나트륨 섭취 경감을 위해 패각칼슘과 트랜스글루타미나아제를 첨가한 닭고기 패티의 품질 및 저장 특성 (Quality and Storage Characteristics of Chicken Patties with Added Shell Calcium and Transglutaminase to Reduce Sodium Intake)

  • 닭고기 패티에 소금함량을 줄이며 칼슘을 강화하기 위해 패각칼슘분말(SCP)을 첨가하며, 물성을 개선하기 위해 트랜스글루타미나아제(TG)를 첨가했을 때 나타나는 영향을 확인하기 위해 첨가하는 소금과 SCP, TG의 함량을 달리한 5개의 처리구(CON, 소금 2%; T1, 소금 0.75% + SCP 0.2%; T2, 소금 0.75% + SCP 0.2% + TG 0.2%; T3, 소금 0.5% + SCP 0.4%; T4, 소금 0.5% + SCP 0.4% + TG 0.2%)를 제조하여 패티의 육질특성 및 저장성을 비교 분석하였다. 닭고기 패티에 소금 첨가량을 낮췄을 때 회분 함량이 감소했으며 가열감량이 증가했다. 그리고 SCP와 TG를 첨가할수록 pH가 상승하였다. 소금, SCP, TG의 첨가량에 따른 육색의 변화는 없었으며, TG 없이 소금 0.5%와 SCP 0.4%를 첨가했을 때 경도와 씹음성이 감소했다. 소금을 0.5%로 줄이며 SCP 0.4%를 첨가했을 때 관능적으로 다즙성이 떨어진다는 평가를 받았지만 전체기호도를 포함한 나머지 관능평가항목에서는 차이를 보이지 않았다. 소금의 첨가량은 닭고기패티의 TBARS 결과에 영향을 주지 않았지만, 소금을 적게 첨가할 시 미생물 오염에 취약해질 수 있다는 결과를 보였다. 이를 통해 닭고기 패티에 소금을 줄이면서 SCP를 첨가하는 것은 관능적으로 큰 영향을 주지 않지만, 소금을 0.5% 이하로 첨가 시 패티의 물성에 부정적인 영향을 줌으로 TG의 첨가를 고려해야 한다. 또한 소금 첨가량이 감소할 시 미생물로 인한 저장성에 취약해지므로 제조 시 이에 대한 추가 첨가물을 고려해야 할 것으로 판단된다.

맞춤형 영양교육이 철결핍성 빈혈환자의 임상 지표 및 영양섭취 상태에 미치는 효과 (Effects of Custom Nutrition Education on Dietary Intakes and Clinical Parameters in Patients Diagnosed with Iron Deficiency Anemia)

  • This study examined the effects of custom nutrition education on dietary intakes and clinical parameters in patients diagnosed with iron deficiency anemia. A total of 34 patients visited the anemia clinic of Yeouido St. Mary's Hospital. Among these, only 16 patients were available for follow-ups. A follow-up was conducted by a clinical dietitian 2 months from the first nutrition education session. Patients were all women. For custom nutrition education, we investigated anthropometric data, dietary assessment (24 hr-recall, FFQ), and self-recognized anemic symptoms. Weight did not show a significant difference but hemoglobin, hematocrit (P<0.01), serum iron, and serum ferritin (P<0.05) were significantly increased after the nutrition education. Serum total iron binding capacity was significantly decreased (P<0.01). Self-recognized symptoms such as dizziness, fatigue (P<0.001), shortness of breath, headache (P<0.01), brittle nails, and sore tongue (P<0.05) were significantly improved. Daily intakes of protein (P<0.05), total iron (P<0.01), and animal iron (P<0.001) were significantly increased. A significantly negative correlation was observed between current serum iron and the intake of carbohydrates, fat, or phosphorus (P<0.05). But current serum ferritin showed a significantly positive correlation with the frequency of intake of meat, poultry, and fish. It could be concluded that the custom nutrition education might be effective on quality of diet as well as iron status and it might also improve the clinical parameters in patients diagnosed with the iron deficiency anemia.

Effects of Dietary Crude Protein on Growth Performance, Nutrient Utilization, Immunity Index and Protease Activity in Weaner to 2 Month-old New Zealand Rabbits

  • An experiment was conducted to determine the effects of different dietary crude protein (CP) levels on growth performance, nutrient utilization, small intestine protease activity and immunity index of weaner to 2 month-old New Zealand rabbits. Eighty weaner rabbits were allocated in individual cages to five treatments in which they were fed diets with CP at 14%, 16%, 18%, 20% and 22%, respectively. The growth performance and nutrient digestibility of rabbits increased firstly when dietary CP increased, then decreased. The average daily gain was the highest and feed conversion rate was the lowest when dietary CP reached 20%, namely 34.9 g/d and 2.74:1, respectively. Maximum CP digestibility was 72.1% in the 18% CP group, maximum crude fiber digestibility of 28.4% occurred in the 16% CP group and was significantly different from other treatments (p<0.01), apparent digestibility of Lys and Val followed the same trend as CP digestibility, and reached their maximum when dietary CP was 18%. Apparent digestibility of Cys, Tyr, Leu and Thr also had a similar trend to CP digestibility. Nitrogen retention (RN) increased with CP level (p>0.05), and was highest for 20% CP treatment (1.5 g/d). The effect of CP level on the rate of digestible nitrogen (DN) converted RN was small. The spleen index, thymus index, chymotrypsin and trypsin activities in small intestine were highest when dietary CP was 16%, which were 1.0, 2.8, 15.7 U/g and 125.7 U/g, respectively. There was no significant difference among treatments (p>0.05). According to the above results, the appropriate dietary CP level from weaner to 2 month-old meat rabbits was 18-20%.

성인 남자의 혈청지질 유형 별 일반환경 및 식이요인 비교분석 (A Comparative Analysis on the Environmental and Dietary Factors in Korean Adult Males Classified by Serum Lipid Profiles)

  • The purpose of this study was to investigate the distribution patterns of serum triglyceride and cholesterol levels and the influence of environmental and dietary factors in 201 healthy male subjects. The subjects were found to be 53.7% for the normal, 15.4% for the TC, 17.4% for TG and 13.5% for TC.TG group, respectively. Among general characteristics, smoking significantly affected serum lipid levels of subjects (p < 0.05). Among anthropometric factors, body weight, BMI and PIBW significantly influenced the blood lipid patterns. Body weight of TG group was significantly higher than that of normal group (p < 0.05). BMI and PIBW of TG group and TC.TG group were significantly higher than those of normal group (p < 0.05) . In addition, diastolic blood pressure of TG group was significantly higher than that of normal group (p < 0.05). For the food intake, average intake of fruit was significantly higher in normal group than that of TG group (p < 0.05). For nutrient intake, calcium intake was significantly higher in TC group than those of normal and TC.TG group (p <0.05). Intakes of vitamin $B_2$ and C were significantly higher in TC group than those of in TG group (p < 0.05). Serum HDL-cholesterol level was negatively related to meat, poultry, and their products (p <0.05), but serum total cholesterol level positively related to animal lipids (p < 0.05). The results of this study suggest that it is crucial for maintaining adequate serum lipid levels to reduce smoking, blood pressure and to lose body weight. As far as food intake concerned, fruit intake was important in maintaining serum triglyceride level normal, while animal food intake affected serum total cholesterol level adversely. 한국인 상용 식품의 아연함량표를 보완하여 평가한 한국농촌성인의 아연 섭취 실태 (Supplementation of Zinc Nutrient Database and Evaluation of Zinc Intake of Korean Adults Living in Rural Area)

  • This study was conducted for two purposes ; (1) to develop a database for zinc levels in commonly usef Korean food items ; and (2) to calculated the zinc intake fo Korean adults living in a rural area. The currently used Korean food compositinotable was supplemented in term sof zinc content using several methods ; (1) analyzing 98 Korean Food items frequently consumed by Korean adults living in rural area. ; (2) adapting values from U.S Minnesota for 71 items ; and (3) imputing values from similar food for 282 items. A new zinc nutrient databse was constructed including zinc contentrs of 1,195 food items. Zinc intake of rural Korean adults was estimated by a 240hours recall method from 2 ,037 adults over 30 over 30years of age in Yeonchon -gun , Kyunggi province of Korea. Mean daily zinc intake of all subjects was 61mg an dmean intake level of males (7.0mg/day, 46.85 of RDA) was significantly thigher than females(5.2mg/day, 43.0% of RDA). Subjects in their 40's had the highest zinc intak ewhile those over 70 years of age consumed the least amount of zinc. The food group that contributed most to the dietary ainc intake of subjects was cereals and grain products supplying 38% of total zinc intake. The next most important group for zinc intak ewas the meat, poultry , and product group supplying 26% ot total intake. This group was followed by fishes and shellfishes, legumes and their products, and vegetales . For individual food items , reicecontribued most, supplying 27% of total zinc intake follwoed by beef(10%) and prok(9%) . Altogether, plant foods supplied 68% of zinc intake suggesting that the bioabailability of dietary ainc is low. In conclusion, these results show ethat the zinc intake of rural Korean adults is low and that sources of dietary zinc are mainly plant foods, suggesting low bioavailability . Further studies are needed to determine zinc intake and status of Korean population. The zinc database developed in this study will be very valuable for such studies.

Dietary Molar Ratios of Phytate : Zn and Phytate $\times$ Ca : Zn for Zn Nutrition Assessment in Koreans

  • Zinc nutriture in South Koreans was evaluated by estimating Zn, Ca, and phytate intake, and the molar ratios of phytate : Zn and the millimolar ratios of phytate $\times$ Ca Zn. food consumption data from the 95 National Nutrition Survey was used. For the present study, data from the nationwide, large city and urban area level were used. No standard deviation measures were provided in the 95 National Nutrition Survey : only mean values were reported. Nationwide daily intake of Zn and Ca were 10.1 mg/day and 426.5 mg/day, respectively. The estimated daily phytate intake was 1676.6 mg/day nationwide. The molar ratio of phvtate : Zn, the millimolar ratio of phytate $\times$ Ca : Zn and the phytate $\times$ Ca Zn mmol per 4.2 MJ (1000 kcal) were 15.9, 168.9 and 91.8 in nationwide, respectively. The major food groups for zinc intake were meat, poultry products (43%), and cereals and grain products (18%). Sixty two percent of Zinc was from animal food sources. Cereal and grain products supplied most of the phytate intake (46%), followed by seasonings, fruits, and legume products. The major food source of phytate was rice (39%) . The results of the present study suggest that Zn status of Koreans maybe influenced by high dietary intake of phytate and high molar ratios of phytate : Zn and phytate $\times$ Ca : Zn. These results raise concerns about Zn status of Koreans, who consume a diet higher in phytate than Western diets. further research is necessary to confirm whether such poorly available dietary Zn has any impact on the health of Koreans.

Diet and Physical Activity in Relation to Weight Change among Breast Cancer Patients

  • Background: This study aimed to provide an overview of lifestyle changes after breast cancer diagnosis and to examine the relationship between dietary and physical activity changes with weight changes in breast cancer patients. Women with breast carcinomas (n=368) were recruited from eight hospitals and four breast cancer support groups in peninsular Malaysia. Dietary and physical activity changes were measured from a year preceding breast cancer diagnosis to study entry. Mean duration since diagnosis was $4.86{\pm}3.46$ years. Dietary changes showed that majority of the respondents had decreased their intake of high fat foods (18.8-65.5%), added fat foods (28.3-48.9%), low fat foods (46.8-80.7%), red meat (39.7%), pork and poultry (20.1-39.7%) and high sugar foods (42.1-60.9%) but increased their intake of fish (42.7%), fruits and vegetables (62.8%) and whole grains (28.5%). Intake of other food groups remained unchanged. Only a small percentage of the women (22.6%) had increased their physical activity since diagnosis where most of them (16.0%) had increased recreational activities. Age at diagnosis (${\beta}$= -0.20, p= 0.001), and change in whole grain (${\beta}$= -0.15, p= 0.003) and fish intakes (${\beta}$= 0.13, p= 0.013) were associated with weight changes after breast cancer diagnosis. In summary, the majority of the women with breast cancer had changed their diets to a healthier one. However, many did not increase their physical activity levels which could improve their health and lower risk of breast cancer recurrence.

Understanding Comprehensive Transcriptional Response of Salmonella enterica spp. in Contact with Cabbage and Napa Cabbage

  • Salmonellosis is commonly associated with meat and poultry products, but an increasing number of Salmonella outbreaks have been attributed to contaminated vegetables and fruits. Enteric pathogens including Salmonella enterica spp. can colonize diverse produce and persist for a long time. Considering that fresh vegetables and fruits are usually consumed raw without heat treatments, Salmonella contamination may subsequently lead to serious human infections. In order to understand the underlying mechanism of Salmonella adaptation to produce, we investigated the transcriptomics of Salmonella in contact with green vegetables, namely cabbage and napa cabbage. Interestingly, Salmonella pathogenicity island (SPI)-1 genes, which are required for Salmonella invasion into host cells, were up-regulated upon contact with vegetables, suggesting that SPI-1 may be implicated in Salmonella colonization of plant tissues as well as animal tissues. Furthermore, Salmonella transcriptomic profiling revealed several genetic loci that showed significant changes in their expression in response to vegetables and were associated with bacterial adaptation to unfavorable niches, including STM14_0818 and STM14_0817 (speF/potE), STM14_0880 (nadA), STM14_1894 to STM14_1892 (fdnGHI), STM14_2006 (ogt), STM14_2269, and STM14_2513 to STM14_2523 (cbi operon). Here, we show that nadA was required for bacterial growth under nutrient-restricted conditions, while the other genes were required for bacterial invasion into host cells. The transcriptomes of Salmonella in contact with cabbage and napa cabbage provided insights into the comprehensive bacterial transcriptional response to produce and also suggested diverse virulence determinants relevant to Salmonella survival and adaptation.

Noodle consumption patterns of American consumers: NHANES 2001-2002

  • Although noodles occupy an important place in the dietary lives of Americans, up until the present time research and in-depth data on the noodle consumption patterns of the US population have been very limited. Therefore, this study aimed to analyze the food consumption and diet patterns of noodle consumers and non-consumers according to age, gender, income, and ethnicity. The 2001-2002 NHANES databases were used. The NHANES 2001-2002 data showed that noodle consumers reporting noodle consumption in their 24-h recall were 2,035 individuals (23.3% of total subjects). According to the results, the mean noodle consumption was 304.1 g/day/person, with 334.3 g for males and 268.0 g for females. By age, the intake of those in the age range of 9-18 years old ranked highest at 353.0 g, followed by the order of 19-50 year-olds with 333.5 g, 51-70 year-olds with by 280.4 g, older than 71years old with 252.3 g, and 1-8 year-olds with 221.5 g. By gender, males consumed more noodles than females. Also, according to income, the intake amount for the middle-income level (PIR 1~1.85) of consumers was highest at 312.5 g. Noodle intake also showed different patterns by ethnicity in which the "other" ethnic group consumed the most noodles with 366.1 g, followed by, in order, Hispanics with 318.7 g, Whites with 298.6 g, and Blacks with 289.5 g. After comparing food consumption by dividing the subjects into noodle consumers and non-consumers, the former was more likely to consume milk, fish, citrus fruits, tomatoes, and alcoholic beverages while the latter preferred meat, poultry, bread, and non-alcohol beverages.

효소처리어분에 대한 치어기 대서양 참다랑어(Thunnus thynnus)의 in vivo 및 in vitro 소화율 평가 (In vivo and In vitro Digestibility of Enzyme-treated Fish Meal for Juvenile Atlantic Bluefin Tuna Thunnus thynnus)

  • This study was conducted to investigate in vivo and in vitro digestibility in juvenile Atlantic Bluefin tuna Thunnus thynnus. In vivo digestibility was compared between four experimental diets to determine the optimum dietary inclusion level of an enzyme-treated sardine fish meal (EFM) and sardine fish meal (FM). The experimental diets were as follows; EFM75 (75% EFM), EFM60 (60% EFM and 15% FM), FM75 (75% FM) and SL (frozen sand lance) as a raw fish feed. Feces of Bluefin tuna (90.3 g) were collected both by siphoning from a 700 L cage and by dissection in 69 ton concrete rearing tanks. For the siphoning method, protein digestibility was higher in the tuna fed SL diet than that of other groups. The lowest protein digestibility was observed in FM75. For the dissection method, protein digestibility was higher in tuna fed EFM75 diet than that of other groups. The lowest protein digestibility was observed in the EFM60 group. In vitro digestibility was compared in six protein sources to find an alternative source of EFM for the tuna feed. The highest in vitro digestibility was observed in EFM (92%) followed by low temperature FM (72%), meat meal (65%), feather meal (60%), sardine fish meal (57%) and poultry by-product meal (55%).
