotechnology, which holds enormous promise for improved therapeutics and early diagnosis of various human reproductive tract diseases and conditions.

한국산 파프리카의 품종별 화학성분 (Chemical Components of Korean Paprika According to Cultivars)

  • 한국산 파프리카의 품종별 성분분석을 통하여 식품 재료로서의 활용 및 가공품 제조를 위한 기초자료로 활용하기 위하여 화학성분을 분석하였다. President, Special 및 fiesta 품종에서 가용성 무질소물이 각각 6.64, 6.22 및 $6.01\%$로 나타났으며, 조지방과 조섬유의 함량은 세 가지 품종 모두 유사하게 나타났다. 파프리카에 함유되어 있는 주요 무기 성분으로는 $K(83.41\~152.98 mg\%),\;Mg(28.66\~39.46mg\%)$$Mn(10.34\~18.96\;mg\%)$이었으며, 세 가지 품종중 Special과 Fiesta 품종보다 President품종에서 K함량이 높게 나타났다. 파프리카의 주요 유리당은 glucose$(1.36\~1.45\%)$와 fructose$(0.06\~1.53\%)$로 나타났다. 파프리카의 품종별 총 아미노산 함량은 Special 품종 $1,168.08\;mg\%$, President 품종 $1,112.97\;mg\%$ 및 Fiesta 품종 $874.79\;mg\%$로 나타났으며, 파프리카의 주요 아미노산은 lysine, aspartic acid및 glutamic acid였다. 파프리카에 많이 함유되어 있는 유기산으로는 tartaric acid$(2.34\~4.32\;mg\%)$, succinic acid$(2.01\~2.42\;mg\%)$ 및 malic acid$(0.67\~1.72\;mg\%)$로 나타났다. 파프리카는 8종류의 지방산이 동정되었으며, 주요지방산은 stearic acid$(15.11\~34.68\%)$와 linoleic acid$(32.12\~60.36\%)$로 나타났다. 비타민 C 함량은 Special 품종 $263.45\;mg\%$, President 품종 $284.24\;mg\%$ 및 Fiesta 품종 $206.34\;mg\%$로 나타났으며, 총 페놀 및 카로테노이드 함량은 Special과 Fiesta 품종보다 President 품종에서 가장 높은 함량을 나타내었다.
